    Ingredients:

    • 1 whole chicken, cut into pieces
    • 1 cup chicken stock
    • 2 limes, juiced
    • 1/2 jalapeno pepper, minced
    • 2 tbsp honey
    • 2 tsp ground cinnamon
    • 2 tsp chili powder
    • 2 tsp salt
    • 1 tsp ground cumin
    • 1 tsp black pepper

    Method:

    • Preheat oven to 450 degrees F. Grease a baking dish with non-stick cooking spray.
    • In a small bowl, combine the cinnamon, chili powder, cumin, salt, and pepper. Rub spices over the chicken pieces. Arrange chicken pieces on the prepared baking dish.
    • Pour chicken stock, honey in a medium saucepan. Cook over medium-high heat for 4-5 minutes then stir in lime juice and jalapeno. Cook for 5 minutes or until sauce is thickened.
    • Place chicken in the preheated oven and cook for 15 minutes, basting occasionally. Continue cooking 30 minutes or until chicken is tender and no longer pink.
    • Delicious Jalapeno Chicken is ready to serve.

    Ingredients

    • 1 pound boneless chicken
    • 1 egg lightly beaten 2 boiled potatoes
    • 2 boiled potatoes
    • 1/4 cup cheddar cheese
    • 2 tbsp chicken tikka spice
    • 1 tbsp yogurt
    • 1 tsp crushed red chili
    • 24 roll sheets
    • Oil for frying

    Instructions

    Method

    • Cut chicken into thin strips.
    • Place chicken strips, yogurt in a large bowl.
    • Season with chicken tikka spice.
    • Mix well.
    • Cover and leave it to marinate for 30 minutes.
    • Heat 1 tablespoon oil in a large skillet over medium heat.
    • Cook chicken for 10 minutes or until all juices run clear and chicken is no longer pink.
    • Turn the heat off and take it out in a bowl.
    • Add boiled potatoes and cheese.
    • Mix well.
    • Let it to cool completely.
    • Place the 2 tablespoon chicken mixture in one corner of the roll sheets.
    • Fold the sheet.
    • Spread egg on the edges and roll up tightly.
    • Repeat this procedure with remaining ingredients.
    • Heat oil in a deep pan over medium heat.
    • Fry chicken rolls for 3-4 minutes or until golden brown.
    • Remove from the oil and drain on paper towel.
    • Mini Chicken Rolls are ready to serve.

    Step 1

    Place spinach and 1/4 cup water in a large pot.

    Step 2

    Bring to the boil and cook for 5 minutes or until crisp-tender.

    Step 3

    Remove from heat and let it cool. Grind spinach in a blender. Set aside.

    Step 4

    Heat 4 tablespoon oil in a large pot over medium high heat. Add chicken and cook for 5 minutes or until lightly browned.

    Step 5

    Transfer into a plate and keep aside.

    Heat the remaining oil in a pan. Saute onion, ginger and garlic until lightly browned.

    Stir in tomatoes.

    Season with salt, cayenne pepper, ground coriander and turmeric.

    • 2-1/2 pounds chicken wings
    • 4 green onions with tops,thinly sliced
    • 2 cloves garlic, minced
    • 1/2 onion, thinly sliced
    • 1/2 cup soy sauce
    • 1/3 cup water
    • 1/4 cup sugar
    • 2 tbsp sesame oil
    • 1 tbsp sesame seeds
    • Dash pepper

    Method:

    • In a large resealable plastic bag, add soy sauce, water, sugar, sesame oil, green onions, garlic, onion, sesame seeds and pepper.
    • Mix until well combined.
    • Place chicken wings in the bag.
    • Shake to coat evenly.
    • Cover and refrigerate 4 hours or overnight, turning occasionally.
    • Remove chicken to a shallow rack in a baking pan.
    • Discard marinade.
    • Preheat oven to 350 degree F.
    • Bake, uncovered for 30 minutes then turn and bake 20 minutes longer or until chicken is tender all juices run clear.

  • Taste of Balochistan: Make Restaurant-Style Chicken Sajji!

    Chicken Sajji:

    Sajji is a native dish of the desert province of Baluchistan, Pakistan. Eid is a big celebration and on this special occasion wonderful meaty dishes are cooked. Sajji is one of them. This is the recipe of Chicken Sajji, made easy for you, so that you could easily prepare it at home, Enjoy!

    Chicken Sajji Ingredients:

    • 1 whole skinned chicken,  about 1.5kg
    • salt to taste
    • 1 tbsp black pepper
    • 5 tbsp lemon juice
    • 3 tbsp chat masala
    • cotton thread: a small piece
    • coal: 2-3 pcs (medium)

    How to make Chicken Sajji:

    • Wash the chicken, take a pan, filled with water, add salt and dip the chicken in this salted water for about 2 – 3 hours.
    • Rinse the salt after 3 hours & then marinate it with lemon juice, black pepper and chat masala and keep it for 2 hours.
    • Tie the two legs with thread. Put the chicken in a pan & cover it completely with aluminum foil.
    • Pre heat the oven at temp 250 centigrade and bake it for about 1hour until the meat is tender.
    • Remove the foil after one hour and bake the chicken again at temp 350 for 15-20 minutes until both sides are golden brown.
    • Heat the coal on burner until they are red.
    • Take a covered deg-chi, put coal in the bottom of it, put chicken in it & cover the lid for 2-3 minutes so that the chicken smells smoky.
    • Remove the chicken.
    • Chicken Sajji is ready to serve.

    • Serve with raita.

    • 1 pound boneless chicken cubed
    • 50 gm butter
    • 1/2 cup plain yogurt
    • 1/2 cup fresh cream
    • 2 tbsp lemon juice
    • 1 tbsp red chili powder
    • 1 tbsp chopped green chilies
    • 1 tbsp papaya paste
    • 1 tsp red chilies crushed
    • 1 tsp black pepper crushed
    • 1 tsp salt
    • soaked bamboo skewers as required

    Instructions

    • Place chicken in a large bowl.
    • In a small bowl, stir together the yogurt,cream,crushed red chillies,black pepper,green chilies ,salt, papaya and lemon juice.
    • Pour over the chicken. Toss gently.
    • Let stand for 20 minutes to blend flavors.
    • Thread chicken pieces on the skewers.
    • Melt butter in a shallow frying pan.Cook chicken skewers on each side for 7-8 minutes or until all juices run clear. Stick boti is ready to serve.

    • 3 medium tomatoes, chopped
    • 6 green chilies, thinly sliced
    • 1/2 cup plain yogurt
    • 1/2 cup chopped mint and coriander leaves
    • 4 tablespoon oil or clarified butter
    • 1 tablespoon ginger garlic paste
    • 1 teaspoon black cumin
    • 2 pinch of yellow food color
    • oil as required

    Place chicken in a large mixing bowl.

    Add ginger garlic paste, vinegar, yogurt,tikka masala, salt, red chilli,cumin powder in it. Stir to coat evenly. Cover and marinate for 1 hour.

    Preheat oven on 150 degree C. Light grease a baking dish with cooking oil.

    Arrange chicken in the greased baking dish. Bake for 25 minutes or until the chicken tenders and lightly golden.

    Meanwhile, heat oil in a large pan. Add onion and cook for 4-5 minutes or golden brown.

    Step 6

    Add ginger garlic paste , chicken cubes and tomatoes. Cover the pan and cook on low flame for 10 minutes or until tomatoes become soft.

    Step 7

    Add potatoes, green chilies, yogurt. Stir well. Cook 10 minutes longer or until potatoes are tender. Now stir in the sindhi biryani masala. Mix well. Turn the heat off and set aside.

    Step 8

    Layer boiled rice , food colour, chicken curry,coriander and mint leaves. Repeat again this procedure.

    Step 9

    Sprinkle black cumin and brown onion on the top. Drizzle with 4 tablespoon oil.

    Step 10

    Put the lid on and let it cook for 15 minutes on very low flame.

    Step 11

    Stir in the way that some rice are white and some yellow and some are orange. Dish it out. Delicious Tikka Biryani is ready to serve.

    This time though she has combined both the chicken and okra to create this savoury, fragrant and juicy curry. Yummy…..sounds delicious!!

    Chicken Bhindi

    Ingredients

    • 500 gm chicken
    • 500 gm okra
    • 4 green chilies
    • 2 onions thinly sliced
    • 3 to matoes chopped
    • 1/2 cup oil
    • 1 tbsp ginger garlic paste
    • 1 tbsp red chili powder
    • 1 tbsp coriander powder
    • 1 tsp all spice powder
    • 1/2 tsp turmeric powder
    • salt to taste
    • 1 onion sliced or chopped

    Instructions

    Directions

    • Wash okra properly then cut them from top and bottom.
    • Pat dry.
    • Heat oil in a wok or karahi over medium heat.
    • Fry the okras for 8-10 minutes or until slightly golden.
    • Take it out and drain on a paper towel.
    • Set aside.
    • Now add onions in the remaining oil.
    • Cook for 2-3 minutes or until translucent.
    • Add ginger garlic paste and cook 1 minute longer.
    • Add chicken, red chili, coriander and turmeric and tomatoes.
    • Cook until chicken is no longer pink and all water dries.
    • As the meat tender, add in fried okra, 1 onion and green chilies.
    • Sprinkle all spice powder.
    • Cover and simmer for 5 minutes.
    • Take it out in a serving dish.
    • Chicken Bhindi is ready to serve. Enjoy!!
