    Ingredients

    • 1 kg Sarson mustard greens, finely chopped
    • 1/4 kg Spinach finely chopped
    • 2 cm piece Ginger minced
    • 4 cloves Garlic minced
    • 2 Green Chilies minced
    • 2 Red chilies
    • 1 tbsp butter
    • salt to taste
    • ghee or clarified butter

    Instructions

    Method

    • Boil both the greens till soft.
    • Remove excess water, mash the leafy vegetables well and reserve.
    • Heat 4 tbsp ghee and add ginger, garlic, green chillies and broken red chillies.
    • When the masala has been browned, add the mashed saag and salt.
    • Mix the gram flour in a little water and add to the saag.
    • Simmer for at least 30 minutes.
    • Sarson Ka Saag is ready to serve. Enjoy!!

    Serving Suggestions:
    Serve hot, topped with a spoon of butter, with makki ki roti.
  • Black Pepper Mutton Masala: Restaurant-Style at Home

     Black Pepper Mutton

    Ingredients of Black Pepper Mutton:

    • 1 kg Mutton
    • salt to taste
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 1/2 tsp black pepper
    • 4 tbsp oil

    For garnishing:

    • 4 tbsp cup coriander leaves, finely chopped
    • 2 tbsp  mint leaves, finely chopped
    • 2 tbsp lemon juice

    How to make Black Pepper Mutton:

    • Wash and soak mutton for some time.
    • Take a pressure cooker and add mutton ,salt , ginger garlic paste , black pepper , oil and water (put the water double of the quantity) and put it on stove.
    • See to it that all water should be absorbed and mutton should be mashed properly.
    • After water is absorbed cook it for 15min on low flame .
    • Then add coriander and mint leaves and last add lemon juice.
    • Take into a serving bowl.
    • Black Pepper Mutton is ready to serve.
    • Serve with hot paratha’s.

    Ground lamb is seasoned with fresh mint and coriander, and ginger and green chili paste, and made into delicious Seekh Kebab. Serve with lime wedges, mint.

    Step 1

    Preheat the oven to 200 degree C.

    Step 2

    Mix together the lamb, ginger and garlic in a mixing bowl.

    Step 3

    Add in the onion, mint, green chilli, garam masala, cayenne pepper, cumin powder, coriander powder, salt and coriander leaves.

    Step 4

    Mix well.

    Step 5

    Form the mince mixture into long sausage-shaped kebabs or alternatively skewer onto four long skewers and place on a rack in a roasting tray.

    Step 6

    Bake the kebabs for 12 minutes.

    Step 7

    Turn the kebabs over and baste with a little of the melted butter and bake for a further 5 minutes.

    Step 8

    Preheat the grill and grill the kebabs for a further 2-3 minutes, basting with the remaining butter.

    Step 9

    Slice the kebabs and set aside.

    Step 10

    Heat the butter in a large, heavy-based frying pan.

    Step 11

    Add in the onion and fry, stirring, until translucent.

    Step 12

    Add in the sliced kebabs and fry for 1 minute. Season with chaat masala powder. Seekh Kebab is ready to serve. Enjoy!

    Chicken Mughlai:

    This is a dish for special occasions – not for any other reason except that it is rich! Its mild, thick, creamy gravy is inspired by the food of Central Asia and came to India during the rule of the famous Mughal dynasty. Cook and eat it and you will feel like royalty yourself!

    Ingredients:

    • 1 whole chicken (about 1 kg)
    • 1/4 cup oil
    • 2 onions, sliced
    • 1 tbsp chopped ginger
    • 2 tbsp chopped garlic
    • 6-8 dry red chillies
    • 1 tsp tumeric powder
    • 1 1/4 cups curd, whisked
    • 4 black cardamoms
    • 6 cloves
    • 2 inch stick cinnamon
    • 3 bay leaves
    • 1/2 cup cashew nuts, ground to a paste
    • 1 lime (juice)
    • 1 egg
    • 1/4 egg chopped coriander leaves
    • Salt to taste

    How to make Chicken Mughlai:

    • Wash and clean the chicken and cut into 8 pieces.
    • Heat the oil in a pan and lightly brown the onions.
    • Drain onions, remove from pan and grind along with the ginger, garlic, red chillies and turmeric.
    • Mix half the ground spices with the curd and rub into the chicken.
    • Heat 1 tbsp oil in a pan and add the whole spices and bay leaves.
    • Fry for a minute and pour this over the chicken.
    • Heat the remaining oil and add the remaining ground spices.
    • Fry until the oil floats on top.
    • Add the chicken and fry for 5-7 minutes until dry.
    • Pour in 1 cup water and cook until the chicken is tender.
    • Mix in cashew nut paste, stir once and remove from the heat.
    • Add lime juice and beaten egg and stir well until the egg coagulates and disperses in the gravy.
    • Garnish with the coriander leaves.
    • Chicken Mughlai is ready to serve.
    • Serve hot with tandoori rotis.

    Ingredients

    1st Part

    • Goat Trotters paya 8
    • Garlic 1 bunch
    • Ginger 3 Tbsp
    • Onion 3-4
    • Haldi 1 Tbsp

    2nd Part

    • Zeera 1 Tbsp
    • onion thinly sliced 2
    • Garlic paste 2 tsp
    • Garlic paste 2 tsp
    • Red chillies 2 tsp
    • oil 1/2 cup
    • haldi 1 tsp
    • Daal mash boiled & mashed 1/2 cup

    For Garnish

    • Coriander leaves
    • Green chillies
    • Ginger slices

    Instructions

    Method

    • Cook Trotters with 1st part ingredients for 2-3 hours adding a lot of water till trotters are tender & soft.
    • Boil daal mash with little ginger garlic paste & mash it.
    • Heat oil in a big pan.
    • Add onion.
    • Fry till light golden.
    • Add ginger, garlic paste, haldi, red chillies.
    • Fry adding little water.
    • Add boiled daal mash & boiled trotters, salt.
    • Cook it again on low heat for 1 hour.
    • Sprinkle zeera powder.
    • Garnish with coriander leaves, green chillies & ginger slices.
    • Mutton Paya is ready to serve.

  • Recipe: Shahi Mutton Curry

    Ingredients:

    • 1/2 tsp Kashmiri chilli
    • 1 tsp salt
    • 1 cinnamon stick
    • 1kg mutton, cubed
    • 1 tsp ground cardamom
    • 1 1/4 cups cream
    • 2 tbsp ginger, chopped and peeled
    • 2 tsp cumin seeds
    • 2/3 cup vegetable oil
    • 3 onions, chopped
    • 5 tbsp almonds, blanched
    • 6 tbsp water
    • 6 whole cloves
    • 8 cloves garlic, peeled

    How to make Shahi Mutton:

    • In a blender or food processor, combine garlic, water, almonds and ginger and make a smooth paste.
    • Keep aside.
    • In a pan or a pressure cooker heat oil and add cardamom, whole cloves and cinnamon stick.
    • Stir and then add chopped onions and cook till they are light brown.
      Lower flame and add the paste.
    • Fry, stirring for a couple of minutes, add the meat and fry five to 10 minutes.
    • Now add about two cups of water, cumin seeds, Kashmiri pepper and salt.
    • Mix well, cover and cook at medium heat till the meat is tender.
    • About half way through the cooking, lower the flame and add cream.
    • Mix well, cover and cook till the meat is tender and the oil comes on top.
    • A few drops of korma essence can be added to enhance the flavour.
    • Shahi Mutton is ready to serve.
    • Serve hot with naan or rice.

    • 1 kg undercut beef (one whole piece)
    • 4 table spoon Worcestershire sauce
    • 1 table spoon red chili powder
    • 1 tea spoon salt
    • 2 tea spoon oil

    How to make Meat Roast:

    • Punch the meat well with a fork.
    • Rub red chili powder and salt all over the meat.
    • Apply Worcestershire sauce and keep it in refrigerator overnight.
    • Next day take the meat out and set aside for two three hours.
    • Heat the oil, place the meat and let it brown on both sides.
    • Add just sufficient water to tenderize the meat and cook over a low stove till done.
    • Cut in slices before serving.
    • Meat Roast is ready to serve.

    Ingredients:

    • 1-1/2 cups Whole Wheat Flour
    • 1 cup all purpose flour
    • 1/2 tsp baking powder
    • 2 tbsp oil
    • Water to knead

    How to make Roomali Roti:

    • Mix wheat flour, all purpose flour,salt and baking powder and sieve them together.
    • Pour oil in the flour and add water bit by bit and make a smooth & elastic dough and set aside covered with moist muslin cloth for 1/2 an hour.
    • Now make small balls of the dough and roll like a thin chapati of about 12″ diameter circle using little dry flour.
    • Heat an inverted griddle or tawa.
    • Place the roti carefully over it and cook till done.
    • Fold it like a handkerchief.
    • Roomali Roti is ready to serve.
    • Serve hot with vegetables!

    Step 1

    To Make the dough: Combine the all purpose flours,wheat flour,salt and butter. Put enough milk and make soft dough.

    Step 2

    Knead the dough properly and keep aside for at least 15 minutes.

    Step 3

    To Make Stuffing: Heat the ghee, put the onion and cook till it becomes soft. Put the vegetables, potatoes, green chillies, chilli powder, garam masala, coriander and salt and cook for 1 or 2 minutes.

    Step 4

    Take out and keep it cool.

    Step 5

    Divide the dough into 12 equal portions.

    Step 6

    Apply a little flour and roll out into rounds.

    Step 7

    Put 2 tbsp of the stuffing in the center of each dough round and fold like an envelope from all the corners.

    Step 8

    Roll into rounds and cook on hot griddle (tawa) for 1-2 minutes, turn over on the other side and cook again till it becomes crispy.

    Step 9.

    Repeat the same procedure for the remaining rounds. Sabzi ka paratha is ready to serve.

  • Oven Naan Recipe

    Ingredients:

    • 1/4 ounce active dry yeast
    • 1 tbsp sugar
    • 3 tbsp Warm (110-115°F)
    • 4 cups all-purpose flour
    • 1/2 cup Warm milk (110-115°F)
    • 1/2 cup Yogurt
    • 1 beaten Egg
    • 1 tbsp Oil or melted butter
    • 1/2 tsp salt

    How to make Oven Naan:

    • In a medium-sized bowl, mix together the yeast, sugar and 3 tbsp warm milk.
    • Cover and set aside for 5-10 minutes to activate the yeast.
    • Add the flour to a large mixing bowl and make a well in the center of the flour.
    • Whisk the remaining 1/2 cup warm milk, yogurt and eggs into the bowl with the yeast.
    • Pour the liquid ingredients into the center well of the flour, along with oil or butter and salt.
    • If using a mixer, beat with dough hook about 10 minutes until smooth.
    • To mix by hand, bring the ingredients together with a fork and then knead on a lightly floured work surface until smooth, about 10 minutes.
    • Form the dough into a ball and place it in a lightly oiled bowl.
    • Cover with plastic wrap and rest in a warm place until doubled in size, anywhere from 1-2 hours.
    • Punch the dough down with your fist and knead lightly.
    • Cut into 8-10 equal portions and roll into each into a ball.
    • Cover the balls lightly with plastic wrap and let rise in a warm spot until doubled again in size.
    • Set an empty baking sheet in the oven and preheat oven 475-500°F.
    • Roll each ball of dough into an oblong circle.
    • Brush each with oil or ghee and sprinkle with a garnish if desired.
    • Pat the garnish into the dough lightly with your hand.
    • Bake in batches on the preheated baking sheet for about 5 minutes, or until golden brown.
    • Brush with melted butter or ghee as it comes from the oven if you like.
    • Oven Naan is ready to eat!

  • The Perfect Hara Bhara Paratha Recipe (Healthy and Delicious!)

    Ingredients:

    • 1 cup wheat flour
    • 3/4 cup spinach
    • 2 tsp Oil
    • salt to taste
    • 1 cup fresh coriander leaves
    • 1 tsp ginger paste
    • 1 tsp chili paste
    • 1 lemon
    • 1/2 tbsp flax seeds
    • 1/2 tbsp cumin seeds

    How to make Hara Paratha:

    For Masala:

    • Grind coriander, chili ginger paste, lemon, flax seeds and salt in a mixer.
    • Remove in a bowl and keep aside.

    For Dough:

    • Blanch the spinach and puree.
    • Make dough using wheat flour, salt, and spinach puree.
    • Do not use water.
    • Cover the dough and keep it for 5-7 minutes.

    For Paratha:

    • For each paratha, roll out 2 chapatis.
    • Apply chutney on one of them and press the other on top.
    • Heat griddle, smear it with oil and roast the paratha.
    • Remove when brown spots appear on both sides.
    • Serve hot with yogurt.

    Ingredients

    • 2 cups flour
    • 1 cup steamed and finely chopped spinach leaves.
    • 1/2 tsp salt
    • 1/2 tsp whole cumin seeds
    • 5-6 black pepper,coarsely crushed
    • 1 tbsp oil to make dough
    • A little water to form dough
    • Oil or ghee for shallow frying

    Directions:

    Step 1

    Mix together the flour, spinach and spices.

    Step 2

    Add 1 tbsp of oil and knead with water to form a dough which is medium-soft.

    Step 3

    Cover and keep in the fridge for at least half an hour to set.

    Step 4

    Break into small balls.

    Step 5

    Roll out into small chapattis and shallow fry on medium heat in a frying pan till very lightly brown.

    Step 6

    Transfer into a serving platter. Spinach Roti ready to serve.

    Serving Suggestions:

    Serve hot with yogurt or any pickle or chutney.
