    Harissa with Kabab

    Harissa is a traditional Kashmiri dish made with wheat and grains. The specialty of this dish is kabab are added in it for more delicate taste and texture. It’s a favorite spicy dish in our country and the most cooked dish on gatherings and parties.

    This is my Rubina Khala’s ( my aunt) fabulous Harissa with kabab recipe that has become one of my absolute favorites and a must-have whenever we when we have a family gathering or family dinner. I recently asked for the recipe and added my twist.Truly delicious, very filling and energy boosting.

    I love to eat Harissa any time; if only i din’t have to give away my last energy stirring it, I would have really made it every day!!

    Way of eating harissa depends on the region as well. Some people eats it directly with spoon and some people eats it with naan bread.  Perfect dinner idea for Bakra Eid. Do try it, I hope you enjoy these as much as my family does.

    Harissa with Kabab

    Ingredients

    • For Harissa
    • 1 kg mutton
    • 2 onion thinly sliced
    • 1 whole garlic bulb don’t peel
    • 2 inch piece of ginger peeled and chopped
    • 1 cup clarified butter or desi ghee
    • 3/4 cup wheat crushed
    • 1/2 cup rice
    • 1/2 cup whole moong daal whole green lentil
    • 1 teaspoon red chili powder
    • 1 teaspoon garam masala powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder haldi
    • salt according to taste

    For Kabab

    • 750 gm mince keema
    • 1 tablespoon ginger garlic paste
    • 1 onion chopped
    • 3 tablespoon seekh kabab masala
    • 1/2 teaspoon red chili crushed
    • salt to taste
    • oil for frying

    Instructions

    Directions

    • Soak rice and wheat together and boil until mushy.
    • Soak moong in warm water.
    • Put all the kabab ingredients except oil in a chopper or food processor. Process until well combined.
    • Take it out in a mixing bowl and make finger size kabab.
    • Heat oil in a shallow pan over medium heat. Shallow fry kababs until turned golden brown.
    • Remove from the oil and keep aside
    • Take a large pot, add meat ,onion, ginger, garlic, turmeric powder, coriander powder, red pepper and salt.
    • Add 2 cups of water. Bring to a boil and cook until meat is tender and it has enough soup in it.
    • Discard garlic and onion.
    • Add moong daal in it and cook until meat is all mushy.
    • Add rice and wheat in it. Cook and stir for 15 minutes or until well combined.
    • Blend with a hand blender and add all spice powder. Cook and stir for 20 minutes or until you have haleem like Consistency.
    • Now put kababs in it.
    • Make tarka (bighaar) with clarified butter. Add a pinch of turmeric and cayenne to give color.
    • Put tarka on the harissa.
    • Dish it out. Garnish with green chillies. lemon wedges and coriander leaves. Delicious Harissa with Kabab is ready to serve. Enjoy!!

    Serving Suggestions:
    Serve with naan or tandoori roti.

    • 2 tbsp oil

    Step 1

    Heat oil in a pan. Add mince along with other ingredients and cook until water dries.

    Step 2

    Sprinkle with coriander leaves, mint leaves and green chillies. Keep aside and let it cool.

    Step 3

    Kneed flour with milk until the dough smooth, make into 34 equal portion. Apply oil on top and leave aside for 15 minutes.

    Step 4

    Apply oil on a marble top or a smooth surface and roll one ball of the dough.

    Step 5

    Put prepared mince sprinkle gram masala chopped tomatoes sprinkle onions.

    Step 6

    Break an egg on top and fold sides so that a squares is formed. Fry on medium heat till golden on both sides.

    Step 7

    Remove from the heat. Arabi Paratha is ready to serve.

    Step 1

    Apply the grounded masala to the minced mutton and leave for about 3 to 4 hours.

    Step 2

    Wash the dal and soak in 2 cups of water for an hour, then add 1 tsp. salt and boil until cooked.

    Step 3

    Heat 4 tbsp Ghee or Oil and fry the sliced onions until crispy.

    Step 4

    Add a little more ghee or oil ( if required) and fry the marinated mutton, when fried to a brown color, add 1/2 cup of water and cook on a slow flame.

    Step 5

    Once all the water is absorbed mix the mutton with the cooked dal.
    Pound cumin seeds, black cumin seeds and mix with the garam masala.

    Step 6

    Heat 2 tbsp ghee or oil in a large vessel and put 1/3 of the cooked rice, over it put half mixture of mutton, sprinkle fried onions and pounded spices.

    Step 7

    Repeat the layers ending with rice, sprinkle fried onions and pour ghee or oil over it.

    Step 8

    Put the dish in an oven so that the rice gets properly cooked. Easy Keema Pulao is ready to serve. Enjoy!

    Step 1

    Clean, wash and drain the mutton mince thoroughly. Wash the peas, drain.

    Step 2

    Heat oil in a heavy bottom skillet over medium heat. Saute onion in the oil. Add garlic and stir-fry for a minute.

    Step 3

    Add mutton keema, ginger, tomatoes, green chilies, coriander powder, cumin powder and red chili powder. Cook and stir for 5-8 minutes.

    Note:breaking up any lumps if formed.

    Step 4

    Add water. Bring to a boil. Cover and simmer for 40 minutes or until mince is tender.

    Step 5

    Add peas, salt, and the 1 cup water. Mix well.

    Step 6

    Cover and simmer for 10-15 minutes or until peas are cooked well. Adjust seasoning.

    Step 7

    Take it out in a serving dish. Sprinkle garam masala over it. Garnish with green chilies and ginger slices. Delicious Keema Matar is ready to serve.

    • 2 tablespoon vegetable oil
    • 1 teaspoon garlic paste
    • 1 teaspoon chopped ginger
    • 1 small onion chopped
    • 2 to matoes finely chopped
    • 1 teaspoon cumin powder zeera powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon Thai red curry paste
    • 8-10 curry leaves
    • 2 tablespoon hot and sweet sauce
    • 1/2 teaspoon mustard paste
    • 4 hard boiled eggs.
    • Salt to taste
    • For Garnishing
    • 1 double fried egg
    • 1 tablespoon coriander chopped

    Instructions

    Method

    • Heat oil in a wok or deep pan over medium heat. Saute the onion in it.
    • Add garlic and ginger.Cook and stir for 1 minutes. Then add tomato. Season with powdered spices and salt. Stir well.
    • Add thai curry paste, curry leaves and chicken mince. Cook and stir for 5 minutes or until meat is no longer pink.
    • Add hot and sweet sauce and mustard paste. Mix well.
    • Cover and simmer for 10-12 minutes on a medium flame or until half done.
    • Fry the keema on high flame for 3 minutes. Add a little water and cook for another 10 minutes. Finally mix in the shredded egg .
    • Garnished with wedges of hard boiled eggs and chopped coriander. Chicken Keema and Egg is ready to serve.

    • 50 gm ginger Root
    • 50 gm garlic Flakes
    • 10 hot Green Chillies
    • 1 small bunch fresh coriander leaves
    • 15 sprigs fresh mint
    • 3 raw eggs
    • salt to taste
    • Oil for deep frying

    For The Curry:

    • 200 gms red onions
    • 100 gm Plain Yogurt
    • 1 teaspoon Garam masala
    • 2 teaspoon red chili powder
    • 1 teaspoon turmeric powder
    • Salt to taste
    • 3 tbsp cooking oil

    For Rice:

    • 500 gm basmati rice
    • 2 inch cinnamon bark
    • 2 black cardamoms
    • 5 whole cloves
    • 10-15 whole black pepper corns
    • 1-1/2 teaspoon carraway seeds
    • 2-3 bay leaves
    • 2 tablespoon ghee or butter
    • 1 teaspoon salt
    • Water for cooking Rice
    • 2 tablespoon saffron threads
    • 3 tablespoon plain milk

    Step 1

    For Rice: Pick and wash Rice clean. Soak in the water. Tie up all the spices in a thin Muslin cloth in a bundle. Add the Spices bundle to the Rice.

    Step 2

    For Koftas: Wash the Keema clean and drain all the water from it. Grind drained Keema with the Salt, red onions , ginger-garlic paste, green chilies, coriander and mint leaves to coarse paste. Whisk the eggs until smooth and blend in with the meat mixture. Shape into small even sized balls.

    Step 3

    For Curry: Grind the red onion and yogurt together to a fine paste. Keep all the other Ingredients ready.

    Step 4

    Heat the Oil and when hot deep fry the balls for 10-15 minutes or until golden brown. Drain on paper towels to remove excess Oil.

    Step 5

    Boil the soaked rice with salt and ghee in the same water it is soaked in till half cooked.

    Step 6

    Drain in a colander to remove the gruel. Sprinkle with Saffron thread milk to season all the rice and set aside till needed.

    Step 7

    Heat oil in a wok and fry the onion-yogurt paste on medium heat until well browned. The oil should show at the edges.

    Step 8

    Lower flame and add the turmeric powder and fry for a minute. Add red chili and garam masala powders and fry for 2 minutes more till the aromas waft up.

    Step 9

    Add just sufficient salt for the curry and stir in the Koftas. Add 1-1/2 cups of water and cook covered on low flame until most of the water is absorbed and a thick Curry is formed.

    Step 10

    Take a heavy bottomed Pan with a tight fitting lid. Lay half the saffron seasoned rice at the bottom. Place the Kofta Curry over 6th rice and layer with the remaining Rice.

    Step 11

    Preheat the oven at 180 degree C. Pour 2 cups of Plain Milk over the Layered Rice. Cover with the tight-fitting lid. and bake for 30minutes in the pre-heated oven until cooked through.

    Step 12

    Just before serving stir lightly to break the layers gently. Arrange the Koftas on top and layer the remaining Rice over the Koftas. Keema Kofta Biryani is ready to serve.

  • Aromatic Layers of Flavor: Kebabish Rice Recipe

    Kebabish Rice

    An unusual rice dish made by adding spicy kebabs to rice, cooked with egg, spring onion and other spices. Try this tasty Kebabish Rice recipe, another variation of regular Pulao. Like this recipe, you can also modify the recipes to breakout the boring routine and collect praises.

     Prep Time: 40 minutes

    Cook Time: 1 hour

     Servings: 5

    Ingredients

    For Kebabs:

    • 500 gm mince
    • 1 egg, lightly beaten
    • 1 onion
    • 5 cloves garlic
    • 1 inch piece of ginger
    • 4 green chilies
    • 4 tbsp fresh coriander leaves
    • 4 tbsp pomegranate seeds
    • 1 tbsp red chili, crushed
    • 1 tbsp turmeric powder
    • 1 tbsp whole spice powder
    • salt to taste

    For Rice:

    • 300 gm rice
    • 1/4 cup cooking oil
    • 1 onion, finely chopped
    • 2 tomatoes, finely chopped
    • whole spice as required
    • 8 green chilies, cut it from center

     

    Directions:

    1. Wash rice with few changes of water then soak in water for 30 minutes.
    2. Place mince in a chopper or food processor.
    3. Also add onion, ginger, garlic, green chili, coriander leaves, egg, red chili, turmeric, whole spice, and pomegranate seeds
    4. Process until well combined.
    5. Take it out from the chopper and make kebabs of it.
    6. Heat oil in a deep pan over medium heat.
    7. Deep fry kebabs for 10 minutes or until golden brown.
    8. Saute onion in a deep wok or pot.
    9. Add whole spice and soaked rice into the wok.
    10. Pour water as required to cook rice.
    11. Now add tomatoes and green chilies.
    12. When rice is almost cooked.
    13. Then put kebabs in it and mix slightly.
    14. Cook on low flame for 10 minutes or until cooked thorough.
    15. Transfer into a serving plate.
    16. Kebabish Rice are ready to serve.

    Serving Suggestions:

    • Enjoy with Pudina Raita.
  • Recipe: Mini Kebab

    Mini Kebab 

    Prep Time: 15 minutes

    Cook Time: 20 minutes

    Servings: 5

    Ingredients

    • 1/2 kg lamb mince
    • 1 cup spring onion
    • 4 green chilies
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 2 tsp cumin seeds
    • 1 tsp coriander seeds
    • 1 tsp red chili, crushed
    • 1 tsp chaat masala
    • salt to taste
    • 2 eggs, lightly beaten
    • oil for frying

    Directions:

    1. Place mince in a chopped.
    2. Add spring onion, green chilies, coriander seeds, ginger garlic paste, cumin seeds, chaat masala, red chili and salt in it.
    3. Chop for 1 minute or until well combined.
    4. Take it out in a bowl.
    5. Make small kebabs out of the mixture.
    6. In a small bowl, beat egg.
    7. Heat oil in a deep pan over medium heat.
    8. Dip kebab in beaten egg.
    9. Fry kebabs on low heat for 10 minutes or until golden.
    10. Remove from the oil and drain on kitchen paper.
    11. Mini Kebabs are ready to serve.

    Serving Suggestions:

    • Enjoy with Yogurt Sauce.

     

  • Recipe: Keema Cutlets (Mince Patties)

    Keema Cutlets (Mince Patties)

    A mouth-watering mince cutlets with a delicate combination of potato, mince(keema), and spices. Its a perfect side dish or snack for your family. Check it out the Keema Cutlet recipe here!!

    Ingredients

    • 500 gm Mutton Keema
    • 2 lb potatoes
    • 4 onions, chopped thinly
    • 4 cloves
    • 4 cinnamon sticks
    • 4 cardamoms
    • 8 garlic flakes
    • Small piece ginger
    • 2 tsp poppy seeds
    • 2 eggs
    • salt, turmeric, red chilli powder
    • 4 tsp besan flour
    • Oil for deep frying
    • Few coriander leaves and curry leaves, finely chopped

     

    Directions:

    Step 1

    Boil potatoes, peel the skin and mash the potatoes.

    Step 2

    Grind ginger and garlic to fine paste. Grind cloves, cinnamon, cardamoms and poppy seeds.

    Step 3

    Add this to mashed potato mixture then add coriander leaves and curry leaves and mix well.

    Step 4

    Wash keema.

    Step 5

    Add onions, salt, chilli powder and turmeric to keema, mix well add some water and cook.

    Step 6

    When cooked grind this and add ginger-garlic paste and mashed potato mixture to it.

    Step 7

    Take besan flour and add some water and beat eggs in that and mix well.

    Step 8

    Heat oil in a shallow pan over medium heat. Take Keema mixture and make small balls.

    Step 9

    Take each ball and dip in the besan flour mixture and put them in oil and fry until golden brown.

    Step 10

    Deep fry all the keema balls. Keema Cutlet is ready to serve.

    Serving Suggestions:

    • Serve hot with tamarind sauce.

    Hara Masala Keema (Mince with Green Spices)

    Hara Masala Keema literally translates to mince meat with green spices. This easy Pakistani recipe uses ingredients like cilantro.

    Ingredients

    • 500 gm mutton mince
    • 250 gm onion, chopped
    • 250 gm yogurt
    • 1/2 cup oil
    • 12 green chilies
    • 1 bunch fresh coriander leaves, chopped
    • 2 tbsp chopped garlic
    • 1 tbsp ginger garlic paste
    • 1 tbsp whole coriander
    • 2 tsp red chili, crushed
    • 1 tsp cumin seeds
    • 1 tsp black pepper, crushed
    • 1 tsp hot spices powder
    • 1 tsp salt

     

    Directions:

    1. Marinate minced meat with yogurt, ginger garlic paste and salt for 30 minutes.
    2. Heat oil in a deep skillet or pan.
    3. Place marinated mince in it and cook for 20 minutes on low flame
    4. Add crush cumin, whole coriander and green chilies.
    5. Also add chopped onion, chopped garlic, hot spices powder, crushed red chili, crushed black pepper.
    6. Cover with a lid and cook on low flame for 30 minutes or until mince is tender.
    7. Turn the heat off.
    8. Sprinkle chopped coriander over it.
    9. Hara Masala Keema is ready to serve.
    10. Enjoy!!
    • Serve hot with chapati.

    Tawa Keema matar is a classical dish which made with peas, mince meat and spices.Pea is an excellent vegetable to eat and when it is added with meat it become more delicious. You can make this Tawa Keema Matar in your regular as well as special meals. Must try and add a new flavor to your simple matar keema. Goes great with paratha or rice.

    Ingredients

    • 1/2 kg Mutton ,Minced
    • 3 Green chillies
    • 250 gms Peas
    • 4 piece garlic
    • 4 Tomatoes (Ripe)
    • 1 tsp Turmeric powder
    • 1 large Onion
    • 1 small piece of Ginger
    • 5 Curry leaves
    • 6 Cloves
    • 2 sticks Cinnamon
    • 1/2 tsp Garam masala
    • Coriander Coriander leaves (half a bunch)
    • 1 Black cardamom
    • 3 tbsp Ghee
    • Salt to taste

     

    Directions:

    Step 1

    Firstly in 2 tbsp of ghee, fry the cardamom, cloves, green chillies and cinnamon.

    Step 2

    Add the chopped onions and the rest of the spices. Fry till the onions turn brown.

    Step 3

    Add the chopped tomatoes and the minced meat. Mix it well and cover the vessel tightly with a lid.

    Step 4

    Cook gently on a low heat, turning occasionally, till the meat becomes tender.

    Step 5

    Add the peas in the meat dish and cook. Sprinkle garam masala when ready.

    Step 6

    Take it out in a serving dish Garnish with chopped coriander. Tawa Keema Matar is ready to serve.

    Serving Suggestions:

    • Serve with chapati or boiled Rice.

    Gola kabab Recipe

    A soft Gola kabab that melts in your mouth. It is a barbecue favorite which is so simple, yet appetizing

    Ingredients

    • 1 kg minced meat (preferably grinded 2-3 times at the butchery but without any fat)
    • 4 fried onion crushed
    • 1 egg
    • 4 green chilies
    • 2 teaspoon raw papaya paste
    • 2 tablespoon yogurt
    • 2 tablespoon mint leaves chopped
    • 2 tablespoon coriander leaves chopped
    • 2 tablespoon ginger garlic paste
    • 2 teaspoon chili powder
    • 1 teaspoon cumin seeds roasted and crushed
    • 1 teaspoon garam masala powder
    • 1/1 teaspoon black pepper powder
    • 1/2 teaspoon mac powder
    • 1/2 teaspoon nutmeg powder
    • 1/2 teaspoon cardamom powder
    • salt accordind to taste
    • 1/4 cup butter or desi ghee

    Instructions

    Method

    • Put minced meat, green chilies, ginger garlic paste, fried onion, and raw papaya in a chopper. Grind until well combined.
    • Now add yogurt, egg, mint leaves, coriander, chili powder, black pepper, mac powder, nutmeg, cardamom powder, cumin powder, garam masala powder and salt.
    • Mix well.
    • Leave to marinate for half an hour.
    • Now put on skewers and barbecue 12-15 minutes or until meat is no longer pink from inside, occasionally basting with butter or desi ghee.
    • Alternately, make flat and round (or elongated) kebabs and shallow fry both sides in oil or butter.
    • Transfer into a serving platter. Gola Kabab is ready to serve.

    Notes

    Serving Suggestions:
    Serve hot with spicy chutney, sliced lemon and tomatoes.

    • 2 tbsp unripe green papaya,ground

    • 2 tbsp yogurt
    • 1 tbsp roasted chick pea flour

    • 2 tbsp fresh coriander leaves, finely chopped

    Step 1

    Heat oil in a heavy based sauce pan. Add onions and stirring frequently, fry for 8-10 minutes to a light golden color.

    Step 2

    Remove onions from oil and fry the whole chillies just for a moment, otherwise they will burn.

    Step 3

    Reserve the oil and put the onions and whole chillies in a chopper or food processor and blend to a smooth paste without using water.

    Step 4

    Thoroughly wash the mince and squeeze out any water.

    Step 5

    Put the mince in a bowl. Add onion paste, ginger paste, salt, garam masala and yogurt. Knead the mixture really well for a few minutes with your hands until it is smooth.

    Step 6

    Cover and leave to marinate at room temperature for about 3-4 hours or overnight in the refrigerator.

    Step 7

    One hour before cooking mix in the ground papaya.

    Step 8

    Put the charcoal over medium flame, wait until the coal is fully red and is covered by white ash.

    Step 9

    Meanwhile place the mince in a metal pan. Make a well in the center. Put a small piece of aluminum foil in it. Place the burned coal over it and put 2-3 drops of oil on it.

    Step 10

    Cover it at once with a tight fitting lid and put aside for 20-25 minutes. Take out 1/2 cup of oil from the reserved oil.

    Step 11

    Reheat the oil in a heavy based pan. Discard the charcoal and fry the mince over low heat for 4-5 minutes.

    Step 12

    Cover with a tight fitting lid and cook for 15-20 minutes or until all excess moisture has absorbed.

    Step 13

    Transfer into a serving dish and decorate with onion ring, green chili and coriander leaves. Dam Ka Qeema is ready to serve. ENJOY!!

    Cut onions into thin sliced.

    Heat oil in a pan,add onions and fry for few minutes(do not turn brown).

    Then add keema to it, let it cook, till becomes tender and a little brownish in colour.

    Now add the sliced tomato and stir fry, also add the green peas if you want.

    Step 1

    For the dough :Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 10 minutes.

    Step 2

    Then make small balls from the dough and keep it aside.

    For filling: Boil the minced mutton in salted water until it is tender.

    Step 4

    Now heat the oil in a pan, add onions and fry until brown.

    Step 5

    Also add grated ginger-garlic, salt, turmeric, chili powder, coriander powder, garam masala, boiled mutton and fry till the water dries and the oil separates.

    Step 6

    Add the chopped coriander leaves and remove from the heat.

    Step 7

    Keep it aside.

    Step 8

    Take the dough balls and roll out each ball into a thin disc or a chapati and in the middle.

    Step 9

    Place the filling mixture on one round chapati and cover with a another round chapati and seal the edges.

    Step 10

    Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati.

    Step 11

    Take care it should not break while rolling it out.

    Step 12

    Grease the griddle (tawa) with Ghee or clarified butter.

    Step 13

    Place the paratha over it and when the base turns slightly golden color, apply Ghee on the top and turn the paratha on the other side.

    Step 14

    Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown. Keema Paratha is ready to serve.

    To make Mince Stuffing:Wash and drain mince; set aside.

    Heat 1 tbsp oil or ghee over medium heat. Fry chopped onion for 2-3 minutes or until translucent.

    Add garlic and ginger in it. Cook for 2 more minutes then add minced meat, green chilies,red chili powder, curry powder and salt.

    Cook for few minutes then add 1/2 cup water.

    Leave the mince to cool completely.

    To make pastry: In a small bowl, add flour,ghee or butter and salt. Knead with water and make a soft dough.

    Make small balls from the prepared pastry.

    Roll them out with Pin roll, cut into halves.

    Step 10

    Make a small cone of it and put the cooked mince in it. Press the edges of samosa and set aside.

    Step 11

    Heat oil in a deep frying pan or skillet. Place samosa in hot oil and deep fry for 8-10 minutes or until golden brown.

    Step 12

    Remove from the oil and drain on kitchen paper. Crispy Mince Samosa is ready to serve.
