    Reshmi Kebab Recipe

    • 2 Pounds skinless (boneless chicken breast halves – cut into 1-1/2 inch pieces)
    • 6 Almonds
    • 8 Cloves garlic
    • 6 Jalapeño peppers (seeded and chopped)
    • 1 Inch piece fresh ginger root (peeled)
    • 1 Lemon (juiced)
    • 1/2 Cup heavy cream
    • 1 Cup chopped fresh cilantro
    • 2 tbsp Butter
    • Salt to taste

    Method

    1. Soak almonds in water for about 15 to 20 minutes, drain.
    2. Put the almonds, peppers, garlic, ginger, and cilantro into the bowl of a food processor and blend it till smooth.
    3. Add salt to it and blend in lemon juice and cream.
    4. Place the mixture to a big, non metallic bowl.
    5. Place the chicken into the bowl and turn it to coat.
    6. Cover and marinate into the refrigerator for about 24 hours.
    7. Preheat the grill for high heat and lightly oil grate.
    8. Remove the meat from the marinade and thread onto the skewers.
    9. Brush chicken with butter and arrange the skewers on hot grate and cook it till cooked through. Reshmi Kabab are ready to serve.

    Serving Suggestions:
    Serve with Parathay, ring onion and chutney.

    Step 1

    Clean the chicken and cut in small pieces.

    Heat oil in a nonstick frying pan.

    Step 3

    Add the mustard seeds and the fennel seeds powder.

    After few minutes, add the ginger garlic paste and cook on low heat for 1-2 minutes.

    Step 5

    Now add the onions and allow them to cook till they are golden brown in color.

    Step 6

    Then add the chicken pieces and mix well.

    Step 7

    Sprinkle the garam masala, red chilli powder, turmeric powder and the salt and allow to cook for some time.

    Step 8

    Then add the cumin seeds, coriander powder and pepper powder , mix well and allow to cook some more.

    Step 9

    When the chicken is half cooked, add the coriander leaves and the tomatoes and mix well.

    Cover the pan and let the chicken cook well.

    Potato Peas Cutlets Recipe

    • 1 cup boiled peas (mashed)
    • 4 Potatoes (boiled)
    • 2 tbsp fresh coriander leaves (finely chopped)
    • 2 green chilies (thinly sliced)
    • 1 Eggs
    • 1 cup Bread crumbs
    • Oil for frying
    • 1/2 tsp cumin seeds (crushed)
    • 1/2 tsp black pepper (freshly ground)
    • Salt To taste

    Method

    1. In a large bowl, combine boiled potatoes, mashed peas, green chilies, coriander leaves, black pepper,and salt.
    2. Shape mixture into cutlets.
    3. Break an egg and beat well.
    4. Dip the cutlets in the egg and then roll it in the bread crumbs.
    5. Deep fry in pre-heated oil over medium heat for 4-5 minutes or until golden brown.
    6. Remove from the oil and drain on paper towel.
    7. Garnish with Salad leaves. Potato Peas Cutlets are ready to serve.

    Serving Suggestions:
    Serve with Tomato Chutney or mayo garlic sauce.

    Pre-heat the convection oven at 200 degrees.

    Place the mutton pieces in the grill tray and cook on combination mode for 16 minutes at 200 degrees.

    Then brown it on convection mode on 200 degrees for 5 minutes.

    • 1 teaspoon vanilla essence

    For Chocolate Ganache

    • 1 cup semisweet chocolate,chopped

    • Hazelnuts or walnuts

    To Make Cake Sponge

    Step 1

    Heat oven to 350 degree F.

    Step 2

    Grease and flour two (9-inch) round baking pans.

    Step 3

    In a large bowl, mix together sugar, flour, cocoa powder, baking powder and salt.

    Step 4

    Add milk, eggs, oil and vanilla. Stir with spatula for few minutes or until the batter is smooth and no lumps remain.

    Step 5

    Now add baking soda and mix well.

    Step 6

    Stir in the boiling water.

    Step 7

    Pour batter equally into prepared baking pans.

    Step 8

    Bake in the preheated oven for 30-35 minutes or until a tooth-pick inserted in the center comes out clean.

    Step 9

    Let it cool for 10 minutes then remove from the pans
    to wire racks.

    Step 10

    Allow to cool completely.Chocolate Cake Sponge is ready 🙂

    To Make The Chocolate Mousse:

    Meanwhile cake is oven, let’s prepare the Chocolate Mousse.

    Step 1

    Place heavy cream in a large bowl. Beat for 10-12
    minutes or until it forms stiff peaks.

    Step 2

    Place in the refrigerator until set.

    Step 3

    Take a small bowl, add egg yolk and sugar in it. Beat 3-4 minutes or until it becomes thick and pale in color and the sugar fully dissolved.

    Step 4

    Keep aside.

    Step 5

    Take a small pan and fill it with an inch of water.

    Step 6

    Bring it to a simmer.

    Step 7

    Place a small heat-proof bowl over the saucepan.

    Step 8

    Add the chocolate, water, and butter. Stir and cook on very low heat for few minutes or until the chocolate is melted.

    Step 9

    Spoon 1/4 of the chocolate mixture into the egg yolk
    mixture. Stir until well combined.

    Step 10

    Pour the egg yolk mixture back into the small bowl over the simmering water in the saucepan with the remaining chocolate mixture.

    Step 11

    Stir in the vanilla extract.

    Step 12

    Keep stirring and cook over low heat for 2-3 minutes or until the mixture thickens.

    Step 13

    Let it cool for few minutes; stirring frequently.

    Step 14

    Place egg whites in another small bowl. Beat until it forms stiff peaks.

    Step 15

    Fold the egg white in the cooled chocolate mixture.

    Step 16

    Now fold into the whipped heavy cream.

    Note: Be careful not to over mix otherwise the heavy cream will lose its texture.

    To Assemble The Cake

    Step 1

    Cut the top dome texture of the cake sponges. This will help you to get a flat and even surface.

    Step 2

    Arrange the bottom layer of the cake in the spring form pan.

    Step 3

    Pour the thick chocolate mousse over the cake sponge.

    Step 4

    Spread evenly with a spatula.

    Step 5

    Now cover the pan with cling wrap or any plastic covering.

    Step 6

    Place the pan in the refrigerator for 20 minutes or until set.

    Step 7

    Remove the pan and gently place the second cake sponge on top of the mousse.

    Step 8

    Cover again and keep in the refrigerator for 30 minutes or until firm or set.

    To Make Chocolate Ganache

    Step 1

    Place the chocolate in a medium bowl.

    Step 2

    Heat the heavy cream in a small sauce pan over medium heat.

    Step 3

    Bring just to a boil.

    Step 4

    When the cream has come to a boil, immediately pour over the chopped chocolate and stir until smooth.

    Step 5

    Stir in the 1/2 teaspoon of vanilla essence.

    Step 6

    Let it cool slightly.

    Step 7

    When cool, pour the chocolate ganache in the the center of the cake, it will slowly spread itself.

    Step 8

    Finally, cover the cake and refrigerate overnight or until the cake sets.

    To Decorate The Chocolate Mousse Cake:

    Step 1

    When the cake has set, decorate the cake with chocolate curls and hazelnuts or walnuts.

    Slide the cake out of the pan and transfer to a cake plate. Mouthwatering Chocolate Mousse Cake is ready to eat!! ENJOY 😉

    1. Tip To Assemble the Cake: You will need a spring-form pan or a cake ring to hold everything neatly as the cake sets. So that you can later easily un-mold your cake once the mousse has set without ruining the delicate layers. If you don’t have a spring-form or cake ring, you can do this in a regular pan, make sure it is the same size as your cake. Serving out of a regular pan can be a bit tricky though as it will be hard to lift out the cake neatly with that soft creamy mousse in the middle.
    2. Tip To Make Chocolate Mousse: If you want the mousse layer to show neatly and evenly through the cake, take an offset spatula or cut out a small rectangular piece off a tetra pack or hard paper and run it over the mousse around the circumference of the cake to remove the excess mousse, and give it a smoother finish.
    3. Tip To Decorate The Cake: You can top the cake with whipped cream, cherries any type of nuts or leave it as is.
    4. Tip To Make Chocolate Ganache: While making Chocolate ganache,don’t over boil the cream because if it boils for a few seconds, it will boil out of the pot.

       

    5. Tip To Make Thicker Ganache: If you want a thicker consistency for piping the ganache, just let it cool for a longer time.

    Step 1

    Heat ghee or butter in a large skillet or pan over medium heat.

    Step 2

    Saute onions for 4-5 minutes or until caramelized

    Step 3

    Add ginger garlic paste and chicken and cook for 10-15 minutes or until chicken is lightly browned.

    Step 4

    Now add tomato, red pepper, cumin, coriander powder, turmeric, cardamom powder, cloves, black pepper cons and salt.

    Step 5

    Cook and stir for 20 minutes or until all liquid dry off.

    Step 6

    Now add 2 cups of water. Bring to a boil then reduce heat to low.

    Step 7

    Cover with a lid and simmer on low heat for 1 hour 20 minutes or until chicken is tender.

    Step 8

    Remove the lid. Add yogurt and cook on high heat for 10 minutes or until gravy is thickened.

    Ingredients

    • 500 gm mutton mince
    • 1/2 cup oil
    • 2 onions (finely chopped)
    • 3 tomatoes (finely chopped)
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 tsp red chili powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1/2 tsp garam masala powder
    • salt to taste

    For Garnishing:

    • 3-4 green chilies, thinly sliced
    • 1/4 cup fresh coriander leaves

     

    Directions:

    Step 1

    Heat oil in a pan or wok, add chopped onions and fry for 3-4 minutes.

    Step 2

    Then add ginger-garlic paste and stir fry for few seconds.

    Step 3

    Now put mince into it and cook for 5 minutes.

    Step 4

    Then add chopped tomatoes and let the tomato turn soft.

    Step 5

    Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well.

    Step 6

    Add 2 cups of water, bring to a boil then reduce the heat.

    Step 7

    Put the lid on and cook for 40-45 minutes or until mince cooked thoroughly.

    Step 8

    Then, uncover, and stir fry 4-5 minutes or until water is completely
    absorbed.

    Step 9

    Remove from the heat and transfer into the serving bowl.

    Step 10

    Sprinkle garam masala powder over the top.

    Step 11

    Garnish with green chilies and fresh coriander leaves. Mutton Keema is ready to serve.

    Serving Suggestions:

    • Serve with Tandoori paratha, roti or boiled rice.

    After eating it, I often thought to make it at home and finally now I tried and got it very similar to that actual taste. It has a little spicy taste due to use of green chilies. My whole family also like it. You can adjust the seasoning according to your taste. Goes great with Roghni Naan, salad and Mint raita. A scrumptious dinner !!

    Tawa Gosht

    • 1 kg lamb or mutton
    • 1 onion (finely chopped)
    • 2 to matoes (finely chopped)
    • 1 cup plain yogurt
    • 1/2 cup desi ghee
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon dry roasted cumin
    • 1 tablespoon red chili powder
    • 1 tablespoon coriander powder
    • 1 teaspoon garam masala powder
    • salt to taste

    For Garnishing

    • 4-6 green chilies (thinly sliced)
    • 1 to mato (cut into rounds)
    • 2 tablespoon green coriander (chopped)
    • 1 inch piece of ginger (julienned)

    Directions

    1. Place meat in a large bowl. Add ginger-garlic paste, yogurt, cumin, coriander, salt and red chilli powder.Toss to coat evenly.
    2. Cover and marinate for at least 4 hours or overnight.
    3. Now heat ghee or butter on a large griddle (tawa) over medium heat.
    4. Add chopped onions. Sauté for 3-4 minutes or until they change colour.
    5. Now add tomatoes and meat.Stir well.
    6. Cook, covered on very low heat for 1 hour or until meat is tender.
    7. Keep stirring occasionally and add little water if mixture begins to stick.
    8. Cook on high heat for 10 minutes or until all liquids dry off and oil comes on top.
    9. Sprinkle garam masala over it.
    10. Garnish with green chillies, fresh green coriander, tomato and ginger slices.Delicious Tawa Gosht is ready to serve. ENJOY 🙂

    Serving Suggestions:
    Serve with naan, salad and mint raita.

    • 1/2 teaspoon red pepper flakes
    • 1/4 teaspoon sugar (optional)

    • oil for frying

    FOR MANCHURIAN SAUCE

    • 1 cup chicken stock (yakhni)
    • 4 tablespoon cooking oil
    • 4 tablespoon tomato ketchup
    • 2 teaspoon tomato puree
    • 1 teaspoon ground ginger
    • 1 teaspoon garlic paste
    • 1 teaspoon sugar
    • 1 teaspoon soy sauce
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon red pepper, crushed
    • salt according to taste
    • 2 teaspoon corn flour mixed with water to make a paste

    For EGG FRIED RICE:

    • 4 cups boiled rice
    • 4 tablespoon cooking oil
    • 4 eggs, lightly beaten
    • 2 spring onions, thinly sliced
    • 1 green pepper, thinly sliced
    • 1 large carrot, thinly sliced or grated
    • 1 cup chopped cabbage
    • 2 teaspoon soy sauce
    • 1 teaspoon black pepper
    • salt according to taste

    TO MAKE MANCHURIAN

    Step 1

    Take a large bowl, add chicken, egg, cornflour, soy sauce, ginger garlic paste, suagr, salt, black and red pepper. Mix well.

    Step 2

    Cover and marinate for 30 minutes to blend flavors.

    Step 3

    Now heat oil in a large pan over medium heat. Fry chicken pieces for 5-7 minutes or until crispy and golden brown.

    Step 4

    Set aside and keep warm.

    Step 5

    Meanwhile, heat 4 tablespoon oil in another wok or pan.

    Step 6

    Add ginger garlic paste. Cook and stir for a minute or until aromatic.

    Step 7

    Now stir in the tomato paste, sugar and tomato ketchup.

    Step 8

    Season with salt and pepper.

    Step 9

    Cook for 5 minutes, then add the chicken stock (yakhni).

    Step 10

    Bring to a boil.

    Step 11

    Reduce the heat to medium low. Let it simmer for 2- 4 minutes

    Step 12

    Now add the corn flour paste in it. Keep stirring.

    Step 13

    Cook for 2 minutes or until sauce is thickened.Now add the fried chicken with a splash of soya sauce.Stir well.

    Step 14

    Adjust the seasoning. Cook and stir another 2 minutes on low heat.

    Step 15

    Turn the heat off and take it out in a warm serving dish.Chicken Manchurian is ready to serve.

    TO MAKE EGG FRIED RICE:

    Step 1

    Beat 4 eggs in a small bowl. Add some salt and pepper according to your taste. Mix well and set aside.

    Step 2

    Heat the 4 tablespoon oil in a large skillet or wok over high heat.

    Step 3

    Pour egg mixture in hot oil. Cook and stir for 2-3 minutes or scramble it.

    Step 4

    Now add green onion, carrot, cabbage and green pepper. Cook and stir for 2-3 minutes.

    Step 5

    Now add the cooked rice. Cook and stir fry for 2 minutes.

    Step 6

    Drizzle soya sauce over it.

    Step 7

    Season with salt and pepper.Mix well.

    Step 8

    Reduce the heat on very low and cover the skillet with a lid.

    Step 9

    Let it cook for 10 minutes or until done.

    Step 10

    Dish it out. Delicious Egg Fried Rice are ready to serve. ENJOY !!
