    Spinach Pakora (Palak Pakora)

    Palak pakora is a delicious appetizer or a tea time snack. The taste of these deep fried palak pakora’s (spinach fritters) more enhanced when eaten with apricot chutney.

    As the monsoons have started, I am posting lot of tea time snack recipes for you all to enjoy this season. Must try this Palak Pakora recipe and enjoy the rainy weather with your friends and family!!

    Spinach Pakora (Palak Pakora) Recipe

    Ingredients

    • 1 cup spinach leaves palak, chopped
    • 1-1/2 cups gramflour besan
    • 1 small chopped onion
    • 2 green chilies chopped
    • 1 tsp Red chili crushed
    • 1/2 tsp Mango powder
    • 1/2 tsp cumin seeds crushed
    • 1/2 tsp coriander seeds crushed
    • Salt to taste
    • Oil for deep frying

    Instructions

    Method

    • Wash palak leaves properly and leave it for drying.
    • Chop the palak leaves. Add water to besan and make a batter of thick consistency.
    • Add chopped green chilies, cumin seeds, coriander seeds, red chili powder, and mango powder, salt and blend it well.
    • Fry small portions of mixture in oil for 5-8 minutes or until they turn golden brown.
    • Remove from oil and absorb on kitchen paper. Palak Pakora is ready to serve.

    Notes

    Serving Suggestions:
    Serve with Apricot Chutney.

    For Dough:

    • 1 cup all purpose flour
    • Water to Knead dough
    • 2tbsp oil
    • little salt
    • 1/4 tsp cumin seeds

    For Stuffing:

    • 3-4 boiled potatoes,peeled and mashed
    • 1/2 cup green peas,boiled
    • 1-2 green chilies,finely chopped
    • 1/2 tsp ginger,crushed
    • 1 tbsp fresh coriander,finely chopped
    • 4 tbsp cashew nuts
    • 4 tbsp raisins
    • 1/2 tsp garam masala
    • salt to taste
    • red chili powder to taste
    • 1/2 tsp dry mango powder

    Step 1

    To Make dough: Mix all the ingredients except water. Add a little water at a time.

    Step 2

    Pat and knead well for several times into a soft pliable dough. Cover it with moist Muslin cloth and keep aside for 15 minutes.

    Step 3

    To Make Stuffing : In a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilies, ginger and Mix well.

    Step 4

    Add green peas, cashews and raisins and mix well. Add coriander leaves and keep aside.

    Step 5

    Make small rolls of dough and roll it into a 4″-5″ diameter circle. Cut it into two parts like semi-circle.

    Step 6

    Now take one semi circle and fold it like a cone. Use water while doing so.

    Step 7

    Place a spoon of filling in the cone and seal the third side using a drop of water.

    Step 8

    Heat oil in a pan and deep fry till golden brown (fry on a medium flame).

    Step 9

    Drain on paper towel. Vegetable samosa is ready to serve.

    Samosa is prepared in different styles in Pakistani cuisine. They differ only in stuffing which may be of meat, chicken, vegetables or potato only. This one is keema ka samosa recipe which is a bit spicy in taste due to the addition of crushed chilies which enhances its flavor.Samosa is a stuffed pastry and a popular snack in Pakistan and India.     • 1 cup flour
    • 3 tbsp ghee or butter
    • A pinch of salt
    • oil for frying

    Step 1:

    To make Mince Stuffing:Wash and drain mince; set aside.

    Step 2

    Heat 1 tbsp oil or ghee over medium heat. Fry chopped onion for 2-3 minutes or until translucent.

    Step 3

    Add garlic and ginger in it. Cook for 2 more minutes then add minced meat, green chilies,red chili powder, curry powder and salt.

    Step 4

    Cook for few minutes then add 1/2 cup water.

    Step 5

    Reduce heat to low, Cover with a lid. Cook for 15-20 minutes or until meat is tender and dry.

    Step 6

    Leave the mince to cool completely.

    Step 7

    To make pastry: In a small bowl, add flour,ghee or butter and salt. Knead with water and make a soft dough.

    Step 8

    Make small balls from the prepared pastry.

    Step 9

    Roll them out with Pin roll, cut into halves.

    Step 10

    Make a small cone of it and put the cooked mince in it. Press the edges of samosa and set aside.

    Step 11

    Heat oil in a deep frying pan or skillet. Place samosa in hot oil and deep fry for 8-10 minutes or until golden brown.

    Step 12

    Remove from the oil and drain on kitchen paper. Crispy Mince Samosa is ready to serve.

    Grease a cookie sheet and place dinner rolls on it.

    Step 2

    Let rise for 15-20 minutes or until almost double.

    Step 3

    Heat 1 tbsp oil in a large skillet , add ground beef. Cook for 10-15 minutes or until brown.

    Step 4

    Season with salt and taco seasoning mix.

    Step 5

    Add 1/4 cup of water and cook for 10 minutes or until meat is tender..

    Sep 6

    Heat 1 cup oil in a frying pan.

    Step 7

    Remove from the oil and drain on paper towel.

  • Stuffed Mango Pickle Recipe

    Ingredients of Stuffed Mango Pickle:

    • Mangoes – 1 kg
    • Mustard powder – 4 teaspoons m
    • Fenugreek seeds powder – 1 teaspoon
    • Red chili pepper – 2 teaspoon
    • Aniseed powder – 4 teaspoon
    • Onions seeds powder – 1 teaspoon
    • Asafoetida – 1 piece
    • Turmeric powder – 1 teaspoon
    • Ajwain – 1/4 teaspoon
    • Mustard Oil – 1/4 liter
    • Salt to taste

    How to make Stuffed Mango Pickle:

    • Wash the mangoes and pat them dry with the cloth.
    • Cut each mango into 4 pieces, taking care not to cut right through, and remove the stones,rub salt and keep for 10 hours.
    • Heat the oil, fry asafoetida in it till it becomes brown,crush it and in the same oil, mix all the ground spices.
    • Fill mixed spices in the mangoes and pack them in the jar and sprinkle the leftover masala and oil over them.
    • Keep in the sun for 2 to 3 days and then inside.
    • Shake Stuffed Mango Pickle every other day for 15 days.

     

  • Lemon Pickle In Oil Recipe

    Ingredients of Lemon Pickle In Oil:

    • 1 kg Lemons
    • 240 grams Salt
    • 1/2 liter Mustard Oil
    • 2 big pieces of asafoetida
    • 4 teaspoons Red chili pepper
    • 1/2 kg Ginger
    • 30 grams Mustard seeds
    • 120 grams whole fresh red chillies
    • 60 grams methi seeds
    • 1 cup Lemon  juice
    • 1 tbsp  Salt  for lime juice

    How to make Lemon Pickle in Oil:

    • Wash and dry the lemons with a cloth.
      In each lemon make four cuts and pack the salt inside and rub a little salt outside also till tender.
      Heat the oil till smoky.
      Remove from the fire, add asafoetida and when it swells up, crush it with a spoon.
      Add chili powder and stir till red color appears.
      Remove from the fire, add mustard seeds and stir for a little while.
      Now stir in lemons, fresh red chillies and ginger and cook until a little tender.
      Roast methi seeds and powder.
      Mix methi seed powder and the juice of galgal or lime mixed with one tablespoon salt Cook for 5 minutes.
      Remove from the fire, pour the lemons with the juice into a clean jar, and cork tightly.
    • Lemon Pickle In  Oil is ready to use.

    Ingredients

    • 1 32 ounce package frozen seasoned french fries
    • 1 15 ounce can chili without beans
    • 8 slices cheese cut into pieces
    • 2 cups milk
    • 2 tbsp cornstarch
    • 2 tbsp water
    • 1 tbsp butter

    Instructions

    Method

    • Prepare french fries as directed on the package.
    • In a small bowl, dissolve cornflour in water. Set aside.
    • Pour milk in a saucepan. Add margarine and bring to a boil. Stirring constantly.
    • Reduce heat to low then gradually add cornstarch mixture into the milk mixture.
    • Cook for 2-3 minutes and stir until the mixture is thick and smooth.
    • Add cheese to the milk mixture. Stir for 2 minutes or until cheese has melted and is well combined.
    • Prepare chili as directed on the can.
    • Pour cheese and chili sauce top of the cooked french fries. Chili Cheese Fries are ready to serve. ENJOY!

    Notes

    Serving Suggestions:
    Serve with ketchup.
