    Imagine if you will that a lamb meat patty married a corn fritter and they had babies = Lamb corn Fritters. I’m not sure why I hadn’t thought of this sooner. They are healthier than regular lamb fritters; being half meat and half veggie and they are super juicy and flavorful.

    Here’s a healthy recipe for Lamb Corn Fritters – without deep frying! Because nobody likes soggy fritters. And nobody wants to deal with a vat of oil tonight! Dinner really doesn’t get any easier than this! These Lamb Corn Fritters are so easy, you can practically whip up these juicy fritters in no time!

    These fritters are ideal to make with fresh corn cut off the cob, but can be made with canned or frozen corn. Serve for breakfast, lunch, dinner!

    What you need to make really great, Lamb Corn Fritters

    Here’s what you need to make these Lamb Corn fritters:

    Ground Lamb: I like to grind my lamb at a ratio of about 80% lean. I feel this brings out the most flavor. The best places to buy fresh ground lamb is your local butcher shop. If you want to use lamb, ask your butcher to grind it for you or, to make your own ground lamb, start with a lean cut. You can also use lean ground beef or turkey instead.
    Corn: as noted above, fresh is better for both flavor and crispiness. But canned and frozen work too, you just need to make an effort to dry it out as much as you can.
    Egg: egg to bind the meat and corns. It will help to get mince to stick together better.
    Ricotta Cheese: – for a good hit of savory flavor AND to make the fritters extra juicy and flavorful!
    Green Masala: Green onion, green chilies and coriander – for a hit of freshness.
    Seasoning: salt, black pepper and red pepper flakes (my fav)
    Olive oil: to sauté

    How to make Lamb Corn Fritters

    And here’s how to make them.

    1. Mixing: Place lamb mince and corn in a bowl. Then add 1 lb fresh ground lamb. 1 egg, finely sliced green chilies, green onions, fresh coriander, salt, black pepper, red pepper and 1 cup ricotta cheese. Mix until well combined. Let it rest for 15 minutes.
    2. Cooking: Heat a large non-stick skillet over medium heat and add 2 Tbsp. extra light olive oil. Place a heaping tablespoon of the mixture into your hand and form a oval or round shaped patty about 1/3-inch thick. Cook over medium heat uncovered for 5-7 minutes, then flip, cover and cook for another 5 minutes more or until meat cooked through. Add more oil to the pan as needed for subsequent batches.
    3. The fritters take a good 12-15 minutes to cook so they’re golden on the outside and for the raw meat to cook through (remember, these are fritters so they are not very thick).
    4. Pro Tip: You can use an ice cream scooper with a lever to scoop the batter into the pan. Then flatten using a greased spatula! But don’t crowd the skillet, adding more oil to pan if required.

     Lamb burgers are a wonderful alternative to beef burgers and are incredibly easy to make and the spicy rub gives full-on Asian flavour. They can be served with homemade coleslaw, oven-baked Potato Wedges or with a delicious Homemade Hummus.

    The lamb, however lean, is rich, packed with protein and nutrients and earthy in flavor. Lamb and herbs are both champions of spring and when combined into a burger and met with a hot grill or pan it marks the intersection of spring and summer.

    The burger is simply adorned with creamy cabbage coleslaw, and a tomato seared over the grill to encourage sweetness and to create a texture that melts into the burger. This is the sort of burger that calls for a soft bun; a brioche or potato roll are both great contenders.

    These burgers do not fall apart. However, if you want them more dense and hard you can use organic cornstarch. Buy organic to stay away from nasty GMOs.

    This recipe is really quite simple and can easily be doubled or tripled to feed a crowd. Use whatever mix of fresh herbs you have on hand keeping to mostly the light leafy ones like mint (lamb LOVES mint) parsley, chives, dill, basil, etc. The lamb mince gives these burgers an excellent texture, but the recipe works equally well with minced beef or chicken, turkey.

    It actually doubles as the perfect party food because you can prepare and cook the burgers and coleslaw in advance and just heat them up and prepare the burger buns when needed so you spend more time with guests rather than in the kitchen.     Some Tips to make The Tasty Homemade Lamb Burgers

    I’ve added the full recipe below. However here are a few tips…

    1. Keep it simple – There are lots of recipes out there that add all sorts to the burgers. In my opinion it’s just not necessary. I use just few simple ingredients – lamb mince, herb seasoning (my fav seasoning), little cheese, egg and bread crumbs.
    2. That said, once you can make a great basic burger than why not start having a play with flavorings, you can add all sorts of herbs and spices. I even sometimes go for a hidden cheesy center!
    3. Don’t go too lean with your mince. There’s a bit of olive oil added to meat to tenderize and add in a bit of fat. I love the how lean lamb is but for the grill a bit of fat helps to ensure the burgers stay tender and juicy.
    4. In all my other recipes with mince I use extra lean so cut down on the fat. However, when you’re making something so simple a little extra fat tastes better.
    5. The better the mince the better the burger. These burgers are simple lamb mince with herbs to enhance the flavour. If you buy rubbish mince then there’s no disguising it with other ingredients.
    6. Don’t play around with it while it’s cooking. The more you play with it, the more of the juices will flow out and it’ll make your burger drier.

    For anyone who really likes burgers, try this recipe, you will love these Lamb Burgers, the perfect, protein-packed meal.Lamb burgers make a great change from beef and the spicy rub gives full-on Asian flavour And they’re reliably tender and juicy, even when cooked to well done.

    Ingredients

    For The Burger Patties

    • 500 gm minced lamb
    • 1 small onion minced
    • 1 egg lightly beaten
    • 1 tablespoon tomato ketchup
    • 2 tablspoon choped mint leaves
    • 2 tablespoon chopped freshly parlsey
    • 1/4 cup grated cheddar cheese optional
    • 1/4 cup bread crumbs
    • a pinch Black Pepper
    • 1 teaspoon dried basil
    • 1/2 teaspoon crushed red chili
    • salt to taste
    • 2 teaspoon olive oil

    For The Burger

    • 4 burger buns
    • 1 cup coleslaw salad
    • few tomato slices
    • salad leaves

    For Coleslaw

    • 1 cup shredded cabbage
    • 1/2 cup mayonnaise
    • 1 small carrot grated
    • 1 teaspoon white sugar
    • a pinch of salt and pepper

    Instructions

    To make Coleslaw

    • Make coleslaw by combining all the ingredients in a mixing bowl.
    • Mix until well combined.
    • Top with fresh mint leaves to add a delicious flavour to your lamb burgers.

    To Make Lamb Burgers

    • Preheat the oven to 200 degree C.
    • Lightly grease a baking tray with olive oil.
    • For the dry rub, pound all the ingredients in a pestle and mortar until combined.
    • Take it out in a mixing bowl and divide the minced mixture into 4 pieces.
    • Pat each piece into a ball then squash into a burger, about 1.5 cm thick.
    • Place the burgers on the greased baking tray. Drizzle some olive oil over the burger patties and cook in the oven for 20 to 30 minutes, depending on how well you like your burgers done.
    • You can cook burgers on your barbecue grill or in a griddle pan for 6 to 7 minutes each side, or until done to your liking.
    • Don’t worry if you think they look burnt, that’s just a combination of the spices, the caramelising lamb fat and the smoke.
    • When the burgers are nearly ready, toast the buns on the side of the barbecue or griddle pan.
    • To serve, spread some coleslaw on the toasted buns, top with the burger patties, tomato and olives and squash them into the buns. Enjoy!!

    Serve this really tasty, easy homemade burger recipe with your favorite toppings.
    Extra-Bonus Tips:
    For the salad, place the lettuce leaves, mint and edible flowers in a bowl, dress with the lemon juice and extra virgin olive oil and tap over the pomegranate seeds to add little capsules of sweetness. Delicious!

    The days are getting much warmer now and my family always looks forward for light and comforting food. Dinner is the only time when everybody gets to gather around and have meal as a family. So I always plan to cook something simple and most importantly light and healthy.

    Last week, I made the world’s most amazing Meatballs in a tomato sauce with garlic bread on the side – where’s my invitation to go on Masterchef??  💁🏻 lol 😛

     I like to cook meatballs in sauce! These Italian flavored  meatballs in tomato sauce are my new favorite! 😀 ☺

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    Today, I come up with a new recipe: “Restaurant Style Lahori Mutton Karahi “. It is one of most popular Pakistani dish that you will come across almost every Pakistani restaurant menu anywhere in the world.

    Lahore is famous for its culturally enriched food items.. impossible to be on diet there 😛 lol. People here in Lahore are known as food lover, which is why many new restaurants are constantly opening.

    As all of you know, I always tempted to try popular dishes at home, and perfecting it as possible as I could. One among them was this “Restaurant Style Lahori Mutton Karahi”.

    Mutton Karahi is a specialty of Lahori food, this dish is made by stir-frying small cubes of lamb or mutton with tomatoes, green chilies, ginger, and garlic in a karahi, the wok-like pan that gives the dish its name.I made it with a less fat. But taste was so good and excellent. Meat was so tender, juicy, deeply marinated in the masala (gravy) and uniformly cooked.

    Very simple and lip smacking dish for anyone who love to have spicy treat occasionally. Its so simple that if you have ingredients in hand then Ready get set go.

    It pairs the best with butter naan, or simply plain naan and may be served along with rice, tandoor roti and even homemade chapati’s along with zeera or mint raita and onion rings.

    • 1 kg lamb meat, cut into small pieces
    • 250 gm lamb fat
    • 4 tablespoon oil
    • 1 cup sour yogurt
    • 1 large onion
    • 8 green chilies, cut into halves
    • 3 tablespoon ginger paste
    • 2 tablespoon garlic paste
    • 2 teaspoon cumin seeds, roasted & crushed
    • 1 teaspoon black pepper, freshly crushed
    • salt to taste
    • Coriander leaves, for garnishing

    Directions:

    Step 1

    Place onion, garlic and ginger paste in a blender. Blend until smooth.

    Step 2

    Put lamb fat in a wok or karahi and heat it up until it starts melt.

    Step 3

    Now add onion-ginger-garlic paste, lamb meat and salt.

    Step 4

    Cook and stir for few minutes then add 2 cups water.

    Step 5

    Cover the wok and cook on low flame for 45 minutes or until lamb is cooked through.

    Step 6

    Now increase the flame and cook for 10 minutes or until all the water has dried.

    Step 7

    Decrease the flame and add oil.

    Step 8

    Now add sour yogurt. Cook on high flame for another 10 minutes or until curry is thickened.

    Step 9

    Now add cumin, black pepper and whole green chilies.

    Step 10

    Cover and put on dum for 5 minutes or till oil separate.

    Step 11

    Garnish with chopped coriander.Lamb Karahi is ready to serve. ENJOY!

    • 1/2 teaspoon coriander seeds
    • 4 green cardamoms
    • 1 medium cinnamon stick
    • Salt To taste
    • 6 cups water

    For Champ Pulao:

    • 2 cups basmati rice
    • 2 small onions, thinly sliced
    • 3 tablespoon butter or ghee or oil
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 3 tomatoes, chopped
    • 3 green chilies
    • 1 teaspoon cumin seeds,(zeera)
    • 1 teaspoon garam masala
    • 1 teaspoon red chili powder
    • 10 black pepper corns
    • 2 bay leaves
    • few drops of lemon
    • salt to taste

    Step 1

    Rinse rice with few changes of water.

    Step 2

    Soak in water for 30 minutes.

    Step 3

    Now take a pressure cooker or large pot, add all stock(yakhni) ingredients in it.

    Step 4

    Cook for 40 minutes or until meat is tender.

    Step 5

    Separate mutton chops(champ) in a Separate plate with cloves of garlic we add in.

    Step 6

    Measure the 4 cups stock and set aside.

    Step 7

    Heat the oil or ghee in a large pot over medium heat.

    Step 8

    Add onions, cook for few minutes when its turning pink add cumin seeds, bay leaves, blackpepper.

    Step 9

    Cook for 2 minutes or until onion turn golden brown.

    Step 10

    Add ginger garlic paste. Cook and stir mutton chops(champ) and squeeze the cloves of garlic.

    Step 11

    Cook for 5 minutes then add tomatoes.Stir well.

    Step 12

    Cook and stir with red chilli and garam masala.

    Step 13

    Now add mutton stock(yakhni), when it come to boil add rice and check the seasoning, if less then add salt and few drops of lemon.

    When all the water is dried out, Put it on DUM for about 10 minutes on very slow flame.

    Put the lid off. Fluff rice with a fork.

    Step 16

    • 1cup plain yogurt

    • 1 tsp cayenne pepper
    • 1 tsp coriander powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp  black pepper
    • 1 tsp cumin seeds, roasted
    • 4-5 green cardamom pods
    • 1 cinnamon stick (about 1-inch)
    • 2 tbsp kewra water
    • 3 bay leaves
    • 4 cloves

    For Garnishing:

    • 1/4 cup blanched almond
    • 2 tbsp brown onion
    • 1 tbsp julienne ginger

    How to make Mutton Korma:

    Heat oil or ghee in a pan , add sliced onions and fry on high heat for 8-10 minutes or until the onions turn transparent.

    Stir frequently then reduce heat to low and continue to fry until the onion are light golden.

    Remove from the oil and drain.

    Spread the fried onions on absorbent paper.

    Allow it to cool and when crispy ,

    • 1 tsp chaat masala

    • 2 eggs, lightly beaten
    • oil for frying

    1. Place mince in a chopped.
    2. Add spring onion, green chilies, coriander seeds, ginger garlic paste, cumin seeds, chaat masala, red chili and salt in it.
    3. Chop for 1 minute or until well combined.
    4. Take it out in a bowl.
    5. Make small kebabs out of the mixture.
    6. In a small bowl, beat egg.
