    Chicken Vegetable Rolls Recipe

    Ingredients

    • 1 cup boiled shredded chicken
    • 1 cup shredded cabbage
    • 2 green onions thinly sliced
    • 2 carrots thinly sliced
    • 1 capsicum thinly sliced
    • 2 tablespoon canola oil
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon freshly ground black pepper
    • salt to taste
    • 1 egg yolk lightly beaten
    • 24 roll wrappers
    • oil for deep frying

    Instructions

    Method

    • Heat a wok or pan until smoking and add the canola oil.
    • Now add the chicken and stir-fry for 2 minutes or until crispy. Season with soy sauce and oyster sauce.
    • Now add green onions, cabbage, capsicum and carrot.
    • Season with salt and pepper.
    • Stir fry for 2 minutes until well combined.
    • Cool down the Chicken and vegetable mixture.
    • Place the 2 tablespoon mixture in one corner of the roll wrappers.
    • Fold and roll up tightly.
    • Tuck the top edge in and seal it with a little of the beaten egg yolk.
    • Repeat with the remaining spring roll wrappers and filling.
    • Heat oil in a deep pan over medium heat.
    • Carefully put the spring rolls in small batches into the oil.
    • Deep-fry for 2 minutes or until they turn crispy and golden-brown.
    • Remove with a slotted spoon and drain on kitchen paper.
    • Transfer the spring rolls onto a plate. Chicken Vegetable Rolls are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with sweet and spicy dipping sauce.

    Ingredients

    • 500 gm lamb minced keema
    • 2 onions finely chopped
    • 2 to matoes finely chopped
    • 1 tablespoon ginger garlic paste
    • 3 medium potatoes peeled & cubed
    • 4 tablespoon sunflower oil
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon red chili powder
    • 1/2 teaspoon cayenne powder
    • 1/4 teaspoon turmeric powder
    • salt to taste
    • 2 tablespoon plain yogurt
    • 4 green chilies thinly sliced
    • few coriander leaves

    Instructions

    Method

    • Heat oil in a deep pot or wok over medium high heat. Add the onions and cook for 3-4 minutes or until they turn light brown.
    • Add the garlic and ginger paste. and saute for about 1 minute till you smell the aroma.
    • Now add the chopped tomatoes next along with cumin powder, turmeric, cayenne, coriander and red chilli powder.
    • Stir and cook for 5 minutes or until oil comes on top.
    • Add minced. Turn heat to high and stir it with a spoon for 20 minutes on medium high heat.
    • The meat will start separating,changing color, sweating and becoming watery. Do not worry, everything is going as per plan.
    • Now add yogurt, 1/4 cup water and salt. Stir well.
    • Turn the heat to the lowest possible on your burner.
    • Cover the pot with a lid and let it simmer on low heat for about 20 minutes or until minc is cooked thorough. Note; {You ll need to stir and check periodically to ensure that lamb is not sticking to the bottom. Add more water if needed.}
    • Now add the potatoes and again cover the pot.
    • Cook covered for 10 minutes or until the potatoes are almost cooked.
    • Remove the lid. Check the seasoning and cook on high again for 5 minutes till everything comes together.
    • Garnish with chopped coriander and green chilies.
    • Dish it out. Minced Lamb With Potatoes are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with chapati or brown rice along with green salad.

    Recipe Note’s:

    1. The cooking time will vary if you are using beef or chicken.
    2. Don’t add too much water at the beginning because ground meats leave moisture as they cook.Add water at intervals as per the consistency you want.
    3. At the end of about 20 minutes of cooking you will see that oil separating from and change in color of the ground meat.

    Ingredients

    • 4 skinless & boneless chicken breasts

    For Sauce

    • 1 small onion chopped
    • 1 small green bell pepper seeded and chopped
    • 2 garlic cloves finely chopped
    • 1 jar organic crushed tomatoes ( about 28 ounce)
    • 1 tablespoon sun dried tomato paste
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 2 teaspoon olive oil

    For Chicken Coating

    • 1/2 cup whole wheat panko bread crumbs
    • 1/2 cup low fat mozzarella cheese shredded
    • 2 tablespoon low fat Parmesan cheese grated
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1 tablespoon Dijon Mustard
    • salt and pepper to taste
    • Olive oil cooking spray

    For Serving

    • broccoli florets steamed or roasted

    Instructions

    • Flatten chicken to 1-inch thickness with meat mallet or rolling pin.
    • Preheat oven to 180ºC or 400ºF. Lightly coat a baking tray with olive oil cooking spray.
    • Now heat oil in a saucepan over medium heat. Sauté onion, garlic and bell pepper in hot oil for 3-5 minutes or until crisp-tender. Now add oregano and basil. Cook and stir for 30 seconds or until oregano is fragrant.
    • Stir in the tomatoes and tomato paste. Bring to a boil. Reduce heat to low, Cover the pan and let it simmer for 25 minutes or until done.
    • Meanwhile, In a shallow bowl, combine together the panko bread crumbs, Parmesan, oregano, thyme, salt and black pepper.
    • Now brush both sides of each chicken breast with Dijon Mustard. Roll each breast into panko mixture then turn to coat evenly.
    • Place chicken on the prepared baking tray. Coat surface of chicken with cooking spray. Bake, in the preheated oven, for 20 minutes or until half-done.
    • Now top each chicken breast with 2 tablespoon tomato sauce and 2 tablespoon mozzarella cheese. Return chicken to oven and bake 10 minutes more, until cheese is melted and bubbly and crust is golden brown.
    • Arrange roasted broccoli on a serving plate and top with remaining tomato sauce and Parmesan Chicken.

    Notes

    Make your chicken Parmesan a bit more golden in color by toasting the panko in a skillet over medium heat first.

    Ingredients

    • 8 Boiled and mashed eggs
    • 4 tbsp Ghee or clarified butter
    • 1 teaspoon pepper powder
    • 1/2 teaspoon red chili powder
    • A handful of chopped coriander leaves
    • Water as per requirement
    • Oil for frying
    • Salt to taste

    Instructions

    Directions

    • Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 30 minutes.
    • Then make small balls from the dough and keep it aside.

    To Make filling

    • To the mashed eggs add salt, pepper, chili powder, coriander and little bit of oil. Mix thoroughly.
    • Take the dough balls and roll out each ball into a thin disc or a chapati.
    • In the middle, place the filling mixture on one round chapati and cover with a another round chapati and seal the edges.
    • Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati. Take care it should not break while rolling it out.
    • Grease your tawa OR griddle with Ghee (clarified butter) and place the paratha over it and when the base turns slightly golden color, apply Ghee (clarified butter) on the top and turn the paratha on the other side.
    • Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown. Egg Paratha is ready to serve. ENJOY!!

    • 2 cups brown rice cooked
    • 2 organic eggs lightly beaten
    • 2 tsp olive oil
    • 1 garlic clove minced
    • 1 green onion thinly sliced
    • 1/2 cup boiled green peas
    • 1/2 cup sweet corns boiled
    • 1/2 cup shredded cabbage
    • 1/2 cup grated carrots
    • 1/4 cup chopped green bell pepper
    • 1 teaspoon crushed red chilli
    • salt to taste

    Instructions

    Directions

    • In a small bowl, beat eggs until small bubbles appear.
    • Heat 1 teaspoon olive oil in a wok over medium-high heat.
    • Add eggs and swirl around wok to form a thin omelette.Cook for 1 minute. Turn and cook a further minute.
    • Remove to a board and thinly sliced.
    • Now add remaining oil, sauté garlic in hot oil for few minutes.
    • Now increase heat to high.Add green peas, sweet corns, carrot and cabbage.
    • Stir-fry for 2 minutes or until crisp-tender.
    • Add green pepper and green onion. Stir fry for few seconds.
    • Then add brown rice.
    • Season with salt and pepper.
    • Stir fry 2-3 minutes or until heated through.
    • Add egg and stir to combine.
    • Dish it out.Vegetarian Fried Brown Rice is ready to serve. ENJOY!!

    Serving Suggestions:
    You can serve it with Fish Manchurian.

    • Melt butter in a pan over medium heat.Pour the egg mixture it it. As egg mixture starts to cook, gently lift edges of omelet with a spatula and tilt pan so uncooked egg mixture flows underneath.Cook for 2 minute or until almost set.
    • Sprinkle cheese over the omelet.
    • Fold omelet in half, allowing cheese to melt.
    • Slide cooked omelet onto a serving plate. Delicious Spinach and Cheese Omelet is ready to serve.

    Note: For a healthier version of these nuggets, you can bake them. After you bread them, lay them out on a baking sheet and drizzle with olive oil. They will probably need to bake at 350-400 degrees F. for 15-20 minutes to get nice and crispy.

    Reshmi Samosa Recipe

    Ingredients

    For Samosa Filling:

    • 250 gm boneless chicken cut into strips
    • 2 tablespoon vegetable oil
    • 2 tablespoon fresh coriander leaves
    • 2 tablespoon fresh mint leaves
    • 1 teaspoon ginger garlic paste
    • 2 green onions thinly sliced
    • 4 green chilies thinly sliced
    • 1 tablespoon fresh cream
    • 1 tablespoon mayonnaise
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon black pepper
    • salt to taste

    For Samosa

    • 12 samosa sheets samosa patti’s
    • oil for deep frying

    Instructions

    • Heat 2 tablespoon oil in a frying pan. Add ginger garlic paste and fry for few minutes.
    • When the aroma comes out, add chicken strips.
    • Cover with a lid and cook on low heat for 5-8 minutes or until chicken is no longer pink.
    • When all water dries up, take it out in a dish.
    • Allow to cool and shred the cooked chicken.
    • Now add green chilies, green onion, mint and coriander leaves.
    • Season with cumin powder, black pepper and salt .
    • Stir in the mayonnaise and fresh cream.
    • Place 1 teaspoon of filling onto a samosa sheet ( samosa patti).
    • Fold samosa sheet around filling into a triangular shape. Seal edges with egg yolks or cold water.
    • Repeat this method with remaining ingredients.
    • Heat oil in a deep pan over medium heat.
    • Fry Reshmi samosa’s in hot oil for 1-2 minutes or until they turn crispy and golden brown.
    • Drain on absorbent paper. Reshmi Samosa is ready to serve. ENJOY!!

    Notes

    Serve with imli ki chutney.

    Ingredients

    • For Filling:
    • 4 boiled potatoes
    • 1 small onion minced
    • 2 tablespoon fresh coriander leaves
    • 2 tablespoon chopped mint leaves
    • 2 green chilies finely chopped
    • 1 tablespoon achar masala
    • 1 teaspoon lemon juice
    • 1 teaspoon dry mango powder
    • 1 teaspoon crushed red chili
    • salt to taste
    • For Samosa
    • samosa wraps as required
    • oil for frying

    Instructions

    • Mash potatoes in a large bowl.
    • Add onion, fresh coriander, mint, green chilies, and lemon juice.
    • Season with achar masala, dry mango powder, red chili and salt. Mix until well combined.
    • Place a samosa wrap on a clean, dry surface and put a portion of the potato filling in one corner of the samosa patti and fold into a triangle.
    • Apply a little water at the edges and seal it.
    • Repeat with the remaining wraps and stuffing to make more samosas.
    • Heat the oil in a pan over medium heat.
    • Deep-fry the samosas in batches till they turn golden brown in colour from all sides.
    • Drain on absorbent paper. Achari Aloo Samosa is ready to serve. ENJOY!

    Notes

    Serve with mint chutney.

    Ingredients

    • 3 potatoes
    • 1 cup chickpea flour
    • 2 tablespoon rice flour
    • a pinch of baking powder
    • 1/2 cup water
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon chaat masala powder
    • salt to taste
    • oil for deep frying

    Instructions

    • Peel potatoes and cut into thick sticks of equal size.
    • In a bowl, mix together the chickpea flour, rice flour, salt, chaat masala, red chili and cumin powder.
    • Add water and make a thick batter.
    • Now add a pinch of baking powder
    • Heat oil in a deep frying pan.Check the oil by dropping a drop of the batter in the oil.
    • Now dip the potato sticks in the batter and drop it one by one in the hot oil.
    • Fry on medium heat for 10 minutes or until it turns crispy and golden brown.
    • Take it out on a paper towel to take out the excess oil.  Potato Pakora Sticks are ready to nibble anytime.

    Serve with your favorite dipping sauce.

    Negative thoughts breed; one bad thought leads to another. Focus on something else when the mind wonders into negative space and when you do have to worry, worry only about your relationship with Allah (s.w.t).

    Fasting does not give you excuse to be weak; look at the companions during the Battle of bad!

    As for bad speech, when someone antagonizes you, say;

    – un-forgiveness
