    • 1 cup all purpose flour
    • 1 cup milk
    • 2 tablespoon plain yogurt
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon aniseeds
    • 1/2 teaspoon Baking soda
    • a piece of 2 inch of Cinnamon Stick
    • Salt to taste
    • peanut oil for frying

    Step 1

    Wash mutton chops properly and pat dry.

    Step 2

    Tie ginger, cinnamon, aniseeds in a clean white cloth.

    Step 3

    Put meat, milk, 1/2 liter water and tie cloth in a large pot.

    Step 4

    Bring to a boil and reduce heat to medium low. Cover the cook for 45 minutes or until the meat becomes tender.

    Step 5

    Drain the mutton and squeeze the spice bundle to extract maximum flavor and discard.

    Step 6

    Reserve the stock.

    Step 7

    In a shallow bowl, sieve together the flour, baking powder and salt.

    Step 8

    Add the yogurt and enough stock to make a batter of thick consistency.

    Step 9

    Heat oil in a deep pan over medium heat.

    Step 10

    Dip mutton chops in the batter and fry for 4-5 minutes or until crispy and golden.

    Remove from the oil and drain on absorbant paper.

    Transfer into a serving platter.

    For Stock(Yakhni):

    • 1 kg mutton or lamb chops
    • 1 small onion
    • 6 garlic cloves
    • 1 inch pice of ginger
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon blackpepper
    • 1/2 teaspoon coriander seeds
    • 4 green cardamoms
    • 1 medium cinnamon stick
    • Salt To taste
    • 6 cups water

    For Champ Pulao:

    • 2 cups basmati rice
    • 2 small onions, thinly sliced
    • 3 tablespoon butter or ghee or oil
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 3 tomatoes, chopped
    • 3 green chilies
    • 1 teaspoon cumin seeds,(zeera)
    • 1 teaspoon garam masala
    • 1 teaspoon red chili powder
    • 10 black pepper corns
    • 2 bay leaves
    • few drops of lemon
    • salt to taste

    Step 1

    Rinse rice with few changes of water.

    Step 2

    Soak in water for 30 minutes.

    Step 3

    Now take a pressure cooker or large pot, add all stock(yakhni) ingredients in it.

    Step 4

    Cook for 40 minutes or until meat is tender.

    Step 5

    Separate mutton chops(champ) in a Separate plate with cloves of garlic we add in.

    Step 6

    Measure the 4 cups stock and set aside.

    Step 7

    Heat the oil or ghee in a large pot over medium heat.

    Step 8

    Add onions, cook for few minutes when its turning pink add cumin seeds, bay leaves, blackpepper.

    Step 9

    Cook for 2 minutes or until onion turn golden brown.

    Step 10

    Add ginger garlic paste. Cook and stir mutton chops(champ) and squeeze the cloves of garlic.

    Step 11

    Cook for 5 minutes then add tomatoes.Stir well.

    Step 12

    Cook and stir with red chilli and garam masala.

    Step 13

    Now add mutton stock(yakhni), when it come to boil add rice and check the seasoning, if less then add salt and few drops of lemon.

    Step 14

    When all the water is dried out, Put it on DUM for about 10 minutes on very slow flame.

    Step 15

    Put the lid off. Fluff rice with a fork.

    Step 16

    Dish it out. Garnish with tomato slices and green onions.Delicious Champ Pulao is ready to serve. ENJOY 🙂

  • Recipe: Black Pepper Mutton Chops

    It’s late and I am too tired to write a blog post, but I just had these Black Pepper Mutton Chops for dinner for the second night in a row and had to write down the recipe before I forgot. It was that good!! Yes, I know I am tooting my own horn, but someone’s got to and nobody else seems to want the job. 

    Prep Time: 30 minutes

    Cook Time:40 minutes

     Servings: 4

    Black Pepper Mutton Chops Ingredients

    • 500 gm mutton chops
    • 4 tbsp clarified butter
    • 2 tsp ginger garlic paste
    • 2 tsp cumin
    • 1 tsp papaya paste
    • 1/2 tsp black pepper
    • 1/2 tsp salt

     

    Directions:

    1. Marinate mutton chops with ginger garlic paste, raw papaya, salt and cumin for 30 minutes.
    2. Heat the clarified butter in a skillet over medium heat.
    3. Place marinated mutton chops into the skillet.
    4. Cover, and cook on low flame for 30 minutes or until meat is tender.
    5. Then fry it on high flame for 10 minutes or until oil comes out on top.
    6. Sprinkle black pepper over it.
    7. Turn the heat off.
    8. Kali Mirch Chops are ready now.

    Serving Suggestions:

    • 1 kg mutton chops
    • 4 tbsp oil
    • 1 cup yogurt
    • 2 tbsp ginger-garlic paste
    • 1 cup onions,finely chopped
    • 2 tomatoes, finely chopped
    • 1 tbsp red chilies, crushed
    • 1 tsp coriander powder
    • 1 tsp cumin seeds
    • 1/4 tsp turmeric powder
    • 1/2 tsp pepper corns
    • 1/2 tsp garam masala powder
    • salt to taste

    For Garnishing:

    • 4 green chillies (thinly sliced)
    • 2 tbsp fresh coriander leaves,finely chopped
    • 3-4 lemon wedges

     

    Directions:

    Step 1

    Rinse mutton chops and drain properly.

    Step 2

    In a bowl,add yogurt,red chili powder,cumin seeds, turmeric powder, coriander powder, peppercorns and salt.

    Step 3

    Mix well and make a smooth paste.

    Step 4

    Spread the paste over the chops and leave it to marinade for 2 hours.

    Step 5

    Heat oil in a heavy based pan over medium heat.

    Step 6

    Add chopped onions and fry for 1-2 minutes.

    Step 7

    Then add ginger-garlic paste and cook for one more minute.

    Step 8

    Now add the marinate chops and chopped tomatoes in it.

    Step 9

    Put the lid on and cook on low heat for 1 hour or until meat is tender.

    Step 10

    Uncover the pan and cook stirring until all the liquid is absorbed and oil floats on top.

    Step 11

    Take mutton chops into the serving dish.

    Step 12

    Sprinkle Garam masala powder over the top.

    Step 13

    Garnish with green chilies, coriander leaves and lemon wedges. Masala Mutton Chops is ready to serve.
