    Step 1

    Place chicken mince and green onions in a mixing bowl.

    Step 2

    Then add egg, ginger paste, cornflour, soy sauce, black pepper and salt. Mix until well combined.

    Make small balls out of this mixture.

    Step 4

    Place bread crumbs in a shallow dish. Roll balls in it and set aside.

    Step 5

    Heat oil in a deep pan over medium heat. Deep fry Balls over medium heat for 8-10 minutes or until golden brown.

    Step 6

    Remove from the oil and drain on paper towel. Green Onion Kofta are ready to serve. ENJOY!!

    Today’s post is about a recipe that is as old as my habit of  recording/saving recipes in hardcover notebooks. It’s a foolproof recipe for a SUPER YUM salad that has always been a savior whenever I’m pulling off family dawats/get together s or random hangouts at home with friends.

    Tbh, I can’t believe I didn’t put this french salad recipe up on the blog earlier.

    Let’s dig straight in.

    Prep Time: 10 minutes

     Servings:4

    Ingredients

    For Salad:

    • 1 boiled potato, chopped
    • 1/2 bunch iceberg, chopped
    • 1 carrot, chopped
    • 1 cucumber, chopped
    • 1 tomato, chopped
    • 1/2 radish, chopped

    For Salad Dressing:

    • 2 tbsp lemon juice
    • 3 tbsp tomato ketchup
    • 1/2 cup mayonnaise
    • 1/2 cup  mozzarella cheese, grated
    • 1 tsp black pepper, crushed
    • salt to taste

    Directions:

    1. French Salad is ready to serve. Enjoy!
    2. Cover and refrigerate for 2 hours or until chill.
    3. Toss to coat evenly.
    4. Sprinkle  grated cheese over it.
    5. Pour this salad dressing on the chopped vegetables.
    6. Mix well.
    7. In a small bowl, add mayonnaise, tomato ketchup, lemon juice, black pepper and salt.
    8. set aside.
    9. Place all chopped vegetables in a large bowl.
    10. Serve with BBQ meal.

    • 2 tsp red chilli paste
    • 1 tsp cumin seeds

    • 1/2 tsp garam masala
    • salt to taste

    • 4 green chillies, thinly sliced
    • Fresh coriander leaves

    Step 1

    Rinse and drain fish properly. Cut into large pieces.

    Step 2

    Sprinkle salt and turmeric over it and keep aside for 15 minutes.

    Step 3

    Place fish pieces in a heatproof microwave dish. Pour 4 tbsp of water over the fish and microwave on high for 5-7 minutes.

    Step 4

    Let stand it for 5 minutes in the oven. Then remove from the Microwave.

    Step 5

    Remove the bones from the fish and mash it coarsely.

    Step 6

    Heat 1/2 cup oil in a pan over medium heat. Add cumin seeds and bay leaves in it. Fry for 1 minute or until they crackle.

    Step 7

    Then add chopped onions and cook for 4-5 minutes or until golden.

    Step 8

    Add ginger garlic paste,tomatoes,yogurt and red chili powder. Cook on low flame for 10 minutes until water dry and the spices cook well.

    Step 9

    Add mashed fish in it and cook on low heat for 15 minutes. Keep Stirring.

    Step 10

    Remove from the heat. Sprinkle garam masala over it.

    Step 11

    Garnish with green chilies and coriander leaves. Fish Keema Curry is ready to serve.

    Chatpata Aloo Tikki Burger

    Love burger ? Today, I’m sharing an easy to make chatpata aloo tikki burger recipe with you. Ideal for the vegetarians or for those who want to create a quick lunch meal as just takes your 25-30 minutes.

    For Aloo Tikki

    • 4 boiled potatoes (peeled and mashed)
    • 2 eggs (lightly beaten)
    • 1/2 cup bread crumbs
    • 1/2 cup cheddar cheese (grated)
    • 2 tablespoon mint leaves
    • 2 tablespoon fresh coriander
    • 1 teaspoon dry mango powder
    • 1 teaspoon chopped green chili
    • 1 teaspoon red chili flakes
    • 1 teaspoon cumin powder
    • salt to taste
    • Oil for frying
    • For Aloo Tikki Burger
    • 10 burger buns
    • 5 tsp butter
    • 1 cup tomato ketchup
    • 1/2 cup green chutney
    • 1/2 cup shredded cabbage
    • 2 small onions (cut into rings.)
    • 2 cucumber (thinly sliced)
    • 2 to matoes (thinly sliced)

    Directions

    1. Put mashed potatoes in a large bowl. Add dry mango powder, cumin seeds, red chili, salt, green chili, mint and coriander leaves. Mix until well combined.
    2. Make 10 balls out of the aloo mixture. Now stuff 1 teaspoon cheese on each potato ball and shape into a flat Patty(tikki).
    3. Beat eggs in a small bowl and place bread crumbs in another shallow bowl. First dip each aloo tikki in the egg then coat with crumb mixture.
    4. Heat oil in a nonstick pan over medium heat. Shallow fry aloo tikki for 1-2 minutes on each side or until golden brown. Transfer into a plate and keep warm.
    5. Cut the buns from the center. Toast them with the little butter.
    6. Put one teaspoon ketchup on one side of the burger bun and one teaspoon of green chutney on the other side.
    7. Put a aloo tikki on it some sliced onions, cucumber, tomatoes and shredded cabbage. Cover it with the second part of the bun.
    8. Press it down softly and insert a toothpick through the bun. Repeat this procedure with remaining buns and make all the burgers.Chatpata aloo Tikki Burger is ready to eat.

    Serve with green chutney, ketchup and french fries.

    Step 1

    Wash chicken and trim all excess fat. Cut chicken into long strips.

    Step 2

    In a medium bowl, combine cornflour, flour ,eggs, red chili powder and salt.

    Step 3

    Beat well to a sticky consistency.

    Step 4

    Heat oil in a deep pan or skillet, dip chicken pieces in flour batter. Fry chicken pieces in oil for 6-8 minutes or until turn golden.

    Step 5

    Remove from the oil and place on tissue paper to soak extra oil.

    Step 6

    Heat 1tablespoon oil in a separate pan. Add curry leaves. When the leaves crackle, add chilli sauce.

    Step 7

    Stir fry for 2 minutes. Add 1/4 cup water ,tomato sauce, and vinegar in it. Bring to a boil then add fried chicken.

    Step 8

    Keep stirring and cook on low heat for 2-3 minutes or until well done.

    Step 9

    Take it out in a serving dish. Chicken Chatpata is ready to serve.

This is a simple recipe that’s low in saturated fat and cholesterol,and still big on taste. Leftover naan can be use in delicious naan roll. Its filled with cooked chicken, cucumber and ketchup then brushed with mango and green chutney. You can use any leftover meat or fish mince filling also.

    This is one of my favourite quick meals; delicious chicken, a tangle of onions and tomatoes and tangy herb chutney are wrapped in lovely soft breads. I have been eating variations of this dish since my childhood; you substitute the chicken for lamb or even paneer or stir-fried chickpeas. I have added some seasoned Greek yoghurt here but that is optional.

    How to make Chicken White Karahi:

    • In a pan or karahi heat oil over medium heat.
    • Saute ginger garlic paste.
    • Add chicken and fry till color changes.
    • When little water is left, add green onion (leave some green part for later use).
    • Mix green chillies & ginger slices.
    • Beat curd and add black pepper, white pepper, salt.
    • Mix it in chicken.
    • And cook for few more minutes then remove from the heat.
    • Transfer into a serving bowl and mix left over green onion, more ginger slices.
    • Add Fresh cream in it and sprinkle garam masala powder over it.
    • Chicken White Karahi is ready to serve!

    Serving Suggestions:

    • 1 cup boiled rice

    • 1/2 tsp red chili, crushed
    • 1/2 tsp turmeric powder

    Smoked Fish

    You must have tried all sort of smoked meals e.g smoked kebabs, smoked mince or smoked rolls. But I’m sure you would never have tried Smoked Fish. Today, I’ m sharing a very simple to make smoked fish recipe.

    • 500 gm fish fillets
    • 3 tbsp oil
    • 3 tbsp tamarind pulp
    • 3 tbsp fresh coriander leaves (chopped)
    • 2 tbsp pomegranate seeds (grounded)
    • 1-1/2 tsp red chili powder
    • 1-1/2 tsp coriander powder
    • 1/2 tsp cardamom powder
    • 1/2 tsp cumin powder
    • 1/2 tsp fennel powder
    • salt to taste

    Method

    1. Wash fish fillets and drain.
    2. In a small bow, combine together salt, red chilies, coriander powder, cumin powder, fennel powder, cardamom powder and pomegranate.
    3. Coat fish fillets with this mixture.
    4. Place fish in a hot frying pan.
    5. Cook for 2 minutes then pour tamarind pulp and hot oil over the fish fillets.
    6. After 5 minutes, turn fillet over
    7. Cook for 5 more minutes or until cooked thorough.
    8. Garnish with lemon wedges.
    9. Smoked Fish is ready to serve.
    10. ENJOY!!

    Serving Suggestions:
    Serve with BBQ Dipping Sauce.

    RECIPE: Jhatpat Chicken (Quick Chicken Curry)

    This Jhatpat Chicken is very quick to prepare and tasty too. It goes with chapati for light lunch menu with salad and chutney.

    For Jhatpat Chicken:

    • 1 kg chicken, cut into 16 pieces
    • 1/2 cup cooking oil
    • 2 tbsp tomato ketchup
    • 1 tbsp Wooster sauce
    • 1 tbsp garlic, minced
    • 1 tsp ginger garlic paste
    • 1 tsp red chili powder
    • 1 tsp mustard powder
    • 1 tsp black pepper
    • 1 tsp salt

    For Sauce:

    • 1 onion, cut into rings
    • 1 tomato, cut into fingers
    • 1 capsicum, cut into rings
    • a pinch of orange color
    • 2 tbsp tomato paste
    • 2 tbsp vinegar
    • 2 tbsp tomato ketchup
    • 1 tsp sugar

    Directions:

    1. Put chicken pieces into a bowl.
    2. Add ginger garlic paste, mustard powder, Wooster sauce and tomato ketchup.
    3. Season with red chili salt and black pepper.
    4. Cover and marinate for 2 hours.
    5. After 2 hours, heat oil in a deep skillet or pot.
    6. Put marinated chicken in it.
    7. Cook for 10 minutes or until no longer pink.
    8. Now add all the ingredients for sauce with 1 cup water.
    9. Cover with a lid and let it simmer for 10 minutes or until cooked thorough.
    10. Now add vegetables and cook for 5 minutes.
    11. Take it out in a serving dish.
    12. Jhatpat Chicken is ready now.

    Fish Biscuits 

    Among so many fish recipes,  Fish Biscuits is one of delicious recipe. Must try a Fish biscuits recipe !!

    Prep Time: 20 minutes

    Cook Time: 5 minutes

     Servings:4 

    Ingredients

    • 300 gm fish fillets
    • 1/2 cup plain flour, for dusting
    • 1 egg
    • 4 tbsp oil
    • 2 tbsp plain flour, for batter
    • 2 tbsp cornflour
    • 1 tbsp garlic paste
    • 1/2 tsp black pepper
    • salt to taste

     

    Directions:

    1. Cut fish fillets into square pieces.
    2. In a small bowl, combine together plain flour, corn flour and beaten egg.
    3. Season with salt and black pepper.
    4. Mix well and make a smooth batter.
    5. Place remaining plain flour in a shallow dish.
    6. Coat fish pieces in flour then dip in the batter.
    7. Heat oil in a deep wok.
    8. Fry fish pieces for 5 minutes or until golden brown.
    9. Remove from the oil and drain on paper towel.
    10. Fish Biscuits are ready to serve.
    • Serve with Tartar Sauce.
