    The name in itself says that it is a royal dish among all the other rice preparations of Pakistan and Indian. There are many subtle variations to biryani, the familiar elements found in all of them is the harmonizing of Indian condiments, spices ,stock & yogurt. The aroma of cinnamon, cloves, bay leaf and cardamom distinctly fills the air. The blending of two whole and separate dishes into one, bursting with flavour. When it comes to Biryani, one can understand by the tempting aroma and fragrance of the dish, how much effort the cook has put into it. Today I’d like to share my White Mutton Biryani recipe with you all which is actually a combination of Dum Biryani and Yakhni Pulao. Goes great with simple salad and zeera raita.     For stock (yakhni):

    • 6 cup water
    • 4 bay leaves
    • 2 black cardamom
    • 6 garlic cloves
    • 8 mint leaves
    • 1 small piece of dried ginger
    • 1 cinnmon stick
    • 1 tablespoon fennel seeds

    For Mutton Biryani:

    • 500 gm mutton
    • 500 gm basmati rice
    • 1 large onion, thinly sliced
    • 2 tomatoes
    • 1 cup plain yogurt
    • 1/2 cup brown onion
    • 1/2 cup oil
    • 4 cloves
    • 4 green caradmom
    • 1 black cardamom
    • 1 tablespoon ginger garlic paste
    • 2 teaspoon green chili paste

    Step 1

    Take a large pot, add water, bay leaf, dried ginger, cinnamon stick, fennel seeds, black cardamom, garlic cloves and mint leaves in it.

    Step 2

    Bring to a boil and cook for 30 minutes. Strain the stock and set aside.

    Step 3

    Put mutton in the pan. Add stock, ginger garlic paste, cloves, sliced onion, black cardamom, green cardamom, green chili paste. Cover and cook for 1 hour or until mutton is almost tender.

    Step 4

    Now add, yogurt. Cook fro 10-12 minutes or until all water dries up.

    Step 5

    Meanwhile, boil rice with salt until half done. Strain and reserve half cup water of the rice.

    Step 6

    Layer mutton mixture, tomato slices, brown onion and boil rice in a heavy bottom skillet or pot. Drizzle reserved water from rice over it.

    Step 7

    Heat oil and pour on the top of rice. Cover and simmer for 15 minutes on low flame or until cooked thorough.

    Step 8

    Take it out in a serving dish. Garnish with mint leaves. Delicious white Mutton biryani is ready to be serve.

    Notes:- 
    • While frying onions, add a pinch of salt. This speeds up the frying process.
    • You may boil the chicken a day before the cooking to make it easier the next day.
    • Do not overcook the rice or else it will become mushy.

    Heat oil in a deep pan or karahi. Saute ginger garlic paste in it.

    Step 2

    Add onion and cook for 2-3 minutes or until translucent.

    Step 3

    Now add mutton and cook for 20 minutes or until all water of mutton dries.

    Now add 2 cup water, coriander, cumin and salt. Cover and cook for 1 hour or until meat is almost tender.

    Step 5

    Now add yogurt and black pepper, cook on high flame until the oil separates from the gravy and meat tenderize.

    Heat oil in a heavy bottom skillet or pan. Saute onion in hot oil.

  • Spicy & Tender: The Perfect Hunter Beef Recipe for Meat Lovers!

    Ingredients:

    • 2 kg beef
    • 2 tsp kulmi shora (crystallized salt petre)
    • 3 tsp black pepper
    • 2 cinnamon sticks
    • 4 black Cardamom
    • 3 tbs —— lemon juice

    How to make Hunter Beef:

    • Wash the meat and dry.
    • Ground all the spices.
    • Add all spices in lemon juice to make paste.
    • Rub the paste on meat.
    • Place it in a glass or stainless steel container and cover it.
    • Place the bowl in the fridge for one day.
    • Next day get the meat out and sort of massage the meat for half an hour so that it absorbs the paste.
    • Once again put the meat back in the fridge. Repeat the same process each day for six days.
    • On sixth day remove the meat loaf from the fridge and tie it with a strong string.
    • Place the meat in a large pot & put 2 cups of water in the pot (not on the meat loaf).
    • Cook it over low heat for 2 to 3 hours or until the water is absorbed.
    • Hunter beef is ready to serve.
    • Usually this dish is use to make sandwich, burgers or take a bite with soft drinks.

    Add mutton keema, ginger, tomatoes, green chilies, coriander powder, cumin powder and red chili powder. Cook and stir for 5-8 minutes.

    Note:breaking up any lumps if formed.

    Step 4

    Add water. Bring to a boil. Cover and simmer for 40 minutes or until mince is tender.

    Step 5

    Add peas, salt, and the 1 cup water. Mix well.

    Step 6

    Cover and simmer for 10-15 minutes or until peas are cooked well. Adjust seasoning.

    Step 7

    Take it out in a serving dish. Sprinkle garam masala over it. Garnish with green chilies and ginger slices. Delicious Keema Matar is ready to serve.

    For Burger Patties:

    • 250 gm ground beef
    • 1 bread slice
    • 1/4 cup milk
    • 1 tsp tomato ketchup
    • 1 tsp Wooster sauce
    • 1/2 tsp garlic paste
    • 1/2 tsp mustard powder
    • 1/2 tsp black pepper freshly ground
    • 1/2 tsp salt
    • 1 egg lightly beaten

    For Burger:

    • 2 burger buns
    • 1 cup french fries
    • 1/2 cup creamy coleslaw
    • few salad leaves
    • few tomato slices
    • few cucumber slices

    Instructions

    • Soak bread slice in cold milk then squeezed. Set aside.
    • Put ground beef in a bowl. Add salt, black pepper, mustard powder, garlic paste, Wooster sauce, ketchup, bread slice and egg. Mix until well combined.
    • Now make burger patties.
    • Heat oil in a shallow frying pan.
    • Fry patties on each side for 3-4 minutes or until cooked thorough.
    • Then remove from the oil and set aside.
    • Cut burger buns in halves.
    • Toss slightly, then spread mayonnaise on it.
    • Put burger patties on it.
    • Top with salad leaves, tomato slice,coleslaw salad.
    • Put a second layer of toasted buns, spread salad leaves, topped with Coleslaw salad.
    • Drizzle ketchup and now close with last layer of toasted bun.
    • Jumbo Beef Burger is ready now.

    Notes

    Serve with French fries and Creamy Coleslaw.

    • 1 kg undercut beef cut into strips.
    • 12 green chilies cut into lengthwise
    • 4 tablespoon sesame oil
    • 2 tablespoon white vinegar
    • 2 tablespoon soy sauce
    • 1 teaspoon chopped garlic
    • 1 teaspoon black pepper freshly ground
    • 1 teaspoon white pepper powder
    • 1 teaspoon white sugar
    • 1 teaspoon white flour
    • Salt to taste

    Instructions

    Method

    • Put beef in a a refrigerator for 2 hours.
    • Remove from the freezer and cut into thin slices.
    • In a small bowl, mix together of all ingredients except the oil and green chillies.
    • Pour this marination over the beef strips.
    • Toss to coat evenly.Cover and marinate for 30 minutes to blend flavors.
    • Heat oil in a deep pan or skillet over medium-high heat.Cook and stir fry for 30-40 minutes or until desire doneness.
    • Add green chillies. Cook and stir for 2-3 minutes. Dish it out. Chinese Dry Beef Chilli is ready to serve. ENJOY!!

    • 2 tablespoon ghee or butter
    • 1 teaspoon salt

    Step 1

    For Rice: Pick and wash Rice clean. Soak in the water. Tie up all the spices in a thin Muslin cloth in a bundle. Add the Spices bundle to the Rice.

    Step 2

    For Koftas: Wash the Keema clean and drain all the water from it. Grind drained Keema with the Salt, red onions , ginger-garlic paste, green chilies, coriander and mint leaves to coarse paste. Whisk the eggs until smooth and blend in with the meat mixture. Shape into small even sized balls.

    Step 3

    For Curry: Grind the red onion and yogurt together to a fine paste. Keep all the other Ingredients ready.

    Step 4

    Heat the Oil and when hot deep fry the balls for 10-15 minutes or until golden brown. Drain on paper towels to remove excess Oil.

    Step 5

    Boil the soaked rice with salt and ghee in the same water it is soaked in till half cooked.

    Step 6

    Drain in a colander to remove the gruel. Sprinkle with Saffron thread milk to season all the rice and set aside till needed.

    Step 7

    Heat oil in a wok and fry the onion-yogurt paste on medium heat until well browned. The oil should show at the edges.

    Step 8

    Lower flame and add the turmeric powder and fry for a minute. Add red chili and garam masala powders and fry for 2 minutes more till the aromas waft up.

    Step 9

    Add just sufficient salt for the curry and stir in the Koftas. Add 1-1/2 cups of water and cook covered on low flame until most of the water is absorbed and a thick Curry is formed.

    Step 10

    Take a heavy bottomed Pan with a tight fitting lid. Lay half the saffron seasoned rice at the bottom. Place the Kofta Curry over 6th rice and layer with the remaining Rice.

    Step 11

    Preheat the oven at 180 degree C. Pour 2 cups of Plain Milk over the Layered Rice. Cover with the tight-fitting lid. and bake for 30minutes in the pre-heated oven until cooked through.

    Step 12

    Just before serving stir lightly to break the layers gently. Arrange the Koftas on top and layer the remaining Rice over the Koftas. Keema Kofta Biryani is ready to serve.

    • 1 kg mutton meat with bone

    • 1 tsp whole black pepper, crushed
    • 1 tsp coriander seeds, crushed

    Directions:

    1. Heat oil in a deep pot over medium high heat.
    2. Place sliced onion, ginger, garlic in hot oil.
    3. Fry for 2-3 minutes or until nicely golden.
    4. Now put the meat into the pot.
    5. Stir it for couple on minutes.
    6. Then add black pepper, coriander seed, cumin seed’s, turmeric powder.
    7. Cook for 2 minutes.
    8. Then add enough water and let it cook at medium flame for 2 hours or until the water dries.
    9. Cook on high flame for 10 minutes or until meat is tender.
    10. Garnish with lemon wedges and green chilies.
    11. Namkeen Gosht is ready to serve.

    If required, add 1 cup of water to make gravy.

    Sprinkle the kewra and saffron on it and let it simmer for approximately 5 – 10 minutes till the oil floats on top. Delhi Wala Korma is ready to serve.
