     I was chilling with my grandparents, stuffing my tummy with yummy food, filling up my body with awesomeness. Nice relaxing day. I spent a quality time with my grandparents, did lots of cooking for them and made a full use of everything in the fridge, make them laugh, smile and collected their countless dua’s. My grandparents were happy to see me with them. I Love both of them. They puts a smile on my face and giggle in my heart.

    As much as I adore my grandparents, they do treat me like I’m still 6 years old.🤔🤔 I love staying with my grandparents they treat me like I’m royalty, but in reality they are my King & Queen😍

    Stop and wait a minute. This post is special.

    Because today I’ m sharing a family favorite recipe.{Especially, my grandma’s(nano)}. I’ve made these noodles countless times; in exchange of favors, to impress certain people. My GrandMa Loves to eat Chinese Food.  Just this weekend, I cooked it on my nano’s request. Nana abu loved it so much and he rewarded me with cash. $_$  💰 💰

    Chicken Stir Fried Noodles Recipe

    A simple to make Chicken Stir Fried Noodles recipe, but big on flavors. The perfect balance of spiciness, tanginess and saltiness. The vibrant mix of fresh vegetables paired with the saltiness of the stir fry noodles, the tanginess of soy sauce, and the heat from the sesame oil and the acclaimed chili sauce; all worked out so well.

    • 2 boneless chicken breast (cut into cubes)
    • 2 tablespoon sesame Oil
    • 2 tablespoon vegetable oil
    • 2 clove garlic (minced)
    • 2 green onions (cut into strips)
    • 2 carrots (peeled and cut into strips)
    • 1/2 red bell pepper (cut into strips)
    • 1/2 green bell pepper (cut into strips)
    • 1/4 cup dark soy sauce
    • 1/4 cup chili garlic sauce
    • 1 packet spaghetti noodles or egg noodles
    • salt and pepper to taste

    Method

    1. Cook the noodles in a large pan of boiling water for 2-3 minutes until Soft.
    2. Once the noodles are cooked.
    3. Drain and return to the saucepan.
    4. Toss well in vegetable oil and set aside. Cover with a tea towel.
    5. Heat a wok until very hot, then add remianing vegetable and sesame oil. Add 1 chopped garlic clove after 30 seconds.
    6. Add the chicken and stir-fry for 3 minutes or until it loses its colour.
    7. When the chicken is ready add the vegetables and stir-fry for another 30 seconds.
    8. Add a splash of Soy sauce and stir fry for 1-2 minute.
    9. Stir in the Soy sauce and chili garlic sauce.
    10. Add noodles and cook for 30 seconds, stirring constantly and serve immediately.
    11. Enjoy!

    Recipe Note’s:

    You can also add lamb, beef to this stir fry noodles, or just filled up with colorful veggies like I loved to eat. Either way, it’s finger lickin’ good. You’ll be coming back for more :’)

    ITS SUMMER TIME

    Summer has been kicking into high gear and the temperatures have been climbing here, and everyone wants to keep cool on hot summer days. So today, I have a recipe for a simple, classic and very popular sandwiches: “Egg and Cucumber Sandwiches”.

    Egg and Cucumber Sandwiches

    Egg and Cucumber sandwiches are the most delicious, easiest finger foods to make. All you need is sliced white bread, boiled eggs, mayonnaise and of course, cucumbers. To enhance the flavor, I also spread a thin layer of dill with cream cheese spread.

    I love adding cucumbers to egg mayonnaise. And sometimes different herbs too (especially dill goes very well with eggs and cucumbers). The cucumber can either be chopped finely and mixed into the egg mayonnaise or sliced thinly , I like the latter since it adds a nice fresh crunch to the sandwich. This can be made in advance and keeps well, so is perfect for tea parties.

    What are your favorite foods for a tea time snack or tea party? For me, the food are simple to prepare and easy to eat (and not so messy), preferably something we can eat using our hands or toothpicks.

    If you’re looking for an extremely quick and easy recipe for a lunch box, or a tea party, or a picnic, or you just so happen to have an extra cucumber lying around, then give these egg and cucumber sandwiches a try. They’re deliciously light and fresh, and I love the crunch of the cucumber. These delicious, easy-to-assemble sandwiches are great for a quick summer meal.

    Egg and Cucumber Sandwiches Recipe

    Egg and Cucumber sandwiches are the most delicious, easiest finger foods to make. All you need is sliced white bread, boiled eggs, mayonnaise and of course, cucumbers. To enhance the flavor, I also spread a thin layer of dill with cream cheese spread.

    For Egg Salad

    • 3 hard boiled eggs
    • 1/2 cup mayonnaise (mayo with olive oil is my favorite)
    • 1 tablespoon fresh dill (chopped)
    • 1/4 teaspoon garlic powder (optional)
    • 1/4 teaspoon pepper
    • salt to taste

    For Sandwiches

    • 3 tablespoon cream cheese spread
    • 1 large cucumber (peeled and thinly sliced)
    • 12 sliced white sandwich bread

    Method

    1. In a medium bowl, mix together the eggs and mayonnaise until completely incorporated.
    2. Add garlic powder, salt, pepper and chopped dill. Mix until well combined.
    3. Set aside.
    4. Toss bread slices on both sides.
    5. Spread egg spread mixture on 4 bread slices.
    6. Cover with another four bread slices.
    7. Top with cheese spread and cucumber strips, then close sandwiches with remaining bread slices.
    8. Cut crusts from bread, forming finger sandwiches. Cut each sandwich into three, creating 3 rectangle mini-sandwiches each. Enjoy!

    Serving Suggestions:
    Serve with tea or you can enjoy with finger chips and chili garlic sauce.

    When you’re home alone and nobody has made dinner, what do you usually make for yourself to eat? To me dining alone, at home means you can really break all the rules.  You Make Fish and Chips And go a bit overboard and make pasta salad. Cooking is my therapy and my cure all. Whipping up ingredients, the aroma of food, that first bite, the feeling that it has all come together just right is a balm like no other.

    English-Style Fish and Chips

    Fish n chips is the most popular English fast food. Traditionally battered fried fish is served with delicious potato chips, tartar sauce, mushy peas and lemon quarter to spice up the meal.

    That fateful day, I craved some kind of fast food with all my being. I opened my freezer and was looking around for inspiration when some fish fillets caught my eye and I knew what was coming next.  So, I decided to make Fish and Chips, and they turned out awesome! This English-Style Fish and Chips is gloriously indulgent. It is so good on it’s own, but I suspect it would be even better paired with some kind of salad. Super filling; a complete balanced meal all in one platter. Save yourself some time and money, and try this English-Style Fish and Chips, and quell those cravings!

    The condiments are all up to you. You can serve it with any sort of sauce, however much you like.But I enjoyed it with veggie pasta salad.

    English-Style Fish and Chips Recipe

    Fish n chips is the most popular English fast food. Traditionally battered fried fish is served with delicious potato chips, tartar sauce, mushy peas and lemon quarter to spice up the meal.

    For Fish

    • 500 gm cod fish fillets
    • 1 egg (lightly beaten)
    • 1/2 cup plain flour
    • 1/2 cup rice flour
    • 1 cup chilled water
    • 1 tsp vinegar
    • 1/2 tsp black pepper
    • 1/4 tsp baking powder
    • salt to taste
    • Oil for frying

    For Potato Chips

    • 500 gm potatoes
    • 1/4 cornflour
    • salt to taste

    For Fish

    1. Season the fish fillets with vinegar, salt and pepper and leave it for 10 minutes.
    2. In a mixing bowl, whisk together the rice flour, baking powder, 1/4 cups of the plain flour, and 1 teaspoon of salt. Pour in the egg, lemon juice and sparkling water, and mix just to combine everything – you do not need to over-mix. Refrigerated this batter until ready for use.
    3. Place the remaining cup of flour in a wide bottomed bowl and dredge the fillets through the flour, coating them well on all sides. Then dip them into the batter, turning and swishing, to again ensure they are well coated all over.
    4. Deep fry fish fillets for 8-10 minutes or until golden brown and puffed off.
    5. Once all the fillets are cooked, transfer them to a paper towel-lined large platter and pat them dry with more paper towels. Sprinkle with more salt, if desired.

    For Chips

    1. Peel potatoes then cut into 1/4-inch thick chips.
    2. Blanch the potato sticks, in batches if necessary, in the boiling water. About 2 minutes should do it.
    3. Strain well and pat dry on paper towel.
    4. Sprinkle cornflour over them and season with some salt.
    5. Heat oil in a deep pan over medium heat. Fry potato chips for 10 minutes or until crispy ad golden. Fish n Chips are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve Fish and Chips with lemon wedges along with tarter sauce.

    Mince Stuffed Cutlets 

    When I was in college, these “Mince Stuffed Cutlets” was one of the first recipes I ever added to my regular rotation.

    Mince Stuffed Cutlets is a great appetizer that involves soft delicate potato patties stuffed with seasoned cooked mince. Delicious and crispy patties that can be made in just 35 minutes. These make a great snack or appetizer or even a starter for parties or perfect for weekend meals.

    I used to fill my cutlets with spinach, broccoli, cheese, or whatever ingredients I have in my hand. It’s so fun to experiment with different ingredients, home cooking should be easy and fun! Although I enjoyed a lot of combinations, mince stuffed cutlets was always my favorite (and cheese, too).

    I know it seems quite far apart but when you take a bite it taste very close to the potato chops.

    There are many variations I have seen online. Some use a little flour mixed with the potato mash, an egg wash, bread crumbs and cornflour. You can make it vegetarian by using cooked peas and carrots in garam masala with some onions and fresh coriander then mixed with the mashed potato and shallow fried. You can replace the lamb mince with cooked ground chicken or beef, or fish. Try getting more creative: This is great fun – keep adding different ingredients to taste the different flavors.

    Mince Stuffed Cutlets Recipe

    For the Mince Stuffing

    • 1/2 kg lamb or mutton mince
    • 1 large onion (minced)
    • 1 teaspoon garlic paste
    • 1 teaspoon ginger paste
    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • salt to taste
    • 1 tablespoon cooking oil
    • 2 green chilies (chopped)
    • 2 tablespoon mint and coriander leaves

    For Potato Filling

    • 4 potatoes (boiled and mashed)
    • 1/2 teaspoon crushed red chili
    • 1/2 teaspoon cumin seeds
    • 1/4 teaspoon black pepper (freshly ground)
    • salt to taste
    • mint and coriander leaves (finely chopped)

    For Cutlets

    • 1 cup bread crumbs
    • 2 eggs (lightly beaten)
    • oil for shallow frying

    Method

    To make Mince Stuffing

    1. Heat oil in a saucepan or pot over medium heat.
    2. Saute onion, for 5 minutes or until transculent.
    3. Now add ginger garlic paste and cook for 30 seconds.
    4. Now add the mince and season with red chili, cumin powder, coriander powder and salt.
    5. Stir well.
    6. Cover and let it simmer for 25 minutes on low heat.
    7. No need to add extra water. Cook meat in its own juices.
    8. Remove the lid and cook meat on high flame or until it dries out and smells cooked and gets slightly brown, keep moving around and fry by adding about 1 tbsp of oil.
    9. Now add the green chilies, coriander leaves, mint leaves.
    10. Turn the heat off and do not cook further.
    11. Keep aside and let it cool down.

    To Make Potato Filling

    1. Mash potatoes in a large bowl. Add the salt, cumin seeds, red chilli, black pepper and coriander mint leaves.
    2. Mix until well combined.

    To Make Mince Stuffed Cutlets

    1. Make patti of potato mixture and spread mince mixture over it and cover with another pattie.
    2. Seal edges and flatten it into a round shape.
    3. Keep making until mixtures are used up.
    4. Beat eggs in a small bowl.
    5. Dip cutlets in egg then coat in crumb mixture.
    6. Heat oil in a shallow pan over medium heat.
    7. Fry for 2 minutes on each side or until light brown.
    8. Remove from the oil and absorbent on kitchen paper.
    9. Mince Stuffed Cutlets are ready to serve. Enjoy!

    Serve immediately with green coriander chutney or ketchup or by themselves!

     Recipe Note’s:

    1. You can use Chicken /Mutton /Beef mince as on your choice.
    2. These freeze quite well so you can pop them in the freezer before frying them and then completely defrost and then coat and fry.

    With spring here in full bloom, I try to get out for daily walks, which is a joy. With the earth greening, trees budding, flowers blossoming and songbirds chirping, hope and renewal fill every living thing. (inshaAllah)

    The days are getting much warmer now and my family always looks forward for light and comforting food. Dinner is the only time when everybody gets to gather around and have meal as a family. So I always plan to cook something simple and most importantly light and healthy.

    Last week, I made the world’s most amazing Meatballs in a tomato sauce with garlic bread on the side – where’s my invitation to go on Masterchef??  💁🏻 lol 😛

     I like to cook meatballs in sauce! These Italian flavored  meatballs in tomato sauce are my new favorite! 😀 ☺

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    They would be great over pasta, mixed with tomato sauce as an appetizer or on their own, But I served these meatballs over some veggie noodles tossed in olive oil along with garlic bread. A recipe must try! The Best Meatballs You’ll Ever Have!

    The Best Meatballs You’ll Ever Have

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    For the Meatballs

    • 1 pound high-quality lamb mince
    • 1 small onion (diced)
    • 1/2 cup seasoned breadcrumbs
    • 2 tablespoon cream
    • 2 garlic cloves (chopped)
    • 1 large egg
    • 3 tablespoons fresh parsley (chopped)
    • 3 tablespoon Parmesan cheese (grated)
    • 3 tablespoon Mozarella Cheese (grated)
    • 1 teaspoon freshly ground pepper
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon cayenne
    • salt to taste
    • 2 tablespoon butter or oil

    For the Sauce

    • 1 tablespoon extra virgin olive oil
    • 2 garlic cloves (minced)
    • 1/2 small onion (chopped)
    • 1/2 cup tomato thick puree
    • 1 red pepper (crushed)
    • 2 tablespoons fresh parsley (chopped)
    • 1/2 teaspoon red pepper
    • 1/4 teaspoon salt

    Method

    1. Preheat oven to 200 degree C.
    2. Prepare the meatballs: Put all ingredients into a food processor or chopper.
    3. Process until well combined.
    4. Note; Texture should be soft, but not sopping wet. If it’s not soft enough, add 1 tablespoon of milk.
    5. Now take it out in a mixing bowl.
    6. Shape into egg size balls by pushing them into the shape softly in your hands.
    7. Place meatballs on a baking tray and brush with melted butter or olive oil.
    8. Bake for 30 minutes or until they are just barely cooked through and no longer pink inside. (To keep them tender, do not overbake).
    9. Remove and reserve.

    To Make the Sauce

    1. Heat oil in a large saucepan over medium heat.
    2. Add the garlic and onion, and sprinkle the salt over them to bring out their flavor.
    3. Add red pepper. Cook and stir occasionally for 5 minutes or until the onion is translucent.
    4. Now add the tomato puree.
    5. Bring to a boil.
    6. Add parsley and reduce the heat to medium-low.
    7. Let it simmer for 5 minutes or until nicely blended.
    8. Now carefully add the baked meatballs to the pan.
    9. Simmer for 20 minutes or until they are soaked in sauce.
    10. ENJOY!!

    Serving Suggestions:
    Serve meatballs and sauce over spaghetti. Or healthy alternative serve them over veggie noodles.

    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1 teaspoon herb seasoning
    • salt to taste

    Method

    1. The most important thing about oven roasted chicken legs is to rinse and pat dry the chicken. The chicken needs to be as dry as possible before we bake, this way the skin will crisp up.
    2. Preheat oven at 200 degree C.
    3. Now rub the chicken legs with melted butter,lemon juice, garlic powder, onion powder, red chili, salt, cumin and herb seasoning.
    4. Place chicken pieces on wire rack and set into a baking sheet.
    5. Bake the chicken legs in the preheated oven for 30 minutes then use tongs to rotate each drumstick and bake until done.
    6. Remove from oven and allow to rest for 10 minutes before serving (this little step is very important if you like juicy chicken.
    7. Oven Roasted Chicken Legs are ready to serve. Enjoy!!

    Serve with Coleslaw and Hot and Spicy Sauce.

    Recipe Note’s:

    1. Do not place the seasoned chicken pieces directly on the baking sheet. Instead, place a wire cooling rack on top of the cookie sheet and place the chicken pieces on the rack, this will allow air to circulate around the chicken, resulting in perfectly crispy chicken without the soggy bottoms.
    2. If you like the chicken drumsticks nice and browned, place them under the broiler for few minutes after they are baked.
    3. If you prefer cheese, you can sprinkle 1/4 cup of freshly grated Parmesan cheese over them.

    Looking for a nice relaxing breakfast or dessert. Pancake Rolls? Today, I’ll share another pancake rolls recipe ~ “Chocolate and Banana Filled Pancake Rolls”,I made this a while back, clicked pictures but never got around to posting it. The recipes are piling up ! I’ll post a lot more soon, InshAllah.

    I made plain pancakes and spread generously with choco bliss and topped further with honey but it really is like a plain canvas for your imagination to run wild with flavours! So I decided to give my simple pancakes a new twist. Roll-up in banana slices and topped with chocolate curls.

    You can add strawberries, apples, dried fruits and berry compote in the mixture! It’s up to you take pleasure in feeling like a domestic queen. A perfect way to start a day.

    Chocolate and Banana Filled Pancake Rolls

    Looking for a nice relaxing breakfast or dessert. Pancake Rolls? “Chocolate and Banana Filled Pancake Rolls”!

    • 2-1/2 cups plain flour ((maida))
    • 1/3 cup castor sugar
    • 3 teaspoon baking powder
    • 2 teaspoon baking soda
    • 1 tsp salt
    • 4 eggs (at room temperature)
    • 1 cup milk
    • 2 tablespoon butter

    For Filling

    • Choco bliss or nutella
    • banana (sliced)

    Method

    1. Sieve together all the ingredients.
    2. Whisk eggs and milk in mixing bowl.
    3. Gradually add pancake mix and mix until well combined.
    4. Heat a flat pan or griddle with a little butter.
    5. Pour a big spoonful of batter onto the hot griddle or pan and spread it evenly.
    6. When bubbles appear on the surface of the pancake, flip them over to make them golden brown on both sides.
    7. Transfer the pancakes on a plate or clean surface.
    8. Spread choco bliss or Nutella generously over the warm pancakes.
    9. Place the banana on top.
    10. Roll up and sprinkle chocolate curls over them.
    11. Chocolate and Banana Filled Pancake Rolls are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve straightaway with coffee or tea or a glass of milk.

    Recipe Note’s:

    In this recipe,  I made the batter a little thin because I wanted the pancakes to thin, more like crepes. For more traditional pancakes, use only about 1/2 cup milk.

    Hope, you are doing splendidly and enjoying the season. Well I’m in the middle of work, and anxiety has begun to sink its sharp little claws into my brain. It’s almost the final month of my training and I’m already drowning under a sea of coding assignments and project.

    Ahhh I love to code even though it makes me want to tear my eyes out every 10 minutes. Crying Out Loud ;(  I have constant fears that I’ve forgotten the code, functions, or left something somewhere blah blah blah. Problem is I love it but I have too much code to write though… ugh. This assignment is really doing my nut in!

    I’ m carving chocolate soo bad while coding up my project and backing up files. Every time I write a code, I delete it again. Almost time for a pancake break 😛  Anyhow before going back to coding, I decided to update you guys with this short post. 

    If there’s one thing you should know about me right up front it’s that I love Chocolate and pancakes, always have. Chocolate chips, Pancakes, foggy weather and coding are the reasons I love life.  Sounds super yummy!

    Chocolate Chip Pancakes

    This Chocolate Chip Pancakes recipe is a favorite of mine to make for special occasions or holidays. Eat while hot so the chocolate is all gooey. If you want to make it extra special, serve the pancakes with berries and whipped cream

    For Pancake Batter

    • 1-1/4 cups all purpose flour
    • 2 tbsp sugar
    • 1 tsp baking powder
    • 1/4 tsp ground cinnamon
    • 1/4 tsp salt
    • 2 large eggs
    • 1 cup milk
    • 4 tbsp melted butter
    • 3/4 tsp vanilla
    • 1 cup chocolate chips

    For Serving

    • 1/2 cup heavy whipping cream
    • 1 tbsp confectioners’ sugar
    • 1/2 tsp vanilla extract

    Method

    To Make the Dipping Sauce

    1. Take a small bowl, add cream cheese, sugar and vanilla to it. Beat until stiff peaks form. Now cover and refrigerate until serving.

    To Make Pancakes

    1. In a large bowl, mix together the flour, sugar, cinnamon, baking powder and salt.
    2. Stir flour mixture into wet ingredients. Beat until smooth.
    3. Fold in chocolate chips.
    4. Pour batter 1/4 cup full onto a lightly greased hot pan or skillet.
    5. Flip when bubbles form on top. Cook a minute more or until second side is golden brown. Chocolate Chip Pancakes are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with whipped cream.

    Tips For Diet Version Pancakes (Clean Eating):

    1. You can make gluten free Pancakes by using gluten-free oats and flour.
    2. For Sweeting: Add 1 Tablespoons of honey, apple syrup, or nectar is optional for extra sweetening, but I didn’t find it necessary.
    3. Don’t add butter. Mash very ripe banana with baking powder. It gives
    4. them a moist and fluffy texture.
    5. Serve plain or with a small drizzle of honey and a few additional chocolate chips for melting.

    Heart shaped cookie cutters can do more than just make cookies, use them to make a special breakfast for the ones you love most. My brother was not in good mood and lil bit annoyed with me. So when I made these Almond French Toast hearts for breakfast yesterday it completely changed the overall of his mood.

    Almond French Toast Hearts with Flavored Butter —- A perfect way to say” I Love You Brother ♥♥♥.”

    Let me tell you a little secret that it’s a really lovely thing, because if you are anything like me, you could eat golden french toast smothered in almond flavored butter every day of the week.

    Tools You needed to make this recipe:

    1. A large heart-shaped cookie cutter
    2. A frying pan
    3. A spatula
    4. A Hand- Beater

    Almond French Toast Hearts

    Serve this Almond French Toast Hearts with flavored butter — a perfect way to say “I love you.” ♥

    • 6 bread slices
    • 2 eggs
    • 1 cup + 2 tablespoons butter (divided)
    • 1/4 cup milk
    • 3 tbsp confectioners’ sugar
    • 1-1/2 tsp almond extract (divided)

    For Serving

    • Sliced fresh strawberries or banana
    • Confectioner sugar

    Method

    1. Cut out bread slices with a heart-shaped cookie cutter. Discard trimmings.
    2. Place eggs, milk and almond extract in a shallow bowl. Mix until well combined.
    3. Dip each bread slice in egg mixture.
    4. Melt butter in a large skillet over medium heat.
    5. Cook bread hearts for 2 minutes on each side or until golden brown.
    6. Remove from the oil and drain on paper towel.

    To Make Almond Butter

    1. Place confectioners’ sugar, remaining butter and almond extract in a small bowl. Mix until well combined.

    To Proceed

    1. Sprinkle additional confectioners’ sugar over the french toasts. Almond French Toast Hearts are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Almond Flavored Butter.

    Recipe Tip’s:

    1. If you do not have a heart-shaped cookie cutter, use a heart-shaped template and sharp knife to cut heart shapes.
    2. Oh yeah, DON’T throw away the extra bread pieces left over from the heart cut-outs. I’ve got something you can do with them. Something tasty. More details later in the week…

Ready to eat in just 30 minutes, it makes a great start to the day, or a satisfying snack.

    I have always been fascinated by Scotch eggs. I think they bring a little “wow” factor to any table. Scotch eggs are traditionally made with sausage meat wrapped around a hard boiled egg then breaded and deep fried. I wanted to shake up this UK savory treat with some Asian spices and do my own take on it. I decided instead of using a raw sausage meat, I would make a potato filling to wrap around the egg then bread it and deep fry it. I loved how these came out and they go perfectly with zeera rice and curry meal.

    They also go well with a salad, bread, naan, etc… I think these beautiful eggs dress up any Asian or European table. If you are little worried about the size of the larger scotch eggs, I did make make a smaller version of this fun dish. I think the smaller version is actually a little more manageable to make and serve, although it doesn’t have the show-stopper look as the whole egg version when you cut them. Of course, both are equally tasty and fun and you will love to see them once they sit prettily on your table.  Do try it, your kids will love it. Perfect for lunch box. 

    Note: Make sure you cut the larger scotch eggs in half or quarters before serving so the guests can see the inside because that’s the “wow” factor to the dish. Enjoy.

    Potato Scotch Eggs

    A delicious and easy tea time snack for your friends and family. Fresh Parsley makes this traditional Potato Scotch eggs recipe extra special.

    • 6 organic eggs
    • 3 medium sized potatoes (boiled)
    • 2 small dried red chilies (cruhsed)
    • 1 tablespoon fresh parsley leaves (chopped)
    • 1 teaspoon soy sauce
    • 1 teaspoon black pepper (freshly ground)
    • salt according to taste

    For Coating

    • 4 tablespoon cornflour
    • 1/2 cup bread crumbs
    • 1 egg (light beaten)
    • a pinch of salt and pepper
    • oil for frying
    1. Bring a pan of salted water to the boil. Cook 6 of the eggs for 6 minutes.
    2. Strain and leave to cool for 10 minutes in iced water.
    3. Then peel.
    4. Meanwhile, mash potatoes in a large bowl.
    5. Add parsley, soy sauce and red chili.
    6. Season with salt and pepper.
    7. Mix until well combined.
    8. Shape the potato mixture around the boiled eggs; it could be 1 cm thick.
    9. Beat egg with a pinch of salt and pepper.
    10. Now coat the potato covered eggs first in the cornflour, then dip in the egg.
    11. Then coat with bread crumbs.
    12. Heat the oil in a deep pan over medium heat.
    13. Carefully drop the scotch eggs into the hot oil and cook for 3-4 minutes or until crispy and golden.
    14. Remove from the oil and drain on kitchen paper.Cut them in half or quarters.
    15. Drizzle some ketchup before serving. Delicious Potato Scotch Eggs are ready to serve. Enjoy!!

    1. Do not freeze them because potato become soggy and watery if you store them for longer period of time. I myself prepare potato based things fresh always.
    2. You can also add any herb seasoning in potato mixture.
    3. You can also make it with chicken mince etc.

    Here is a Pakistani twist on the everyday french fries. Super simple to make and very tasty and crispy. You can eat them any time with cold drinks or tea. Would go great with a veggie burger or any type of burger. Or even just as a snack.

    It’s a perfect recipe for a quick and easy desi snack, consider making a spicy potato chips please guests who love spicy foods. delicious!!! I serve it with Homemade Tomato Ketchup. You can serve with any kind of dip or sauce you want.

    You should always use old potatoes to make french fries. New ones are moist and are extremely raw, that do not make french fries crispy.

    Step by Step ~ French Fries Pakora Recipe

    Step 1 ~ First Peel the potatoes with the help of a peeler and wash them.

    Step 2 ~ Now cut them into long pieces. You can use french fries cutter that can be easily bought from the market also. You will be able to cut the pieces quickly and in equal shapes.

    Step 3 ~ In a large bowl, add potatoes, chickpea flour, rice flour and cornflour. Season with salt, chili powder, cumin and garlic powder.

    1. Peel potatoes and cut into strips.

    3. Season with salt, chili powder, cumin and garlic powder.
    4. Add some water and mix to coat evenly.
    5. Set aside.
    6. Heat oil in a deep pan or wok over medium heat.
    7. Add potatoes in a sprinkled way and fry for 8-10 minutes or until crispy and golden brown.
    8. Remove from oil and drain the excess oil.
    9. Sprinkle Chaat masala over it. French Fries Pakora is ready to serve. ENJOY!!

    You can also bake them for a Healthier version.

    You can serve with Tomato Ketchup.

Give it a try!

    Chicken Nuggets

    • 500 gm boneless chicken breast (cubed)
    • 1 tablespoon soy sauce
    • 1 teaspoon lemon juice
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon mustard powder
    • 1/2 teaspoon red pepper flakes
    • 1/2 teaspoon black pepper powder
    • 1/2 teaspoon salt

    For Breading

    • 1 cup breadcrumbs
    • 1/2 cup flour
    • 2 eggs (beaten with 1 tsp milk)
    • a pinch of salt and pepper
    • salt and pepper
    • oil for deep frying

    Method

    1. Pound chicken cubes with a mallet.
    2. Place chicken pieces in a large bowl. Add soy sauce, mustard powder, garlic powder, lemon juice, salt, pepper and red chili flakes. Toss to coat evenly.
    3. Marinate chicken for at least 30 minutes to blend flavors.
    4. Now, beat eggs with a teaspoon of milk and season with a pinch of salt and pepper.
    5. Place breadcrumbs in a separate bowl.
    6. Place flour in another shallow bowl.
    7. Now roll the chicken cubes in flour mixture. Then dip in the egg and milk mixture, then coat with breadcrumbs.
    8. Heat oil in a deep pan over medium heat.
    9. Fry chicken nuggets in batches for 5-8 minutes or until they turn golden in color.

    Arrival of the holy month of Ramadan disrupts ones routine. From eating to sleeping to socializing, everything changes for Muslims. So In today’s Iftar, I made Pocket Bread Sandwich for my family. A great break from the usual toasted chicken veggie sandwich. Very Easy to make and yummy to eat. Do try it.

    You’ll never buy sandwiches from market again once you’ve learned how to make these quick and easy Pocket Bread Sandwich in your own kitchen.This Pocket Bread Sandwich recipe is ideal for Iftar parties, Picnics and Tea time chit chats.

    Pocket Bread Sandwich Recipe

    For Stuffing

    • 1 cup cooked chicken (shredded)
    • 1 cup shredded cabbage
    • 1 capsicum (thinly sliced)
    • 1 carrot (shredded)
    • 3 tablespoon tomato ketchup
    • 2 tablespoon mayonnaise
    • 1 tablespoon soy sauce
    • 1 teaspoon cooking oil
    • 1/2 teaspoon freshly ground black pepper
    • salt to taste
    • For Sandwiches
    • 12 bread slices
    • 4 eggs
    • 1 cup bread crumbs
    • oil for shallow frying

    Method

    To Make Sandwich Stuffing

    1. Heat up oil in a large frying pan over medium high heat.
    2. Add chicken and stir fry for 1-2 minutes or until crispy.
    3. Now add all the veggies and stir fry for 1 minutes or until crisp-tender.
    4. Season with salt and pepper.
    5. Stir in the mayonnaise, ketchup and soy sauce until well combined.
    6. Turn the heat off.

    To Make Sandwich Stuffing

    1. Take two bread slices and cut them into round shape with a cutter or a mug.
    2. Press them to make it thin.
    3. In a shallow bowl, beat eggs with salt and pepper.
    4. Press the round part of both slices together and dip in egg then roll in bread crumbs.
    5. Shallow fry for 2 minutes or until they turn crispy and golden on both sides.
    6. Remove from the oil and repeat this method with remaining bread slices.
    7. Now cut bread slices into halves.
    8. Try open them from between like a pocket and fill it with chicken veggie filling.
    9. Transfer into a serving platter. Pocket Bread Sandwich is ready to serve. ENJOY!

    Serving Suggestions:
    Serve with tomato ketchup or your favorite dipping sauce.

    Crunchy Vegetable Nuggets

    Are you looking for a healthy alternative for processed chicken nuggets? This Crunchy Vegetable Nuggets Recipe is sure to be a favorite for your kids.

    • 2 boiled potatoes
    • 1/2 cup grated carrots
    • 1/4 cup sweet corn
    • 1/4 cup boiled green peas
    • 1/4 cup green beans (trimmed and boiled)
    • 1/4 cup cheese (grated)
    • 1/2 teaspoon mixed herbs (basil, parsley)
    • 2 tablespoon chopped coriander leaves
    • 1/2 teaspoon black pepper
    • Salt To Taste
    • 1 egg (lightly beaten)
    • 2 tablespoon plain flour
    • 2 tablespoon cornflour
    • 1/2 cup bread crumbs
    • Oil for deep frying

    Directions

    1. In a large bowl, combine together the boiled potatoes, grated carrots, beans, green peas and sweet corns.
    2. Season with herbs, salt and pepper.
    3. Add corainder leaves and cheese. Mix until well combined.
    4. Now add add plain flour,cornflour in it.
    5. Shape into nuggets.
    6. Place bread crumbs in a shallow bowl.
    7. Dip vegetable nuggets in egg then coat with bread crumbs.
    8. Heat oil in a deep pan over medium heat.
    9. Deep fry nuggets for 2-3 minutes or until golden brown.
    10. Remove from the oil and absorbent on kitchen paper.Crunchy Vegetable Nuggets are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with tomato ketchup or your favorite dipping sauce.

    Note: For a healthier version of these nuggets, you can bake them. After you bread them, lay them out on a baking sheet and drizzle with olive oil. They will probably need to bake at 350-400 degrees F. for 15-20 minutes to get nice and crispy.

    Shami Kabab Paratha Rolls Recipe

    This Shami Kabab Paratha Rolls Recipe is one of those meals of which most of the components can be prepared in advance and then put together quickly to serve as and when needed. It is always a hit with people of all ages, and perfect for those lazy afternoons when you cannot be bothered to cook something from scratch but want a warm and filling snack to comfort you.

    • 2 Whole Wheat Paratha (you can use ready made Frozen Paratha)
    • 4 Shami kababs
    • 1 egg
    • 1 onion (thinly sliced)
    • 1 to mato (thinly sliced)
    • 1/2 cup lettuce leaves (torn)
    • 2 tablespoon mayonnaise
    • 2 tablespoon chili garlic sauce
    • 2 teaspoon green chili sauce
    • few lemon wedges
    • oil for shallow frying

    Directions

    1. Cook paratha’s on a hot griddle until crispy on both sides.
    2. Keep warm and set aside.
    3. Beat egg in a small bowl.
    4. Dip shami kabab’s in egg then fry in hot oil for 2 minutes or until golden brown.
    5. Remove from the oil and absorbent on kitchen paper.
    6. Apply mayonnaise on paratha’s.
    7. Put two shami kabab’s on each paratha.
    8. Top with onion, tomato slices and lettuce leaves.
    9. Drizzle chili garlic and green chili sauce over them.
    10. Roll them tightly and secure with a wooden pick. Delicious Shami Kabab Paratha Rolls are ready to serve.

    Serving Suggestions:
    Serve with French fries and Chili Garlic Sauce.
