  • Aromatic Layers of Flavor: Kebabish Rice Recipe

    Kebabish Rice

    An unusual rice dish made by adding spicy kebabs to rice, cooked with egg, spring onion and other spices. Try this tasty Kebabish Rice recipe, another variation of regular Pulao. Like this recipe, you can also modify the recipes to breakout the boring routine and collect praises.

     Prep Time: 40 minutes

    Cook Time: 1 hour

     Servings: 5

    Ingredients

    For Kebabs:

    • 500 gm mince
    • 1 egg, lightly beaten
    • 1 onion
    • 5 cloves garlic
    • 1 inch piece of ginger
    • 4 green chilies
    • 4 tbsp fresh coriander leaves
    • 4 tbsp pomegranate seeds
    • 1 tbsp red chili, crushed
    • 1 tbsp turmeric powder
    • 1 tbsp whole spice powder
    • salt to taste

    For Rice:

    • 300 gm rice
    • 1/4 cup cooking oil
    • 1 onion, finely chopped
    • 2 tomatoes, finely chopped
    • whole spice as required
    • 8 green chilies, cut it from center

     

    Directions:

    1. Wash rice with few changes of water then soak in water for 30 minutes.
    2. Place mince in a chopper or food processor.
    3. Also add onion, ginger, garlic, green chili, coriander leaves, egg, red chili, turmeric, whole spice, and pomegranate seeds
    4. Process until well combined.
    5. Take it out from the chopper and make kebabs of it.
    6. Heat oil in a deep pan over medium heat.
    7. Deep fry kebabs for 10 minutes or until golden brown.
    8. Saute onion in a deep wok or pot.
    9. Add whole spice and soaked rice into the wok.
    10. Pour water as required to cook rice.
    11. Now add tomatoes and green chilies.
    12. When rice is almost cooked.
    13. Then put kebabs in it and mix slightly.
    14. Cook on low flame for 10 minutes or until cooked thorough.
    15. Transfer into a serving plate.
    16. Kebabish Rice are ready to serve.

    Serving Suggestions:

    • Enjoy with Pudina Raita.

    Step 1

    Boil half a liter of water in a sauce pan .

    Step 2

    Add the almonds when the water is boiling and cook for 2 minutes. Remove from the flame and drain.

    Step 3

    Remove the skin of the almonds and grind to a fine paste.

    Step 4

    Meanwhile, boil the milk in a thick bottomed pan.When the milk begins to boil add the almond paste and the sugar.

    Step 5

    Cook for 5 minutes over a low flame stirring continuously until thickened. Remove from the flame.

    Step 6

    Add the dissolved saffron and the crushed cardamoms. Allow to cool. Badam Kheer is ready to serve. Enjoy!

    Chicken Shawarma Rice

    As a change from the normal, I sometimes love having chicken shawarma over rice as opposed to rolled up in a pita. This is a must-try recipe.

    For Chicken Shawarma

    • 1 pound boneless chicken breast (cubed)
    • 2 tbsp vegetable oil
    • 2 tbsp yogurt
    • 1 tbsp ginger garlic paste
    • 1 tbsp lemon juice
    • 1 tsp red chili powder
    • 1 tsp cumin powder
    • 1 tsp tandoori masala
    • 1 tsp salt
    • 1/4 tsp turmeric powder

    For Chicken Shawarma Rice

    • 2 cups rice
    • 2-1/2 cups chicken stock
    • 1 small onion
    • 2 tbsp vegetable oil
    • 1 tbsp butter
    • 1/2 tsp ginger-garlic paste
    • 1 cinnamon stick
    • 1 cardamom pod
    • 2 cloves
    • 1 green chilli (finely chopped)
    • 1 tbsp chopped green onions
    • 1 tsp cumin powder
    • 1/4 tsp black pepper
    • 1/4 tsp. turmeric powder
    • 1/4 tsp cinnamon powder
    • salt to taste

    Other Ingredients

    • Garlic sauce or plain yoghurt.
    • 1 to mato (thinly sliced)
    • 1 onion (thinly sliced)
    • 1/4 chopped cabbage
    • 1/4 cup pickled cucumber
    • 1 tbsp pepper sauce
    • French Fries
    • Lettuce Leaves

    Method

      To Make Chicken Shawarma

      1. In a small bowl, combine the yogurt, oil, ginger garlic paste, red chili powder, cumin powder, tandoori masala, salt and lemon juice.
      2. Pour this mixture over the chicken cubes.
      3. Toss to coat evenly.
      4. Cover and marinate for 4 hours to blend flavors.
      5. After 4 hours, thread chicken on the metal skewers.
      6. Grill on each side for 5 minutes or until tender.
      7. Remove from the skewers.
      8. Chop into chunks.
      9. Set aside and and keep warm.

      To Make Chicken Shawarma Rice

      1. Wash rice with few changes of water then soaked for 30 minutes.
      2. Drain rice and set aside. Heat the butter and oil in a large skillet over medium heat.
      3. Add onions and cook for 5 minutes or until translucent. Add garlic paste and cook for 30 seconds.
      4. Add green chillis and all other spices. Cook and stir 1 minute longer. Note: (Careful not to let them burn.)
      5. Add chicken stock. Bring to a boil and let it simmer. Season with salt.
      6. Add rice and stir a little.
      7. Cook on high heat for 3-4 minutes then reduce the heat to medium-low.
      8. Cover and let it simmer for 8-10 minutes or until all water dries up and rice are cooked evenly.
      9. Now reduce the heat. Cover the skillet by using wetting a kitchen towel.
      10. Placing kitchen towel over the skillet.
      11. Then placing a lid on top of it.
      12. Cook the rice on very low heat for 10 minutes.
      13. Turn the heat off. Remove the lid and fluff the rice up.
      14. Transfer rice into a large servings dish.
      15. Top with chicken shawarma, lettuce leaves, cabbage, cucumber pickle, tomato and onion.
      16. Drizzle with pepper sauce.Chicken Shawarma Rice is ready to serve. enjoy!
      Serving Suggestions:
      Serve with french fries.

      Ingredients

      • 1/2 kg fish fillets
      • 1 egg, beaten
      • 2 tbsp oats flour
      • 2 tbsp lemon juice
      • 2 tbsp ginger-garlic paste
      • 2 tbsp tomato sauce/puree
      • 2 green chillies, chopped
      • 4 tsp Soy sauce
      • 4 garlic cloves, finely chopped
      • 4 tbsp oats flour
      • A pinch of black pepper powder
      • Salt to taste
      • Oil for shallow frying
      • Few sprigs of coriander leaves, chopped

      Directions:

      Step 1

      Clean and wash the fish fillets. Drain.

      Step 2

      Apply salt, pepper powder, lemon juice to the fish pieces and marinate for 10 minutes.

      Step 3

      Mix oat flour, beaten egg, salt and ginger-garlic paste with little water and make a batter.

      Step 4

      Apply this batter well to the fish pieces and fry in hot oil until golden brown. Keep aside.

      Step 5

      Heat oil in another pan and fry chopped garlic and green chillies.

      Step 6

      Also add tomato sauce, Soy sauce and fried fish pieces.

      Step 7

      Stir well to coat the pieces with the Soy sauce mixture. Cook for 2 minutes.

      Step 9

      Sprinkle chopped green onion. Fish Manchurian is ready to serve.

      • Serve hot with fried rice.

      Fried Rice

      A basic recipe for fried rice that you can enjoy as is or load up with meat and vegetables. It’s a great way to use up leftover cooked rice and it can be ready in just a few minutes. Fried Rice is one of hearty meal for people. It goes great with any kind of Manchurian. A must try recipe!!

      Fried Rice Recipe

      • 500 gm boiled rice
      • 500 gm boneless chicken
      • 4 tbsp vegetable oil
      • 4 tbsp soy sauce
      • 4 cloves garlic (minced)
      • 1 egg (lightly beaten)
      • 1 cup spring onion (thinly sliced)
      • 1 cup cauliflower florets
      • 1 cup carrot (thinly sliced)
      • 1 cup green bell pepper (thinly sliced)
      • 1 tsp red chili (crushed)
      • 1 tsp black pepper
      • 1/2 tsp salt

      Method

      1. Beat egg in a bowl.
      2. Heat 1/2 tsp oil in a pan fry egg in it.
      3. Cut into strips and keep aside.
      4. Cut chicken into small pieces and set aside.
      5. Heat oil in a heavy bottom skillet or pot.
      6. Add garlic and cook for 1 minutes
      7. Put chicken in it.
      8. Stir fry for 10 minutes or until juice runs clear.
      9. Season with red chili, salt and black pepper.
      10. Cook for 2 minutes or until chicken is tender.
      11. Now add all vegetables and soy sauce.
      12. Stir fry for 2-3 minutes.
      13. Then add boiled rice and cooked egg.
      14. Mix well.
      15. Cook on low flame for 10 minutes.
      16. Transfer into a serving plate.
      17. Fried Rice is ready to serve.

      Serving Suggestions:
      Serve with Manchurian.

      Ingredients

      For Kebabs:

      • 500 gm chicken mince
      • 1 onion, finely chopped
      • 1 tbsp ginger-garlic paste
      • 2 tsp green coriander, chopped
      • 2 tbsp blanched almonds, grounded
      • 1 tsp green chili paste
      • 1/2 tsp crushed black pepper
      • 1/2 tsp coriander seeds, crushed
      • 1/2 tsp white pepper
      • 1/2 tsp cumin seeds, crushed
      • salt to taste

      For Gravy:

      • 1 onion, finely chopped
      • 4 tomatoes, finely chopped
      • 3 green chillies, finely chopped
      • 2 tbsp vegetable oil
      • 2 tbsp coriander leaves, chopped
      • 2 tbsp julleine cut ginger
      • 1 tsp ginger garlic paste
      • 1 tsp red chili powder
      • salt to taste

      Method:

      To Make Kebabs:

      • Place all kebab ingredients in a large bowl.
      • Mix until well combined.
      • Make long kebabs on skewers.
      • Shallow fry kebabs in oil and give coal dam.
      • Set aside and keep warm.

      To Make Gravy:

      • Heat oil in a wok or karahi.
      • Saute onion in hot oil until translucent. Now add ginger garlic paste and cook 1 minute longer. Then add tomatoes, red chili, salt and little water. Cook for 15 minutes or until soft and oil comes on top.
      • Put kebabs cook into the wok.
      • Cover and cook on low heat for 5 minutes.
      • Take it out in a serving dish.
      • Garnish with ginger and coriander leaves.
      • Special Reshmi Kebab is ready to serve.
      • ENJOY!!

      Serving Suggestions:

      • Serve Special Reshmi Kebab along with naan and raita.

      Simple Chicken Biryani recipe

      THIS IS AN EASY BIRYANI WHICH MADE WITH CHICKEN, RICE, SPICES AND CHICKEN STOCK. PAKISTANI/INDIAN SPICES CREATES AN AWESOME AND TEMPTING FLAVOR AND AROMA IN BIRYANI. GOES WELL WITH RAITA OR SALAD.

      • 750 gm boneless chicken breasts, (cut into large pieces)
      • 3-1/2 cup chicken stock
      • 1-1/2 cups basmati rice, (washed and soaked)
      • 1 onion, (sliced thinly)
      • 2 garlic cloves (crushed)
      • 2 tbsp olive oil
      • 1 tbsp grated ginger
      • 1 tbsp garam masala
      • 2 tsp ground cumin
      • 1/2 tsp ground turmeric
      • fresh coriander
      1. Place chicken in a large bowl. Add cumin, garam masala and turmeric. Toss to coat.
      2. Heat 1 tablespoon olive oil in a deep skillet or dutch oven. Place chicken to the skillet.

      3. Cook for 5 minutes or until lightly browned.
      4. Take it out in a dish and set aside.
      5. Heat remaining oil in the same skillet.
      6. Saute onion, ginger and garlic in hot oil.
      7. Cook for 3-4 minutes or until lightly golden.
      8. Add rice and cook for 2 minutes. Return chicken to the skillet.

      9. Add chicken stock and gently stir. Bring to a boil then reduce heat to low.

      10. Cover with a lid and simmer for 25-30 minutes or until the rice is tender and all water dries up. Let stand for 10 minutes.

      11. Sprinkle with coriander. Simple Chicken Biryani is ready to serve.

      Serve with Cumin yogurt or salad.

      Ingredients

      For the chicken

      • 2 pounds boneless chicken breast, cut into 1-1/2 cubes
      • 2 tbsp vinegar
      • 1 tbsp ginger garlic paste
      • 1 tsp ground cumin
      • 1 tsp coriander powder
      • 1/2 tsp aamchoor
      • 1/2 tsp garam masala
      • 1/4 tsp turmeric powder
      • 1/4 tsp red chilli flakes
      • salt to taste

      For the sauce:

      • 2 medium onions, pureed
      • 1 cup yoghurt
      • 4 tbsp fresh cream
      • 4 tbsp butter
      • 1 tbsp tomato paste
      • 1/2 tsp white pepper
      • 1/2 tsp black pepper
      • 1/2 tsp turmeric powder
      • 1/4 tsp coriander powder
      • 1/4 tsp cumin powder
      • 1/4 tsp mace powder
      • Pinch of elaichi powder
      • adjust salt according to taste

      Directions:

      Step 1

      Heat oil in a deep skillet or clay pot over medium high heat.

      Step 2

      Add chicken and cook for 5-8 minutes or until meat is no longer pink.

      Step 3

      Stir in vinegar As the water dries up, add ginger garlic paste. Cook and stir for 2 minutes then all the spices.

      Step 4

      Toss gently. Add little water. Cook 10-15 minutes or until chicken is tender and all juices run clear.

      Step 5

      Meanwhile, heat 1 tbsp oil in another deep pan.Add onion puree. Keep heat on medium low and let it dry out and brown up a bit.

      Step 6

      In a small bowl, mix together yogurt and all spices. Pour yogurt mixture into the pan. Cook and stir for 8-10 minutes or until oil comes out on the top.

      Step 7

      Now add 1 cup water and let it cook until it turn smooth and creamy. When water dries up, stir curry in the prepared chicken.

      Step 8

      Toss to coat evenly then stir in the fresh cream.

      Step 9 

      Cover and simmer for 2 minutes then turn the heat off. Transfer into a serving dish. Top with butter. Butter Chicken is ready to serve.ENJOY!!
