    • 2 cup dried yellow split peas (Moong dal)
    • 1 cup chopped tomatoes
    • 1 small size finely sliced onion
    • 1 tsp red chili powder
    • 1/2 tsp coriander powder
    • 1/2 tsp turmeric powder
    • 5 black pepper
    • 3 cloves
    • 2 cardamon
    • 1 bay leaf
    • 4 curry leaves
    • 1 tsp gram masala powder
    • 2 tbsp lemon juice
    • 2 garlic cloves, thinly sliced
    • 1/2 tsp garlic paste
    • 1/2 tsp cumin
    • 2 dried red chili pepper
    • 2 tbsp fresh chopped coriander leaves
    • 2 fresh green chilies
    • Salt to taste
    • 3 tbsp pure ghee (Desi Ghee)
    • 1 tbsp vegetable oil

    Step 1

    Wash and soak dal for 30-35 minutes.

    Step 2

    Heat split Moong Dal and water with red chili powder, coriander powder, turmeric powder, garlic paste, Until boiling.

    Step 3

    Cook for 10 -12 minutes on a low flame.

    Step 4

    Now add tomatoes, green chopped chilies and cook until dal is tender and thickened.

    Step 5

    Add more water if necessary, to prevent drying out .

    Step 6

    To the cooked split add bay leaves, lemon juice, salt and gram masala powder and mix well.

    Step 7

    Heat oil in a small pan, add thinly sliced onion and fry till golden brown.

    Step 8

    Now add this fry onion with oil pour in dal.

    Step 9

    Heat pure ghee (Desi Ghee) another pan. Add cumin seeds, cloves, black pepper, cardamon, curry leaves, dried red chilies, garlic chopped cloves, and saute for 2-3 minutes on a very low flame.

    Step 10

    Now this tadka (Baghar) pour on Moong dal.Garnish with fresh chopped coriander leaves.Moong dal is ready to serve.

    Chana Dal Gosht Recipe

    Ingredients

    • 500 gm bhuna gosht
    • 350 gm chana Dal
    • 1 tsp Salt
    • 1 tsp chilli powder
    • 1 tsp garam masala
    • 2 tbsp fresh chopped coriander
    • 2 green chilies chopped

    Instructions

    Method

    • Wash dal in few changes of water until water run clear then leave to soak in cold water for about one hour.
    • Drain dal and keep aside.
    • Prepare bhuna gosht.
    • Add dal, salt and chili powder. Mix well and pour enough water to cover dal by one inch.
    • Cover with tight fitted lid, reduce heat.
    • Cook for 30 minutes or dal is tender and about one cup of water is left.
    • Add garam masala, coriander leaves and green chilies. Chana Dal Gosht is ready to serve.

    Notes

    Serving Suggestions:
    Serve with Nan, Roti or plain boiled rice.

    To Make The Dough:

    In a large bowl, combine together the flour, baking powder, ghee and salt; and form a bread crumb like mixture.

    Step 2

    Knead a thight dough with luke warm water.

    Step 3

    Cover with a damp cloth and leave it for 30 minutes.

    Step 4

    To Make Stuffing:

    In a mixing bowl, mix together the chana dal, mint, coriander, dry mango powder, green chili, cumin, red pepper and salt.

    Step 5

    Adjust the seasoning according to your taste.

    To Make Kachori’s

    Make equal size 12 balls from the dough.

    Step 7

    Roll into 4 inch round on a floured surface.

    Step 8

    Put 1 teaspoon dal stuffing in the center. Brush some water on the edges.

    Step 9

    Bring together all the edges and pinch them to seal properly.

    Step 10

    Roll into a 4 inch kachori. Repeat this procedure with remaining ingredients.

    Step 11

    Keep the kachori’s covered with a wet cloth.

    To Make Frying Kachori’s

    Heat oil in a deep pan over medium heat.

    Step 13

    Fry the kachori’s for 3-4 minutes on each side or until crispy, flaky and golden brown.

    Marinate mutton in Curd/Yogurt, lemon juice, part of turmeric powder, part of Garam Masala Powder, mix well, leave aside for 2 hours.

    And now take chana dal and tur dal and cook it.

    Add turmeric and green chilies when it comes to a boil cover the pan and let it cook for some time till it is fully cooked.

    Take a pan, put some oil, Whole Garam Masala and add onion and sauté well.

    Next add green chili when the onions gets golden brown add ginger, garlic, coriander powder, remaining turmeric powder, red chili powder, cook for some time.

    Now add the marinated mutton to this mixture and

    Grind dal in a mixer and add to the mutton.

    Give tarka of mustard seeds, cumin seeds and whole red chili, sprinkle some coriander and cook the pan and simmer it for an hour.

    Finely to this mixture add tomatoes, amchur powder, add a little salt, remaining garam masala powder, and cover it again for 10-15 minutes and cook on slow fire or till the mutton is fully cooked.

    Dish it out. Daal Gosht is ready to serve.

  • RECIPE: Moong Dal Paratha (Protein Rich Yellow Lentil Stuffed Paratha)

    Moong Dal Paratha 

    Ingredients:
    For the Filling:

    • 3/4  cup yellow split moong dal (soaked for 30 minutes)
    • 2 tsp chopped ginger
    • 1 tsp chopped green chillies
    • 1/2 tsp turmeric powder
    • 1 tsp cumin seeds
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • 1 tsp garam masala powder
    • 2 tsp dry mango powder
    • 3 tbsp fresh coriander leaves, finely chopped

    For the Dough:

    • 2 cups whole wheat flour
    • 1 tsp salt
    • Water to knead the dough
    • Oil or ghee for cooking

    How to make Dal Paratha:

    For the Filling:

    • Soak the moong dal for 30 minutes.
    • Once soaked, steam the moong dal for about 25 minutes until cooked, draining all excess water.
    • Once steamed and cooked,allow it to cool.
    • Add the remaining ingredients to the dal and mix it until it becomes like a ball of mass.
    • Divide it into 12- 15 equal portions.
    • Set aside.

    For The Dough:

    • Add flour and salt in a large bowl, adding little water at a time to make soft, pliable dough.
    • Knead dough until it is smooth and elastic.
    • Add 1 tsp oil to coat the dough and knead little more.
    • The dough will be soft and non sticky.
    • Set aside covered for 10 minutes.
    • Make 12- 15 lemon sized balls of the dough and roll them out thin to approximately 3 inches in diameter.
    • Note tossing the dough in dry flour while rolling will prevent it from getting sticky when rolling them out.
    • Add a portion of the stuffing in the center. Gather the sides and bring them together, as shown in the picture.
    • Remove the little excess dough which popped out when you brought them together.
    • Press the stuffed dough down. Toss it in some flour and roll it gently applying just even pressure to roll.
    • Roll it to desired thickness and your comfort level in rolling.
    • Place the stuffed parathas on the hot griddle/skillet.
    • Cook for about 1/2 a minute, flip over and add 1 teaspoon of oil/ ghee in and around the paratha.
    • Keep pressing the parathas while on the skillet so the dough gets cooked and the stuffing also gets the heat and gets pressed down into the parathas.
    • Flip and cook the other side for about 1 minute adding 1 more teaspoon of oil.
    • Cook until light golden spots appear on the parathas.
    • Dal Paratha is ready to serve.

    Heat oil in a saucepan over medium heat. Fry ginger, onions and green chillies for few minutes or until lightly browned.

    Pour on top of the dal and stir well.

    Heat oil in a large pot over medium heat. Saute onion in oil until lightly brown.

    Boiled chana dal then remove the excess water.

    Now pour in the dal and add salt to taste. Cook for two minutes and then break the eggs and add them to the dal itself.

    Stir well so that the egg too blends with the dal. Stir for a minute and remove from heat.

    Step 13

    The eggs will get completely cooked in the heat of the dal itself. Garnish with coriander leaves. Egg Dal is ready to serve.
