    Cauliflower Curry Masala

    You’ve probably heard of Chicken curry; well this is almost the same thing but with a twist. Instead of chicken use cauliflower!! Cauliflower Curry Masala is a vegetable curry that makes for a good side with rotis. Traditional Pakistani cauliflower and potato curry recipe from my grandmother (Nani Jan). We used to eat this all the time growing up. My sister likes it with paratha.

    • 1 large Cauliflower, cut into florets
    • Oil for deep frying
    • 2 onions
    • 2 green chilies
    • 8-9 cloves of garlic
    • 1 inch piece of ginger
    • 2 tomatoes made into a puree
    • 1 tsp red chili powder
    • 1 tsp coriander powder
    • 1 tsp garam masala powder
    • 1/2 tsp turmeric powder
    • 1 tsp kasoori methi
    • Salt to taste.

    Step 1

    First deep fry the washed cauliflower florets and keep aside.

    Step 2

    Now heat 2 tablespoon oil in a wok.

    Make a paste of onions, green chilies, ginger and garlic and put it in the wok.

    Saute till it changes color and add the tomato puree to it.

    Step 5

    Now add all the spices, salt and kasoori methi and sauté till oil separates.

    Step 6

    Add the florets, and a cup of water and mix well. Garnish with chopped fresh coriander. Cauliflower Curry Masala is ready to serve.

    Step 1

    Mix besan and wheat flour. Add salt and mix well.

    Step 2

    Add a little water and mix. The consistency should be soft and putty-like. It helps if you kneed it with a wet hand.

    Keep the dough in the fridge for 5 minutes.

    Step 4

    Divide this dough into 4 portions.

    Step 5

    Roll each portion into a ball and flatten it into a chapati shape (round).

    Step 6

    Spread a little oil or ghee on it.

    Step 7

    Make a cut in it from the center to the edge.

    Step 8

    Pick up the cut edge and start rolling it so that you end up with a cone.

    Step 9

    With the palm of your hand flatten it while twisting it so that it once again forms a ball type thing.

    Step 10

    Flatten it again in chapati shape and fry it on medium to low heat with three tbsp oil or more depending on the size of the frying pan.

    Step 11

    Turn it over once the bottom is golden brown. When both sides are golden brown it’s done. Besan Ki Roti is ready to serve

    Step 1

    Boil and mash potatoes.

    Step 2

    Add to mash potatoes chilli powder, turmeric powder, green chillies, garlic(crushed) and salt. Mix well the mixture and keep aside.

    First take breads and place a small bowl on the bread and press it and the round piece of bread comes out.

    Step 4

    Repeat for all breads.

    Take a fistful of dough and roll into 1/4″ thick 5″ diameter round.

    Then take a piece of round bread and place on it the mixture and then place the bread on the rolled dough such that the mixture part comes on the rolled dough.

    On the upper part of bread apply green chutney and then place another round piece of bread on it and apply ketchup on it and then close the whole thing with the rolled dough and keep a side.

    Repeat for remaining breads and rolls.

    Take oil in the pan. Fry the pieces one by one till golden brown.

    After frying cut it from the middle in to 2 parts. Bread Samosa Sandwich is ready to serve.

    Take chicken breasts and cut into 2 inch pieces.

    Take round red chillies and grind coarsely to flakes in a grinder. Keep aside.

    Take green chillies and make paste in grinder or food processer. Keep aside.

    Take methi dana and grind in a grinder.

    Step 5

    Take oil in frying pan and add ginger garlic paste, kalonji, green chilli paste, methi dana powder,saunf, red chilli flakes.

    Fry lightly so that aroma is released from spices. Do not over fry.

    Take the fried spices into a plate and mix the remaining spices in it. Apply the marination on chicken pieces. Set aside.

    Take a baking try and cover it with foil. Place the chicken pieces on the tray at a distance of 2 inches in between.

    Pre-heat oven at 300 degree centigrade for 20 min.

    Place the baking tray inside the oven and cook for around 25-30 min. Check if the chicken is tender by inserting a fork inside the pieces.

    Step 11

    When the chicken is tender and is golden brown (like BBQ), take it out. Delicious Acharu Boti is ready to serve. ENJOY!!

    Cut each chicken joint in two. Mix together the yogurt and turmeric till smooth.

    Mix the chicken with the yogurt and leave to stand overnight.

    In a blender process the garlic, ginger and red chillies with 2 tbsp water till smooth.

    Melt the ghee(or butter) in a pan over medium heat and fry the onions till golden.

    Remove onions from pan,pressing them against the side of the pan to save as much ghee as possible.

    Fry the caraway seeds and garam masala for 30 seconds and add all of the garlic/ginger mix, stir.

    Add the chicken and the yogurt it was marinaded in, with the onions and the salt and fry for 5 minutes.

    Add 9 fluid oz of the water and creamed coconut, bring to the boil, reduce the heat cover the pan and simmer 40 minutes.

    In the blender put the remaining water and the cashew nut and blend till smooth.

    Add this to the pot and cook uncovered for 5 minutes. sprinkled with the paprika and garnished with the eggs. Chicken Nawabi is ready to serve.

    Channa Pulao is always my favorite.I have made it many times but this time I wanted to try it with Potatoes ( My fav veggie) and it came so good.

    I do remember my khala (anty) who would make fabulous chana pulao along with potatoes. Well, while making this aloo chana pulao recipe and writing this post i do remember the aroma and taste still lingering in my mind of her pulao. Her dishes was always cooked to perfection and the taste of the pulao was just heavenly.

    Though I make chana biryani often this [highlight]chana pulao[/highlight] is always my quick fix whenever I am pressed for time. Do try this Aloo Channa Pulao recipe. I had it Korma, mint raita and salad.It was a satisfying lunch.

    Note’s:

    1. For the chana pulao obviously you have to first cook the [highlight]chickpeas(kabuli channa)[/highlight].
    2. if you have leftover boiled chickpeas than these too can be added.
    3. The pulao has to be made with basmati rice and desi ghee or else something will be a little amiss if you do not use basmati rice and ghee. This is pretty easy pulao, great to put in your kids lunch box. If you pre cook the chana the previous day itself, then you don’t have to worry about anything. It can be made in minutes.
    4. If you are diet conscious you can add olive or sesame oil.

    This could be also quick fix for lunch box for office going people or students, since less cutting work. You can pack this with cucumber or vegetable raita.

    Aloo Channa Pulao

    • 2 cups basmati rice
    • 1 cup chickpeas (white channa)
    • 2 onion (thinly sliced)
    • 2 potatoes (cubed)
    • 2 bay leaves
    • 4 cloves
    • 5 black pepper pods
    • 3 cinnamon stick
    • 1 black cardamom
    • 3 green chilies (thinly sliced)
    • 4 tablespoon clarified butter or ghee
    • 1 teaspoon ginger garlic paste
    • salt to taste
    • 3-1/2 cups water or chicken stock

    For Garnishing

    • Fresh coriander leaves (chopped)

    Directions

    1. Wash rice with few changes of water and soak them for 30 minutes. Keep aside.
    2. Heat oil in a heavy bottom skillet over medium heat.
    3. Add the cloves, cinnamon, cardamom, black pepper and bay leaves.
    4. Now add the sliced onions, sliced green chilli and also the ginger garlic paste.
    5. Saute them until the raw flavor fades.
    6. Now add the Potato cubes and the boiled channa.
    7. Stir well.
    8. Cook for 5-6 minutes or until potatoes are tender.
    9. Add rice and lightly stir.
    10. Now add the salt and water.
    11. Mix well and allow the rice to cook for 10 minutes or until done.
    12. Cover with a lid and put on low flame.
    13. After 10 minutes, turn the heat off.
    14. Fluff the rice and dish it out.
    15. Garnish with the coriander leaves. Aloo Channa Pulao is ready to serve.
    Serving Suggestions:
    Serve with Mint Raita and salad.

    Gajar ki Kheer

    • 4 cups milk
    • 2 cups grated carrots
    • 1/2 cup sugar
    • 4 tbsp grain Rice
    • 2 tbsp almonds
    • 1 tbsp rose water
    • 1/2 tsp cardamom
    • 1/4 cup chopped pistachios
    • 1/4 cup fresh cream
    1. Pour milk and rice in a big saucepan. Bring it to boil and keep the heat moderate.
    2. Stir well and keep it on heat for 20 minutes.
    3. Heat it for another 15 minutes uncovered with carrots added.
    4. Add sugar and almonds and cook it for further 10 minutes.
    5. Stir it till the mixture starts sticking to the bottom of the pan.
    6. Remove from heat and keep it to cool down at room temperature.
    7. Add cream, cardamom, and rose water. Keep it in freeze.
    8. If the Kheer is thick once you remove it from freeze add a little milk to it and stir it. Add pistachios and serve it cool. Gajar ki kheer is ready to eat. Enjoy!

    • 1 cup clarified butter or desi ghee
    • 1/2 cup desiccated coconut
    • 1/2 cup almonds
    • 1/2 cup cashew nuts
    • 1/4 cup pistachios
    • 1 cup dry Dates
    • 1/2 cup walnuts
    • 1/2 cup raisins
    • 1/2 cup dried apricot
    • 1/2 cup dried figs
    • 1-1/2 cup caster sugar

    Directions:

    Step 1

    Chop cashews, almonds, walnuts, and Pistachio into medium size. Make sure not to crush them.

    Step 2

    Soak Dry Dates, apricots and figs in warm water for 15 minutes.

    Step 3

    Drain out the water and chop the Dates, Apricots and figs.

    Step 4

    Heat a cup of ghee in a pan. Add all these fruits in ghee and mix it well.

    Step 5

    Now add sugar and also mix it properly with a mixture (taste the sugar amount, if need add sugar).

    Step 6

    Remove from the heat, while still hot form 3 cm balls to make about 40 ladoos. Dry Fruit Ladoo are ready to serve. Enjoy!

    Truly a royal dessert, as its name suggests, Shahi Tukra is a rich bread pudding.     Shahi Tukra (Bread Pudding) Recipe

    • 8 bread slices
    • 1 liter milk
    • 1 cup white sugar
    • 4 tablespoon clarified butter or desi ghee
    • 1 tablespoon raisins
    • 1 tablespoon chopped pistachios
    • 1 tablespoon chopped almonds
    • 1/4 teaspoon ground cardamom (elaichi powder)
    1. Cut the bread slice edges out and cut diagonally.
    2. Heat the milk after adding sugar. Stir continuously.
    3. Add 1 teaspoon of clarified butter into the milk so that it doesn’t flow over.
    4. Let the milk simmer for creamy sweet toast recipe until it is reduced to half.
    5. Stir in the raisins, and cardamom powder.
    6. Take bread slices and fry them in clarified butter.
    7. Soak the fried slices in milk for two minutes.
    8. Take out the slices and put into the milk previously prepared.
    9. Garnish with pistachios and almonds. Shahi Tukra is ready to serve. Enjoy!!
    Serving Suggestions:
    Serve chilled as a dessert after dinner.
