    Pulled Chicken Sandwiches Recipe

    If I ask what my brother wants for dinner, more than likely he will say “sandwiches/burgers.” This recipe is a twist on the usual burgers and packs a big taste punch with the pulled chicken, cheese and barbecue sauce. If you’re anything like me then a burger needs to be covered in cheese, ice-berg leaves, and many slices of olives and tomatoes.

    Next time you’re craving a burger or sandwich, give this recipe a shot. It will become your new favorite! Your Dinner guests are guaranteed to be impressed with this deceptively easy Pulled Chicken Sandwich recipe, which includes a few-ingredient rub and a simple 15-minute sauce that comes together while the chicken oven baked. 

    Did I mention these sandwiches are braised in a special sweet and tangy sauce? Yep! It gives the chicken a deep, rich flavor that intensifies with age, so you can make the chicken a day ahead and your sandwiches will taste even better! Perfection!

    You can serve this chicken in many ways, but I made them in sandwich form because, honestly, what man can resist a toasty bun piled high with tender, juicy pulled chicken, oodles of caramelized onions, tangy barbecue sauce and melty cheese? I can’t think of one! You can serve this on a sandwich as I did, or you can serve on tacos, nachos and burritos, Ole! I’m already thinking of the delicious ways I plan to use this in the future.

    Pulled Chicken Sandwiches Recipe

    For Chicken

    • 500 gm boneless chicken thighs
    • 1 teaspoon grated ginger
    • 1 teaspoon garlic (minced)
    • 1 teaspoon hot sauce
    • 1 teaspoon paprika
    • 1 teaspoon cumin powder
    • 1/4 teaspoon freshly ground (black pepper)
    • salt to taste
    • cooking spray

    For Sauce

    • 1 small onion (minced)
    • 2 teaspoons canola oil
    • 1 tablespoon dark brown sugar
    • 1 teaspoon red chili powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon mustard powder
    • 1/4 teaspoon ground allspice
    • 1/8 teaspoon crushed red chili
    • 1/2 cup tomato ketchup
    • 2 tablespoons apple cider vinegar

    Remaining ingredients

    • 4 burger buns (toasted)
    • 4 slices Mozarella cheese
    • 1/4 cup cheddar cheese (grated)
    • ice burg leaves
    • tomato slices
    • olives as required

    To Make Chicken

    1. Preheat oven to 200 degrees C.
    2. Place chicken in a large bowl. Add ginger, garlic, hot sauce, paprika powder, cumin powder, black pepper and salt.
    3. Rub evenly over the chicken.
    4. Place chicken on an oven grill rack coated with cooking spray, and bake 20 minutes or until the chicken is nicely browned.
    5. Let stand for 5 minutes.
    6. Remove chicken from the oven and shred with two forks and set aside.

    To Prepare Sauce

    1. While chicken cooked, heat oil in a small saucepan over medium heat.
    2. Add onion and cook for 5 minutes or until translucent or, stirring occasionally.
    3. Stir in brown sugar, chili powder, garlic powder, mustard powder, allspice and red chili.
    4. Cook for 30 seconds then stir in the apple cider vinegar and tomato ketchup.
    5. Bring to a boil.
    6. Reduce heat to medium low and let it simmer for 10 minutes or until slightly thickened.
    7. Now Stir in chicken and cook 2 more minutes.

    To Make Pulled Chicken Sandwiches

    1. Place iceberg lettuces and mozzarella slices on the bottom half of each bun.
    2. Divide chicken mixture into 4 equal portions and put it on cheese slices.
    3. Top each bun with grated cheese, tomato slices and olives.
    4. Cover with remaining bun. Delicious Pulled Chicken Sandwiches are ready to serve. ENJOY

    Serve on buns, over fresh greens, or on top of a baked potato for a filling dinner. enjoy 🙂

    Sweet and sour Chicken is one of the most popular Chinese dishes and My family is a big fan of sweet and sour chicken so I thought I would try this recipe with noodles. It was a huge hit in our house and even they ate tons of it! Definitely a keeper for a easy go to dinner meal.

    Sweet and Sour Chicken with Noodles

    This Sweet and Sour Chicken recipe is super easy to make. All you will need is one wok or a skillet, and all of the ingredients listed below. It takes about 30 minutes to make this mouthwatering dish. Delicious dinner made in no time!

    • 6 boneless chicken breast halves (cut into 1-inch pieces)
    • 2 tbsp cornstarch
    • 2 tbsp vegetable oil
    • 1 egg white
    • 1 tsp white pepper
    • 2 tbsp ginger & garlic (grated)
    • 1 can pineapple chunks (drained)
    • 1 red bell pepper (cut into 1- inch cubes)
    • 1 green bell pepper (cut into 1- inch cubes)
    • 1 onion (cut into cubes)
    • salt to taste

    For Sweet and Sour Sauce

    • 2 tbsp soy sauce
    • 2 tbsp pure honey
    • 1/2 cup white vinegar
    • 1/2 cup tomato ketchup
    • 1/2 cup pineapple juice
    • 1/4 tsp salt
    • boiled noodles (to serve)

    Method

    To make Sweet and Sour Sauce

    1. In a bowl, combine the soy sauce, honey , vinegar, tomato ketchup, pineapple juice and salt.
    2. Whisk well and set aside.

    To make Sweet and Sour Chicken

    1. Rinse Chicken and pat dry.
    2. In a medium bowl, add chicken ,cornstarch, egg white, salt and pepper. Mix well.
    3. Stir to coat the chicken evenly. Marinate for 30 minutes at room temperature.
    4. Heat a large nonstick pan over high heat until blazing hot.
    5. Add 1 tbsp of oil and swirl to coat.
    6. Add the coated chicken to the pan and spread the chicken in form of one layer.
    7. Let the chicken fry, don’t touch for 1 -2 minutes or until the bottoms are browned.
    8. Turn and fry the other side of chicken for more 1-2 minutes.
    9. Once the chicken is cooked, remove from the pan and set aside.
    10. Heat the remaining 1 tbsp oil in the pan over medium heat.
    11. When the oil heat up, then add grated ginger & garlic, red bell pepper, green bell pepper.
    12. Stir fry for 1-2 minutes then add pineapple chunks and sweet and sour sauce.
    13. Turn the heat to high.
    14. Bring to boil then add the chicken and simmer on low heat for 2-3 minutes or until the chicken is cooked thoroughly. Sweet and Sour Chicken is ready to serve!

    Serve over boiled noodles.

    Tandoori Spiced Baked Chicken in Yogurt Masala Recipe

    Well, when I am sad and tired and overall cranky, I likes to eat the food prepared by my mothers hand, the flavorful easy to make food I grew up eating and these Tandoori Spiced Baked Chicken in Yogurt Masala hit the spot. Neither World’s most expensive dish Nor World’s best restaurant can compete Home Cooked Food by Mothers Hand 🙂

    On to today’s recipe!

    Tandoori Spiced Baked Chicken 

    Today’s recipe is a favorite of me and my family. It’s a revamped version of this tandoori Roast Chicken Recipe which is one of my popular recipes on the blog! Why is it revamped? Well, because this recipe is more of tastiest than the old one and this is my favorite version: the chicken is deliciously spiced with yogurt marination, and the mango chutney served alongside adds fruity, tangy flavor.

    To pair with the creamy yogurt, and spices, instead of using bone-in chicken or pieces of chicken breast, My mom used chicken thigh and wings. Chicken thigh is fattier, juicer and much more tender than chicken breast – I’m actually not a fan of chicken breast at all due to how tough and rubbery it is. Chicken thigh releases its juices during the cooking process, which leads to a deeply, beautifully flavored tandoori chicken which literally melts in your mouth – something chicken breast can’t do without extended marination times and slow cooking.

    This Tandoori Spiced Baked Chicken  is very popular in Pakistani restaurants and is usually served with naan bread and chutney. This dish is a great recipes to cook for your house parties and is loved by one and all.

    If you have the ingredients on hand and a micro-plane or grater, tandoori chicken wings are so easy to make! Goes great served with Zeera Raita(cumin yogurt dip) or mango chutneylemon wedges and some onion rings.

    Tandoori Spiced Baked Chicken In Yogurt Masala Recipe

    This Tandoori Spiced Baked Chicken is very popular in Pakistani restaurants and is usually served with naan bread and chutney. This dish is a great recipes to cook for your house parties and is loved by one and all.

    • 2 pounds chicken pieces

    For marination

    • 1-1/2 cups plain yogurt
    • 2 tablespoon butter
    • 2 tablespoon ginger garlic paste
    • 2 tablespoon lemon juice
    • 2 tablespoons ground cumin
    • 2 tablespoons smoked paprika
    • 1 tablespoon coriander powder
    • 1 teaspoon garam masala powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon cayenne pepper
    • salt to taste

    For Garnishing

    • 4 limes (quartered)
    • onion rings

    Method

    1. Make two deep slits crossways on the meaty parts of chicken piece.
    2. Sprinkle the salt over the chicken and squeeze over some of the lemon juice.
    3. In a large bowl, add the yogurt, lemon juice, ginger and garlic, plus all of the spices. Mix well and remove any lumps in the yogurt.
    4. Put the chicken into the yogurt mixture and toss to coat evenly.
    5. Cover and place in the refrigerator to marinate for about 4 hours to overnight, which is ideal.
    6. Preheat an oven to 200 degree C.
    7. Put the marinated chicken into a deep heat-proof dish. Cover with a lid or foil with holes poked in the top.
    8. Bake for 30 minutes then move the meat around with a spoon.
    9. Bake for an additional 30 minutes, uncovering the dish for the last 15 minutes of baking only.
    10. Use tongs to remove the meat from the dish and the yogurt sauce and place on a separate tray to broil or use the broil setting on your oven to sear the meat, about 5 minutes each side.Tandoori Spiced Baked Chicken is ready to serve. Enjoy!!

    Note:
    If you prefer the chicken to be a bright red colour, and a few drops of red coloring into the marinade.

    Serving Suggestions:
    Serve with fresh naan bread, onion rings, lemon wedges and a yogurt sauce on the side for dipping.

    As much as I adore my grandparents, they do treat me like I’m still 6 years old.🤔🤔 I love staying with my grandparents they treat me like I’m royalty, but in reality they are my King & Queen😍

    Because today I’ m sharing a family favorite recipe.{Especially, my grandma’s(nano)}. I’ve made these noodles countless times; in exchange of favors, to impress certain people. My GrandMa Loves to eat Chinese Food.  Just this weekend, I cooked it on my nano’s request. Nana abu loved it so much and he rewarded me with cash. $_$  💰 💰

    Chicken Stir Fried Noodles Recipe

    A simple to make Chicken Stir Fried Noodles recipe, but big on flavors. The perfect balance of spiciness, tanginess and saltiness. The vibrant mix of fresh vegetables paired with the saltiness of the stir fry noodles, the tanginess of soy sauce, and the heat from the sesame oil and the acclaimed chili sauce; all worked out so well.

    • 2 boneless chicken breast (cut into cubes)
    • 2 tablespoon sesame Oil
    • 2 tablespoon vegetable oil
    • 2 clove garlic (minced)
    • 2 green onions (cut into strips)
    • 2 carrots (peeled and cut into strips)
    • 1/2 red bell pepper (cut into strips)
    • 1/2 green bell pepper (cut into strips)
    • 1/4 cup dark soy sauce
    • 1/4 cup chili garlic sauce
    • 1 packet spaghetti noodles or egg noodles
    • salt and pepper to taste

    Method

    1. Cook the noodles in a large pan of boiling water for 2-3 minutes until Soft.
    2. Once the noodles are cooked.
    3. Drain and return to the saucepan.
    4. Toss well in vegetable oil and set aside. Cover with a tea towel.
    5. Heat a wok until very hot, then add remianing vegetable and sesame oil. Add 1 chopped garlic clove after 30 seconds.
    6. Add the chicken and stir-fry for 3 minutes or until it loses its colour.
    7. When the chicken is ready add the vegetables and stir-fry for another 30 seconds.
    8. Add a splash of Soy sauce and stir fry for 1-2 minute.
    9. Stir in the Soy sauce and chili garlic sauce.
    10. Add noodles and cook for 30 seconds, stirring constantly and serve immediately.
    11. Enjoy!

    Recipe Note’s:

    You can also add lamb, beef to this stir fry noodles, or just filled up with colorful veggies like I loved to eat. Either way, it’s finger lickin’ good. You’ll be coming back for more :’)

    Hope all of you are doing well and are leading happy, healthy lives. It seems such a long time since I’ve updated the blog. Well, ’seems’ is probably not the correct word to use, and I am promptly changing it to ‘has really been’!     A few weeks ago, We had a party on home. And I made Oven Roasted Chicken Legs on my brother request. He’s a Drumsticks Lover. It was a great evening, with plenty of food and some great company. That evening also made me realize how many more wonderful dishes I have yet to celebrate on this blog.

    If you're obsessed with baked chicken drumsticks? Or If you love eating crispy chicken legs and you love easy meals. This one checks all the boxes. Make these Oven Roasted Chicken Legs for dinner soon, you won’t be disappointed.

    • 10 chicken legs or drumsticks
    • 2 tablespoon melted butter
    • 1 tablespoon lemon juice
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1 teaspoon herb seasoning
    • salt to taste

    Method

    1. The most important thing about oven roasted chicken legs is to rinse and pat dry the chicken. The chicken needs to be as dry as possible before we bake, this way the skin will crisp up.
    2. Preheat oven at 200 degree C.
    3. Now rub the chicken legs with melted butter,lemon juice, garlic powder, onion powder, red chili, salt, cumin and herb seasoning.
    4. Place chicken pieces on wire rack and set into a baking sheet.
    5. Bake the chicken legs in the preheated oven for 30 minutes then use tongs to rotate each drumstick and bake until done.
    6. Remove from oven and allow to rest for 10 minutes before serving (this little step is very important if you like juicy chicken.
    7. Oven Roasted Chicken Legs are ready to serve. Enjoy!!

    Serve with Coleslaw and Hot and Spicy Sauce.

    Recipe Note’s:

    1. Do not place the seasoned chicken pieces directly on the baking sheet. Instead, place a wire cooling rack on top of the cookie sheet and place the chicken pieces on the rack, this will allow air to circulate around the chicken, resulting in perfectly crispy chicken without the soggy bottoms.
    2. If you like the chicken drumsticks nice and browned, place them under the broiler for few minutes after they are baked.
    3. If you prefer cheese, you can sprinkle 1/4 cup of freshly grated Parmesan cheese over them.

    Spring seems to be here, which is just amazing – I honestly just want to run around outside all day everyday and enjoy the beautiful sunshine! I love how the world changes when the sun comes out, everyone is so much happier and life just seems brighter and more awesome. It’s one of my favorite season of the year because of it’s colors, flowers,  birds cheering. What a great blessing of Allah (SWT). Alhumdulillah. 

    One of the most important things about this season is the positive impact you can make for your health and well being! So, Today I am sharing a SUPER yummy healthy, nutritious pasta recipe that has become a new family favorite around here (jus 237 calories)!!

    Chicken Tikka Masala Macaroni (Clean Eating Version)

    Normally I’m not a huge pasta lover. But this Chicken Tikka Masala Macaroni is exactly how I like to eat macaroni when I want to follow my clean eating diet and don’t wish to work with many ingredients and want to cook dinner easily! This macaroni is in  Pakistani Style, tossed with chicken, tikka marinade, and fresh veggies.

    Pretty nutritious isn’t it? Honestly, it’s a dish which will satisfy your taste buds and same time will give you a proper nutritious lunch or dinner.

    Yeah, I know you will say’hey, Macaroni is surely not so Asian’, not in clean eating and will give me a doubtful look. But trust me that you will never be disappointed if you will give that Asian twist to any of your dishes.

    This Chicken Tikka Masala Macaroni is so easy and will be made with such ingredients, which you can find at your kitchen any time. So surely, it will be a time save too. For clean eating purpose, please make sure you are using whole grain pasta and Organic chicken. 

    This may not be the more traditional version you’re thinking of, but it’s close enough to get the job done and it definitely qualifies as comfort food.

    Serve this decadent dish with a fresh green salad or some lightly steamed broccoli with a squeeze of lemon. By the way, this dish could just as easily be vegetable tikka mac and cheese if you substitute the chicken with some veggies such as cauliflower, zucchini or eggplant instead.     Chicken Tikka Macaroni (Clean Eating Version)

    Chicken tikka Masala works well with macaroni. Who knew?This Chicken Tikka Masala Macaroni(Clean Eating Version) is exactly how I like to eat macaroni when I don’t wish to work with many ingredients and I want to cook easily!

    • 1 packet whole wheat macaroni
    • 500 gm boneless Organic chicken (cubed)
    • 1 onion (cubed)
    • 1 medium size capsicum (cubed)
    • 1 tablespoon butter or olive oil

    Chicken Tikka Marinade

    • 2 tablespoon fresh yogurt
    • 1 teaspoon ginger garlic powder
    • 1 teaspoon red chilli powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon dry mango powder
    • 1/2 teaspoon garam masala powder
    • 1/4 teaspoon red pepper flakes
    • 1 lemon (juice)
    • few drops of hot sauce (optional)
    • salt to taste

    For Garnishing

    • few green chilies (thinly sliced)
    • few coriander leaves (chopped)

    Method

    1. Put marinade ingredients over the chicken cubes. Mix to coat evenly.
    2. Cover and marinade for 20-30 minutes to blend flavors.
    3. Meanwhile,boil macaroni to al dente according to instructions on the package. Keep aside.
    4. Now melt butter in a deep pan or skillet over medium heat.
    5. Stir fry tikka chunks until they start releasing thier juices.
    6. Mix well.
    7. Cover and let it simmer on medium heat for 3-4 minutes or until chicken is tender.
    8. Add green chilies, capsicum, onion and saute for 3-4 minutes.
    9. Add macaroni and stir well to coat evenly.
    10. Turn the heat off and take it out in a serving dish.
    11. Garnish with green chilies, coriander leaves.
    12. Your Chicken Tikka Macaroni is ready.

    Serve with steamed veggies

    Shawarma is eaten in Arab countries, Pakistan, South Africa and the United Kingdom, and the meats, toppings and sauce vary depending on the country. Traditionally, Shawarma is made with chicken, lamb, beef, or goat that has been marinated, and is wrapped and cooked on a vertical rotisserie (similar to Greek gyro meat). When an order is placed, meat is shaved off and served as a wrapped sandwich (using pita bread) with fresh pickles and sauce.

    So today, I’m going to share this awesome Chicken Shawarma Wraps recipe with my fans. This dish is not hard to make, it just requires a little bit of planning ahead. Well worth the effort!

    This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make. Think of your favorite gyro place where they are slicing meats from a spit, and placing it inside of warm pita or flat-bread, along with sauces and vegetables. That’s shawarma, and this is my take on it. Did I mention my entire family was totally in love with this??

    It is really difficult to recreate the taste of shawarma at home, but this recipe I think, does it justice. The key is to leave the chicken marinading overnight for maximum flavour, and to have the grill smoking hot when cooking. And I made the Shawarma Pickles two days before and made a batch of sour cream as well as hummus sauce.

    Chicken Shawarma Wraps

    This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make.

    For Chicken & Marinade

    • 750 gm boneless chicken (cubed)
    • 2 tablespoon plain yogurt
    • 1 tablespoon vinegar
    • 1 tablespoon lemon juice
    • 2 teaspoon hot sauce
    • 1 teaspoon onion powder
    • 1 teaspoon ginger garlic paste
    • 1 teaspoon mustard paste
    • 1 teaspoon degi mirch (pepper)
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/4 teaspoon cinnamon powder
    • salt to taste
    • 2 tablespoon olive oil

    For Pita Bread

    • 3 cups plain flour
    • 1 tablespoon yeast
    • 1 tablespoon sugar
    • 4 tablespoon oil
    • 1 teaspoon salt

    For Hummus Sauce

    • 1 cup boil chickpea
    • 2 tablespoon lemon juice
    • 1 tablespoon garlic powder
    • 1/2 teaspoon white pepper
    • 1/2 teaspoon salt
    • 1/4 cup water
    • 1 tablespoon olive oil

    For Sour Cream

    • 1/2 cup mayonise
    • 1 tablespoon lemon juice
    • 1 tablespoon garlic (finely chopped)
    • 1/4 teaspoom white pepper powder
    • 1/4 teaspoon salt or to taste

    For Shawarma Pickle

    • 1 small onion (thinly sliced)
    • 4-5 black and green olives (pitted & sliced)
    • 1 cucumber (thinly sliced)
    • 1 to mato (thinly sliced)
    • 1 cup cabbage (thinly sliced)
    • 1 cup lettuce leaves (chopped)
    • 4 tablespoon vinegar
    • a pinch of crushed red pepper
    • a pinch of salt

    Method

    To Make Chicken Marinade

    1. Cut chicken into cubes.
    2. Place in a large bowl. Add plain yogurt, vinegar, lemon juice, hot sauce(optional) onion
    3. powder, ginger garlic paste, mustard paste, degi mirch(pepper), cumin powder, coriander powder,cinnamon powder and salt. Stir to coat evenly.
    4. Cover and marinate for at least 4 hour or overnight.
    5. Now heat 2 tablespoon oil in a grill pan over medium heat.
    6. Cook chicken for 10-12 minutes or until all juices run clear. OR Grill chicken pieces for 25 minutes or until chicken is nicely cooked or no longer pink.
    7. Cut chicken into very thin pieces or chunks and set aside.

    To Make Pita Bread

    1. Place flour , yeast, sugar, salt and oil in a mixing bowl.
    2. Knead a soft and smooth dough with warm water.
    3. Wipe some oil on the palms of your hands and rub over the lump of kneaded dough.
    4. Then cover the dough with a wet cloth or a plastic sheet and let it rise for 1 hour or until it doubled in size.
    5. Once well-risen, make small balls of equal size.
    6. Roll out each ball gently and evenly (do not lean/press down hard on the ball of dough, you
    7. need to use a light hand) to a thickness of a little more than a quarter inch.
    8. Place the rolled-out pitas on a lightly floured surface and cover them with a towel that not
    9. too much air can get in. Leave them to stand for about 2 hours until they rise again.
    10. Now Preheat oven for 250 degree C.
    11. Bake pita breads in the preheated oven for 5-7 minutes.
    12. keep warm.

    To Make Shawarma Pickle

    1. Wash vegetables and cut into thin slices.
    2. Put all vegetables in a mixing bowl or jar. Drizzle vinegar over them.
    3. Season with salt and red chilli.
    4. Stir well and keep aside.

    To Make Hummus Sauce

    1. Place chickpea, lemon juice, garlic powder, white pepper, salt, water and olive oil in a
    2. blender.
    3. Blend until well combined.
    4. Take it out in a bowl and sprinkle a pinch of red chili over it.
    5. Set aside.

    To Make Sour Cream

    1. In a small bowl, mix together the mayonnaise, lemon juice, garlic, white pepper and salt.
    2. Stir well and keep aside.

    To Assemble Chicken Shawarma Wraps

    1. Place pita bread in a clean surface.
    2. Spread sour cream and hummus over it.
    3. Put chicken pieces on it.
    4. Add shawarma pickle and roll tightly.
    5. Secure with a wooden pick or wrap in a butter-paper.
    6. Do this procedure with remaining ingredients.
    7. Chicken Shawarma Wraps are ready to eat!!

    Serving Suggestions:
    Serve with Hummus Sauce, chili garlic sauce and french fries.

    Important Tips:

    1. Try not to pile the pitas on top of each other until after they have cooled. This keeps them nice and plump for filling.
    2. To store pita breads, you can wrap them in cling film and freeze for up to 3 weeks.
    3. For the filling you can use any mixture of your choice with salad, just slit the pitas and stuff them with your favorite ingredients.
    4. You can also make pita breads on a frying pan or hot griddle or even it a bread-maker.

    Chicken Pita Sandwiches

    • 4 Pita breads
    • 2 boneless chicken breasts (cut into thin strips)
    • 1 small green bell pepper (thinly sliced)
    • 1 small yellow bell pepper (thinly sliced)
    • 1 small onion
    • 1 cucumber (thinly sliced)
    • 4 olives (thinly sliced)
    • 1 jalapeño pepper (thinly sliced)
    • 4 tablespoon tomato ketchup
    • 2 tablespoon mayonnaise
    • 2 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon black pepper
    • salt to taste
    • 1/2 cup grated mozzarella cheese
    • lettuce leaves

    Directions

    1. Heat oil in a frying pan.
    2. Stir fry chicken in hot oil for 4-5 minutes or until no longer pink.
    3. season with salt, garlic powder, black pepper and crushed chili.
    4. Cover the pan and let it cook in its own water for 10 minutes or until chicken is tender.
    5. Now add onion and stir fry for 30 seconds.
    6. Now add green pepper, yellow pepper, jalapeno pepper.
    7. Stir fry for 1-2 minutes then stir in the
    8. tomato ketchup.
    9. Turn the heat off.
    10. Now add olives, cheese and mayonnaise.
    11. Adjust seasoning to taste.
    12. Slightly roast pita bread on hot griddle from both sides.
    13. Put some lettuce leaves and cucumber on a pita bread.
    14. Top with chicken mixture.
    15. Generously cover with another pita bread.
    16. Cut each bread into four pieces.
    17. Transfer into a serving platter. Delicious Chicken Pita Sandwiches are ready to serve. ENJOY!!

It’s prepared in chicken stock with addition of traditional Pakistani ingredients, texture and consistency of an Pakistani Stew and the aroma of Oriental spices.

    After a weekend of delicious excesses, I’m ready for a healthy alternative. This weekend I’ve eaten like a queen –fried food, buttery paratha’s, creamy curries, biryani’s, naan, and more units of chocolates than I really care to count. So today I’decide to make light and nutritious meal. Weather is quite rainy so relaxing with this warming and nutritiousChicken Shorba –Chicken Curry– will be something to look forward to when I get home back from Uni.
    I made this Chicken Shorba last night and it only took 1 hour to prepare and cook. It’s in the fridge now and can be warmed up in few minutes. Normally I would serve this tangy and satisfying Chicken Shorba (chicken soup) with steamed rice but to make it easy, I served it with tandoori roti.

    Chicken Shorba

    Perfect for week days. It’s a good change in your lunch or dinner. This lip smacking Chicken Shorba Recipe is one of my favorite. It’s prepared in chicken stock with addition of traditional Pakistani ingredients, texture and consistency of an Pakistani Stew and the aroma of Oriental spices.

    • 2 lbs organic chicken (desi murgh)
    • 2 medium onion (finely chopped)
    • 2 tablespoon butter
    • 2 tablespoon cooking oil
    • 4 cloves garlic (minced)
    • 1 tablespoon fresh ginger; grated
    • 1/2 cup tomato puree
    • 1/2 cup plain yogurt
    • 1 inch piece of cinnamon stick
    • 4 cloves
    • 7 peppercons
    • 1 teaspoon paprika powder
    • 1/2 teaspoon cardamom powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon cayenne powder
    • 4 cups chicken stock
    • salt according to taste

    For Garnishing

    • few coriander leaves

    Directions

    1. Take a large pot, melt the butter over medium heat.
    2. Now add oil and chopped onions, cinnamon stick, peppercorns, and cloves.
    3. Stir and fry until the onion turns translucent and lightly browned.
    4. Stir in the garlic and ginger and the dry masala, blending well.
    5. The aroma coming from your kitchen will be amazing.
    6. Add chicken. Stir and cook for 15 minutes or until chicken is no longer pink.
    7. Now add tomato puree and yogurt.
    8. Cover with a lid and let it simmer on low heat for 40 minutes or until chicken is almost tender and all water dries up.
    9. Remove the lid and cook on hight heat for few minutes or until oil come on top.
    10. Now add the chicken stock.
    11. Bring to the boil, then lower heat and simmer 10 minutes.
    12. If you’re not in a hurry or for a more intense flavour, let the soup simmer for longer.
    13. Transfer into a serving bowl.
    14. Garnish with fresh coriander leaves. Delicious Chicken Shorba is ready to serve. ENJOY!!

    Make sure always to buy fresh chicken & which is hormone free.

    Serving Suggestions:
    Serve with Tandoori Roti.

    Chicken Nuggets

    • 500 gm boneless chicken breast (cubed)
    • 1 tablespoon soy sauce
    • 1 teaspoon lemon juice
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon mustard powder
    • 1/2 teaspoon red pepper flakes
    • 1/2 teaspoon black pepper powder
    • 1/2 teaspoon salt

    For Breading

    • 1 cup breadcrumbs
    • 1/2 cup flour
    • 2 eggs (beaten with 1 tsp milk)
    • a pinch of salt and pepper
    • salt and pepper
    • oil for deep frying

    Method

    1. Pound chicken cubes with a mallet.
    2. Place chicken pieces in a large bowl. Add soy sauce, mustard powder, garlic powder, lemon juice, salt, pepper and red chili flakes. Toss to coat evenly.
    3. Marinate chicken for at least 30 minutes to blend flavors.
    4. Now, beat eggs with a teaspoon of milk and season with a pinch of salt and pepper.
    5. Place breadcrumbs in a separate bowl.
    6. Place flour in another shallow bowl.
    7. Now roll the chicken cubes in flour mixture. Then dip in the egg and milk mixture, then coat with breadcrumbs.
    8. Heat oil in a deep pan over medium heat.
    9. Fry chicken nuggets in batches for 5-8 minutes or until they turn golden in color.
    10. Remove and drain any excess oil. Delicious Chicken Nuggets are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Chili Garlic Sauce.

    Tikka Samosa Recipe

    For Samosa Filling

    • 2 boneless chicken breasts
    • 2 tablespoon lemon juice
    • 2 tablespoon tikka masala
    • 1 tablespoon ginger garlic paste
    • salt to taste

    For Samosa

    • 12 samosa sheets (manda patti)
    • 1 egg wash
    • oil for deep frying

    Method

    1. Place chicken and ginger garlic paste in a large bowl. Sprinkle tikka masala and salt over it.
    2. Drizzle lemon juice over the chicken and toss to coat evenly.
    3. Marinate for 30 minutes to blends flavors.
    4. Heat 1 tablespoon oil in a grill pan over medium heat.
    5. Cook chicken for 15 minutes or until done.
    6. Shred the chicken with a fork.Wrap samosa’s with chicken tikka filling.
    7. Sealed with egg wash.
    8. Deep fry samosa for 2-3 minutes or until they turn golden brown.
    9. Remove from the oil and absorbent on a kitchen paper. Tikka Samosa is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Sweet and Spicy Chutney or Apricot Chutney.

    Chicken Vegetable Rolls

    Who doesn’t love a hot, fried spring rolls? Making them yourself ensures a maximum freshness of flavour. This chicken vegetable rolls recipe is easy to follow and makes a perfect treat for your toddler.

    Chicken Vegetable Rolls Recipe

    • 1 cup boiled shredded chicken
    • 1 cup shredded cabbage
    • 2 green onions (thinly sliced)
    • 2 carrots (thinly sliced)
    • 1 capsicum (thinly sliced)
    • 2 tablespoon canola oil
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon freshly ground black pepper
    • salt to taste
    • 1 egg yolk (lightly beaten)
    • 24 roll wrappers
    • oil for deep frying

    Method

    1. Heat a wok or pan until smoking and add the canola oil.
    2. Now add the chicken and stir-fry for 2 minutes or until crispy. Season with soy sauce and oyster sauce.
    3. Now add green onions, cabbage, capsicum and carrot.
    4. Season with salt and pepper.
    5. Stir fry for 2 minutes until well combined.
    6. Cool down the Chicken and vegetable mixture.
    7. Place the 2 tablespoon mixture in one corner of the roll wrappers.
    8. Fold and roll up tightly.
    9. Tuck the top edge in and seal it with a little of the beaten egg yolk.
    10. Repeat with the remaining spring roll wrappers and filling.
    11. Heat oil in a deep pan over medium heat.
    12. Carefully put the spring rolls in small batches into the oil.
    13. Deep-fry for 2 minutes or until they turn crispy and golden-brown.
    14. Remove with a slotted spoon and drain on kitchen paper.
    15. Transfer the spring rolls onto a plate. Chicken Vegetable Rolls are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with sweet and spicy dipping sauce.

     Recipe Note’s:

    Freeze remaining rolls in an airtight container between sheets of baking paper for up to 1 month.

    Best Healthy Chicken Parmesan

    Who said chicken Parmesan has to be deep-fried and loaded with fatty cheeses to be good? This Clean Eating  alternative saves you almost 600 calories.  Chicken breasts are breaded with flavorful crumbs, herbs, and Parmesan cheese, then baked for the easiest, quickest chicken dish ever.Serve with a salad and Broccoli or Brown rice for a quick, scrumptious dinner.

    Clean Eating Chicken Parmesan

    This chicken Parmesan dish is made with all fresh ingredients so it is a great healthy and low-calorie dish with lots of flavor. I am trying to incorporate a more balanced and healthy diet into my life.

    • 4 skinless & boneless chicken breasts

    For Sauce

    • 1 small onion (chopped)
    • 1 small green bell pepper (seeded and chopped)
    • 2 garlic cloves (finely chopped)
    • 1 jar organic crushed tomatoes (( about 28 ounce))
    • 1 tablespoon sun dried tomato paste
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 2 teaspoon olive oil

    For Chicken Coating

    • 1/2 cup whole wheat panko bread crumbs
    • 1/2 cup low fat mozzarella cheese (shredded)
    • 2 tablespoon low fat Parmesan cheese (grated)
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1 tablespoon Dijon Mustard
    • salt and pepper to taste
    • Olive oil cooking spray

    For Serving

    • broccoli florets (steamed or roasted)
    1. Flatten chicken to 1-inch thickness with meat mallet or rolling pin.
    2. Preheat oven to 180ºC or 400ºF. Lightly coat a baking tray with olive oil cooking spray.
    3. Now heat oil in a saucepan over medium heat. Sauté onion, garlic and bell pepper in hot oil for 3-5 minutes or until crisp-tender. Now add oregano and basil. Cook and stir for 30 seconds or until oregano is fragrant.
    4. Stir in the tomatoes and tomato paste. Bring to a boil. Reduce heat to low, Cover the pan and let it simmer for 25 minutes or until done.
    5. Meanwhile, In a shallow bowl, combine together the panko bread crumbs, Parmesan, oregano, thyme, salt and black pepper.
    6. Now brush both sides of each chicken breast with Dijon Mustard. Roll each breast into panko mixture then turn to coat evenly.
    7. Place chicken on the prepared baking tray. Coat surface of chicken with cooking spray. Bake, in the preheated oven, for 20 minutes or until half-done.
    8. Now top each chicken breast with 2 tablespoon tomato sauce and 2 tablespoon mozzarella cheese. Return chicken to oven and bake 10 minutes more, until cheese is melted and bubbly and crust is golden brown.
    9. Arrange roasted broccoli on a serving plate and top with remaining tomato sauce and Parmesan Chicken.

    Make your chicken Parmesan a bit more golden in color by toasting the panko in a skillet over medium heat first.

    Chicken Keema Handi Recipe

    • 500 gm chicken mince
    • 1/4 cup cooking oil
    • 2 onions (finely chopped)
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon lemon juice
    • 2 to matoes (finely chopped)
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon black pepper (freshly crushed)
    • 1/2 teaspoon garam masala powder
    • salt to taste

    For Garnishing:

    • Few coriander leaves
    • few green chilies (thinly sliced)
    1. Heat oil in a clay pot over medium heat.
    2. Saute onion in hot oil until they turn to light pink in color.
    3. Add ginger garlic paste and cook for 30 seconds. Now add tomatoes, red chili, coriander powder, cumin powder, turmeric powder and salt.
    4. Cook for 4-5 minutes or until all water dries up.
    5. Now add chicken mince (keema) and cook well for 15-20 minutes or until chicken is no longer pink.
    6. Now add lemon juice and put on dum for 5 minutes or until well done.
    7. Garnish with coriander leaves and green chilies. Chicken Keema Handi is ready to serve. ENJOY!!

    Serve with Garlic Rice or Chapati.

    Spicy Chicken Omelette Recipe

    • 4 large eggs
    • 4 tablespoon milk
    • 1 cooked chicken breast (thinly sliced)
    • 1/4 cup chopped green onion
    • 2 green chilies (finely chopped)
    • 1/4 cup grated cheese
    • 1/4 teaspoon cayenne pepper
    • salt to taste
    • 1 tablespoon butter
    1. In a small bowl, whisk together the eggs and milk.
    2. Season with salt and pepper. Mix well.
    3. Melt butter in a non-stick pan over medium heat. Add chicken, green onion and green chili. Cook and stir for 1-2 minutes then pour egg mixture over it.
    4. As eggs set at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath.
    5. Cook on low flame for 2 minutes or until almost set.
    6. Sprinkle cheese on half of the omelette.
    7. Fold other half over cheese.
    8. Remove from the heat and transfer into a platter.
    9. Cut omelette in half. Spicy Chicken Omelette is ready to serve. ENJOY!!

    Serve with salad, bread or paratha.

    Buffalo Chicken Cheese Balls

    This modern and Buffalo Chicken Cheese Balls Recipe is full of buffalo chicken, Hot Sauce, mozzarella, and cheddar cheese! Great as an appetizer or light lunch.

    • 3 cups boiled & shredded chicken
    • 2 green onions (finely chopped)
    • 1/2 cup hot pepper sauce
    • 1 cup Cheddar cheese (grated)
    • 1 cup Mozzarella cheese
    • 1 cup all-purpose flour
    • 3 eggs (lightly beaten)
    • 1 cup plain bread crumbs
    • oil for frying

    Directions

    1. In a large bowl, mix together the chicken, green onions, Cheddar cheese, Mozarella cheese and hot sauce.
    2. Now shape the mixture into 1.5 inch balls.
    3. Put the flour, eggs and bread crumbs in three separate dishes.
    4. Dip and coat each ball in flour, then egg then bread crumbs.
    5. Place the breaded chicken balls onto a plate while breading the rest; do not stack.
    6. Heat oil in a deep pan over medium heat.
    7. Fry the breaded balls in the hot oil for 1-2 minutes or until lightly browned.
    8. Remove from the oil and drain on kitchen paper.Buffalo Chicken Cheese Balls are ready to serve. ENJOY!!
