    Falsay ka Sharbat

    A refreshing, cool drink in hot days of summer. There is nothing batter then this sweet and sour cold drink in summer season.  Follow my Step by step Falsay Ka Sharbat recipe to Cool off this summer with a glass of Grewia Asiatica Drink.

    • 1 kg falsay
    • 1 kg sugar
    • 4 lemons
    • a pinch of black salt
    • 3 cups water

    Directions:

    Step 1

    Wash falsay then boil in 3 cups of water. Cook for 20-30 minutes.

    Step 2

    Now strain through a medium fine sieve.

    Step 3

    Extract all pulp by pressing down with a spoon.

    Step 4

    Take a saucepan, add sugar and pulp in it. Cook for 10 minutes or until sugar dissolves.

    Step 5

    Leave it to cool completely.

    Step 6

    Add lemon juice and black salt. Stir well.

    Step 7

    Now pour in a freezer container.

    Step 8

    Cover and refrigerate.

    Step 9

    Take one glass cold water add frozen falsa pulp in it.

    Step 10

    Stir well and add ice cubes. Falsay Ka Sharbat is ready to serve.Enjoy!

    This is very easy and quick chicken recipe. Chicken Shashlik sticks always looks fancy on your table and believe me after chicken marinating it hardly takes 15 min

    Chicken Shashlik Recipe

    Chicken Shashlik sticks always looks fancy on your table and believe me after chicken marinating it hardly takes 15 min

    • 500 gm boneless chicken
    • 4 tbsp oil
    • 2 green bell peppers (cut into small cubes)
    • 2 to matoes (cut into cubes)
    • 2 onions (cut into cubes)
    • 2 tbsp lemon juice
    • 1 tsp garlic powder
    • 1 tsp mustard paste
    • 1/2 tsp black pepper
    • 1/2 tsp salt
    • 6 shashlik sticks

    For Sauce

    • 2 cloves garlic (crushed)
    • 2 cups chicken stock
    • 1/2 cup tomato ketchup
    • 1 tsp red chili flakes (crushed)
    • 1 tsp sugar
    • 2 green chilies
    • 1 tbsp corn flour
    • 2 tbsp vinegar
    • salt to taste
    • 2 tbsp oil

    Method

    For Shashlik Sticks

    1. Wash chicken and pat dry.
    2. Cut chicken into bite size pieces.
    3. Place chicken into a bowl, add green bell pepper, tomatoes, onions, garlic powder, mustard paste, black pepper, lemon juice and salt.
    4. Mix well.
    5. Thread equal proportion of chicken and vegetables into shashlik sticks.
    6. Greased a grill pan with oil.
    7. Grill Shashlik sticks on low heat for 8-10 minutes or meat is tender.
    8. Shashlik Sticks are ready to serve

    For Sauce

    1. In a deep pan, add 2 tbsp oil and chopped garlic.
    2. Cook for 1 minute or until brown.
    3. Then add 2 cups of chicken stock, red chili flakes, green chilies, vinegar, sugar and tomato ketchup.
    4. Bring to a boil and simmer for 2 minutes.
    5. Then add corn flour dissolved in some water and stir together.
    6. Remove from the heat and pour sauce over Chicken Shashlik.
    7. Chicken Shashlik is ready to serve. ENJOY!

    Serving Suggestions:
    Serve with Fried Rice.

    • 1/4 cup sesame seeds

    • 1 tsp vanilla essence
    • 1 egg

    Step 1

    Place all dough ingredients in a large bowl.

    Step 2

    Knead with warm water and make a soft dough.

    Step 3

    Leave the dough for 30 minutes or until rises and get double of its size.

    Step 4

    In a medium bowl, mashed dates. Add cardamom powder and butter. Mix well.

    Step 5

    In a small bowl, whisk egg with vanilla essence.

    Step 6

    Take a small ball out of the dough.

    Step 7

    Roll the dough and roll out with rolling pin like flatbread.

    Step 8

    Place date mixture over it and shape into the roll.

    Step 9

    Cut the roll in pieces of desired length.

    Step 10

    Repeat the same method and make rolls.

    Step 11

    Preheat oven at 325 degree F.

    Step 12

    Place rolls on the greased baking dish.

    Step 13

    Brush with egg on the top of the rolls.

    Step 14

    Sprinkle sesame seeds and almonds over it.

    Step 15

    Place baking dish in preheated oven and bake for 10-12 minutes or until golden brown.

    Step 16

    Remove from the oven. Date Rolls are ready to serve.

    • Process until well blended.

    Ingredients

    • 500 gm boneless fish fillets
    • 1-1/2 lemon
    • 2 tsp garlic paste
    • 1/2 tsp black pepper
    • salt to taste

    For Batter:

    • 2 eggs
    • 1/2 cup refined flour
    • 1 pinch of black pepper
    • 1 pinch of salt

    For Tartar Sauce:

    • 1 cup mayonnaise
    • 1 capsicum, thinly sliced
    • 1 onion, finely chopped
    • 3 olives, thinly sliced
    • black pepper to taste
    • salt to taste

     

    Directions:

    To make Tartar Sauce:

    1. In a bowl, combine together all tartar sauce ingredients.
    2. Then place in a refrigerator for 2 hours before serving.

    To Make Fish:

    1. Rinse fish then cut into pieces.
    2. Rub garlic paste over them.
    3. Season with salt and pepper.
    4. Also add lemon juice
    5. Toss well and set aside.

    To make Batter:

    1. In a bowl, add eggs, refined flour, salt and pepper.
    2. Mix well and make a thick paste.

    To proceed:

    1. Heat oil in a deep wok.
    2. Dip fish fillets in prepared batter then deep fry for 10-15 minutes or , until golden brown.
    3. Drain on an absorbent paper.
    4. Now place fried fish in the serving dish.
    5. Fish with Tartar Sauce is ready to serve.

    Ingredients

    • 2 cups long grain rice
    • 2 cups chicken broth
    • 1 cup green lentils
    • 1/2 cup cooking oil
    • 50 gm cashew nuts
    • 1 onion, thinly sliced
    • 6 green chilies, thinly sliced
    • 4 cloves
    • 2 star anise
    • 2 cardamoms
    • 1 tbsp desiccated coconut
    • 1 tsp turmeric powder
    • 1 tsp cumin seeds
    • 1 tsp black pepper
    • 1 tsp salt

     

    Directions:

    1. Wash rice with few changes of water then soak for 30 minutes.
    2. Wash green lentils with few changes of water then soak for 30 minutes.
    3. Drain and set aside.
    4. Heat oil in a deep wok or skillet over medium heat.
    5. Put onion in hot oil and fry for 4-5 minutes or until golden brown.
    6. Now add cumin seeds and fry for 30 seconds.
    7. Add chicken broth, salt, turmeric powder, coconut, black pepper, star anise, cloves.
    8. Cook for 5 minutes then add green lentils.
    9. Cook for 10-15 minutes or until green lentil is half done.
    10. Now add rice and cook for 10 minutes or until cooked through.
    11. Turn the heat off.
    12. Take it out in a serving dish.
    13. Sprinkle fried cashew nuts and green chilies over it.
    14. Cashew Nut Khichri is ready to serve.
    • Serve hot with mint Raita.

    Shape as desired, bruch with additional melted butter.

    sprinkle with poppy seeds and allow to rise again on greased pans until about double in bulk.

    • 375 gm plain flour
    • 1 egg
    • 2 tsp oil
    • 1 tsp sugar
    • 1 tsp yeast
    • 1/4 tsp salt
    • Warm water as required

    For Filling

    • 300 gm boneless chicken
    • 4 black olives (thinly sliced)
    • 4 mushrooms (thinly sliced)
    • 1 cup sliced onion
    • 1/2 cup green bell pepper (chopped)
    • 1 cup pizza sauce
    • 1 tsp dried oregano
    • 1 tsp red chili flakes
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 tsp chaat masala
    • 1/4 tsp chaat masala
    • 1/2 cup mozzarella cheese (grated)
    • 1/2 cup cheddar cheese (grated)

    Method

    To Make Pizza Dough

    1. Place flour, egg, yeast, sugar, oil and salt in a bowl.
    2. Knead a soft dough by using warm water.
    3. Keep aside.

    To make Filling

    1. Cut chicken into small pieces.
    2. Then place in a medium bowl.
    3. Add red chili powder, salt, ginger garlic paste and chaat masala.
    4. Mix well.
    5. Then cook in a pot for 15-20 minutes or all juice runs clear.
    6. Remove from the heat.

    To Proceed

    1. Now make small balls out of the dough.
    2. Roll them with pin roll.
    3. Spread pizza sauce each of them.
    4. Put chicken, mushrooms, olives, capsicum, onions, and oregano,
    5. Season with salt and pepper.
    6. Sprinkle grated mozzarella and cheddar cheese over it.
    7. Preheat oven to 200 degree C.
    8. Bake prepared pizzas for 15 minutes or until well done.
    9. Quick Baby Pizzas are ready to serve.

    Serving Suggestions:
    Serve with your favorite dipping sauce.

    For Vegetable Salad:

    • 1 cabbage, chopped

    For Salad Dressing:

    • 1 cup fresh cream
    • 1 tbsp sugar

    Directions:

    1. Place all chopped vegetables, sweet corn, pineapple in a large bowl.
    2. In a small bowl, mix together cream, sugar and black pepper.
    3. Pour this dressing over the vegetable salad.
    4. Mix well.

    Ingredients

    • 1 packet noodles, cooked
    • 1 cup mushrooms
    • 2 tbsp vinegar
    • 2 tbsp soy sauce
    • 2 tbsp Oil
    • 2 tbsp lemon juice
    • 2 tbsp red chili, crushed
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 small onion, thinly sliced
    • 2 green bell pepper, thinly sliced
    • 2 carrots, thinly sliced
    • 3 spring onions, thinly sliced
    • 1/4 bunch of fresh coriander leaves, finely chopped
    • 1 tsp white sugar
    • 1 tsp black pepper, crushed
    • Salt to taste

    Method:

    1. Heat oil in a skillet or deep pan.
    2. Add Onion and ginger garlic paste.
    3. Cook for 1-2 minutes then add all vegetables.
    4. Stir fry for 2-3 minutes then put boiled noodles in it.
    5. Add lemon juice, vinegar, soy sauce, black pepper, red chili, sugar and salt.
    6. Stir fry on high heat for 4-5 minutes.

  • RECIPE: Spinach Paratha (Palak Paratha)

    Spinach Paratha

    Spinach paratha is another excellent variation of paratha where you can include some healthy greens in the paratha. This is a great “anytime” meal. Spinach Parathas are whole-wheat  flat bread stuffed with a spicy spinach filling.

    It doesn’t matter whether you are an expert or beginner, with this spinach paratha recipe you can prepare delicious and healthy spinach paratha in few minutes.  Its a perfect way to enjoy the goodness of spinach.

    Palak Paratha is a delicious and nutritious way of feeding spinach to the kids.

    INGREDIENTS

    For Dough:

    • 1 cup whole-wheat flour
    • 1/2 cup water
    • Pinch of salt

    For Spinach Filling:

    • 2 cups chopped spinach
    • Pinch of asafetida
    • 1/4 tsp salt
    • 1/2 tsp cumin seeds
    • 1/4 tsp red chilly flakes
    • 1/4 cup whole-wheat flour for rolling
    • Oil to cook

    Yield: 4 servings

    Directions:

    Step 1

    To Make Dough: Mix flour, salt and water together to make soft dough (if needed add more water).

    Step 2

    Knead the dough for a few minutes on a lightly greased surface to make soft, smooth and pliable dough.

    Step 3

    Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.

    Step 4

    To Make Paratha Filling: Heat the oil in a saucepan on medium-high heat. Oil is the right temperature when cumin cracks immediately after being put the oil.

    Step 5

    Add the asafetida and cumin seeds.

    Step 6

    After the cumin seeds crack, add the spinach.

    Step 7

    Stir-fry, making sure to press the spinach down so the water can evaporate.

    Step 8

    Cook the spinach until most of the water has evaporated. Spinach still should be moist and should be able to form a ball.

    Step 9

    Add the salt and pepper and mix well. Set aside until the spinach cools off.

    Step 10

    Divide the dough and spinach filling into 6 equal parts.

    Step 11

    Roll the dough into 3 inch circles.

    Step 12

    Put the filling in the center. Seal by pulling the edges together and make into a ball.

    Step 13

    Proceed to make all six balls. Each ball needs to settle for two minutes before you start rolling.

    Step 14

    Heat the griddle (Tawa) on medium high. Press the filled ball lightly on dry whole-wheat flour from both sides.

    Step 15

    Roll the ball light handed to make 6-inch circle.

    Step 16

    If the paratha sticks to the rolling pin or rolling surface, lightly dust the paratha with dry flour.

    Step 17

    Place the paratha over the griddle. After paratha start changing color and start puffing in different places flip the paratha over. You will notice some golden-brown spots.

    Step 18

    After few seconds, spread 1 tsp of oil on the paratha.

    Step 19

    Flip the paratha and lightly press the puffed areas of the paratha with a spatula.

    Step 20

    Flip again and press with the spatula making sure the paratha is golden-brown on both sides.

    Step 21

    Cool the parathas on a wire rack so they don’t get soggy. Spinach Paratha is ready to serve.

    Recipe Note’s

    1. These Parathas can be kept outside for up to 2 days wrapped in aluminum foil or in a closed container.
    2. For later use paratha can be refrigerated for 3-4 days.

    Serving Suggestions:

    • Serve with curd.
