    I am of Kashmiri origin.My forefather were from Kashmir. I cooked amazing Kashmiri food. Today, I’ m sharing another Kashmiri Chicken recipe with you guys.

    This is a Kashmiri-style Chicken and has a wonderful blend of spicy flavours. In this Kashmiri Chicken recipe, I used red chillies and the delicious flavours of yogurt, curry paste and authentic spices; and balanced with the crunch of almonds and garnish with parlsey. Perfect for party or any celebration.

    • 500 gm chicken
    • 3 tbsp plain yogurt
    • 4 tbsp curry paste
    • 2 tbsp sunflower oil
    • 1 medium onion peeled,thinly sliced
    • 1 clove garlic, minced
    • 1 tsp ground cumin
    • 1 tsp fresh ginger paste
    • 1/2 tsp chili paste
    • 4 tbsp chicken broth
    • 2 tbsp ground almonds
    • salt to taste

    For Garnishing:

    • 1/2 cup almonds flaked, toasted
    • 1/4 cup parsley leaves

    For Serving:

    • 1 cup pulao rice
    • pickles, dill

    Step 1

    Slash chicken at intervals and place in a bowl.

    Step 2

    Mix together yogurt and curry paste, then stir into chicken, coating evenly. Cover and chill for 1 hour.

    Step 3

    Heat oil in a large pan and fry onion and garlic for 4 to 5 minutes.

    Step 4

    Stir in cumin, ginger and chilli and cook gently for 1 minute.

    Step 5

    Add chicken and fry gently, turning occasionally, for about 10 minutes. Stir in any remaining marinade with stock and ground almonds.

    Step 6

    Cover and simmer for 15 minutes, or until chicken is cooked through.

    Step 7

    Add salt to taste.

    Step 8

    Scatter flaked almonds over chicken and garnish with flat-leaf parsley.Kashmiri Chicken is ready to eat. ENJOY 🙂

    Chicken Shashlik Recipe

    Chicken Shashlik sticks always looks fancy on your table and believe me after chicken marinating it hardly takes 15 min
    Prep Time 20 minutes

    Ingredients

    • 500 gm boneless chicken
    • 4 tbsp oil
    • 2 green bell peppers cut into small cubes
    • 2 to matoes cut into cubes
    • 2 onions cut into cubes
    • 2 tbsp lemon juice
    • 1 tsp garlic powder
    • 1 tsp mustard paste
    • 1/2 tsp black pepper
    • 1/2 tsp salt
    • 6 shashlik sticks

    For Sauce

    • 2 cloves garlic crushed
    • 2 cups chicken stock
    • 1/2 cup tomato ketchup
    • 1 tsp red chili flakes crushed
    • 1 tsp sugar
    • 2 green chilies
    • 1 tbsp corn flour
    • 2 tbsp vinegar
    • salt to taste
    • 2 tbsp oil

    Instructions

    Method

      For Shashlik Sticks

      • Wash chicken and pat dry.
      • Cut chicken into bite size pieces.
      • Place chicken into a bowl, add green bell pepper, tomatoes, onions, garlic powder, mustard paste, black pepper, lemon juice and salt.
      • Mix well.
      • Thread equal proportion of chicken and vegetables into shashlik sticks.
      • Greased a grill pan with oil.
      • Grill Shashlik sticks on low heat for 8-10 minutes or meat is tender.
      • Shashlik Sticks are ready to serve

      For Sauce

      • In a deep pan, add 2 tbsp oil and chopped garlic.
      • Cook for 1 minute or until brown.
      • Then add 2 cups of chicken stock, red chili flakes, green chilies, vinegar, sugar and tomato ketchup.
      • Bring to a boil and simmer for 2 minutes.
      • Then add corn flour dissolved in some water and stir together.
      • Remove from the heat and pour sauce over Chicken Shashlik.
      • Chicken Shashlik is ready to serve. ENJOY!

      Notes

      Serving Suggestions:
      Serve with Fried Rice.

      Ingredients

      For Chicken:

      • 500 gm boneless chicken,cut into cubes
      • 4 tbsp yogurt, beaten
      • 1/2 tsp turmeric powder
      • 1/2 tsp garam masala powder
      • 1 tbsp red chili powder
      • 2 tbsp oil
      • salt to taste
      • 1/2 bunch fresh coriander,chopped
      • 4 tbsp green chutney
      • 4 tbsp mayonnaise

      For Parathas:

      • 1 cup flour
      • 1 cup white flour
      • Salt to taste
      • 2 tbsp ghee
      • Water as required

      Directions:

      Step 1

      To Make Chicken Filling:Marinate chicken boneless pieces in yogurt, salt, turmeric and chili powder and garam masala powder. Mix it and set it aside for 15 minutes. Add green coriander leaves in it.

      Step 2

      Now heat the oil and cook marinated chicken in it on low heat till the water dries and chicken become soft and tender.

      Step 3

      To Make Parathas: Take both flours and add ghee and salt in it. Knead it in a dough and put it aside for 1 hour. Make round parathas with the help of rolling pin and grease the pan and cook the parathas.

      Step: 4

      To Make Paratha Rolls:Now take paratha and put boneless chicken in it. Pour green chutney and mayonnaise on it and roll it tightly.

      Step 5

      Cut the roll from center. Delicious Chicken Paratha Rolls are ready to serve.

      Chicken Spring Rolls

      Ingredients

      • 250 gm chicken
      • 1 packet ramen noodles
      • 1/2 cabbage finely julienne cut
      • 5 to 6 carrots grated
      • 4 spring onion sliced
      • black pepper to taste
      • salt to taste
      • 3 to 4 tbsp soy sauce
      • spring roll wrapper one pack
      • 3 to 4 tbsp oil

      Instructions

      Method

      • Boil the chicken pieces and shred them.
      • Then heat some oil and put the cabbage in it and fry it till it become soft but don’t over cook it.
      • Then do the same thing with carrots.
      • Do not fry the chicken, ramen noodles and spring onion. In the end mix all the ingredients together.
      • Make the rolls.
      • Heat oil in a deep pan over medium heat. Fry for 2-3 minutes or until crispy and golden brown. Chicken Spring Rolls is ready to serve.

      • 1/4 teaspoon Coriander powder
      • few Cilantro leaves, for garnishing

      Slightly saute the onion puree in oil.

      Cover and let simmer on low heat.

      Heat enough oil in a wok.

      Once oil is fully heated, add the chicken and fry until the chicken turns white (should take less than one minute if oil is properly heated).

      Add the fried chicken to the paste.Also add the whole red and green chillies.

      Let simmer for 15 minutes.

      Step 1

      Wash rice with few changes of water and soak for 20 minutes.

      Step 2

      Wash chicken properly; trim all excess fat. Drain well.

      Step 3

      In a large bowl, combine the yogurt, red chilli powder, mace powder, coriander seed powder, salt and black pepper powder. Mix well and keep it aside.

      Step 4

      Heat desi ghee in a skillet or pot over medium heat.

      Step 5

      Saute onion in oil until golden brown. Now Add ginger garlic paste and cook for 30 seconds.

      Step 6

      Now add the green chillies and cook and stir for 1 minute then add yogurt mixture.

      Step 7

      Cook for 2-3 minutes then add chicken pieces. Add some salt too at this stage.

      Step 8

      Stir and cook until chicken is no longer pink.

      Step 9 

      Add chicken stock. Bring to a boil.

      Step 10

      Cover and let it simmer for 10 minutes or until chicken is cooked.

      Step 11

      Add the rice to the chicken and Cover the pan with lid and pressure cook until the Chicken and rice is well cooked and tender. 

      Step 12

      Gently stir the rice because basmati after soaking becomes very fragile.

      Step 13

      Dish it out.

      Step 14

      Garnish with brown onion, raisin and green chillies. Kashmiri Chicken Pulao is ready to serve. ENJOY!!

      Wash the chicken thoroughly.

      Heat oil and add cumin, bay leaves, and dried red chilly.

      When the cumin begins to splutter, add garam masala, onion and saute for sometime over medium flame till onions are a little soft.

      Add ginger garlic paste, powdered masalas, chicken, salt and saut over high heat till chicken is opaque.

      Lower the flame to low and stir fry till tender and fat separates.

      Add water to the consistency of the gravy you want and cook some more.

      • 500 gm Chicken or mutton
      • 1 tablespoon Ginger garlic paste
      • 1 cup Yogurt
      • 1/2 cup Oil
      • 4 Onion thinly sliced

      • 4-5 Small cardamon
      • 5 Cloves
      • 2 Cinnamon sticks
      • 2 bay leaves
      • 1 teaspoon Black Pepper
      • 1 teaspoon cumin powder
      • 1 teaspoon red chili powder
      • 1/2 teaspoon Black cumin seeds
      • 1/4 teaspoon nutmeg powder
      • 1/4 teaspoon javitri powder
      • 1/2 teaspoon Coriander powder
      • Salt to taste
      • 2 drops Korma Essence dissolved in 1 tsp milk

      Instructions

      Directions

      • Take oil in a pan.Fry onion to golden brown, sprinkling 1 pinch of salt.
      • Take fried onion in a plate & spread it to cool & crispy.
      • In the same oil fry meat in it very well, until colour changes & smell is gone.
      • Add Ginger garlic paste and fry again well using little water time to time.
      • Add Yogurt and fry until it is fried very well.
      • Add all garam masala, coriander powder, salt & chillies. Again fry well.
      • Add ground fried onion. Mix well.
      • Put water as much as you require for the curry in it.
      • Cover lid & cook until meat is tender.
      • In the end sprinkle ground jaifal, javitri & 2 small ilaichi, korma Essence.
      • Put on low heat on dum for 5 minutes.
      • Take out in a bowl. Degi Korma is ready to serve.

      Serve with Bakarkhani Naan.

      For Espetada Chicken 

      • 500 gm boneless chicken, cut into cubes
      • 2 green bell pepper, cut into cubes
      • 2 tomatoes, seeded and cut into cubes

      • 2 tablespoon peri peri sauce
      • 2 tablespoon lemon juice
      • 1 tablespoon soy sauce
      • 1 teaspoon garlic paste
      • 1 teaspoon meat tenderizer
      • 1 teaspoon salt
      • 1/2 teaspoon white pepper

      For Peri Peri Sauce

      • 1 onion
      • 4 whole red chilies
      • 1/2 cup cooking oil
      • 1/2 cup white vinegar
      • 3 tablespoon lemon juice
      • 2 tablespoon crushed red chilies
      • 1 tablespoon coriander seeds, crushed
      • 1 tablespoon fenugreek seeds, crushed
      • 1 teaspoon garlic paste
      • 1 teaspoon citric acid

       

      Directions:

      To Make Peri Peri Sauce:

      • Soak whole red chillies for 4-6 hours or overnight.
      • Now put all peri peri sauce ingredients in a blender or food processor.
      • Process until smooth.
      • Take it out in a small bowl and keep aside.

      To Make Espetada Chicken :

      1. Lightly flatten the chicken pieces.
      2. Place chicken in a large bowl.Add lemon juice, soy sauce,garlic paste,meat tenderizer,salt, white pepper, peri
      3. peri sauce and oil.
      4. Stir to coat evenly.
      5. Marinate for 30 minutes to blend flavors.
      6. Put mrinated chicken on skewers alternating with cubes of capsicum and tomato.
      7. Cook over a hot grill.
      8. Put with a burning coal and drop a little oil.
      9. Cover for 1 minute then remove from the grill.
      10. Espetada Chicken  is ready to serve.

      Soak rice in water for 25-30 minutes.

      Heat oil in a large skillet over medium heat. Add onion and fry for 5 minutes or until golden brown.

      Add ginger garlic paste, cumin seeds, bay leaf, cinnamon stick, cardamom, and cloves. Coof for 1 minute or until cook until aroma comes out.

      Now add chicken drumsticks and fry for 10 minutes or until all water dries up.

      Now add tomatoes, red pepper, corainder powder and salt.

      Cover and cook for 5 minutes then add yogurt.

      Cover and cook on low flame for 10 minutes or until chicken is tender and gravey is thickened.

      Meanwhile, separately boil rice with a little salt and drain.

      Divide rice into 3 portions. Layer one portion of rice in a large pot

      I marinated the Chicken tikka over night as they become so tender and need really less time to cook. I just use very simple spices but I use lots of lemon so they turn extreme delish.

      • 1 cup plain yogurt
      • 3 tablespoon vinegar

      • 2 teaspoon red chilli powder
      • 2 teaspoon cumin powder
      • 2 teaspoon garam masala powder

      • oil for busting

      Wash the chicken and trim excess fat from the chicken.

      Step 2

      Cut 3-4 long, diagonal slits on each piece with a sharp knife.

      Step 3

      Take a large bowl, add yogurt, lemon juice, ginger, garlic, coriander, cumin, garam masala, red chili, chaat masala and salt. Mix well.

      Step 4

      Put chicken pieces into the bowl. Turning to coat and making sure that the marinade gets into all of the slits in the chicken.

      Step 5

      Cover and marinate in the refrigerator for 4-6 hours or overnight. So it will absorb flavors and grow tender.

      Step 6

      Set up a grill with hot coals.

      Step 7

      Remove the chicken from the marinade and pierce the skewers through the breasts or leg pieces.

      Step 8

      Discard the marinade.

      Step 9

      Cook for 10-12 minutes or until chicken is no longer pink near the bone; turning and basting frequently with oil.

      Step 10

      Transfer the chicken to a platter and let it rest for 5 minutes.

      Step 11

      Brush the chicken with the melted butter.

      Step 12

      Squeeze lemon halves on top.

      Step 13

      Garnish with the lemon wedges and the sliced onion. Tandoori Chicken Tikka is ready to serve. ENJOY!
