    You must be wondering is it a box or a patty 😉

    The unique and interesting name is because of the way the these patties are folded and made, like wrapping a box. A savory veggie filling is put inside samosa wrappers and then deep fried.

    So what exactly are Very Veggie Box Patties? 

    If you are not familiar with box Patties, they are a deep-fried Pakistani pastry snack usually filled with something savory. They are called box patties because their shape resembles a square box which is made by overlapping two samosa wrapper sheets. They are loved all throughout the year but they become almost a staple in every household during Ramadan on the Iftar tables.

    Ingredients in This Very Veggie Box Patties?

    Not only are these simple to make (they require nothing more than few veggies, seasoning and samosa sheets), but the stuffing possibilities are endless!

    1. Veggies: I used carrots, green peas, sweet corn, capsicum, boiled potatoes, cabbage.
    2. Olives: Green and Black Olives
    3. Seasoning: Black pepper, red Pepper flakes, salt
    4. Sauce: red chili Sauce and soy sauce
    That’s all you need to make this Very Veggie Box Patties ! Surprisingly simple ?

    How to Make this Veggie Box Patties:

    This Very Veggie Box Patties recipe is so easy to make and simple that definitely it’s worth trying.

    1. Prepare the Filling: I start off with sautéing veggies to which I add boiled green peas, potatoes, carrot, capsicum, cabbage and sweet corn and olives. Then season it with salt, black pepper, red chili flakes, soy sauce and for an extra kick red chili sauce . 

    2. Prepare the Box Patties: Then put two samosa sheets in a cross pattern, one over the other so they make a + (plus) sign. Then put some veggie filling in the middle. Fold each of the edges one by one over each creating a parcel.
    3. Frying: Then deep fry on medium flame till crispy and golden. You can fry these in advance and keep them in the oven on warm mode and serve when required.

    Can I play around with the filling?

    Yes, you can! In this recipe, I have used vegetables carrot, cabbage, capsicum, corn and olives. Some options that I suggest are:

    • For a meaty version use chicken or beef instead of veggies or use shredded cottage cheese (paneer) instead of meat for a vegetarian option. Just make sure that the protein in the filling is cooked through. As the box patties are only fried for a few minutes, I wouldn’t suggest to put raw meat.
    • Skip the vegetables, or add more vegetables. Such as French beans carrots, black olives, green chilies, mushrooms or broccoli. 
    • If you are using large vegetables like broccoli or carrots, make sure they are finely chopped. Pulsing them in the processor for a few seconds will work.
    • Add some taco seasoning for a Mexican twist or experiment with other spice blends. 😛
    • To give a different taste to the patties box, you can also add pizza seasoning or Oregano and Chili Flakes to the vegetable stuffing.

    Other variations to this Very Veggie Box Patties?

    • Healthy Alternative: These square shaped patties are filled with a flavorful veggie filling. The chewiness of the veggie stuffing and the crunchiness of the covering, is a delicious combination. There are two options, baking or frying. If you do not like oil, you can bake it in pre-heated oven for 15 minutes or until crispy and golden brown. Deep frying obviously gives best results but they can also be baked or air-fried.
    • Wrappers: If you do not get samosa sheets , then cut the spring roll sheets into strips. The trimmings you can fry and keep them to garnish your soups or salads.
    • Extra Crispness: For extra crispiness, roll them with Bread Crumbs before frying.

    Can I freeze them? 

    Definitely!

    1. Grease a tray (can be plastic or a baking tray) and lay out the box patties one by one on it, making sure there is space between each one of them.
    2. Keep them in the freezer for an hour or so till they are partially frozen. Once they are frozen, carefully remove them from the tray and place them in a plastic box or  zip lock bags.
    3. To make the box patties, just take them out of the freezer, thawed and deep fry on medium heat until crispy and golden brown. 
    4. This recipe actually makes a large batch that can be easily frozen and is just the thing to have on hand for impromptu guests or if you are in the mood for a light snack to enjoy with your evening tea.

    Ingredients

    For Samosa Filling:

    • 250 gm boneless chicken cut into strips
    • 2 tablespoon vegetable oil
    • 2 tablespoon fresh coriander leaves
    • 2 tablespoon fresh mint leaves
    • 1 teaspoon ginger garlic paste
    • 2 green onions thinly sliced
    • 4 green chilies thinly sliced
    • 1 tablespoon fresh cream
    • 1 tablespoon mayonnaise
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon black pepper
    • salt to taste

    For Samosa

    • 12 samosa sheets samosa patti’s
    • oil for deep frying

    Instructions

    • Heat 2 tablespoon oil in a frying pan. Add ginger garlic paste and fry for few minutes.
    • When the aroma comes out, add chicken strips.
    • Cover with a lid and cook on low heat for 5-8 minutes or until chicken is no longer pink.
    • When all water dries up, take it out in a dish.
    • Allow to cool and shred the cooked chicken.
    • Now add green chilies, green onion, mint and coriander leaves.
    • Season with cumin powder, black pepper and salt .
    • Stir in the mayonnaise and fresh cream.
    • Place 1 teaspoon of filling onto a samosa sheet ( samosa patti).
    • Fold samosa sheet around filling into a triangular shape. Seal edges with egg yolks or cold water.
    • Repeat this method with remaining ingredients.
    • Heat oil in a deep pan over medium heat.
    • Fry Reshmi samosa’s in hot oil for 1-2 minutes or until they turn crispy and golden brown.
    • Drain on absorbent paper. Reshmi Samosa is ready to serve. ENJOY!!

    Notes

    Serve with imli ki chutney.

    • 2 tablespoon fresh coriander leaves

    • 1 tablespoon achar masala
    • 1 teaspoon lemon juice
    • 1 teaspoon dry mango powder
    • 1 teaspoon crushed red chili
    • salt to taste
    • For Samosa
    • samosa wraps as required
    • oil for frying

    Instructions

    • Mash potatoes in a large bowl.
    • Add onion, fresh coriander, mint, green chilies, and lemon juice.
    • Season with achar masala, dry mango powder, red chili and salt. Mix until well combined.
    • Place a samosa wrap on a clean, dry surface and put a portion of the potato filling in one corner of the samosa patti and fold into a triangle.
    • Apply a little water at the edges and seal it.
    • Repeat with the remaining wraps and stuffing to make more samosas.
    • Heat the oil in a pan over medium heat.
    • Deep-fry the samosas in batches till they turn golden brown in colour from all sides.
    • Drain on absorbent paper. Achari Aloo Samosa is ready to serve. ENJOY!

    Directions:

    Step 1

    To Make Dough:Place dough ingredients in a large bowl. Knead dough with water.

    Step 2

    Cover the dough wet a wet cloth.

    Step 3

    Leave it for 30 minutes.

    Step 4

    To Make Filling: Mash potatoes with hand so we have some potato pieces too.

    Step 5

    Heat 1 tablespoon oil in a frying pan over medium heat.

    Step 6

    Add boiled potato and mix all ingredients.

    Step 7

    Adjust seasoning according to your taste.

    Step 8

    Take it in a bowl and let it cool before stuffing in samosa patti.

    Step 9

    To Proceed: Make small balls out of the dough.

    Step 10

    Roll out round and cut from centre and divide it in two.

    Step 11

    Put 2 tablespoon filling on samosa patti. Give it shape of samosa.

    Step 12

    Heat oil in a deep pan or karahi.

    For Filling: Heat the oil in a frying pan, add the onion and garlic, mix in the spices and fry until soft.

    Step 4

    For Dough: Mix flour and salt into a large bowl.

    Make a well into the center and add the oil and enough water to make a firm dough.

    Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.

    Step 7

    Divide the pastry into 12 equal pieces.

    Step 8

    Roll each piece into a ball and roll out into a circle of 15 cm.

    Step 9

    Divide this circle into two equal pieces with a knife.

    Step 10

    Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.

    Step 11

    Fill the cases with a tbsp of filling and press the two dampened edges together to seal the top of the cone.

    Step 12

    Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel. Easy Samosa is ready to serve.

    Chicken Samosa

    Samosas are a classic Pakistani street food but are also incredibly popular at home. The traditional ones are usually filled with lamb mince, but there are many vegetarian variations as well. This recipe is for a shredded chicken filling that is really light but flavorful at the same time.

    Crispy, crunchy, delicious and irresistible chicken samosa’s. These little savory packages are great to have for entertaining. It’s also possible to prepare it ahead of time and keep frozen until when you need it. Just thaw it out at room temperature then deep-fry.

    For pastry:

    • 4 cups plain flour
    • 1 tsp salt
    • 4 tbsp vegetable oil
    • cold water
    • 1/2 cup oil mixed with
    • 2 tbsp flour to spread on pastry, extra flour for rolling

    For filling:

    • 500 gm minced chicken breast
    • 1 bunch spring onions, finely chopped
    • 2 garlic cloves, minced
    • 2 green chilies, finely chopped
    • 1 tablespoon Worcestershire Sauce
    • 1 teaspoon chopped ginger
    • 1 teaspoon garam masala powder
    • 1 teaspoon mustard paste
    • 1/2 cup chopped coriander leaves
    • Salt to taste

    For Samosa

    • Flour and water paste
    • Pastry
    • Chicken Filling

    To Make pastry:

    Step 1

    Mix salt oil into the flour until it is crumbly, add enough cold water for a chapatti-like dough.

    Step 2

    Divide the dough into about 20-25 balls, Roll out with into 3 inch circles.

    Step 3

    Spread oil and flour mixture over one roti, place the second one one top, pressing together gently, repeat until you have pile of seven rotis.

    Step 4

    Roll out the whole pile until it is 7-8 inch in diameter, use extra flour during rolling if necessary.

    Step 5

    Place on a medium hot tawa, cook lightly on 1 side then turn the roti over and cook lightly on the other side for approximately 20 seconds
    To Make Chicken Filling:

    Step 1

    Dry cook the minced chicken with garlic, ginger, chillies and salt, until all the water evaporates, break the lumps if they form.

    Step 2

    Add Worcestershire sauce, mustard mix, and remove from heat when cooked, let it cool

    Step 3

    Add garam masala, onions and coriander. Mix well.

    To Make Chicken Samosa:

    Step 1

    Fold one end over in a diagonal to create a triangle stick down using the flour and water paste, then fold again, the other way, sticking it down with the paste.

    Step 2

    Fill the triangle with the filling ; fold the flap, glue down using the flour paste.

    Step 3

    Repeat for until all the filling is used up. Deep fry 3-4 at a time until golden.

    Step 4

    Remove from the oil and drain on paper towel. Chicken samosa is ready to serve. ENJOY!!

    • 2 potatoes
    • 2 green chillies, chopped

    • 3-4 flakes of garlic
    • 6 tsp green chutney
    • 4 tsp tomato ketchup
    • salt to taste

    Step 1

    Boil and mash potatoes.

    Step 2

    Add to mash potatoes chilli powder, turmeric powder, green chillies, garlic(crushed) and salt. Mix well the mixture and keep aside.

    Step 3

    First take breads and place a small bowl on the bread and press it and the round piece of bread comes out.

    Step 4

    Repeat for all breads.

    Step 5

    Take a fistful of dough and roll into 1/4″ thick 5″ diameter round.

    Step 6

    Then take a piece of round bread and place on it the mixture and then place the bread on the rolled dough such that the mixture part comes on the rolled dough.

    Step 7

    On the upper part of bread apply green chutney and then place another round piece of bread on it and apply ketchup on it and then close the whole thing with the rolled dough and keep a side.

    Step 8

    Repeat for remaining breads and rolls.

    Step 9

    Take oil in the pan. Fry the pieces one by one till golden brown.

    Step 10

    After frying cut it from the middle in to 2 parts. Bread Samosa Sandwich is ready to serve.

    Heat oil in a pan,add cumin seeds. Add green peas, ginger and green chillies. Mix well.

    When green peas are cooked, add coriander powder, red chilli powder, chat masala and salt, mix well.

    Prepare the dough. Put 2 tbsp oil, flour and water in a bowl. Knead well and make dough, roll lengthwise.

    Heat oil in a deep frying pan. Drop potlis, gently, into the hot oil and deep fry till golden brown.

    Remove from oil. Drain on clean kitchen towels. Delicious potli samosa is ready to serve.
