    Mooli Paratha is one whole meal by itself it is sure to win everyone’s heart, serve this delicious paratha with chutney, yogurt or just a little pat of butter.They are best enjoyed hot and crisp straight from the tava (griddle).Give it a try!!

    Ingredients

    • 3 cups of Whole Wheat Flour
    • 2 cups grated White Radish
    • 1 medium Onion , finely chopped
    • 1/4 cup fresh coriander leaves, finely chopped
    • 1 tsp red chilli powder
    • 1 tsp carom seeds (Ajwain)
    • 1/2 tsp garam masala
    • salt to taste
    • 2 tbsp Butter
    • 1/2 cup Butter or Cooking Oil

    Directions:

    Step 1

    Mix together the flour, butter, and salt thoroughly in a bowl.

    Step 2

    Then add sufficient water to make a dough, knead for 5 minutes, cover and set aside for 15 minutes.
    Wash the radish well and grate it using a vegetable grater.

    Step 3

    Add a teaspoon of salt to the grated radish, mix well and set aside for 3-5 minutes.

    Step 4

    Now squeeze out the water.

    Step 5

    To the squeezed radish, add garam masala , red chilli powder, onions, coriander leaves, and carom seeds.

    Step 6

    And mix well.

    Step 7

    Divide this mixture into 1 inch sized balls. And set aside.

    Step 8

    Divide the dough into slightly larger than 1 inch size balls, flatten each ball into a circle.

    Step 9

    Place the grated radish balls at the center of the flattened dough.

    Step 10

    Then, gently stretch the dough to envelope the mixture completely, such that all the edges meet at the top of the dough ball.

    Step 11

    Using your fingers seal the dough well so that all the stretched up edges blend into one.

    Step 12

    Dust with some flour and roll out the dough into a circle.

    Step 13

    Heat a frying pan and when frying pan is very hot, place the rolled out dough on it.

    Step 14

    Leave dough for a minute and turn over.

    Step 15

    After a minute or so the paratha will slowly start to bubble up.

    Step 16

    Now drizzle one teaspoon of melted butter or cooking oil on top of the paratha and turn over.

    Step 17

    The paratha immediately starts to rise.

    Step 18

    Repeat the drizzling with melted butter or cooking oil on the other side as well.

    Step 19

    Turn over again and let it rise once more.

    Step 20

    When golden brown on both sides, remove from frying pan. Mooli Paratha is ready to serve.

    • Serve with yogurt or mint raita.

    Mix maize flour, oil and salt.

    Step 2

    Knead in a soft pliable dough, adding very little water at a time.

    When the dough is very smooth and soft, bread a lump.

    Shape into a ball, flatten and pat with palm, to make a thin roti.

    Step 5

    Use dry plain flour to help. Or roll with a rolling pin.

    Step 6

    Take care to dust with flour and lift and turn to avoid sticking.

    Step 7

    Place on a heavy iron or earthen griddle and roast till crisp.

    Step 8

    Repeat on both sides. Repeat for all rotis.

    Step 9

    Cover and line with napkins to keep warm.

    Drizzle with ghee or butter if desired. Makki Ki Roti is ready to serve.

    Mint is a magic ingredient, which adds zing to any preparation, however simple. Here is a simple process of dry roasting and crushing the leaves boosts the aroma of mint extraordinarily, adding a flavourful punch to the whole wheat flour rotis.

    Pudina roti is such a healthy dish with a wonderful aroma. Its a healthy treat for your taste buds. This is my most favourite style of eating roti. Its a lighter version of roti and I just love it. Check it out the Pudina Roti Recipe here!!

    Ingredients:

    • 2-1/2 cups flour
    • 1 cup mint,finely chopped
    • 2 tbsp oil or butter
    • Oil for shallow frying
    • Salt to taste

    How to make Mint Roti:

    • Sift the flour and salt in a bowl.
    • Add 2 tbsp of oil and mint and knead a stiff but non-sticky dough..
    • Cover with a damp cloth and leave aside for 30 minutes.
    • Divide the dough into 15 parts.
    • Shape like balls and press flat with the palm of your hand.
    • Roll out the roti into a round disc about 5″ diameter.
    • Put roti on a preheated griddle, dry roast both sides first then spread oil on both sides and shallow fry until well browned.
    • Mint Roti is ready to serve.
    • Serve with any pickle or raita.

  • RECIPE: Cauliflower Paratha (Gobhi Paratha)

    Ingredients:
    For Dough:

    • 4 cups whole wheat flour
    • 3 cups cold water
    • 3/4 cup ghee or clarified butter

    For Filling:

    • 2 tbsp ghee or clarified butter
    • 1 tbsp ginger,finely chopped
    • 1 tsp garlic,finely chopped
    • 1/2 cup onions,finely chopped
    • 1/4 tsp turmeric powder
    • 1/8 tsp hot chili peppers
    • 1 medium cauliflower florets trimmed, and coarsely chopped
    • 1 tbsp hot green peppers, finely chopped
    • 1 tsp ground cumin
    • 1 tsp salt
    • 8 tbsp ghee or clarified butter

    How to make Cauliflower Paratha :

    For Dough:

    • In a small bowl, combine the whole-wheat flour and 1/4 cup of the ghee.
    • With your fingertips rub the flour and fat together until they look like flakes of coarse meal.
    • Pour 1 cup of water over the mixture all at once, knead together vigorously, and gather the dough into a compact ball.
    • If the dough crumbles, add up to 2 cups more water, 1/4 cup at a time, until the particles adhere.
    • On a lightly floured surface, knead the dough by folding it end to end, then pressing it down and pushing it forward several times with the heel of  your hand.
    • Repeat for 7 or 8 minutes, until the dough is smooth and elastic.
    • Again gather it into a ball.
    • Place the dough in a bowl, drape a kitchen towel over the top, and let it rest at room temperature for at least 30 minutes before rolling it.

    For Filling:

    • Meanwhile, in a heavy 10 to 12-inch skillet, heat 2 tbsp of ghee over high heat until a drop of water flicked into it splutters instantly.
    • Stir in the ginger and garlic, then the onions.
    • Lower the heat to moderate and, stirring constantly, fry the mixture for 7 or 8 minutes, until the onions are soft and golden brown.
    • Stir in the turmeric, red pepper, cauliflower, chili, cumin and salt.
    • Reduce the heat to low, cover tightly and cook for 10 minutes, or until the cauliflower is tender but still slightly resistant to the bite.

    To make the parathas:

    • Divide the cauliflower mixture into 9 equal portions.
    • Divide the dough also into 9 portions and drape a dampened kitchen towel over them to keep the dough moist.
    • One at a time, on a lightly floured surface, roll a ball of dough into a round about 5 inches in diameter.
    • Place a portion of the filling mixture in the
    • center of the round and fold the edges over it,
    • pressing them together to enclose the filling
    • securely.
    • Pat the filled paratha flat with your hands, then
    • gently roll it again to make a round about 5
    • inches in diameter.
    • As you shape and fill the parathas, set them
    • aside, covered with a dampened kitchen towel to
    • keep them from drying out.
    • Heat an ungreased 10 to 12-inch skillet with a non
    • stick finish or a well-seasoned cast-iron skillet
    • or griddle until it is hot enough for a drop of
    • water flicked into it to splutter instantly.
    • Place one of the parathas in the pan and, moving
    • it about constantly with your fingers or the edge
    • of a metal spatula, cook for a minute or so.
    • With a wide spatula, turn the paratha over and
    • brush about a tsp of the ghee on the top.
    • Cook for 2 minutes, then turn it over, spread with
    • another teaspoon of ghee and cook for 1 minute.
    • Turning frequently, continue to cook until the
    • paratha is brown on both sides.
    • Serve hot with mint chutney or fresh curd.

    • 1/2 kg flour
    • 1 egg
    • 1/2 cup ghee
    • 1/2 cup castor sugar
    • 1 tbsp yeast
    • 1/4 tsp salt
    • milk to knead dough

    Directions:

    1. Soak yeast in lukewarm water for 10 minutes.
    2. Place all ingredients in a large bowl.
    3. Mix well and knead a soft dough with milk.
    4. Leave it for 20 minutes.
    5. Preheat oven to 150 degree C.
    6. Make sugar syrup by dissolving a little sugar in water.
    7. Make small balls out of the dough.
    8. Roll into shape of roti.
    9. Brush top with sugar syrup.
    10. Prick top by using fork.
    11. Bake in the preheated oven for 10 minutes or until golden.
    12. Take it out from the oven.
    13. Sheermal is ready to serve.
    14. Enjoy!
    • Serve with qorma.

    Step 1

    To Make the Dough: Add yeast and sugar in warm water and let it rise for 10 minutes.

    Step 2

    Make a well in flour and add yeast mixture, yogurt and oil. Mix well. Knead a soft dough you can use extra warm water if needed.

    Step 3

    Cover with kitchen towel in warm place. Let the dough rise for about 35 minutes.

    Step 4

    Punch the dough and take out air. Let it sit again for 30 minutes.

    Step 5

    Make small balls out of the dough and cover them with awet cloth.

    Step 6

    Place chicken keema in a large bowl. Now put all the filling ingredients in keema. Mix well and set aside.

    Step 7

    Heat a griddle on medium heat.

    Step 8

    Turn the oven to broiler setting and put the rack on top most part.

    Step 9

    Roll the ball into about 3-inch circle.

    Step 10

    Take Keema mixture and fill in the circle and make ball again like you make for kachori.

    Step 11

    Roll out into a size of naan you want.

    Step 12

    Make depressions with the tip of fingers or with soft baby spoon handle.

    Step 13

    Put the naan on tawa on low to medium heat and spray Pam on it. Let it cook for 10 minutes or you see the keema is changing the color to pink or light brown.

    Step 14

    Transfer naan into the oven. Let it broil for 10 minutes or until it turns to your desired color.

    Step 15

    Remove from the oven. Chicken Keema Naan is ready to serve. ENJOY!!

    Triangle Paratha

    This is an Easy version of  triangle paratha!  Learn how to make layered triangle paratha by following this easy Recipe.

    Ingredients

    • 2 cups whole wheat flour
    • 3/4 cup warm water
    • 1 tablespoon olive oil
    • 1/2 teaspoon sea salt
    • olive oil cooking spray
    • additional flour for dusting the parathas

     

    Directions:

    Step 1

    In a large mixing bowl, combine the ingredients for the dough.

    Step 2

    Knead on a floured counter top for about 5 minutes or until the dough is smooth and elastic.

    Step 3

    Divide into 8 balls, cover with a damp kitchen towel and let them rest for 30 minutes.

    Step 4

    Roll out a piece of dough to about 6″ in diameter on your floured counter top.

    Step 5

    Fold the dough in half onto itself to create a semi-circle.

    Step 6

    Fold the semi-circle in half to create a triangle shape & then roll out the triangle just a bit.

    Step 7

    Heat a little olive oil cooking spray in the large skillet on medium heat.

    Step 8

    Cook paratha until brown on the bottom – then flip & cook until browned on both sides.

    Step 9

    Remove from heat and repeat with the remaining dough. Triangle Paratha is ready to serve. Enjoy!

    • Serve with curry, dal or any vegetable.

    • 1-1/2 cup plain flour
    • 4 tablespoon caster sugar
    • 4 tablespoon ghee or clarified butter
    • 3 tablespoon cashew nuts
    • 3 tablespoon chopped almonds
    • 1 teaspoon cardamom Powder
    • saffron few strands
    • few silver warq
    • milk for kneading the dough

    Instructions

    Method

    • Sieve flour and add all ingredients except sliver warq.
    • Knead to a fairly soft dough. Keep for 1/2 an hour.
    • Make small balls roll them put ghee and fold it over into a semi circle.
    • Put more ghee over the upper surface and fold.
    • Then fold length wise press it with fingers and roll into a round circle and cook on tawa.
    • Remove cover with warq. Sweet Warqi Roti is ready to serve. Enjoy!

    Boiled chana dal then remove the excess water.

    Now Place dal in the chopper, add all remaining ingredients except oil.

    Grind dal. Let it cool for 30 minutes.

    When cool down stuff this paste into the balls.

    Make thin parathas.

    Heat a griddle over medium heat. Place paratha on the hot griddle.

    Method

    • In a small bowl, mix together the gramflour(besan), onion, spinach, green chilies, spices, salt and red chili. Add water and make a thick mixture.
    • Spread the besan mixture on the naan.
    • Put naan on a greased baking tray.
    • Sprinkle green chilies over it. Bake in the preheated oven for 8-10 minutes or until golden brown.
    • Remove from the oven.
    • Brush with butter or oil. Besan Wala Naan is ready to serve. ENJOY!!

  • Melty Goodness: A Delicious Homemade Cheese Paratha Recipe!

    Cheese Paratha (Stuffed Paneer Paratha)

    Ingredients:
    For the dough :

    • 1 cup  plain flour
    • 1 tbsp Oil
    • Water for kneading

    For filling :

    • 1 cup paneer crumbs
    • 4-5 green chilies,finely chopped
    • 1 onion,finely chopped
    • 2 tbsp fresh coriander leaves,finely chopped
    • 2 tbsp mint leaves,finely chopped
    • salt to taste
    • 2 tbsp ghee, Clarified butter
    • Oil or Clarified butter for making the paratha

    How to make Paneer Paratha:

    • Knead the flour as stated.
    • Mix paneer with all the other dry ingredients together.
    • Roll out the dough into small puris & spread some of the paneer filling over it.
    • Make a tight Swiss roll.
    • Press together and re-roll to full size parantha.
    • Now cook on a tava (griddle) with Ghee (clarified butter) until light brown.
    • Serve hot with any Chutney or pickle or just plain fresh curds.
    • Enjoy!

    Stuffed Kulcha

    Kulcha is a popular Pakistani flat bread from Punjab, especially Lahore. These soft textured breads (kulcha) are easy to prepare. You can make kulchas in the tandoor as well as on a tawa or griddle.

    I don’t like the soapy smell of yeast in breads. Hence have used less amount of it and thus added milk too.

    Kulcha can be made plain or stuffed. you can also stuff kulcha with potato filling as shown in the aloo paratha recipe.  You can also make different variations of kulcha like onion, paneer or pudina kulcha.

    Step 1

    Heat milk until warm.

    Step 2

    Remove from the fire and dissolve sugar in the milk.

    Step 3

    Sprinkle yeast on top of milk and set aside for 15 minutes until it froths.

    Sift flour and salt together.

    Step 5

    Add butter and mix.

    Step 6

    Make a well in the center of the flour mixture and pour in the milk.
    Mix with hand or a wooden spoon until smooth.

    Step 7

    Grease a large bowl and put in the dough.
    Brush top with oil, cover with a damp cloth and leave to rise for 1 hour or until doubled.

    Step 8

    Remove dough from the bowl.

    Step 9

    Knead with the help of some flour.

    Step 10

    Divide into 6 or 8 pieces and roll into balls.

    Step 11

    Roll out on a floured board into roughs, almost 1/4-inch thick. If using a filling, put it in the center, seal edges over filling and roll out again carefully.

    Step 12

    Let kulchas rise for approximately 15 minutes.

    Step 13

    Heat a griddle or tawa or a non-stick pan.

    Step 14

    Carefully place kulcha on it and cook on medium heat. Turn before it browns.

    Step 15

    When the other side begins to cook, add some oil and fry until golden.

    Step 16

    Make the other kulchas the same way. Stuffed Kulcha is ready to serve.Enjoy!

    Step 1

    Mix all the ingredients and knead well until the dough is very smooth about 5-10 minutes.

    With oily hands put the dough in a bowl.

    Cover with a damp cloth or polythene bag and leave in a warm place to rise for about 3 hours or until the dough has doubled in size.

    Step 4

    Mean while prepared the stuffing.

    Put the mince and all the ingredients for the stuffing in a bowl and knead the mixture really well for a few minutes with you hands.

    Step 6

    Knead the dough for another minute or two then divide the dough into 8-10 equal parts. Shape each potion into a smooth ball.

    Lightly grease several baking sheets.

    Step 8

    On a floured surface, roll out the ball to about 3 inches in diameter and place it on the palm of you hand.

    Place good amount of mince mixture in the center and carefully fold up the edges to completely cove the filling.

    Step 10

    Press the edges taught together to seal.

    Step 11

    Dip the stuff ball in dry flour and roll out into a round about 6 – 7 inches in diameter.

    Step 12

    Brush the naan with a little cold milk and sprinkle sesame seeds over it.

    Step 13

    Place in a hot oven at 200 degree C for 12-15 minutes until the top is golden in color.

    Step 14

    Remove the naan from the baking sheet and brush with desi ghee or butter.

    Step 15

    Cut each naan into half and transfer into a serving platter. Keemay Waly Naan is ready to serve. ENJOY!

    For the dough :Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 10 minutes.

    Then make small balls from the dough and keep it aside.

    For filling: Boil the minced mutton in salted water until it is tender.

    Now heat the oil in a pan, add onions and fry until brown.

    Also add grated ginger-garlic, salt, turmeric, chili powder, coriander powder, garam masala, boiled mutton and fry till the water dries and the oil separates.

    Add the chopped coriander leaves and remove from the heat.

    Keep it aside.

    Take the dough balls and roll out each ball into a thin disc or a chapati and in the middle.

    Place the filling mixture on one round chapati and cover with a another round chapati and seal the edges.

    Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati.

    Step 11

    Take care it should not break while rolling it out.

    Step 12

    Grease the griddle (tawa) with Ghee or clarified butter.

    Step 13

    Place the paratha over it and when the base turns slightly golden color, apply Ghee on the top and turn the paratha on the other side.

    Step 14

    Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown. Keema Paratha is ready to serve.
