    This Jhatpat Chicken is very quick to prepare and tasty too. It goes with chapati for light lunch menu with salad and chutney.

    For Jhatpat Chicken:

    • 1 kg chicken, cut into 16 pieces
    • 1/2 cup cooking oil
    • 2 tbsp tomato ketchup
    • 1 tbsp Wooster sauce
    • 1 tbsp garlic, minced
    • 1 tsp ginger garlic paste
    • 1 tsp red chili powder
    • 1 tsp mustard powder
    • 1 tsp black pepper
    • 1 tsp salt

    For Sauce:

    • 1 onion, cut into rings
    • 1 tomato, cut into fingers
    • 1 capsicum, cut into rings
    • a pinch of orange color
    • 2 tbsp tomato paste
    • 2 tbsp vinegar
    • 2 tbsp tomato ketchup
    • 1 tsp sugar

    1. Put chicken pieces into a bowl.
    2. Add ginger garlic paste, mustard powder, Wooster sauce and tomato ketchup.
    3. Season with red chili salt and black pepper.
    4. Cover and marinate for 2 hours.
    5. After 2 hours, heat oil in a deep skillet or pot.
    6. Put marinated chicken in it.
    7. Cook for 10 minutes or until no longer pink.
    8. Now add all the ingredients for sauce with 1 cup water.
    9. Cover with a lid and let it simmer for 10 minutes or until cooked thorough.
    10. Now add vegetables and cook for 5 minutes.
    11. Take it out in a serving dish.
    12. Jhatpat Chicken is ready now.

    • 1/2 kg beef or mutton or chicken
    • 1/2 cup plain yogurt
    • 2 tbsp lemon juice
    • 1 tbsp papaya paste
    • 1 tbsp oil
    • 1 tsp ginger garlic paste
    • 1/2 tsp turmeric powder
    • 1/2 tsp red chili powder
    • 1/2 tsp red chili crushed
    • 1/2 tsp all spice powder
    • 1/2 tsp coriander seeds crushed
    • 1/2 tsp cumin seeds crushed
    • a pinch of ground nutmeg
    • a pinch of saffron
    • salt to taste

    Instructions

    Method

    • In a small bowl, combine together plain yogurt, ginger garlic paste, papaya paste, black pepper, turmeric, red chili , crushed red chili, all spice, cumin seeds, coriander seeds nut meg, lemon juice, saffron, salt and oil.
    • Pour this mixture over the meat pieces.
    • Mix well.
    • Place in a refrigerator for 4 to 5 hours.
    • Preheat oven to 350 degree F or 150 Degree C.
    • Put marinated meat in a baking dish.
    • Bake for 20 to 25 minutes or grill it in a pan or barbecue.
    • Tandoori Boti is ready to serve. ENJOY!!

    • 1 kg King fish clean and cut in cubes
    • 2 tbsp White vinegar
    • 1 tbsp Red crushed chilli
    • 1 tsp White cumin roasted and ground
    • 4 tbsp Lemon juice
    • 2 tbsp Soy sauce
    • Salt to taste
    • 4 tbsp Oil

    Instructions

    • Apply vinegar and salt on fish and wash after 10 minutes.
    • Then apply all spices and lemon juice and marinade for 1-1/2 hour.
    • Thread on skewers and BBQ, grill or fry in a bit oil.
    • When done then apply oil with brush and squeeze lemon again. Spicy Fish Tikka is ready to serve.

    Serve with tamarind sauce.

    Tandoori Fish Tikka Recipe

    Ingredients

    • 500 gm boneless fish
    • 1 cup plain yogurt
    • 2 tbsp lemon juice
    • 1 tbsp ginger garlic paste
    • 1 tsp red chili flakes
    • 1 tsp ground cumin
    • 1/2 tsp garam masala powder
    • 1/2 tsp chat masala
    • a pinch of red food color
    • salt to taste

    Instructions

    Method

    • Wash fish fillets properly and cut into 1 inch cubes.
    • Season with salt and red pepper. Drizzle lemon juice over it. Keep aside for 10 minutes.
    • In a small bow, add yogurt, ground cumin, garam masala powder and food color. Mix well.
    • Pour this batter over the fish. Toss to coat evenly.
    • Marinate fish for 4-6 hours.
    • Thread marinated fish on thin skewers. Cook in a hot tandoor or oven for 15 minutes turning once.
    • Take it from the oven. Sprinkle chaat masala over it. Garnish with lemon wedges. Tandoori Fish Tikka is ready to serve.

    Heat the oil and fry the onions till they are light golden in colour.

    Mix the ground onion mixture with the yoghurt, red chilly powder and coriander powder.

    Add this to the meat and let it cook over a low heat till the meat is tender.

    If required, add 1 cup of water to make gravy.

    Step 7

    Sprinkle the kewra and saffron on it and let it simmer for approximately 5 – 10 minutes till the oil floats on top. Delhi Wala Korma is ready to serve.

    Stir and cook for 5 minutes or until crisp-tender.

    Remove from the heat. Strain the water.

    Heat oil in a deep pan over medium heat. Add the masala paste. Cook and stir for 12 minutes or until the moisture evaporates.

    Step 8

    Add mashed palak and methi leaves to the masala. Stir fry for 15 minutes or until cooked thorough.

    Add potatoes and mix well. Cook until the potatoes are done.

    Step 10

    Sprinkle with garam masala.

    Heat oil in a large pot over medium heat. Saute onion in hot oil till they are translucent.

    Add the beef, yogurt, tomatoes and water. Stir well. Cover and cook for 40 minutes or until the beef is tender.

    Chargha (Oven Roasted Chicken)

    Moist, tender and spicy, this very simple yet incredibly delicious chicken chargha recipe is the ideal one for those who love roast chicken but find the whole oven-roasting/baking process too daunting. 

    Prep Time: 2 hours

    Cook Time: 40 minutes

     Servings: 5

    Ingredients

    • 1 whole chicken
    • 250 gm natural yogurt
    • 2 tbsp chicken Chargha masala
    • 1 tbsp garlic paste
    • 1 tbsp ginger paste
    • 1 tbsp red chili, crushed
    • 1/2 tbsp black pepper, crushed
    • 1/2 tsp cumin seeds, crushed
    • salt to taste
    • a pinch of yellow food color
    • 6 lemons
    • Oil as required

     

    Directions:

    1. Wash whole chicken and drain.
    2. Now make deep slits on chicken.
    3. Keep aside.
    4. In a bowl, combine together yogurt, Chargha Masala, ginger garlic paste, yellow color, red chili, ground cumin, black pepper and salt.
    5. Also add 1 lemon juice.
    6. Put this chicken over the chicken.
    7. Marinate chicken for 2 hours.
    8. After 2 hours, cook chicken in a deep skillet without adding water until its own water dries.
    9. Heat oil in a deep pan.
    10. Fry chicken on low flame for 10 minutes or until its color turn to golden brown.
    11. Remove chicken from the oil.
    12. Squeeze lemon juice over it.
    13. Delicious Chargha is ready now.
    • Serve hot with naan and tamarind chutney.

    • 1/4 tsp turmeric powder
    • 1/4 tsp baking powder
    • oil for frying

     

    Directions:

    1. In a bowl, combine together garlic paste, lemon juice, red pepper, All spice, egg, crushed coriander, cumin, plain flour, corn flour, rice flour, turmeric powder, salt and baking powder.
    2. Make a smooth paste of it.
    3. Marinate fish in this mixture for 30 minutes.
    4. Now heat oil in a deep pan over medium high heat.

    Ingredients

    • 500 gm Mutton Keema
    • 2 lb potatoes
    • 4 onions, chopped thinly
    • 4 cloves
    • 4 cinnamon sticks
    • 4 cardamoms
    • 8 garlic flakes
    • Small piece ginger
    • 2 tsp poppy seeds
    • 2 eggs
    • salt, turmeric, red chilli powder
    • 4 tsp besan flour
    • Oil for deep frying
    • Few coriander leaves and curry leaves, finely chopped

     

    Directions:

    Step 1

    Boil potatoes, peel the skin and mash the potatoes.

    Step 2

    Grind ginger and garlic to fine paste. Grind cloves, cinnamon, cardamoms and poppy seeds.

    Step 3

    Add this to mashed potato mixture then add coriander leaves and curry leaves and mix well.

    Step 4

    Wash keema.

    Step 5

    Add onions, salt, chilli powder and turmeric to keema, mix well add some water and cook.

    Step 6

    When cooked grind this and add ginger-garlic paste and mashed potato mixture to it.

    Step 7

    Take besan flour and add some water and beat eggs in that and mix well.

    Step 8

    Heat oil in a shallow pan over medium heat. Take Keema mixture and make small balls.

    Step 9

    Take each ball and dip in the besan flour mixture and put them in oil and fry until golden brown.

    Step 10

    Deep fry all the keema balls. Keema Cutlet is ready to serve.

    Step 1

    Grind cashew nuts, garlic and ginger into a paste with the help of mortar, pestle or blender.

    Step 2

    Soak saffron threads in 1/4cup boiling hot water for about 10 minutes. Strain and keep aside.

    Take a wok or pot and heat ghee. Combine meat with it, brown well to seal in the juices, keep aside.

    Step 4

    In the same wok, add a little more ghee, if required. Add sliced onions and cinnamon stick, cook till onions turn translucent.

    Step 5

    Add meat curry powder, ground paste, and chili powder, stir-fry till quite toasted and oil starts to ooze from paste.

    Step 6

    Add meat and season with salt, stir fine to coat equally. Add the saffron water and additional water.

    Step 7

    Bring it to a boil, decrease the heat to medium-low. Cover and simmer for about 45 minutes, stir occasionally, add a little water if it starts to dry up too rapidly.

    Step 8

    Add tomatoes and yogurt, when the meat is almost cooked.

    Step 9

    Cover, and simmer on low flame till the meat is very tender. Lamb Cashew Korma is ready to serve.

    Ingredients

    • 1/2 kg Mutton
    • 2 Cups basmati rice
    • Few flakes garlic
    • 3 tsp Coriander powder
    • Dried coconut
    • 1 Inch stick cinnamon
    • 3 Green chillies
    • 1 tsp Chilli powder
    • 1 Cup onion
    • 1 Inch piece ginger
    • 1 tsp Poppy seeds
    • 3 Cloves peppercorns and cardamoms
    • 1 Cup curd
    • 1/2 Cup onion
    • 2 Bay leaf
    • 8 tbsp Fat
    • Salt to taste

    Instructions

    Directions

    • Clean the meat and cut into pieces.
    • Soak the meat in curd.
    • Roast cardamom, cinnamon, peppercorns and powder cloves. Make powder.
    • Grind ginger, red chillies, green chillies, half the onions, garlic and copra.
    • Now heat fat in a pan. Add chopped onions and ground spices. Fry until onions turn golden brown.
    • Now add meat and fry well.
    • Add poppy seed powder. Add salt and remaining curd. Cook till meat becomes tender.
    • Add powdered spices to it and remove from the flame.
    • Chop remaining onions. Fry them in fat in a separate pan.
    • Add cloves and bay leaf.
    • Fry for few minutes and add rice. Fry for another few minutes. Put salt to taste and make the quantity of water double.
    • Remove from the flame when rice gets cooked and no moisture is left.
    • Arrange a part of cooked rice in a pan and sprinkle saffron water over it.
    • Place the meat over it and cover with rice layer once again. Garnish with fried onions and nuts. Mutton Biryani is ready to serve.

    Notes

    Serve with salad and mint Raita.
