Ingredients
250 gm boneless chicken
4 cups chicken stock
1 cup mushrooms
1 cup green onion
1 tbsp chopped ginger
1 tbsp vinegar
1 tbsp soy sauce
1/2 tsp white pepper
1/2 tsp salt
Directions:
Pour chicken stock in a pot or saucepan.
Add chicken, chopped mushrooms and ginger.
Bring to a boil and let it simmer for 15 minutes.
Then add green onion, white pepper and vinegar.
Season with salt and pepper.
Add vinegar and soy sauce, cook for 5 minutes then turn off the stove.
Pour it in a bowl.
Chicken and Mushroom Clear Soup is ready now.
Serve hot.

For all those out there that say a Vegetarian Lasagna can’t be as good as one made from meat, you’re wrong. So wrong.
Once you have a good lasagna recipe under your belt, you know you’re getting somewhere in the culinary world.
I will agree that lasagna needs a certain type of ‘meaty’ flavour, after all it was originally a meat dish. But that’s easily possible thanks to spelt grains or freekeh (very easy to find), which take on an amazing, smoky, deep flavour when cooked in stock. The pleasingly-chewy texture feels like the consistency of meat too, and is more than a replacement – it’s even better.
As much as I love Meaty lasagna, when I had a slice of this veggie version, I really didn’t miss the meat. And so I now have one thing to say – to the veggie haters, this is the best lasagna ever. Best. Lasagna. Ever.
Don’t believe me? That’s fine, taste is subjective anyway. But make your decision after you’ve tried it.
Just find ready made lasagna sheets and this great lunch or dinner dish bursting with carrot, zucchini, eggplant, mushrooms, pepper and herbs is all yours!
This Vegetarian Lasagna doesn’t require too much time, either. While water boils and noodles cook, you can get through making most of the vegetable sauce. Then, all you do is finish the sauce, assemble and bake for 30 minutes or so.
Bonus — I actually found this Vegetarian Lasagna is better the next day – score for make-ahead meals.
Here’s how I made mine yesterday, but keep in mind you can use any lasagna recipe you love! Just roll the cheesy filling inside the noodles as shown below, place them in a pan (small or large, depending on your needs), and top them with whatever sauce you want.

Ingredients
1poundbox lasagna noodles
6cupsmarinara saucehalal
24ounceslow-fat cottage cheese
32ouncesshredded mozzarella cheese
1/2cupchopped herbsbasil, oregano, or thyme
2eggplantscut into circular slices
6zucchinicut lengthwise into slices
6portobello mushroomsthinly sliced
2red onionsthinly sliced
4tbspolive oil
4clovesgarliccrushed
3/4cupchopped onions
2cans diced tomatoes
1/3cupchopped basil
salt and pepper to taste
Instructions
Saute or oven-roast the vegetables until they are cooked through. Set aside.
To make the marinara sauce, begin by heating the olive oil in a pan over medium heat.
Add the chopped onions and stir until golden brown.
Add the garlic and tomatoes and simmer for 25 minutes.
Stir in the basil and add salt and pepper to taste, then simmer for 10 minutes.
Preheat the oven to 350°.
In the bottom of a 16″ x 12″ pan, place a layer of dry noodles.
On top of that, add about 1/3 of the marinara sauce, about 1/2 of the cottage cheese, and about 1/3 of the mozzarella cheese.
Sprinkle herbs over the top, and add a layer of vegetables. Repeat the process.
Finish with a layer of noodles, then top with tomato sauce and a thick layer of mozzarella cheese.
Cover the pan with plastic wrap, then wrap tightly with aluminum foil.
Bake for 35 minutes, or until a knife pokes easily through the lasagna.
Remove the plastic and foil and bake at 450° for 10 minutes, or until the top is browned.
Remove lasagna from the oven and let set for 20 minutes.
Garnish with fresh basil leaves or other fresh herbs. The most awesome Vegetarian lasagna ever is ready to serve.

Ingredients
500 gm ground chicken
6-8 dried mushrooms, finely chopped
2-3 leaf bok choy, finely chopped
1 spring onion,finely chopped
1 tbsp chopped ginger
1 tbsp soy sauce
1 tsp sesame oil
1 tsp granulated sugar
1 egg, lightly beaten
1/2 tsp white pepper
salt to taste
oil for deep-frying
48 wonton wrappers
Water
Directions:
Step 1
Wipe any dirt off the mushrooms.
Step 2
Soak in warm water for 20 minutes or until softened then squeeze out the excess water and chop.
Step 3
Wash and shred the bok choy leaf and set aside.
Step 4
Wash and dice the green onion and set aside.
Step 5
In a medium bowl, combine the ground chicken with the soy sauce, sesame oil, sugar and salt.
Step 6
Add the lightly beaten egg and the vegetables mix well. This is the wonton filling.
Step 7
Heat the oil in a pan over medium heat.
Step 8
While the oil is heating, prepare the wontons.
Step 9
Lay a wonton wrapper in front of you.
Step 10
Place a teaspoon of the filling in the middle.
Step 11
Fold up the wonton so that it resembles a nurse’s cap, wetting the edges to seal.
Step 12
Add the wontons to the hot oil, a few at a time, sliding them in carefully.
Step 13
Deep-fry the wontons in batches until they are golden brown, turning to make sure they brown evenly.
Step 14
Remove from the oil and drain on paper towel. Chinese fried wonton is ready to serve.

As with egg rolls, wontons should be served as soon as possible, to ensure they remain crispy.

I made this pizza last night for a quick dinner. I had been roaming around with the recipe for making the perfect pizza for so long and the thought of topping the pizza crust with minced triggered me last night all of a sudden. I had no other choice but to execute my idea.
When it came to top the pizza crust, I went a little overboard and made ground chicken sauce.Topped the crust with the ground chicken and then with veggies, olives generously sprinkled mozzarella cheese and herbs and baked it in the oven for 30 minutes. For the entire 30 minutes, I literally peeped into the oven window and enjoyed the amazing show of crust puffing up, ground chicken getting browned and the cheese getting melted, what a divine pleasure it was!!!
Each step I did with so much passion and waited so eagerly to have a bite of this pizza. As the pizza came out perfectly baked with a soft crust and the mince topping on it along with the melted golden cheese on it, the mere sight of it made me go wild. I screamed out of joy and I burned my tongue out of greed!

Ingredients
For Mince
500gm chicken mince
6mushroomsthinly sliced
1medium onionchopped
1teaspoonginger garlic paste
2green chiliesminced
1tablespooncooking oil
1teaspooncrushed red chili
1/2teaspoonoregano
1/2teaspoondried basil
1/4teaspoonrosemaryoptional
salt to taste
For Pizza Filling & Topping
1large ball of premade pizza dough
1-1/2cupcooked chiken mince
1cuppizza sauce
1/2cupcheddar cheese
1/2cupMozzarella cheese
1small onionthinly sliced
1small capsicumthinly sliced
1small tomatodeseeded & thinly sliced
4olivesthinly sliced
1teaspoonherb seasoning
2pinchoregano
Instructions
Start making the mince by heating some oil in a pan over medium heat.
Then saute onion and cook for 3-4 minutes until translucent.
Now add ginger-garlic paste and cook for a minute without browning, then add the minced meat and green chilies.
Cook and stir well for few minutes or until lightly browned.
Season with salt, pepper, basil and rosemary.
Add mushrooms and cook for 5 minutes or until all water dries up and mince is cooked thoroughly.
Roll out the dough in the circle or a desired shape (I use my deep dish pizza pan, 3×12″ ), Pushing gently until fairly thin and prick the dough all over with a fork.
Spread on the sauce almost to the edges and sprinkle on the oregano.
Top generously with the shredded cheddar cheese, chicken mince, arrange some onion and pepper, tomato slices, olives over it.
Grate on Mozzarella to taste and sprinkle herb seasoning then place in the oven to bake for 30 minutes, or until the crust is puffy, crisp and slightly blistered.
Take out of oven, let sit for a few minutes, then slice, sprinkle with red pepper flakes and serve warm.
Notes
Serving Suggestions: So easy, and delicious with a glass of fresh lemonade.

This is a quick and easy meal but make sure you have everything ready before beginning to cook. This is my basic recipe for stir-fry. I’ve tried others but always come back to this one. I have also substituted chicken and chicken broth for the beef and beef broth and found it just as good.
Combine beef, sugar, soy sauce, and sesame oil in a bowl, and mix well. Set aside, and marinate for at least 1 hour.
Step 2
Wash and slice the mushrooms, including stems. Soak, rinse, and drain the bean sprouts.
Step 3
Cook noodles in boiling water according to pkg. directions. Drain well.
Step 4
In a separate bowl, mix the cornstarch and beef stock together. Drain the beef, reserving the marinade.
Step 5
Heat the peanut oil until it sizzles, then stir fry the beef for 4-5 mins. Add the cornstarch mixture, and mix well. Bring to a boil, and stir constantly.
Step 6
Add all the vegetables, except the bean sprouts, and simmer for 3 mins. longer.
Step 7
Add noodles, and bean sprouts, to wok, and mix well, until all is hot and bubbly. Beef Chow Mein is ready to serve.

Heat oil in a large skillet or wok over medium-high heat. stir-fry mushrooms in oil for 2-3 minutes or until tender. Stir in the rice, chicken and soy sauce. Cover and cook over low heat for 8-10 minutes, stirring occasionally.
Step 2
Add egg. Cook and stir for 1-2 minutes or until egg is set.Season with salt and pepper. Sprinkle with green onions. Cover and cook for 2 minutes or until heated thorough. Chicken Fried Rice is ready now.Serve hot.

Heat oil in a pan and lightly brown the onions. Add the tomatoes and cook till soft.

Then add the salt, mustard powder and chilli flakes, stir. Add the mushrooms and saute for some time.

Now add the tomato sauce, mix and add the Worcestershire sauce and vinegar. Stir well and keep aside.
Step 4
In a mixer, grind the bread into crumbs and keep aside.

Boil and grate the potatoes. Keep aside to cool.

Now add the salt and butter to it, mix and knead with your hands.
Step 7
Sprinkle 1 tbsp of maida and mix again.
Step 8
Take small amounts of mashed potato and flatten them into round shapes. Add a spoonful of the mushroom filling onto each of these, gently seal into rolls.
Step 9
Heat oil in a pan for deep frying.
Step 10
In the meantime make a thin maida batter with water in a bowl.

Now gently dip the potato rolls into the batter, then roll them over the bread crumbs.
