Strawberry French Toast Roll Ups – just a handful of ingredients to make these in 15 minutes. These strawberry french toast roll ups are so fun and easy to make.They taste like doughnuts!
6 sandwich bread slices
6 strawberries (diced)
2 large eggs
2 tablespoon milk
4 tablespoon granulated sugar
a pinch of cinnamon powder
1/2 cup bread crumbs
butter (for greasing the pan)
For Garnishing
strawberries
castor sugar for dusting
honey (optional)
Method
Cut the crust from each slice of bread and flatten it out with a rolling pin.
Place about 1 sliced strawberry 1-inch from one end of the bread in a strip. Roll the bread up tightly and repeat with the remaining pieces of bread.
Set aside.
In a shallow bowl, beat eggs, sugar, cinnamon and milk until well combined.
Heat a pan medium heat and melt a tablespoon of butter.
Dip each bread roll in the egg mixture coating well and then coat with bread crumbs.
Place them in the pan seam side down.
Cook in batches until golden brown, turning them to cook and brown on all sides, about 2 minutes each side.
Add butter to the pan as needed.
Transfer into a serving plate.
Dust castor sugar over it.
Garnish with strawberry slices.
Delicious Strawberry French Toast Roll Ups are ready to serve ENJOY!!
Serving Suggestions: You can serve with syrup for dipping but I think they’re perfectly good all by themselves.

Mutton Nihari
Nihari is one of most favorite and traditional dishes of every Muslim home. Be it mutton, chicken or beef nihari, it can be relished with any kind of meat. Traditionally nihari made with the bone marrow meat. It’s a deliciously smooth flour based stew with slow cooked mutton and a myriad of spices. Mutton Nihari takes a long time to cook but is easy to put together.
There are lot of ready made Nihari spices available in the market. But I would not Never Never recommend. As they are full of artificial colors and preservative agents. Not a healthy approach. 🙁 You can make the Nihari powder at home by following my Nihari Masala Mix and store it in airtight container for many days.
This is a must try recipe from my Mommy. We normally make Nihari with small pieces of mutton as we prefer it over the bone-in mutton.

Note:
Preferably it must be cook on low flame, but those of you who would rather prefer a faster process can cook it in a pressure cooker though the Nihari taste wont be the same as cooked on a low flame.
So about this Mutton Nihari recipe. As you can see, there’s no layer of fat floating on top of the nihari, As many of you know, when we go out to eat it, we want the brain, marrow and floating oil on top, not a very healthy option. My mommy tried to make it just a little healthy by adding as little butter as possible without compromising on the flavor. Less fat and believe me, just as good. Or if you do like a little oil on top, when you are ready it dish it out, leave it covered on very low heat for about 5-7 minutes. Voila, the ‘little’ amount of oil will rise to the top!

Traditionally Nihari served with ginger, fried onion, green chilies and the hottest crisp khameeri roti or naan.
Nihari goes great with ginger, green chilies, fried onion, lemon and Khamiri Roti.

Mutton Nihari Recipe
Nihari is one of most favorite and traditional dishes of every Muslim home. Be it mutton, chicken or beef nihari, it can be relished with any kind of meat. Traditionally nihari made with the bone marrow meat. It’s a deliciously smooth flour based stew with slow cooked mutton and a myriad of spices. This Mutton Nihari recipe takes a long time to cook but is easy to put together.
1-1/2 kg mutton (shank portion, cut into 8 pieces)
1/4 cup clarified butter or desi ghee
3 medium onions (thinly sliced)
1 tablspeoon ginger paste
1 tablespoon garlic paste
2 teaspoon coriander powder
1/2 teaspoon turmeric powder
salt to taste
4 tablebspoon wheat flour
4 tablespoon nihari masala Mix
Nihari Masala Mix
1 tablespoon cumin seeds
2 teaspoon fennel seeds
1 teaspoon soonth (dry ginger)
1/4 teaspoon nutmeg powder
5-6 green cardamoms
2 black cardamoms
5 cloves
1 bay leaf
1 inch cinnamon stick
10 black peppercorns
For Garnishing
1/2 cup crispy fried onion
1 inch ginger (cut into this strips)
1 lime (cut into wedges)
2 green chilies (thinly sliced)
few fresh coriander leaves (chopped)
Juice of 1 lime
Niahri Masala Mix Method
To make your own Nihari masala from scratch, dry roast all the whole spices for the masala and grind them to a fine powder.
Mutton Nihari Method
Melt butter or ghee (you can use oil as well but ghee makes it tastier) in a heavy bottom pot.
saute onion slices and fry till they start to turn brown(about4-5 minutes).
Now add mutton pieces, ginger paste and garlic paste.
Stir and cook for 5-8 minutes or until meat is no longer pink and all juices run clear.
Now add coriander powder, turmeric powder and salt.
Sauté for 5 minutes.
Add the nihari masala and 8 cups of water.
Stir well.
Cover the pot and cook on very low flame for about 4 hours until the meat is tender.
Keep checking in between. The way to know that the meat is cooked is when it breaks easily with a wooden spoon.
Remove the lid and increase the flame.
Dissolve wheat flour in half cup of water such that there are no lumps.
Slowly pour wheat mixture into the gravy.
Stir to mix well.
Let it simmer for another 15 minutes or until the gravy is thickened.
Drizzle some lime juice over it.
Garnish with fried onion, ginger slices, green chilies and fresh coriander leaves.
Delicious Mutton Nihari is ready to serve. Enjoy!!
Serving Suggestions: Serve with Khameeri Roti or Naan. At time of serving, add chop fresh coriander, green chilies, Julienne cut ginger and fry onions.. and also lemon…. these things will improve the taste of nihari.

Chocolate Banana Filled Pancake Rolls
Looking for a nice relaxing breakfast or dessert. Pancake Rolls? Today, I’ll share another pancake rolls recipe ~ “Chocolate and Banana Filled Pancake Rolls”,I made this a while back, clicked pictures but never got around to posting it. The recipes are piling up ! I made plain pancakes and spread generously with choco bliss and topped further with honey but it really is like a plain canvas for your imagination to run wild with flavours! So I decided to give my simple pancakes a new twist. Roll-up in banana slices and topped with chocolate curls.

You can add strawberries, apples, dried fruits and berry compote in the mixture! It’s up to you take pleasure in feeling like a domestic queen. A perfect way to start a day.

Chocolate and Banana Filled Pancake Rolls
Looking for a nice relaxing breakfast or dessert. Pancake Rolls? “Chocolate and Banana Filled Pancake Rolls”!
2-1/2 cups plain flour ((maida))
1/3 cup castor sugar
3 teaspoon baking powder
2 teaspoon baking soda
1 tsp salt
4 eggs (at room temperature)
1 cup milk
2 tablespoon butter
For Filling
Choco bliss or nutella
banana (sliced)
Method
Sieve together all the ingredients.
Whisk eggs and milk in mixing bowl.
Gradually add pancake mix and mix until well combined.
Heat a flat pan or griddle with a little butter.
Pour a big spoonful of batter onto the hot griddle or pan and spread it evenly.
When bubbles appear on the surface of the pancake, flip them over to make them golden brown on both sides.
Transfer the pancakes on a plate or clean surface.
Spread choco bliss or Nutella generously over the warm pancakes.
Place the banana on top.
Roll up and sprinkle chocolate curls over them.
Chocolate and Banana Filled Pancake Rolls are ready to serve. ENJOY!!
Serving Suggestions: Serve straightaway with coffee or tea or a glass of milk.
Recipe Note’s:
In this recipe, I made the batter a little thin because I wanted the pancakes to thin, more like crepes. For more traditional pancakes, use only about 1/2 cup milk.

1 packet whole wheat macaroni
500 gm boneless Organic chicken (cubed)
1 onion (cubed)
1 medium size capsicum (cubed)
1 tablespoon butter or olive oil
Chicken Tikka Marinade
2 tablespoon fresh yogurt
1 teaspoon ginger garlic powder
1 teaspoon red chilli powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon dry mango powder
1/2 teaspoon garam masala powder
1/4 teaspoon red pepper flakes
1 lemon (juice)
few drops of hot sauce (optional)
salt to taste
For Garnishing
few green chilies (thinly sliced)
few coriander leaves (chopped)
Method
Put marinade ingredients over the chicken cubes. Mix to coat evenly.
Cover and marinade for 20-30 minutes to blend flavors.
Meanwhile,boil macaroni to al dente according to instructions on the package. Keep aside.
Now melt butter in a deep pan or skillet over medium heat.
Stir fry tikka chunks until they start releasing thier juices.
Mix well.
Cover and let it simmer on medium heat for 3-4 minutes or until chicken is tender.
Add green chilies, capsicum, onion and saute for 3-4 minutes.
Add macaroni and stir well to coat evenly.
Turn the heat off and take it out in a serving dish.

Normally I’m not a huge pasta lover. But this Chicken Tikka Masala Macaroni is exactly how I like to eat macaroni when I want to follow my clean eating diet and don’t wish to work with many ingredients and want to cook dinner easily! This macaroni is in Pakistani Style, tossed with chicken, tikka marinade, and fresh veggies.
Pretty nutritious isn’t it? Honestly, it’s a dish which will satisfy your taste buds and same time will give you a proper nutritious lunch or dinner.

Yeah, I know you will say’hey, Macaroni is surely not so Asian’, not in clean eating and will give me a doubtful look. But trust me that you will never be disappointed if you will give that Asian twist to any of your dishes.
This Chicken Tikka Masala Macaroni is so easy and will be made with such ingredients, which you can find at your kitchen any time. So surely, it will be a time save too. For clean eating purpose, please make sure you are using whole grain pasta and Organic chicken.
This may not be the more traditional version you’re thinking of, but it’s close enough to get the job done and it definitely qualifies as comfort food.

1 teaspoon extra virgin olive oil
2 drops of lemon juice
1 tablespoon tomato paste
1/2 teaspoon hot sauce
1/2 teaspoon black pepper (freshly ground)
salt to taste
herb seasoning (optional)
4 large lettuces (in cup shape, I used iceberg)
For Garnishing
mint leaves
lemon slices
Method
Heat olive oil in a saucepan over medium high heat.
Saute ginger and garlic. Cook, stirring frequently with a wooden spatula. Cook the garlic pieces until they are glazed and golden brown in color.
Add ground meat and cook for 15 minutes or until well browned.
Now stir in the hot sauce and tomato paste.
Stir in the green onions and green pepper until tender, about 1-2 minutes.
Season with salt and pepper, to taste.
Cook for 10 minutes or until mince is cooked thorough.
Remove from the heat and sprinkle herb seasoning.
Spoon into lettuce cups and serve.
Garnish with extra mint or coriander leaves, if using.
Alternatively, serve the mince in bowls with the lettuce cups on the side so people can help themselves.

Broccoli Spaghetti Soup (Clean Eating Version)
During the winter months, I find myself craving soup time and time again. So Today, I’m sharing an easy and healthy recipe for Broccoli Spaghetti Soup (Clean Eating Version). A simple soup that nourishes the body and soul.
1 8 ounce package whole wheat spaghetti
1 head Organic broccoli (chopped)
1 teaspoon olive oil
6 cups bone broth
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon dried parsley
a pinch of salt
Method
Heat 1 teaspoon olive oil in a medium soup pot.
Saute broccoli for 30 seconds. ( Don’t over cook the broccoli).
Add born broth and warm over low to medium low heat.
Break up spaghetti. Place into another pot and cook for 10 minutes or until pasta is al dente. Drain and rinse in cold water.
Now add spaghetti into broth. Season with garlic powder, dried parsley, salt and pepper.
Stir well and cook for 2 minutes.
Ladle soup into bowls. Delicious Broccoli Spaghetti Soup is ready to serve.ENJOY!!
Serving Suggestions: Serve with garlic bread or bran bread-sticks.

In the last week, I seriously made four different types of soups. This Broccoli Spaghetti Soup was my favorite of the four, and surprisingly, the healthiest as well!
The recipe starts with crisp stalks of organic broccoli. I am making the organic distinction here, because the main flavor of this soup comes from the broccoli, so it’s got to be top notch. That means organic and preferably local.First tossed broccoli with olive oil until tender, caramelized and aromatic. Then stir in born broth and cooked spaghetti. It’s chunky, brothy savory, and just the right balance of pasta and green veggie. I love the aroma of parsley and chunky broccoli in this soup.

Do try it, Great for a busy weeknight too. It cooks up in jus 15 minutes (pretty quick). The ingredients are very basic, you probably have most of them on hand already, and if not, a quick trip to any grocery store will quickly get you what you need.

Broccoli Spaghetti Soup (Clean Eating Version)
During the winter months, I find myself craving soup time and time again. So Today, I’m sharing an easy and healthy recipe for Broccoli Spaghetti Soup (Clean Eating Version). A simple soup that nourishes the body and soul.
1 8 ounce package whole wheat spaghetti
1 head Organic broccoli (chopped)
1 teaspoon olive oil
6 cups bone broth
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon dried parsley
a pinch of salt
Method
Heat 1 teaspoon olive oil in a medium soup pot.
Saute broccoli for 30 seconds. ( Don’t over cook the broccoli).
Add born broth and warm over low to medium low heat.
Break up spaghetti. Place into another pot and cook for 10 minutes or until pasta is al dente. Drain and rinse in cold water.
Now add spaghetti into broth. Season with garlic powder, dried parsley, salt and pepper.
Stir well and cook for 2 minutes.
Ladle soup into bowls. Delicious Broccoli Spaghetti Soup is ready to serve.ENJOY!!
Serving Suggestions: Serve with garlic bread or bran bread-sticks.

This Chocolate Chip Pancakes recipe is a favorite of mine to make for special occasions or holidays. Eat while hot so the chocolate is all gooey. If you want to make it extra special, serve the pancakes with berries and whipped cream
For Pancake Batter
1-1/4 cups all purpose flour
2 tbsp sugar
1 tsp baking powder
1/4 tsp ground cinnamon
1/4 tsp salt
2 large eggs
1 cup milk
4 tbsp melted butter
3/4 tsp vanilla
1 cup chocolate chips
For Serving
1/2 cup heavy whipping cream
1 tbsp confectioners’ sugar
1/2 tsp vanilla extract
Method
Take a small bowl, add cream cheese, sugar and vanilla to it. Beat until stiff peaks form. Now cover and refrigerate until serving.
To Make Pancakes
In a large bowl, mix together the flour, sugar, cinnamon, baking powder and salt.
Stir flour mixture into wet ingredients. Beat until smooth.
Fold in chocolate chips.
Pour batter 1/4 cup full onto a lightly greased hot pan or skillet.
Flip when bubbles form on top. Cook a minute more or until second side is golden brown. Chocolate Chip Pancakes are ready to serve. ENJOY!!

Hope, you are doing splendidly and enjoying the season. Well I’m in the middle of work, and anxiety has begun to sink its sharp little claws into my brain. It’s almost the final month of my training and I’m already drowning under a sea of coding assignments and project.
Ahhh I love to code even though it makes me want to tear my eyes out every 10 minutes. Crying Out Loud ;( I have constant fears that I’ve forgotten the code, functions, or left something somewhere blah blah blah. Problem is I love it but I have too much code to write though… ugh. This assignment is really doing my nut in!
I’ m carving chocolate soo bad while coding up my project and backing up files. Every time I write a code, I delete it again. Almost time for a pancake break 😛 Anyhow before going back to coding, I decided to update you guys with this short post.
If there’s one thing you should know about me right up front it’s that I love Chocolate and pancakes, always have. Chocolate chips, Pancakes, foggy weather and coding are the reasons I love life. Sounds super yummy!
Pancakes are probably in my Top 10 favorite foods. But they need chocolate chips. 🙂

Method
To Make the Dipping Sauce
Take a small bowl, add cream cheese, sugar and vanilla to it. Beat until stiff peaks form. Now cover and refrigerate until serving.
To Make Pancakes
In a large bowl, mix together the flour, sugar, cinnamon, baking powder and salt.
Stir flour mixture into wet ingredients. Beat until smooth.
Fold in chocolate chips.
Pour batter 1/4 cup full onto a lightly greased hot pan or skillet.

Tips For Diet Version Pancakes (Clean Eating):
You can make gluten free Pancakes by using gluten-free oats and flour.
For Sweeting: Add 1 Tablespoons of honey, apple syrup, or nectar is optional for extra sweetening, but I didn’t find it necessary.
Don’t add butter. Mash very ripe banana with baking powder. It gives
them a moist and fluffy texture.
Serve plain or with a small drizzle of honey and a few additional chocolate chips for melting.

SUPER healthy, naturally sweetened Chocolate Date Bars!! Just 7 ingredients to a snack that tastes more like a candy bar!! YUM YUM. The result is a simple, naturally-sweetened, healthy Date bars that is a little on the decadent side – just the way I like it.

They taste like Supreme awesomeness. They’re rich, dense, moist, super chocolaty, nutty, slightly crunchy and perfectly sweet and very filling.

These Chocolate Date Bars DO indeed taste like a raw brownie. 😛
They require just 7 ingredients.
They’re no bake, aside from toasting your nuts (an optional step).
They’re loaded with antioxidants, protein and healthy fats.
They’re incredibly satisfying.
They’re perfect for breakfast, dessert or a quick snack.
They’re freezer-friendly.
They’re uber chocolatey.
They’re really just kind of perfect.
I did have one for breakfast and found it quite filling. But for the most part I ate these as a healthy dessert. I’d go to the freezer, break off 1/3 and snack. Then repeat for the next 30 minutes until it was gone. Self control comes in waves, people, especially with these bars. 😛 ☺

Chocolate Date Bars

1 cup deseeded dates (chopped)
2 tablespoon roasted almonds (crushed)
2 tablespoon roasted peanuts (crushed)
2 tablespoon roasted walnuts (crushed)
1/2 cup nutella chocolate
1 tablespoon butter
1 tablespoon sesame seeds (optional)
a few drops of vanila essence
Method
Lightly greased a cookie tray with butter or oil.
Melt butter in a pan over medium heat.
Add dates and nuts in it. Cook on low flame for 5-7 minutes or until smooth.
Stir in the vanilla essence.
Turn the heat off and add nutella and sesame seeds.
Mix until well combined.
Transfer into a greased tray and spread evenly.
Allow to cool.
Then put in refrigerator for 2 hours pr until set.
Cut into small bars. Chocolate Date Bars are ready to eat. ENJOY!! 🙂
Serving Suggestions: Serve with a glass of milk.

Chicken Shawarma Wraps
This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make.
For Chicken & Marinade
750 gm boneless chicken (cubed)
2 tablespoon plain yogurt
1 tablespoon vinegar
1 tablespoon lemon juice
2 teaspoon hot sauce
1 teaspoon onion powder
1 teaspoon ginger garlic paste
1 teaspoon mustard paste
1 teaspoon degi mirch (pepper)
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon cinnamon powder
salt to taste
2 tablespoon olive oil
For Pita Bread
3 cups plain flour
1 tablespoon yeast
1 tablespoon sugar
4 tablespoon oil
1 teaspoon salt
For Hummus Sauce
1 cup boil chickpea
2 tablespoon lemon juice
1 tablespoon garlic powder
1/2 teaspoon white pepper
1/2 teaspoon salt
1/4 cup water
1 tablespoon olive oil
For Sour Cream
1/2 cup mayonise
1 tablespoon lemon juice
1 tablespoon garlic (finely chopped)
1/4 teaspoom white pepper powder
1/4 teaspoon salt or to taste
For Shawarma Pickle
1 small onion (thinly sliced)
4-5 black and green olives (pitted & sliced)
1 cucumber (thinly sliced)
1 to mato (thinly sliced)
1 cup cabbage (thinly sliced)
1 cup lettuce leaves (chopped)
4 tablespoon vinegar
a pinch of crushed red pepper
a pinch of salt
Method
Cut chicken into cubes.
Place in a large bowl. Add plain yogurt, vinegar, lemon juice, hot sauce(optional) onion
powder, ginger garlic paste, mustard paste, degi mirch(pepper), cumin powder, coriander powder,cinnamon powder and salt. Stir to coat evenly.
Cover and marinate for at least 4 hour or overnight.
Now heat 2 tablespoon oil in a grill pan over medium heat.
Cook chicken for 10-12 minutes or until all juices run clear. OR Grill chicken pieces for 25 minutes or until chicken is nicely cooked or no longer pink.
Cut chicken into very thin pieces or chunks and set aside.
To Make Pita Bread
Place flour , yeast, sugar, salt and oil in a mixing bowl.
Knead a soft and smooth dough with warm water.
Wipe some oil on the palms of your hands and rub over the lump of kneaded dough.
Then cover the dough with a wet cloth or a plastic sheet and let it rise for 1 hour or until it doubled in size.
Once well-risen, make small balls of equal size.
Roll out each ball gently and evenly (do not lean/press down hard on the ball of dough, you
need to use a light hand) to a thickness of a little more than a quarter inch.
Place the rolled-out pitas on a lightly floured surface and cover them with a towel that not
too much air can get in. Leave them to stand for about 2 hours until they rise again.
Now Preheat oven for 250 degree C.
Bake pita breads in the preheated oven for 5-7 minutes.
keep warm.
To Make Shawarma Pickle
Wash vegetables and cut into thin slices.
Put all vegetables in a mixing bowl or jar. Drizzle vinegar over them.
Season with salt and red chilli.
Stir well and keep aside.
To Make Hummus Sauce
Place chickpea, lemon juice, garlic powder, white pepper, salt, water and olive oil in a
blender.
Blend until well combined.
Take it out in a bowl and sprinkle a pinch of red chili over it.
Set aside.
To Make Sour Cream
In a small bowl, mix together the mayonnaise, lemon juice, garlic, white pepper and salt.
Stir well and keep aside.
To Assemble Chicken Shawarma Wraps
Place pita bread in a clean surface.
Spread sour cream and hummus over it.
Put chicken pieces on it.
Add shawarma pickle and roll tightly.
Secure with a wooden pick or wrap in a butter-paper.
Do this procedure with remaining ingredients.
Chicken Shawarma Wraps are ready to eat!!
Serving Suggestions: Serve with Hummus Sauce, chili garlic sauce and french fries.

Shawarma is eaten in Arab countries, Pakistan, South Africa and the United Kingdom, and the meats, toppings and sauce vary depending on the country. Traditionally, Shawarma is made with chicken, lamb, beef, or goat that has been marinated, and is wrapped and cooked on a vertical rotisserie (similar to Greek gyro meat). When an order is placed, meat is shaved off and served as a wrapped sandwich (using pita bread) with fresh pickles and sauce.

So today, I’m going to share this awesome Chicken Shawarma Wraps recipe with my fans. This dish is not hard to make, it just requires a little bit of planning ahead. Well worth the effort!

This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make. Think of your favorite gyro place where they are slicing meats from a spit, and placing it inside of warm pita or flat-bread, along with sauces and vegetables. That’s shawarma, and this is my take on it. Did I mention my entire family was totally in love with this??

It is really difficult to recreate the taste of shawarma at home, but this recipe I think, does it justice. The key is to leave the chicken marinading overnight for maximum flavour, and to have the grill smoking hot when cooking. And I made the Shawarma Pickles two days before and made a batch of sour cream as well as hummus sauce.

Chicken Shawarma Wraps
This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make.
For Chicken & Marinade

1/4 cup water
1 tablespoon olive oil
For Sour Cream
1/2 cup mayonise
1 tablespoon lemon juice
1 tablespoon garlic (finely chopped)
1/4 teaspoom white pepper powder
1/4 teaspoon salt or to taste

Important Tips:
Try not to pile the pitas on top of each other until after they have cooled. This keeps them nice and plump for filling.
To store pita breads, you can wrap them in cling film and freeze for up to 3 weeks.
For the filling you can use any mixture of your choice with salad, just slit the pitas and stuff them with your favorite ingredients.
You can also make pita breads on a frying pan or hot griddle or even it a bread-maker.
