Ingredients
1 kg mutton meat with bone
1 onion, thinly sliced
10 garlic cloves, minced
2 tbsp vegetable oil
1 tsp ginger, finely sliced
1 tsp cumin seeds, crushed
1 tsp whole black pepper, crushed
1 tsp coriander seeds, crushed
1/2 tsp turmeric powder
salt to taste
water as required
Directions:
Heat oil in a deep pot over medium high heat.
Place sliced onion, ginger, garlic in hot oil.
Fry for 2-3 minutes or until nicely golden.
Now put the meat into the pot.
Stir it for couple on minutes.
Then add black pepper, coriander seed, cumin seed’s, turmeric powder.
Cook for 2 minutes.
Then add enough water and let it cook at medium flame for 2 hours or until the water dries.
Cook on high flame for 10 minutes or until meat is tender.

In a small bowl, combine together plain yogurt, ginger garlic paste, papaya paste, black pepper, turmeric, red chili , crushed red chili, all spice, cumin seeds, coriander seeds nut meg, lemon juice, saffron, salt and oil.
Pour this mixture over the meat pieces.
Mix well.
Place in a refrigerator for 4 to 5 hours.
Preheat oven to 350 degree F or 150 Degree C.
Put marinated meat in a baking dish.
Bake for 20 to 25 minutes or grill it in a pan or barbecue.

Ingredients
For Kebabs:
500 gm mince
1 egg, lightly beaten
1 onion
5 cloves garlic
1 inch piece of ginger
4 green chilies
4 tbsp fresh coriander leaves
4 tbsp pomegranate seeds
1 tbsp red chili, crushed
1 tbsp turmeric powder
1 tbsp whole spice powder
salt to taste
For Rice:
300 gm rice
1/4 cup cooking oil
1 onion, finely chopped
2 tomatoes, finely chopped
whole spice as required
8 green chilies, cut it from center
Directions:
Wash rice with few changes of water then soak in water for 30 minutes.
Place mince in a chopper or food processor.
Also add onion, ginger, garlic, green chili, coriander leaves, egg, red chili, turmeric, whole spice, and pomegranate seeds
Process until well combined.
Take it out from the chopper and make kebabs of it.
Heat oil in a deep pan over medium heat.
Deep fry kebabs for 10 minutes or until golden brown.
Saute onion in a deep wok or pot.
Add whole spice and soaked rice into the wok.
Pour water as required to cook rice.
Now add tomatoes and green chilies.
When rice is almost cooked.
Then put kebabs in it and mix slightly.
Cook on low flame for 10 minutes or until cooked thorough.
Today I’m going to share an easy and simple yet delicious Karahi Keema recipe for you. Karahi Keema tastes great when cook with all spices and tomatoes. Cooking in Karahi develop a different taste of dishes. In this recipe mince is cooked in karahi which is super delicious when prepared.

Heat oil in a deep wok or karahi. Saute onion in hot oil until lightly browed.

Now add the ginger garlic paste. Cook and stir for 30 seconds.

Then add the mutton mince and salt. Cook and stir for 15 minutes or until no longer pink.

Add the water and cover the pan and let it cook for 40 minutes or until the meat is half- cooked.
Step 5
Remove the lid. Add tomatoes, cumin powder, red chili, and coriander powder. Cook on hight heat for 15-20 minutes or until the meat is ready.
Step 6
Sprinkle the all spices over it.
Step 7
Garnish with green chilies, ginger and coriander. Simmer over a low heat for 5 minutes or until the oil floats on top. Karahi Keema is ready to serve. ENJOY!!

1/2kgMutton
2Cupsbasmati rice
Few flakes garlic
3tspCoriander powder
Dried coconut
1Inchstick cinnamon
3Green chillies
1tspChilli powder
1Cuponion
1Inchpiece ginger
1tspPoppy seeds
3Clovespeppercorns and cardamoms
1Cupcurd
1/2Cuponion
2Bay leaf
8tbspFat
Salt to taste
Instructions
Directions
Clean the meat and cut into pieces.
Soak the meat in curd.
Roast cardamom, cinnamon, peppercorns and powder cloves. Make powder.
Grind ginger, red chillies, green chillies, half the onions, garlic and copra.
Now heat fat in a pan. Add chopped onions and ground spices. Fry until onions turn golden brown.
Now add meat and fry well.
Add poppy seed powder. Add salt and remaining curd. Cook till meat becomes tender.
Add powdered spices to it and remove from the flame.
Chop remaining onions. Fry them in fat in a separate pan.
Add cloves and bay leaf.
Fry for few minutes and add rice. Fry for another few minutes. Put salt to taste and make the quantity of water double.
Remove from the flame when rice gets cooked and no moisture is left.
Arrange a part of cooked rice in a pan and sprinkle saffron water over it.
Place the meat over it and cover with rice layer once again. Garnish with fried onions and nuts. Mutton Biryani is ready to serve.
Notes
Serve with salad and mint Raita.

This Creamy Liver curry recipe has two of these healthy ingredients i.e. Liver (Kaleji) and Turmeric. I used lamb liver but you can use beef liver or chicken liver if you prefer. Perfect to serve to a crowd when you are entertaining friends – it’s beautifully rich, creamy and aromatic. Great served with toasted bread rolls!
Wash the liver nicely and then steam the liver for ten minutes.
Step 2
Slice the liver into thin pieces about an inch in length.

Now take a blender and add the coriander powder, turmeric powder, cinnamon, cloves and cardamom and add a little water and make a fine paste.

Now take a pan and heat some oil in it. When the oil is very hot add the mustard and let them crackle.

Then put in the finely sliced onions and sauté till golden brown. Add the sliced ginger too.

Crush the garlic flakes nicely and add that to the mixture.

Now add the freshly ground paste and mix it all up.

Sauté till the oil begins to leave the edges of the pan.

Put in the liver slices and add vinegar and salt to taste.

Sprinkle pepper powder and sauté for 15-20 minutes or until the gravy reaches your desired level of thickness. Remove from flame. Creamy Liver Curry is ready to serve.

Heat 1/2 spoon oil in a pan add onions saute till it becomes soft and translucent .

Add tomatoes and fry them all together for about 5 minutes .

Remove them from heat and let it cool for few minutes.

Grind them into a smooth paste.

Keep it aside.

Heat 3 tbsp of oil in a pressure cooker, add the ground paste and fry it in the oil for 2 to 3 minutes.

Fry the mutton with the masala for 5 to 8 minutes in medium flame.

Stir it well so that all of the ingredients mix together and close the lid of the pressure cooker.

Pressure cook it until the whistle goes off 4 times.

After that remove from heat and keep it aside.

Heat the remaining oil in a kadai/pan add cloves, cinnamon, bayleaves, fennel seed-sand curry leaves.

After the seeds sputter add the pressure cooked gravy in to it .

Boil it for a few minutes or till it comes to complete boil.

If the gravy is little watery leave it in a medium heat until it becomes a bit thick in consistency and remove from heat.

1kgmutton cut into 1-1/2 inch pieces
1tspblack pepper
1inchcinnamon stick
2-3 –black cardamoms
2 –bay leaves
1large onionthickly sliced
500gm tomatoeschopped
6-7 –green chillies
2tbspgingerfinely chopped
2tbspgarlic paste
1tspred chili powder
1tspsalt

Instructions
Method
Place the mutton, black pepper, cinnamon, cardamom and bay leaf in a large pot.
Add enough water to make the mutton tender.
Heat oil in a shallow frying pan or karahi.
Add onions and stirring frequently fry for 5 minutes or until soft.
Add tomatoes, green chilies, ginger, garlic, red chili powder, salt and mutton.
While stirring frequently fry on high heat for few minutes, then reduce heat to medium, cover and cook for 15 minutes until the oil begin to separate.
Garnish with coriander leaves, diagonally cut green chilies and thin Julienne’s ginger. Balti Gosht is ready to serve.

Dhuwan Dahi Gosht is a smoked mutton curryin which mutton is cooked in a spicy onion and creamy yogurt based curryand then infused with the smoke released from a burning piece of charcoal. The charcoal is drizzled with oil or melted butter, which releases a very fragrant smoke which is trapped in the currygiving it a lovely earthy flavours. Method
In a handi or clay pot, heat cooking oil until well hot. Add onions and fry until transparent.
To the onions add all of the spices except the meat, plain yogurt and flour.
And fry spices for about 5 to 10 minutes, by adding a little water if necessary to prevent burning and sticking to pan.
Add meat and fry meat with the spices for 2 to 3 minutes. Add plain yogurt; mix for 1 to 2 minutes.
Add 2 cups of water; when water comes to a boil, cover and let meat cook on medium to low heat until meat is tender.
Add flour and water mixture; mix and continue cooking covered on low heat for another 15 to 20 minutes. Boneless Mutton Handi is ready to serve.
