    Today’s Recipe: Spaghetti Meatballs

    What’s better than a warm fire and a big bowl of comfort food on a cold winter night?  Today I want to share a recipe that feels, to me, like the closest you can get to “comfort food” during Whole 30.

    For a bowl of Italian comfort, Make my best & Easiest Spaghetti Meatballs! It only takes 35 minutes to make this delicious family favorite, all from scratch, and I promise you will never have leftovers. While the spaghetti sauce cooks, you’ll make the meatballs and while the meatballs cook, you’ll boil your pasta. Makes 16 meatballs, two per person. I made these meatballs with chicken mince , but you can use whatever ground meat you’d like to use, actually(beef, lamb, turkey). They are super soft, tender  and juicy because they cook right in the sauce and I used fresh bread crumbs and not dried ones.The sauce is my Homemade Italian Tomato Sauce and I just add the meatballs (& spaghetti) to make this a complete meal… but don’t forget the salad.

    This is really a quick and easy recipe because the sauce takes 5 minutes of prep and the meatballs take 10 minutes to put together. Then it all cooks in one pot and you have the most delicious spaghetti dinner.

    I’m sure you’ve all heard of or made Pizza Cupcakes or  Pizza Muffins before. But as simple or obvious as this recipe seems, sometimes we need a good reminder of the un-fussy classics. Sometimes you don’t have time or the right ingredients to make an elaborate meal. When this happens, it’s good to have something simple and inexpensive to fall back on.

    If you’re crazy about pizza like me, but can’t justify eating it as much as you’d like, this is a great recipe for you. I used leftover pizza dough, chicken, lots of fresh vegetables, and a tablespoon or so of cheese on each mini pizza. Considering each pizza cup base 60 calories, the shredded chicken & cheese about 40 calories, and the rest of the ingredients were vegetables, I’m guessing each pizza had about 150 calories. This is not scientific, but it’s my best guess.

    Mini Pizza Cups Recipe

    Pizza is always a crowd pleaser, but making your own can be a bit of a headache. This bite-sized alternative is easy to make and healthy (just 150 calories each!) and as much fun to make as they are to eat.

    For Pizza Dough

    • 2-1/2 cups plain or all purpose flour
    • 4 tablespoon oil
    • 1-1/2 teaspoon instant yeast
    • 1 teaspoon castor sugar
    • 1 teaspoon salt
    • 2 pinches of baking powder
    • warm milk with a bit of water for kneading

    For Mini Pizza Cups

    • 1 cup pizza Sauce or Ketchup (Recipe here)
    • 1 cup cooked chicken
    • 1 small Capsicum (chopped)
    • 1 small onion (chopped)
    • 5-6 black Olives (thinly sliced)
    • 1 cup mozzarella Cheese (grated)
    • Italian herb Seasoning (for topping)
    • 1 teaspoon oil (for greasing)

    To Make Dough

    1. Mix all the dry ingredients and the oil in a bowl or food processor, then gradually add the warm milk a little at a time.
    2. Knead it into a soft dough.
    3. Dab a touch of oil all over the dough, then cover it and place it somewhere warm.
    4. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.
    5. Once ready, punch down the dough and then divide it into 18 equal balls.
    6. Grease 24 cups muffin pan with oil or butter and set aside.
    7. Roll each dough ball out into a circle of about quarter inch thickness, then gently place it in the cup hole of the pan, patting it gently to fit the shape.
    8. Repeat this method with the rest of the balls.
    9. Next, spread a light layer of pizza sauce in each cup. Then add the chicken, capsicum and onions.
    10. Sprinkle some cheese over the filling and drizzle some ketchup over the top of each cup.
    11. Top with olives and herb seasoning.
    12. Allow the pizza cups to rest and rise for 20 minutes, then preheat the oven at 180 degree C.
    13. Bake them for about 12-15 minutes or until the cheese is bubbly and the dough is cooked through.
    14. Remove the pizza cups from the pan and allow them to rest on a wire rack to cool slightly before serving.
    15. Delicious Mini Pizza Cups are ready to serve. Enjoy!

    Recipe Note’s:
    These delicious Mini Pizza cups can be frozen for up to 2 weeks.

    Serving Suggestions:
    Serve with your favorite dipping sauce.

    Give pizza night a new twist by making spicy Chapli Kebab Pizza (Heavenly Double TREAT)!!

    Monday nights are for creativity. Or maybe, you’re like me and just have leftover Chapli Kebab’s wasting away in your fridge. Pinterest gave me the inspiration I needed to take dinner from a boring pizza night to an Italian-Pakistani Twist.

    This Chapli Kebab Pizza is my Pakistanized pizza makeover…..you could say that this is an Pakistani-Italian delight….hey, fusion food is the latest fad.  A delicious and easy to make pizza with crispy, juicy chapli kebab’s and  melty mozzarella cheese!  It is sure to be a hit!

    This pizza is so easy to make with left over Chapli Kebab’s with the cheesy topping….nobody could resist. I added dried Italian herbs to the pizza base and that gave a subtle Italian flavor with the Pakistani flavored topping. And just followed my heart to a logical conclusion. I took the shortcut and used the Chili Garlic sauce in place of pizza sauce and lessen cheese to keep it healthy and low fat( you can add more cheese). Well… I needn’t explain what the result was. The recipe finding its place in this blog itself says it all….. Right???

    So why go to pizza hut…when you can make healthy homemade ones?? This pizza was a huge hit with my family try it…you will love me more, honestly 🙂

    Chapli Kebab Pizza Recipe

    A delicious and easy to make pizza with crispy, juicy chapli kebab’s and melty mozzarella cheese! It is sure to be a hit!

    For Pizza Dough

    • 2 cups plain flour
    • 1 egg (lightly beaten)
    • 4 tablespoon oil
    • 1-1/2 teaspoon dry instant yeast
    • 1/2 teaspoon salt
    • 1/2 teaspoon sugar
    • 1/2 cup warm milk

    For Pizza Topping

    • 8 leftover chapli kebab’s
    • 1 cup pizza sauce or Chili Garlic Sauce
    • 1/2 cup cheddar cheese (shredded)
    • 1/2 cup Mozzarella Cheese (shredded)
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • fresh coriander leaves or parsley (for topping)

    To Make Pizza Dough

    1. In a large bowl, add yeast and sugar.
    2. Pour the lukewarm milk and let it stand for about 10 minutes or more until it becomes frothy.
    3. Place flour and salt in another large bowl.
    4. Add the yeast mixture and mix well until well combined.
    5. Now add the oil and knead well till you get a soft ball of dough.
    6. Cover the bowl with a wet cloth or a plastic wrap and keep in a warm place for 1 hour or until the dough is rise and volume is doubled.

    To Make Pizza

    1. Once it has doubled, turn the dough onto a well floured surface, pat down and divide into eight small balls.
    2. Preheat oven at 180 degree C.
    3. Roll dough into pizza crust’s.
    4. Transfer to a mini Pizza pans or baking sheets.
    5. Spread Pizza sauce or Chili Garlic Sauce evenly.
    6. Arrange chapli kebab’s on top of the sauce.
    7. Sprinkle the dried basil and oregano.
    8. Top with cheddar and Mozzarella cheese.
    9. Sprinkle coriander fresh leaves.
    10. If needed, you can sprinkle a bit more cheese.
    11. Bake, in the preheated oven, for 15 minutes or until the crust turn brown and cheese melts.
    12. Remove the pizza pans from the oven.
    13. Slices each into halves and serve warm. ENJOY!!

    Serving Suggestions:
    Serve alone as an appetizer, or accompany with a light pasta or salad.

    The recipe I am sharing today is a Family FAVORITE. All families have certain dishes they love to cook and eat. Mine goes gaga for these baby Chicken Breads! Put 12 dozen in front of them and they’ll still demand more. I am sure you will face the same situation with your siblings, cousins, random guests when you try these magical Baby Chicken Bread. (unless they are gluten intolerant. Oops)

    I thought, I would share this FAMILY FAVORITE with everyone since so many Friends nd ClassFellows have asked for this recipe. Enjoy!

    Baby Chicken Bread

    Chicken bread is a classic of Pakistani bakeries and we served it at most of the tea parties as a staple here. This simple yet delicious bread is easy to make and full of flavor.

    All you really need is a few basic ingredients: salt, flour, baking soda and yeast etc. The “trick” to achieving a perfect texture is not to over knead the dough and don’t over bake, as this will make it tough & hard, ugh not good! Brush with egg wash. Sprinkle a few sesame seeds. And voila! It’s ready to go in the oven for 25 minutes.

    On weekend night, I decided to bake chicken bread from scratch and Just for a twist I made  them in baby sizes.

    Don’t ask me why I do these things. I’m not quite sure myself.

    But you have to admit….they’re pretty darn cute.

    So now that my kitchen is covered with Baby Chicken Breads, what should I do with them?
    Of course, slathering them with hot pepper sauce and taking a big bite doesn’t count. I already did that. Twice.

    This recipe is especially handy because it makes A LOT of Baby Chicken Breads (1-1/2 dozen to be exact). So they are the perfect, fuss-free party food. Easy to make, fun to eat.

    Baby Chicken Bread Recipe

    Chicken bread is a classic of Pakistani bakeries and we served it at most of the tea parties as a staple here. This simple yet delicious bread is easy to make and full of flavor.

    For Baby Chicken Bread Dough

    • 4 cups plain flour
    • 1 tablespoon instant yeast
    • 2 tablespoon dry powdered milk
    • 1 teaspoon salt
    • 1 teaspoon castor sugar
    • 4 tablespoon oil
    • 1 egg (plus one for glazing)

    For Baby Chicken Bread Filling

    • 2-1/2 cups boiled chicken (shredded)
    • 1 large onion (finely chopped)
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon garam masala powder
    • 1/2 cup coriander leaves
    • 4 green chilies (finely chopped)
    • 1 cup milk
    • 2 tablespoon plain flour
    • 2 tablespoon butter
    • sesame seeds & flax seeds as required

    To Make the Baby Chicken Bread Dough

    1. In a large mixing bowl combine the plain flour, salt, castor sugar, dry milk powder, instant yeast, oil and egg.
    2. Slowly mix in the lukewarm water with your hands till all the ingredients are mixed well and dough starts to form.
    3. Knead the dough for 5-7 minutes on a floured surface till the dough becomes smooth and is no longer sticky.
    4. Bang the dough on the floured surface 7-8 times for elasticity.
    5. Shape the dough in a large ball add place in a greased bowl.
    6. Brush the top lightly with some oil.
    7. Cover with a kitchen cloth and let the dough to rise somewhere warm until doubled in size, around 1 hour.

    To make the Chicken Filling

    1. Meanwhile, Melt butter in a frying pan over medium heat.
    2. Fry onion till soft and translucent.
    3. Now add 2 tablespoon plain flour and stir well.
    4. Season with salt , black pepper and garam masala powder.
    5. Stir in the milk and cook for 2-3 minutes or until thickened.
    6. Stir in the shredded chicken add chopped green chillies and coriander leaves.
    7. Remove from the heat and let it cool completely.
    8. Punch the dough to release air.
    9. Preheat oven at 200 degree C.
    10. Now divide the dough into 14-16 parts depending on how small you want the baby chicken bread to be.
    11. Roll each piece of dough to a rectangular shape.
    12. Snip the sides with a sharp knife and put chicken filling in the center.
    13. Fold each side so they overlap each other (like a braid) the filling will show slightly but that’s ok.
    14. Brush top with beaten egg.
    15. Sprinkle sesame seeds and flex seeds.
    16. Bake, in the preheated oven, for 25-30 minutes or until its turn golden brown.
    17. Right after taking out of the oven apply butter well on whole bread and let it rest covered with a cloth for 2-3 minutes to soften the bread completely.
    18. Delicious Baby Chicken Breads are ready to serve.

    Serving Suggestions:
    Voila! Enjoy your delicious bread with hot tea to the loving and deserving.

     

     Recipe Tip’s:

    1. I always make big batches of chicken bread at a go and then wrap them well in foil, then put them in some sort of a cellophane bag and tie it up tight and freeze.
    2. They can keep up to 4 weeks! When you need one, you just thaw it out overnight in the fridge or keep it out on the counter until it’s thawed out, then unwrap and then splash a little bit of water using your fingertips on it and put it in the oven for about 5 minutes to freshen it back up. Becomes as good as new!

    Every day the same question pops up “What to make for Lunch today?” and when the same question is asked on a weekend the response has to be something that’s not the usual and really delicious. 

    What better way to spice up the weekend lunch than with a Kebab Paratha Rolls stuffed with flavorful hot and spicy sauces and bright colorful vegetables pickles.

    It’s the age of one pot meal and who says one pot meal has to be a rice dish. It can be bread based dish as well. I believe wraps or rolls loaded with meat, kebabs and veggies also come in the genre of one pot meal and why not, bread gives us starch while veggies help bring a balance diet while meat gives us protein.

    The best thing about it is, that its a wholesome meal and can be prepared with leftover kebab’s too. Its as simple as assembling it all together (if that makes sense).

    Ingredients in Hot and Spicy Kebab Paratha Rolls

    The ingredients you need to make this Hot and Spicy Kebab Paratha Rolls are:

    For Kebabs: meat, onion, ginger, green chilies, fresh coriander, red chili powder, cumin powder, coriander powder, all spices powder, salt, butter for busting
    For Parathas:  whole wheat flour, white flour, Salt, clarified butter, water for kneading and black seeds (optional)
    For Topping & Stuffing: mayo garlic sauce, mint chutney, pickle cucumber, onion, carrot, green chili, few salad leaves, red chili flakes (optional)

    How to make Hot and Spicy Kebab Paratha Rollso:

    Hot and Spicy Kebab Paratha Rolls are straight forward to make. Prepared kebabs then make paratha’s and stuff with kebabs, sauce and topping.
    Pretty simple!!

    For this recipe, I’ve prepared the homemade Paratha’s but you can use store bought frozen paratha in case you don’t feel like making your own and keeping it all quick and simple.

    You can pack them and stuff your lunch box too making it a totally mess free meal for yourself. As with all wraps, you can use filling of your choice. For me it had to be this kebab paratha rolls, with some garlic sauce, minty yogurt chutney and  colorful pickle that were wrapped in the paratha rolls and gave those hot, zingy and spicy flavors that were sure to tickle those taste buds!

    Hot and Spicy Kebab Paratha Rolls Recipe

    What better way to spice up the weekend lunch than with a Kebab Paratha Rolls stuffed with flavorful hot and spicy sauces and colorful veggies.

    For Kebabs

    • 300 gm mince meat
    • 1 large onion (minced)
    • 1 inch piece of ginger (crushed)
    • 4 green chilies (chopped)
    • 1/4 bunch fresh coriander
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon all spices powder (garam masala)
    • salt to taste
    • 2 tablespoon oil or butter for busting

    For Parathas

    • 1 cup whole wheat flour
    • 1 cup white flour
    • Salt to taste
    • 2 tablespoon clarified butter (desi ghee)
    • Water as required
    • black seeds as required (optional)

    For Paratha Roll Topping & Stuffing

    • 4 tablespoon mayo garlic sauce
    • 4 tablespoon mint yogurt chutney
    • 1 cup pickle (cucumber, onion, carrot, green chili etc)
    • few salad leaves
    • chili flakes ((optional))

    Method

    To Make Kebab’s

    1. Put mince, onion, green chilies, ginger, coriander, red chili, cumin seeds, salt and all spices in a chopper. Process until well combined.
    2. Now make shape of long seekh kebabs and set aside.
    3. Heat 2 tablespoon oil or butter in a pan over medium heat.
    4. Shallow fry the kebabs covered on low heat for 10-15 minutes or until all the water of mince dries and kebabs are done.

    To Make Parathas

    1. Place flours in a large bowl. Add ghee and salt in it. Knead a soft dough with water.
    2. Let it rest for 1 hour at room temperature.
    3. Preheat the iron griddle or pan over low heat.
    4. Now make round shape parathas with the help of rolling pin.
    5. Sprinkle black seeds over it and press gently.
    6. Cook parathas with butter on medium heat until crispy.
    7. Take it out in a plate and set aside.

    To Assemble kebab Paratha Roll

    1. Now place paratha’s on a clean surface.
    2. Spread mayo garlic sauce over the paratha’s.
    3. Put salad leaves and 2 seekh kebabs over the each paratha.
    4. Pour minty yogurt chutney over it.

    5. Sprinkle pickles and chili flakes (if like it). Roll up tightly and secure with wooden pick.

    6. Now Cut the paratha roll from the center. Hot and Spicy Kebab Paratha Roll is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve hot with sauce and salad of your choice along with Lemonade.

    Crispy samosas with chocolate and walnut is a classic snack for everyone. Try once you will love it for sure

    • 200 gm dark chocolate (grated)
    • 2 tablespoon chopped walnuts
    • 2 tablespoon fresh cream
    • 12 Samosa wraps
    • 1 egg (lightly beaten)
    • oil for frying
    1. In a bowl, mix together the fresh cream, chocolate and walnuts. Now make samosas with chocolate filling and sealed with beaten egg.
    2. Heat sufficient oil in a pan and deep fry samosas on medium heat for 2 minutes or until they turn crispy ang golden.
    3. Drain onto an absorbent paper.
    4. Drizzle some melted chocolate over them.
    5. Chocolate Samosa is ready to serve. Enjoy!

    Summer has been kicking into high gear and the temperatures have been climbing here, and everyone wants to keep cool on hot summer days. So today, I have a recipe for a simple, classic and very popular sandwiches: “Egg and Cucumber Sandwiches”.

    Egg and Cucumber Sandwiches

    Egg and Cucumber sandwiches are the most delicious, easiest finger foods to make. All you need is sliced white bread, boiled eggs, mayonnaise and of course, cucumbers. To enhance the flavor, I also spread a thin layer of dill with cream cheese spread.

    I love adding cucumbers to egg mayonnaise. And sometimes different herbs too (especially dill goes very well with eggs and cucumbers). The cucumber can either be chopped finely and mixed into the egg mayonnaise or sliced thinly , I like the latter since it adds a nice fresh crunch to the sandwich. This can be made in advance and keeps well, so is perfect for tea parties.

    If you’re looking for an extremely quick and easy recipe for a lunch box, or a tea party, or a picnic, or you just so happen to have an extra cucumber lying around, then give these egg and cucumber sandwiches a try. They’re deliciously light and fresh, and I love the crunch of the cucumber. These delicious, easy-to-assemble sandwiches are great for a quick summer meal.

    Egg and Cucumber Sandwiches Recipe

    Egg and Cucumber sandwiches are the most delicious, easiest finger foods to make. All you need is sliced white bread, boiled eggs, mayonnaise and of course, cucumbers. To enhance the flavor, I also spread a thin layer of dill with cream cheese spread.

    For Egg Salad

    • 3 hard boiled eggs
    • 1/2 cup mayonnaise (mayo with olive oil is my favorite)
    • 1 tablespoon fresh dill (chopped)
    • 1/4 teaspoon garlic powder (optional)
    • 1/4 teaspoon pepper
    • salt to taste

    For Sandwiches

    • 3 tablespoon cream cheese spread
    • 1 large cucumber (peeled and thinly sliced)
    • 12 sliced white sandwich bread

    Method

    1. In a medium bowl, mix together the eggs and mayonnaise until completely incorporated.
    2. Add garlic powder, salt, pepper and chopped dill. Mix until well combined.
    3. Set aside.
    4. Toss bread slices on both sides.
    5. Spread egg spread mixture on 4 bread slices.
    6. Cover with another four bread slices.
    7. Top with cheese spread and cucumber strips, then close sandwiches with remaining bread slices.
    8. Cut crusts from bread, forming finger sandwiches. Cut each sandwich into three, creating 3 rectangle mini-sandwiches each. Enjoy!

    Serving Suggestions:
    Serve with tea or you can enjoy with finger chips and chili garlic sauce.

Whipping up ingredients, the aroma of food, that first bite, the feeling that it has all come together just right is a balm like no other.

    Fish n chips is the most popular English fast food. Traditionally battered fried fish is served with delicious potato chips, tartar sauce, mushy peas and lemon quarter to spice up the meal.

    That fateful day, I craved some kind of fast food with all my being. I opened my freezer and was looking around for inspiration when some fish fillets caught my eye and I knew what was coming next.  So, I decided to make Fish and Chips, and they turned out awesome! This English-Style Fish and Chips is gloriously indulgent. It is so good on it’s own, but I suspect it would be even better paired with some kind of salad. Super filling; a complete balanced meal all in one platter. Save yourself some time and money, and try this English-Style Fish and Chips, and quell those cravings!

    The condiments are all up to you. You can serve it with any sort of sauce, however much you like.But I enjoyed it with veggie pasta salad.

    English-Style Fish and Chips Recipe

    Fish n chips is the most popular English fast food. Traditionally battered fried fish is served with delicious potato chips, tartar sauce, mushy peas and lemon quarter to spice up the meal.

    For Fish

    • 500 gm cod fish fillets
    • 1 egg (lightly beaten)
    • 1/2 cup plain flour
    • 1/2 cup rice flour
    • 1 cup chilled water
    • 1 tsp vinegar
    • 1/2 tsp black pepper
    • 1/4 tsp baking powder
    • salt to taste
    • Oil for frying

    For Potato Chips

    • 500 gm potatoes
    • 1/4 cornflour
    • salt to taste

    For Fish

    1. Season the fish fillets with vinegar, salt and pepper and leave it for 10 minutes.
    2. In a mixing bowl, whisk together the rice flour, baking powder, 1/4 cups of the plain flour, and 1 teaspoon of salt. Pour in the egg, lemon juice and sparkling water, and mix just to combine everything – you do not need to over-mix. Refrigerated this batter until ready for use.
    3. Place the remaining cup of flour in a wide bottomed bowl and dredge the fillets through the flour, coating them well on all sides. Then dip them into the batter, turning and swishing, to again ensure they are well coated all over.
    4. Deep fry fish fillets for 8-10 minutes or until golden brown and puffed off.
    5. Once all the fillets are cooked, transfer them to a paper towel-lined large platter and pat them dry with more paper towels. Sprinkle with more salt, if desired.

    For Chips

    1. Peel potatoes then cut into 1/4-inch thick chips.
    2. Blanch the potato sticks, in batches if necessary, in the boiling water. About 2 minutes should do it.
    3. Strain well and pat dry on paper towel.
    4. Sprinkle cornflour over them and season with some salt.
    5. Heat oil in a deep pan over medium heat. Fry potato chips for 10 minutes or until crispy ad golden. Fish n Chips are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve Fish and Chips with lemon wedges along with tarter sauce.

    Mince Stuffed Cutlets 

    When I was in college, these “Mince Stuffed Cutlets” was one of the first recipes I ever added to my regular rotation.

    Mince Stuffed Cutlets is a great appetizer that involves soft delicate potato patties stuffed with seasoned cooked mince. Delicious and crispy patties that can be made in just 35 minutes. These make a great snack or appetizer or even a starter for parties or perfect for weekend meals.

    I used to fill my cutlets with spinach, broccoli, cheese, or whatever ingredients I have in my hand. It’s so fun to experiment with different ingredients, home cooking should be easy and fun! Although I enjoyed a lot of combinations, mince stuffed cutlets was always my favorite (and cheese, too).

    I know it seems quite far apart but when you take a bite it taste very close to the potato chops.

    There are many variations I have seen online. Some use a little flour mixed with the potato mash, an egg wash, bread crumbs and cornflour. You can make it vegetarian by using cooked peas and carrots in garam masala with some onions and fresh coriander then mixed with the mashed potato and shallow fried. You can replace the lamb mince with cooked ground chicken or beef, or fish. Try getting more creative: This is great fun – keep adding different ingredients to taste the different flavors.

    Mince Stuffed Cutlets Recipe

    For the Mince Stuffing

    • 1/2 kg lamb or mutton mince
    • 1 large onion (minced)
    • 1 teaspoon garlic paste
    • 1 teaspoon ginger paste
    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • salt to taste
    • 1 tablespoon cooking oil
    • 2 green chilies (chopped)
    • 2 tablespoon mint and coriander leaves

    For Potato Filling

    • 4 potatoes (boiled and mashed)
    • 1/2 teaspoon crushed red chili
    • 1/2 teaspoon cumin seeds
    • 1/4 teaspoon black pepper (freshly ground)
    • salt to taste
    • mint and coriander leaves (finely chopped)

    For Cutlets

    • 1 cup bread crumbs
    • 2 eggs (lightly beaten)
    • oil for shallow frying

    Method

    To make Mince Stuffing

    1. Heat oil in a saucepan or pot over medium heat.
    2. Saute onion, for 5 minutes or until transculent.
    3. Now add ginger garlic paste and cook for 30 seconds.
    4. Now add the mince and season with red chili, cumin powder, coriander powder and salt.
    5. Stir well.
    6. Cover and let it simmer for 25 minutes on low heat.
    7. No need to add extra water. Cook meat in its own juices.
    8. Remove the lid and cook meat on high flame or until it dries out and smells cooked and gets slightly brown, keep moving around and fry by adding about 1 tbsp of oil.
    9. Now add the green chilies, coriander leaves, mint leaves.
    10. Turn the heat off and do not cook further.
    11. Keep aside and let it cool down.

    To Make Potato Filling

    1. Mash potatoes in a large bowl. Add the salt, cumin seeds, red chilli, black pepper and coriander mint leaves.
    2. Mix until well combined.

    To Make Mince Stuffed Cutlets

    1. Make patti of potato mixture and spread mince mixture over it and cover with another pattie.
    2. Seal edges and flatten it into a round shape.
    3. Keep making until mixtures are used up.
    4. Beat eggs in a small bowl.
    5. Dip cutlets in egg then coat in crumb mixture.
    6. Heat oil in a shallow pan over medium heat.
    7. Fry for 2 minutes on each side or until light brown.
    8. Remove from the oil and absorbent on kitchen paper.
    9. Mince Stuffed Cutlets are ready to serve. Enjoy!

    Serve immediately with green coriander chutney or ketchup or by themselves!

     Recipe Note’s:

    1. You can use Chicken /Mutton /Beef mince as on your choice.
    2. These freeze quite well so you can pop them in the freezer before frying them and then completely defrost and then coat and fry.

    With spring here in full bloom, I try to get out for daily walks, which is a joy. With the earth greening, trees budding, flowers blossoming and songbirds chirping, hope and renewal fill every living thing. (inshaAllah)

    The days are getting much warmer now and my family always looks forward for light and comforting food. Dinner is the only time when everybody gets to gather around and have meal as a family. So I always plan to cook something simple and most importantly light and healthy.

    Last week, I made the world’s most amazing Meatballs in a tomato sauce with garlic bread on the side – where’s my invitation to go on Masterchef??  💁🏻 lol 😛

     I like to cook meatballs in sauce! These Italian flavored  meatballs in tomato sauce are my new favorite! 😀 ☺

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    They would be great over pasta, mixed with tomato sauce as an appetizer or on their own, But I served these meatballs over some veggie noodles tossed in olive oil along with garlic bread. A recipe must try! The Best Meatballs You’ll Ever Have!

    The Best Meatballs You’ll Ever Have

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    For the Meatballs

    • 1 pound high-quality lamb mince
    • 1 small onion (diced)
    • 1/2 cup seasoned breadcrumbs
    • 2 tablespoon cream
    • 2 garlic cloves (chopped)
    • 1 large egg
    • 3 tablespoons fresh parsley (chopped)
    • 3 tablespoon Parmesan cheese (grated)
    • 3 tablespoon Mozarella Cheese (grated)
    • 1 teaspoon freshly ground pepper
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon cayenne
    • salt to taste
    • 2 tablespoon butter or oil

    For the Sauce

    • 1 tablespoon extra virgin olive oil
    • 2 garlic cloves (minced)
    • 1/2 small onion (chopped)
    • 1/2 cup tomato thick puree
    • 1 red pepper (crushed)
    • 2 tablespoons fresh parsley (chopped)
    • 1/2 teaspoon red pepper
    • 1/4 teaspoon salt

    Method

    1. Preheat oven to 200 degree C.
    2. Prepare the meatballs: Put all ingredients into a food processor or chopper.
    3. Process until well combined.
    4. Note; Texture should be soft, but not sopping wet. If it’s not soft enough, add 1 tablespoon of milk.
    5. Now take it out in a mixing bowl.
    6. Shape into egg size balls by pushing them into the shape softly in your hands.
    7. Place meatballs on a baking tray and brush with melted butter or olive oil.
    8. Bake for 30 minutes or until they are just barely cooked through and no longer pink inside. (To keep them tender, do not overbake).
    9. Remove and reserve.

    To Make the Sauce

    1. Heat oil in a large saucepan over medium heat.
    2. Add the garlic and onion, and sprinkle the salt over them to bring out their flavor.
    3. Add red pepper. Cook and stir occasionally for 5 minutes or until the onion is translucent.
    4. Now add the tomato puree.
    5. Bring to a boil.
    6. Add parsley and reduce the heat to medium-low.
    7. Let it simmer for 5 minutes or until nicely blended.
    8. Now carefully add the baked meatballs to the pan.
    9. Simmer for 20 minutes or until they are soaked in sauce.
    10. ENJOY!!

    Serving Suggestions:
    Serve meatballs and sauce over spaghetti. Or healthy alternative serve them over veggie noodles.

  • Baked Vegetable Spring Rolls Recipe

    Assalamu alaikum wa rahmatullahi wa barakatuhu!

    I hope you’re well and have had a good start to the week.   I’m sorry to let you worry about me, but these days I’m a bit busy.  As you know study study study. lol 😀 I am madly busy with my assignments. Sorry for this post being late.

    My class got cancelled today. Glad I get a chance to breathe. So I decide to write a post for my lovely reader’s. Last week, I made these Veggie rolls ( Baked Version) to give myself a break from ‎assignment work. They are very easy to prepare and tastes absolutely delicious! I had too much fun making this.

    These yummlicious veggie rolls are healthy and very filling. And they smell amazing when they’re baking. They crisped up fine in the oven. The only problem is that three wrappers have 180 calories! What!???? That’s a lot. I ate 3 rolls anyway. 😛 😉 They are ready in only 35 minutes and you can use your favorite veggies.

    You could fry these, too, but I was trying to keep them healthy. I hope you all give this Baked Veggie Rolls recipe a try and let me know how they turn out!

    Baked Veggie Rolls 

    So let the fun begin!

    1. First Prepare Veggie Filling: Heat a small amount of oil in a wok over medium heat. Add giner and garlic. Saute until fragrant. Might you think, it’s a stupid instruction, isn’t it? Tell you what, just cook your garlic few seconds until they’re soft-ish.
    2. Now add green peas, red beans and corns. Cook for 2-3 minutes or until they are soft.Add remaining veggies and add a splash of vingear. Stir fry for few minutes. You can add soy sauce or any store bought sauce etc. But I didn’t add it. As I try to avoid artifical ingredients to follow my journey towards clean eating. 🙂
      Sprinkle black pepper, red chili, and maybe a little salt if you need it. If you want to use fresh herbs then I think that would be lovely.
    3. Stir well and Let everything simmer for a couple of minutes, but don’t let everything get overly soft because you still have to stuff and bake your rolls.
    4. Take the mixture into a bowl and let it cool for few minutes. Once everything is cool, you can either proceed to stuffing the rolls, or cover your bowl and put everything in the fridge overnight. If you do refrigerate the veggie mixture, be sure to bring it room temperature before stuffing your rolls.
    5. When you’re ready to stuff your rolls, be sure your stuffing mixture and wrappers are at room temperature. You’ll want a clean work surface for this part and a bowl of water nearby.
    6. Don’t be intimidated by this part. You just want the rolls to hold the yummy stuffing in. They don’t need to be perfect. And, frankly, if someone is going to judge you on how pretty your spring rolls are, then you probably shouldn’t be feeding them. lol 😛
    7. Preheat an oven for 200 degree C and brush a baking sheet with oil.
    8. Place a wrapper out in a diamond shape on your work surface.Put a tablespoons of filling in the center of the wrapper. I under-stuffed these rolls, so they turned out chewier that I would have liked. However, you don’t want to stuff them so full that they split open. It’s a delicate balance.
    9. Bring the bottom point of your wrapper up over the filling and tuck it under as tight as you can. Fold the sides over and shape into a roll.
    10. Moisten the edges of the top flap slightly with water and roll the roll over, pressing the point on the underside of the roll to seal it.
    11. Put on a lightly oiled baking sheet and repeat this method the rest of your rolls.
    12. Lightly brush the tops of the rolls with egg-wash and sprinkle sesame seeds over them.
    13. Bake in the preheated oven for 20 minutes or until they turn golden brown. This took my oven around 22-25 minutes.
    14. You can eat these veggie rolls with tamari or soy sauce, but we prefer sweet and sour sauce.

    Baked Veggie Rolls

    Last week, I made these Veggie rolls ( Baked Version) to give myself a break from ‎assignment work. They are very easy to prepare and tastes absolutely delicious! I had too much fun making this.

    • 1 large carrot (cut into julienne)
    • 1 spring onion (cut into julienne)
    • 1 cup cabbage thinly sliced
    • 1 green pepper (thinly sliced)
    • 1/4 cup boiled green peas
    • 1/4 cup boiled corns
    • 1/4 cup boiled red beans (optional)
    • 1 tablespoon chopped ginger
    • 1 garlic clove (crushed)
    • 1 tablespoon olive oil
    • 2 tablespoon freshly parsley (chopped)
    • 1/2 teaspoon vinegar
    • 1/2 teaspoon pepper
    • a pinch of crushed red chili
    • salt to taste
    • 1 egg (for brushing)
    • 1 tablespoon sesame seeds (for sprinkling)
    • 16 roll wrappers or sheets

    Directions

    1. Heat oil in a wok over medium heat. Saute giner and garlic till fragrant.
    2. Add green peas, red beans and corns. Cook for 2-3 minutes then add remaining veggies and add vinegar.
    3. Cook and stir for few minutes.
    4. Season with salt , pepper and red chili.
    5. Mix well and cook for 1 more minute. ( Don’t over cook).
    6. Transfer the veggie mixture into a bowl and let it cool completely.
    7. Preheat an oven for 200 degree C and brush a baking sheet with oil.
    8. Place a wrapper like diamond, put 2 tablespoons of filling near corner, tightly roll the wrapper, fold over left side, fold over right side, brush a little water along the edge and close it up.
    9. Put on a lightly oiled baking sheet and repeat this method the rest of your rolls.
    10. Lightly brush the tops of the rolls with egg-wash.
    11. Sprinkle sesame seeds over them.
    12. Bake in the preheated oven for 20 minutes or until they turn crispy and golden brown.

    Serving Suggestions :
    Serve with sweet and sour sauce.

    Chicken Pita Sandwiches

    Say goodbye to your boring sandwiches. This Chicken Pita Sandwiches recipe is so easy to make and sure to spice up your lunch routine. Twenty minutes is all you need to whip up these simple yet satisfying Chicken Pita Sandwiches. Perfect to pack for school or work!!

    • 4 Pita breads
    • 2 boneless chicken breasts (cut into thin strips)
    • 1 small green bell pepper (thinly sliced)
    • 1 small yellow bell pepper (thinly sliced)
    • 1 small onion
    • 1 cucumber (thinly sliced)
    • 4 olives (thinly sliced)
    • 1 jalapeño pepper (thinly sliced)
    • 4 tablespoon tomato ketchup
    • 2 tablespoon mayonnaise
    • 2 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon black pepper
    • salt to taste
    • 1/2 cup grated mozzarella cheese
    • lettuce leaves

    Directions

    1. Heat oil in a frying pan.
    2. Stir fry chicken in hot oil for 4-5 minutes or until no longer pink.
    3. season with salt, garlic powder, black pepper and crushed chili.
    4. Cover the pan and let it cook in its own water for 10 minutes or until chicken is tender.
    5. Now add onion and stir fry for 30 seconds.
    6. Now add green pepper, yellow pepper, jalapeno pepper.
    7. Stir fry for 1-2 minutes then stir in the
    8. tomato ketchup.
    9. Turn the heat off.
    10. Now add olives, cheese and mayonnaise.
    11. Adjust seasoning to taste.
    12. Slightly roast pita bread on hot griddle from both sides.
    13. Put some lettuce leaves and cucumber on a pita bread.
    14. Top with chicken mixture.
    15. Generously cover with another pita bread.
    16. Cut each bread into four pieces.
    17. Transfer into a serving platter. Delicious Chicken Pita Sandwiches are ready to serve. ENJOY!!

    Scotch eggs are one of those foods that have never gone out of favorite.I really love Scotch Eggs. Believe me this homemade potato scotch eggs are a world away from shop bought versions. They’re worth the effort for a special picnic treat. Packed with protein power, this summer fair favorite is easy to make in your home kitchen. Ready to eat in just 30 minutes, it makes a great start to the day, or a satisfying snack.

    I have always been fascinated by Scotch eggs. I think they bring a little “wow” factor to any table. Scotch eggs are traditionally made with sausage meat wrapped around a hard boiled egg then breaded and deep fried. I wanted to shake up this UK savory treat with some Asian spices and do my own take on it. I decided instead of using a raw sausage meat, I would make a potato filling to wrap around the egg then bread it and deep fry it. I loved how these came out and they go perfectly with zeera rice and curry meal.

    They also go well with a salad, bread, naan, etc… I think these beautiful eggs dress up any Asian or European table. If you are little worried about the size of the larger scotch eggs, I did make make a smaller version of this fun dish. I think the smaller version is actually a little more manageable to make and serve, although it doesn’t have the show-stopper look as the whole egg version when you cut them. Of course, both are equally tasty and fun and you will love to see them once they sit prettily on your table.  Do try it, your kids will love it. Perfect for lunch box. 

    Note: Make sure you cut the larger scotch eggs in half or quarters before serving so the guests can see the inside because that’s the “wow” factor to the dish. Enjoy.

    Potato Scotch Eggs

    A delicious and easy tea time snack for your friends and family. Fresh Parsley makes this traditional Potato Scotch eggs recipe extra special.

    • 6 organic eggs
    • 3 medium sized potatoes (boiled)
    • 2 small dried red chilies (cruhsed)
    • 1 tablespoon fresh parsley leaves (chopped)
    • 1 teaspoon soy sauce
    • 1 teaspoon black pepper (freshly ground)
    • salt according to taste

    For Coating

    • 4 tablespoon cornflour
    • 1/2 cup bread crumbs
    • 1 egg (light beaten)
    • a pinch of salt and pepper
    • oil for frying
    1. Bring a pan of salted water to the boil. Cook 6 of the eggs for 6 minutes.
    2. Strain and leave to cool for 10 minutes in iced water.
    3. Then peel.
    4. Meanwhile, mash potatoes in a large bowl.
    5. Add parsley, soy sauce and red chili.
    6. Season with salt and pepper.
    7. Mix until well combined.
    8. Shape the potato mixture around the boiled eggs; it could be 1 cm thick.
    9. Beat egg with a pinch of salt and pepper.
    10. Now coat the potato covered eggs first in the cornflour, then dip in the egg.
    11. Then coat with bread crumbs.
    12. Heat the oil in a deep pan over medium heat.
    13. Carefully drop the scotch eggs into the hot oil and cook for 3-4 minutes or until crispy and golden.
    14. Remove from the oil and drain on kitchen paper.Cut them in half or quarters.
    15. Drizzle some ketchup before serving. Delicious Potato Scotch Eggs are ready to serve. Enjoy!!

    1. Do not freeze them because potato become soggy and watery if you store them for longer period of time. I myself prepare potato based things fresh always.
    2. You can also add any herb seasoning in potato mixture.
    3. You can also make it with chicken mince etc.

    It’s a perfect recipe for a quick and easy desi snack, consider making a spicy potato chips please guests who love spicy foods. delicious!!! I serve it with Homemade Tomato Ketchup. You can serve with any kind of dip or sauce you want.

    You should always use old potatoes to make french fries. New ones are moist and are extremely raw, that do not make french fries crispy.

    Step by Step ~ French Fries Pakora Recipe

    Step 1 ~ First Peel the potatoes with the help of a peeler and wash them.

    Step 2 ~ Now cut them into long pieces. You can use french fries cutter that can be easily bought from the market also. You will be able to cut the pieces quickly and in equal shapes.

    Step 3 ~ In a large bowl, add potatoes, chickpea flour, rice flour and cornflour. Season with salt, chili powder, cumin and garlic powder.

    Step 4 ~ Add little water and mix well to coat evenly.

    Step 5 ~ Heat oil in a pan over medium heat.

    Step 6 ~ Put the french fries pakora into it to fry. Make sure that the oil is not extremely heated.

    Step 7 ~ Fry them till they turn golden brown and crispy.

    Step 8 ~ Remove on a kitchen paper to drain excess oil.

    • 4 tablespoon rice flour
    • 2 tablespoon corn flour
    • 1 teaspoon red chilli powder
    • 1 teaspoon cumin powder
    • 1/4 teaspoon garlic powder (optional)
    • Salt to taste
    • Oil for frying
    • chaat masala powder (for sprinkiling)
    1. Peel potatoes and cut into strips.
    2. Place potatoes, chickpea flour, rice flour and cornflour in a large bowl.
    3. Season with salt, chili powder, cumin and garlic powder.
    4. Add some water and mix to coat evenly.
    5. Set aside.
    6. Heat oil in a deep pan or wok over medium heat.
    7. Add potatoes in a sprinkled way and fry for 8-10 minutes or until crispy and golden brown.
    8. Remove from oil and drain the excess oil.
    9. Sprinkle Chaat masala over it. French Fries Pakora is ready to serve. ENJOY!!

    You can also bake them for a Healthier version.

    You can serve with Tomato Ketchup.
