    Ingredients

    • 1 tin mushrooms
    • 50 gm butter
    • 1 tbsp chopped garlic
    • 1/2 tsp oregano
    • 1/4 tsp black pepper
    • 1/4 tsp salt

     

    Directions:

    1. Heat butter in a pan over medium heat.
    2. Saute garlic in it.
    3. Now add mushrooms and fry well.
    4. Turn the heat off.
    5. Season with black pepper, salt and oregano.
    6. Stir well.
    7. Garlic Mushroom is ready to serve.

    Crispy Deep Fried Chicken

    • 6 chicken pieces
    • 2 tbsp vinegar
    • 1 tsp garlic paste
    • 1 tsp red chili flakes
    • 1 tsp ground cumin
    • 1/2 tsp Chinese salt
    • 1/2 tsp salt
    • 1 egg (lightly beaten)
    • 1 cup cornflour
    • oil for frying
    1. Wash chicken pieces remove all excess fat.
    2. Pat dry.
    3. Place chicken pieces in a bowl.
    4. Add cumin, red chili flakes, salt, vinegar, garlic paste and Chinese salt.
    5. Cover and leave it for 30 minutes.
    6. In a small bowl, beat egg.
    7. Dip each chicken piece in egg then coat with cornflour.
    8. Heat oil in a pan over medium heat.
    9. Deep fry chicken for 10-12 minutes or until crispy and golden brown.
    10. Crispy Deep Fried Chicken is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Your favorite dipping sauce.

    Place the mince in a food processor, add all ingredients except oil in it.

    Process it for 4-5 minutes or until all ingredients are combined in mince.

    Then grease the skewer with oil or ghee . Preheat grill so that coals are white hot in time for barbecuing.

    Now make the shapes of kebabs around skewers and while barbecuing them keep pouring ghee over them.

    Keep rotating the skewers occasionally.

    • 1 cup pineapple chunks (chopped)
    • 1 cucumber (chopped)
    • 1 apple (chopped)
    • 1 to mato (chopped)
    • 1 orange
    • 6 strawberries
    • 1/2 cup fresh coriander leaves
    • 2 tbsp lemon juice
    • 1 tbsp oil
    • 1 tsp vinegar
    • 1/2 tsp black pepper

    Method

    1. Chop all fruits then put into a bowl.

    Step 1

    Fry chicken cubes in oil on high flame so they retain their shape.

    Step 2

    Once tender take them out in a plate.

    Put chopped onion in the same oil and fry until golden then add ginger/garlic.

    Now add cumin seeds and tomatoes and a little water and cover it on low flame.

    Step 5

    Your masala is ready for the chicken when tomato is cooked and it leaves oil.

    Now add chicken and keep your flame medium for the rest of the procedure.

    One by one add qasuri methi, garam masala, coconut powder and keep on stirring for two minutes in between.

    Transfer the marinated chicken into this yoghurt mixture.

    Keep aside for 3 hours.

    Preheat the oven to 180 degree C.

    Skewer the chicken pieces, 2 cm apart.

    Keep a tray underneath to collect the drippings.

    Roast in an oven or grill for 10-12 minutes.

    Remove and hang the skewers to allow the excess marinade to drip off.

    Heat oil in a pan over medium high heat. Saute onion in oil for 5 minutes or just until soft and start to turn soggy.

    Step 2

    Now add ginger garlic paste and cook for 1 minute or until you can smell the garlic aroma.

    Step 3

    Now add dry ingredients ( red chili,cumin seeds, turmeric powder, coriander powder, salt and black pepper). Cook and Stir for 30 seconds.

    Step 4

    Add tomatoes and cook and stirring for 5-8 minutes or until tomatoes are soft.

    Step 5

    Add potatoes and Stir fry for 8-10 minutes then add water.

    Step 6

    Cover and simmer for 10 minutes or potatoes are tender. (Do not let potatoes become mushy.)

    Step 7

    Crack eggs in a separate bowl and whisk well.

    Step 8

    Now add eggs slowly to the potato curry.

    Step 9

    Stir it lightly.

    Step 10

    Put the lid on and cook for 5 minutes or until eggs are set.

    Step 11

    Remove the lid. Stir well.

    Step 12

    Sprinkle garam masala over it.

    Step 13

    Garnish with chopped coriander and green chilies.

    Step 14

    Dish it out. Aloo Anday ki Bhujiya is ready to serve.

    • 1 onion,finely chopped
    • 200 gm pasta
    • 200ml light coconut milk
    • 1 tbsp yogurt
    • A handful of coriander leaves,chopped

    For the fragrant rice:

    • 100 gm basmati rice
    • salt to taste
    • 5 curry leaves
    • 1/2 tsp black mustard seeds
    • 1 cinnamon stick
    • A pinch of saffron

    Directions:

    Step 1

    To make the marinade:

    Mix the curry paste, yogurt, chicken and salt together, cover and leave overnight in the fridge to absorb all the delicious flavors.

    Step 2

    Preheat a conventional oven to 220ºC or a fan-assisted one to 200ºC.

    Step 3

    Wipe the marinade off the chicken and place, piece by piece, onto a baking tray.

    Step 4

    Bake for 10 minutes or until slightly charred, but not cooked through.

    Step 5

    You are just trying to get some colour here because the chicken will finish cooking in the curry sauce.

    Step 6

    Set the tikka chicken aside while you make the sauce.

    Step 7

    Heat the curry paste in a saucepan.

    Step 8

    Add the onion and sweat slowly over a low heat for five to eight minutes or until the onion is translucent and soft.

    Step 9

    It is important to take the time to do this slowly because the onion will then release its natural sugars, producing a sweeter dish, but be careful not to do this over too high a heat because the curry paste will burn.

    Step 10

    Add the pasta and coconut milk and bring to the boil.

    Step 11

    Turn down the heat and add the tikka chicken.

    Step 12

    Cook over a low heat for five minutes or until the chicken is cooked through.

    Step 13

    Finish by stirring through the yogurt and coriander.

    Step 14

    To make the Fragrant Rice:

    Add the rice, a pinch of salt and the aromatics to a pan and cover with enough water to come 1cm over the top of the rice.

    Step 15

    Bring to the boil and simmer for eight minutes, covered.

    Step 16

    The rice should have absorbed almost all of the water, but still be a bit wet.

    Step 17

    Remove from the heat and leave to absorb the remaining water for 10 minutes, covered.

    Step 18

    Remove the cinnamon stick before serving with the curry. Chicken Tikka Masala Rice is ready to serve. Enjoy!

    • 1 whole chicken
    • 1 ground onion
    • 250 gm yogurt
    • 1/2 cup oil
    • 1/2 cup lemon juice
    • 10 green chilies
    • 2 tsp carom seeds (roasted & crushed)
    • 2 tsp cumin seeds (roasted & crushed)
    • 2 tsp red chili powder
    • 1 tsp garlic powder
    • 1 tsp ginger powder
    • 1/2 tsp ground nutmeg
    • 1/2 tsp ground mace
    • salt according to taste
    1. In a small bowl, combine together carom seeds, cumin seeds, ginger powder, garlic powder, salt, nutmeg, mace, chili powder and lemon juice.
    2. Apply this paste over the whole chicken.
    3. Marinate for 1 hour.
    4. Heat oil in deep pan.
    5. Add copped green chilies and fry for 1 minute.
    6. Now add marinated chicken and fry well from both sides for 10 minutes or until its change colour.
    7. Add yogurt and ground onion.
    8. Stir well.
    9. Reduce heat to low and cook for 30 minutes or until chicken is tender
    10. Cook on high flame for 5 minutes or until all water dries up.
    11. Transfer into a serving dish.

    Step 1

    Rinse and drain chicken properly and cut into 1-inch pieces.

    Step 2

    Heat oil in a large pan over medium heat then add butter in it.

    Then add chicken and season with red chili powder, cumin seeds, turmeric , coriander powder and salt.

  • Light & Crispy Rava Dosa Recipe: Perfect for Breakfast or Anytime!

     Rava Dosa

    Ingredients

    • 1/2 cup Rava (sooji)
    • 1/4 cup rice flour
    • 1/4 cup all purpose flour
    • 1 small Onion
    • 2 tbsp  fresh chopped coriander leaves
    • 4 curry leaves
    • 2  green chillies
    • 1/2 tsp salt
    • 3 cups water
    • 6 tbsp Oil for cooking

    How to make Rava Dosa:

    • Finely chop the onions, green chilli, coriander leaves and curry leaves.
    • Mix the rava , flours, salt and chopped ingredients with water in a large bowl.
    • Leave to soak for minimum half an hour.
    • Heat a non stick dosa tawa in a high flame for 1 minute.
    • Smear 1 teaspoon oil on the tawa with a clean white cloth.
    • Stir the batter once to mix well. Start spreading the batter as shown in the picture to fill the whole tawa. spread 1 teaspoon oil on the dosa.
    • Cook for 1 whole minute and turn and cook for 1 minute again.
    • Lower the flame and turn the dosa once again.
    • Remove the dosa on to a plate.
    • By now the tawa will be at right temperature for the next dosa.
    • Rava Dosa is ready to serve.
    • Serve hot with chutneys.

    Stir in cumin, ginger and chilli and cook gently for 1 minute.

    Step 5

    Add chicken and fry gently, turning occasionally, for about 10 minutes. Stir in any remaining marinade with stock and ground almonds.

    Step 6

    Cover and simmer for 15 minutes, or until chicken is cooked through.

    Step 7

    Add salt to taste.

    Step 8

    Scatter flaked almonds over chicken and garnish with flat-leaf parsley.Kashmiri Chicken is ready to eat. ENJOY 🙂

    Hyderabadi Murgh Haleem

    Try out this classic Hyderabad Murgh Haleem recipe.Very lips smacking recipe must try on Eid.

    • 1 kg chicken boneless (cut into cubes)
    • 1 kg cracked wheat (soaked in water for 2-3 hour then drained)
    • 1 cup vegetable oil or ghee
    • 1 cup plain yogurt
    • 2 onions (finely chopped)
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 2 tsp green chili paste
    • 2 tsp green coriander paste
    • 2 tbsp Lemon juice
    • 3 black cardamoms-seeds
    • 1/2 tsp cinnamon powder
    • 1 tsp red chili powder
    • 1 tbsp salt
    • 1 tsp chat masala

    For Garnishing

    • 4-5 green chilies (thinly sliced)
    • 1/2 cup mint leaves
    • 1- inch piece of ginger (thinly sliced)
    • 3-4 lemon wedges

    Directions

    1. In a bowl,add yogurt, lemon juice, green chili and coriander paste, cardamom and cinnamon powder, red chili powder, ginger-garlic paste &salt. Mix well and make a smooth paste.
    2. Marinate the chicken in this mixture and leave 3-4 hours.
    3. Add enough water to the wheat and cook till tender.
    4. When cool enough to handle, blend to a paste in a blender.
    5. Heat the oil and add the meat chicken mixture.
    6. Turn around over high heat, till opaque.
    7. Add 1 cup water in it,cook and covered over low heat till tender.
    8. Add the wheat paste and continue to cook another 20 minutes.
    9. Transfer into a serving bowl, sprinkle chat masala over the top.
    10. Garnish with mint leaves,green chilies and ginger slices. Hyderabadi Murgh Haleem is ready to serve. ENJOY!

    Serving Suggestions:
    Serve hot with naan.

    Boil the potatoes and mash them.

    Beat the egg whites till they are nice and foamy.

    Add the pepper, salt to the mashed potatoes and mix well.

    Now take the eggs and cut it into halves.

    Take a half and cover it with the potato mixture.

    Step 6

    Then dip it into the egg white and then roll it in the bread crumbs.

    Step 7

    Ensure that each piece is covered with potato, egg white and then bread crumbs evenly.

    Step 8

    Take a frying pan and pour oil enough for frying.
    When the oil is very hot add the eggs and fry till they a deep brown.

    Step 9

    Garnish with chopped coriander.Egg Tikka is ready to serve.
