Clean, wash and cut fish into one and a half inch size cubes.

Apply salt, lime juice, ginger paste, garlic paste and red chilli powder. Keep aside for 20 minutes.

Make a batter of gram flour, curd, egg, ajwain, salt and water.

Keep marinated fish pieces dipped in this batter for 15 minutes.

Heat oil in a karahi (wok) and deep fry the fish till golden brown and crisp.

For Dough:
2 cups wheat flour
1 cup plain flour
water to knead
salt
For Filling:
4 potatoes, boiled and mashed
1 small onion, finely chopped
1 tsp red chili powder
1 tsp coriander seeds powder, roasted
1 tsp cumin seeds, roasted
1/2 tsp garam masala powder
3-4 green chilies, finely chopped
1/2 cup fresh coriander leaves,finely chopped
2 tbsp fresh mint leaves, finely chopped
salt to taste
For Frying:
oil for frying
Directions:
Step 1
To Make Paratha Dough: Mix wheat flour, 1/4 tsp salt, Luke warm water,and make soft dough.
Step 2
Leave it for 30 minutes.
Step 3
To Make Potato (Aloo) Filling: In a medium bowl,combine all ingredients of filling. Mix well then set aside.
Step 4
To Make Paratha: Take a small ball of dough and roll a thick roti about 4″ diameter.
Step 5
Place a handful of filling at center.
Step 6
Bring the ends to the center from 4 or 5 points.
Step 7
Overlap ends so they do not leave an opening. Press gently, dust with dry flour, and proceed to roll.
Step 8
Heat a griddle and place paratha on it. Add 1 tsp oil around paratha and cook until it turns golden brown.
Step 9
Repeat the same with other side of paratha. Aloo Paratha is ready to serve. ENJOY!!
Serve hot with mint chutney or raita .

500 gm mutton mince
1/2 cup oil
2 onions (finely chopped)
3 tomatoes (finely chopped)
1 tsp ginger paste

1/4 tsp turmeric powder

1/2 tsp cumin powder
1/2 tsp garam masala powder
salt to taste
For Garnishing:
3-4 green chilies, thinly sliced
1/4 cup fresh coriander leaves
Directions:
Step 1
Heat oil in a pan or wok, add chopped onions and fry for 3-4 minutes.
Step 2
Then add ginger-garlic paste and stir fry for few seconds.
Step 3
Now put mince into it and cook for 5 minutes.
Step 4
Then add chopped tomatoes and let the tomato turn soft.
Step 5
Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well.
Step 6
Add 2 cups of water, bring to a boil then reduce the heat.
Step 7
Put the lid on and cook for 40-45 minutes or until mince cooked thoroughly.
Step 8
Then, uncover, and stir fry 4-5 minutes or until water is completely
absorbed.
Step 9
Remove from the heat and transfer into the serving bowl.
Step 10
Sprinkle garam masala powder over the top.
Step 11
Garnish with green chilies and fresh coriander leaves. Mutton Keema is ready to serve.

I normally make this cumin chicken with chicken stock. Today, however I didn’t have any on hand. Instead, I used the same amount of plain yogurt and was very happy with the result. You could of course use chicken stock instead for a thicker curry.
Personally, I really like this creamy yogurt version. Mixed with the other ingredients, the chicken stock turned to a complex and delicious gravy. As the curry was thicker than normal, I decided to serve it with zeera rice. I know, I know… That doesn’t sound very Pakistani but it worked very well.

I think next time I make cumin chicken, I’ll make it again with the chicken stock but also add some yogurt.I just love experimenting with ingredients! You can also serve it with naan and onion salad.

500gm chicken

salt and pepper to taste
For Garnishing

2green chilliesfinely chopped

Directions
Heat the oil in a pan when hot add ginger-garlic paste , cumin seeds and stir for I minute.
Then add the chicken,cumin powder,red chili powder, coriander powder, salt and pepper and mix well.
Add yogurt, cover and cook over medium heat stirring occasionally till the chicken is done.
While the chicken is cooking, lightly sauté onions in a little oil till white add green chilies and fresh coriander leaves.
Mix well and remove from the heat.
Keep aside but do not cover.
When the chicken is done, add the sauté onions in it. Chicken with cumin is ready to serve.

Serving Suggestions: Serve with a hot roti or boiled rice.
