    Method

    • Place tomatoes, ginger garlic paste in a heavy bottom skillet.
    • Cover and cook for an hour without any water or until soft.
    • Strain pulp through a sieve. Stir in sugar and vinegar.

    • Cook and stir for 10 minutes or until sauce is thickened.
    • Let it cool completely.

    • raw mango – 1/2 kg
    • Turmeric – 2 teaspoon
    • Red chili pepper – 1 teaspoon
    • Mustard Oil – 1/2 cup
    • Aniseed’s – 4 teaspoons
    • Onions seeds – 1 teaspoon
    • Glacial acetic acid – 3 teaspoons
    • salt – 1/2 cup

    Method:

    • Wash the mangoes thoroughly and cut into slices .
    • Rub salt on mango slices and keep for 10 hours.
    • The mango slices will leave some water.
    • Remove the slices from the mango water and in it mix glacial acetic acid.
    • Rub the rest of the ingredients on the mango slices and pour the mango water mixed with acetic acid over it and add the oil.
    • Keep Sliced Mango Pickle for 15 days and shake it well once in a day.
    • After 15 days Sliced Mango Pickle will ready to use.

    Ingredients:

    • Water – Around 6 cups
    • Pickling salt – Enough to float an egg
    • Vinegar – 2 Tablespoons
    • Cucumber
    • Turnip
    • Carrot
    • Beet
    • Chili Peppers

    Method:

    • Place water and egg into an earthenware dish.
    • Add and dissolve the pickling salt until the egg floats to the surface.
    • Add the vinegar.
    • Pierce the carrots, cucumbers and turnip with a fork a few times (don’t have to peel).
    • Slice the beets (1/4 inch).
    • Put all into the earthenware pot and weight down so that no part of the vegetables are exposed to the air.
    • Cover and leave at room temperature for 6 to 8 weeks.
    • As the brine ferments, some scum and mould may form of the surface which needs to be skimmed off.
    • After 6-8 weeks, remove the vegetables and rinse in clean water.
    • Strain the brine to remove the surface scum and place in clean jars (minus the beets).
    • These can now be stored in the refrigerator for several months.
    • Shawarma Pickle is ready to use.
    • Enjoy!

    • 500 gm green chillies
    • 2 tbsp  salt
    • 1 cup mustard oil
    • 4 tbsp lemon  juice
    • 1 tbsp split and hulled mustard seeds
    • 1 tbsp red chilli powder
    • 1/2 tsp Tumeric powder

    Method:

    • Wash and dry the chillies.
    • Cut each chilli into 4 -6 pieces
    • Mix with salt and leave overnight
    • Arrange the chillies on a clean tea towel, let then air dry overnight.
    • Take a jar large enough to fit all the chillies, add the oil, lemon juice,  red chili powder, mustard seeds and tumeric to it.
    • Close the lid and mix, place all the chillies in the jar.
    • Close the lid and mix well.
    • Green Chilli Pickle is ready to serve!

    Ingredients

    • 2 cups yogurt
    • 1 cup grated lauki ( ghiya/ bottle gourd)
    • Salt to taste
    • 1/4 tsp chaat masala powder
    • 1 tsp dry roasted and coarsely ground cumin seeds
    • few mint leaves, for garnishing

     

    Directions:

    Step 1

    Boil grated lauki with 1 tablespoon water, covered, on a low heat for about 5 minutes.

    Step 2

    Beat curd with a  beater till smooth and lump free. If the curd is too thick, add some water.

    Step 3

    Add lauki, salt and chaat masala powder to curd and mix well.

    Step 4

    Sprinkle ground cumin seeds over the raita. Garnish with mint leaves. Lauki Raita is ready to serve.

    • 3lbs dates, stoned &finely chopped
    • 1lb spring onions, chopped (white parts only)
    • 225gm raisins
    • 100gm currants
    • 225gm sugar

    • 25gm allspice
    • 12gm mustard seeds
    • 1/2 cup vinegar

    • Place all the ingredients in a large saucepan, slowly bring to the boil and cook gently, stirring from time to time, until soft and thick.

    Ingredients:

    • 350 gm apricots
    • 1 cup vinegar
    • 2 cups water
    • 1 tsp salt
    • 1/2 tsp red chili, crushed
    • 2 big Cardamom,crushed
    • 1/4 kg sugar
    • 1 tsp long strips of ginger
    • 1 clove garlic,finely chopped
    • 4 tsp raisins
    • 8-10 blanched almonds

     

    Directions:

    Step 1

    Put apricots in boiling water till soft.

    Step 2

    Peel and mash the apricots then strain the pulp and wash the stones of apricots with one cup of water.

    Step 3

    Cook apricot pulp, ginger, garlic and water of washed stones, almonds and raisins till all the water is absorbed.

    Step 4

    Add vinegar, sugar, salt, cardamoms and red chili pepper and cook till is thick and golden brown.

    Step 5

    Put it in a jar. Apricot Chutney is ready to serve.
