    Step 1

    Wash the chicken thoroughly.

    Step 2

    Heat oil and add cumin, bay leaves, and dried red chilly.

    When the cumin begins to splutter, add garam masala, onion and saute for sometime over medium flame till onions are a little soft.

    Step 4

    Add ginger garlic paste, powdered masalas, chicken, salt and saut over high heat till chicken is opaque.

    Step 5

    Lower the flame to low and stir fry till tender and fat separates.

    Step 6

    Add water to the consistency of the gravy you want and cook some more.

    Step 7

    Garnish with chopped coriander. Dhaba Chicken is ready to serve.

    Ingredients

    • 500 gm Chicken or mutton
    • 1 tablespoon Ginger garlic paste
    • 1 cup Yogurt
    • 1/2 cup Oil
    • 4 Onion thinly sliced
    • 2 black cardamon
    • 4-5 Small cardamon
    • 5 Cloves
    • 2 Cinnamon sticks
    • 2 bay leaves
    • 1 teaspoon Black Pepper
    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1/2 teaspoon Black cumin seeds
    • 1/4 teaspoon nutmeg powder
    • 1/4 teaspoon javitri powder
    • 1/2 teaspoon Coriander powder
    • Salt to taste
    • 2 drops Korma Essence dissolved in 1 tsp milk

    Instructions

    Directions

    • Take oil in a pan.Fry onion to golden brown, sprinkling 1 pinch of salt.
    • Take fried onion in a plate & spread it to cool & crispy.
    • In the same oil fry meat in it very well, until colour changes & smell is gone.
    • Add Ginger garlic paste and fry again well using little water time to time.
    • Add Yogurt and fry until it is fried very well.
    • Add all garam masala, coriander powder, salt & chillies. Again fry well.
    • Add ground fried onion. Mix well.
    • Put water as much as you require for the curry in it.
    • Cover lid & cook until meat is tender.
    • In the end sprinkle ground jaifal, javitri & 2 small ilaichi, korma Essence.
    • Put on low heat on dum for 5 minutes.
    • Take out in a bowl. Degi Korma is ready to serve.

    Serving Suggestions:
    Serve with Bakarkhani Naan.

    Ingredients:

    For Espetada Chicken 

    • 500 gm boneless chicken, cut into cubes
    • 2 green bell pepper, cut into cubes
    • 2 tomatoes, seeded and cut into cubes
    • 2 tablespoon oil
    • 2 tablespoon peri peri sauce
    • 2 tablespoon lemon juice
    • 1 tablespoon soy sauce
    • 1 teaspoon garlic paste
    • 1 teaspoon meat tenderizer
    • 1 teaspoon salt
    • 1/2 teaspoon white pepper

    For Peri Peri Sauce

    • 1 onion
    • 4 whole red chilies
    • 1/2 cup cooking oil
    • 1/2 cup white vinegar
    • 3 tablespoon lemon juice
    • 2 tablespoon crushed red chilies
    • 1 tablespoon coriander seeds, crushed
    • 1 tablespoon fenugreek seeds, crushed
    • 1 teaspoon garlic paste
    • 1 teaspoon citric acid

     

    Directions:

    To Make Peri Peri Sauce:

    • Soak whole red chillies for 4-6 hours or overnight.
    • Now put all peri peri sauce ingredients in a blender or food processor.
    • Process until smooth.
    • Take it out in a small bowl and keep aside.

    To Make Espetada Chicken :

    1. Lightly flatten the chicken pieces.
    2. Place chicken in a large bowl.Add lemon juice, soy sauce,garlic paste,meat tenderizer,salt, white pepper, peri
    3. peri sauce and oil.
    4. Stir to coat evenly.
    5. Marinate for 30 minutes to blend flavors.
    6. Put mrinated chicken on skewers alternating with cubes of capsicum and tomato.
    7. Cook over a hot grill.
    8. Put with a burning coal and drop a little oil.
    9. Cover for 1 minute then remove from the grill.
    10. Espetada Chicken  is ready to serve.
    • Serve with rice.

    • 1 kg boneless chicken
    • 1 cup yogurt
    • 1/2 cup fresh cream
    • 1/2 cup oil
    • 4 tbsp lemon juice
    • 2 tbsp green chili paste
    • 1 tbsp meat tenderizer
    • 1 tbsp coriander seeds, crushed
    • 1 tbsp cumin seeds, crushed
    • 2 tsp red pepper, crushed
    • 1 tsp all spice
    • 1 tsp chaat masala
    • 1 tsp salt
    • 1 bunch fresh coriander leaves, chopped

    Directions:

    1. Rinse chicken then cut into pieces.
    2. Marinate chicken with yogurt, meat tenderizer, cumin seeds, coriander seeds, red pepper, green chili paste, salt, all spice, cream and lemon juice.
    3. Place in a refrigerator for 1 hour.
    4. Heat oil in a pan over medium heat.
    5. Put marinated chicken in hot oil.
    6. Cook on low flame for 20 minutes or until chicken is tender and no longer pink.
    7. Turn the flame high and cook well for 5-8 minutes or until all water dries.
    8. Dish it out.
    9. Garnish with coriander leaves.
    10. Sprinkle chaat Masala over it.
    11. Reshmi Tikka is ready to serve. ENJOY!!

    Ingredients:

    • 500 gm boneless cooked chicken, cut into strips
    • 1 cup sliced onion
    • 1 cup sliced mushrooms
    • 1/2 cup celery, sliced
    • 1/2 cup water chestnuts,sliced
    • 1 green bell pepper,chopped
    • 2 tbsp sesame oil
    • 1 can bean sprouts, drained
    • 1/2 cup chicken broth

    • Stir vegetables in hot oil in wok for 3 minutes.

    I am sure you all know how to make Tandoori Chicken Tikka. This is my absolute favourite Tandoori Chicken Tikka Recipe , healthy and yummy.

    I marinated the Chicken tikka over night as they become so tender and need really less time to cook. I just use very simple spices but I use lots of lemon so they turn extreme delish.

    There is nothing comparable to the aroma of Barbecue at home. Tempt your taste buds with a hot and juicy tandoori chicken tikka recipe, served with a cooling dip .

    Here is my Tandoori Chicken Tikka which is an all time favourite of my family.

    • 4 chicken leg pieces or breast pieces (as you desired)
    • 1 cup plain yogurt
    • 3 tablespoon vinegar
    • 2 tablespoon ginger garlic paste
    • 2 tablespoon lemon juice
    • 1 tablespoon butter, melted
    • 2 teaspoon red chilli powder
    • 2 teaspoon cumin powder
    • 2 teaspoon garam masala powder
    • 2 teaspoon chaat masala powder
    • 1 teaspoon coriander powder
    • 1 pinch of yellow food color (optional)
    • salt to taste
    • oil for busting

    For Garnishing:

    • Lemon slices
    • onion rings

    Step 1

    Wash the chicken and trim excess fat from the chicken.

    Step 2

    Cut 3-4 long, diagonal slits on each piece with a sharp knife.

    Step 3

    Take a large bowl, add yogurt, lemon juice, ginger, garlic, coriander, cumin, garam masala, red chili, chaat masala and salt. Mix well.

    Step 4

    Put chicken pieces into the bowl. Turning to coat and making sure that the marinade gets into all of the slits in the chicken.

    Step 5

    Cover and marinate in the refrigerator for 4-6 hours or overnight. So it will absorb flavors and grow tender.

    Step 6

    Set up a grill with hot coals.

    Step 7

    Remove the chicken from the marinade and pierce the skewers through the breasts or leg pieces.

    Step 8

    Discard the marinade.

    Step 9

    Cook for 10-12 minutes or until chicken is no longer pink near the bone; turning and basting frequently with oil.

    Step 10

    Transfer the chicken to a platter and let it rest for 5 minutes.

    Step 11

    Brush the chicken with the melted butter.

    Step 12

    Squeeze lemon halves on top.

    Step 13

    Garnish with the lemon wedges and the sliced onion. Tandoori Chicken Tikka is ready to serve. ENJOY!

    • 1 kg chicken, cut into 16 pieces
    • 1 cup chopped onion
    • 1/2 cup oil
    • 1/2 cup water
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 3 tbsp coconut milk powder
    • 3 tomatoes, blended
    • 4 green chilies, thinly sliced
    • 1 tsp red chili, crushed
    • 1 tsp black pepper, freshly ground
    • 1/2 tsp turmeric powder
    • salt to taste

    Directions:

    1. Heat oil in a deep pan or wok.
    2. Fry onions for 2-3 minutes or until transparent.
    3. Then add ginger garlic paste and cook for1 minute or until turns light golden.
    4. Add red chili, salt, turmeric with water.
    5. Cook for 2 minutes then put chicken in it.
    6. Stir frequently.
    7. Cook for 5-8 minutes or no longer pink.
    8. Then add blended tomatoes and crushed black pepper.
    9. Cover with a lid and cook on low flame for 10-15 minutes or until chicken is tender.
    10. Now add coconut milk, cook on high flame for 2-3 minutes or until sauce is thickened.
    11. Take it out in a serving dish.
    12. Garnish with green chilies.
    13. Nariyal Murgh is ready to serve. ENJOY

    Place chicken mince in a food processor. Add all remaining ingredents except oil. Process until well combined.

    Put the seekh kabab on very low heat of coal fire or in a oven.

    Brush over the remaining oil with the seeds for the last minute of cooking.

    Once done, remove the kebabs from the skewers  (seekhs) with the help of a piece of bread so you don’t burn yourself.

    1. Do not over gril or brown the kabab.
    2. Another way to make chicken seekh kabab is that put the mixture around the satay stick and then place them on a hot tawa or griddle, drizzle oil or butter and cook evenly all around until browned.
    3. If you are making this kabab on the tawa then you need to baste them with butter or oil at regular intervals.
    4. These delicious, juicy kebabs can be made with any minced meat you like, but I like chicken best Minced chicken is easily available in the market, but in case you do not get it then simply buy the boneless chicken, cut into small pieces and chop little bit in the chopper. Your minced chicken will be ready.
