- 1-1/2 cups dried bread crumbs
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 1 tbsp dried parsley
- 1 teaspoon salt
- 1/4 tsp freshly ground black pepper
- oil for frying

Place rice in a large bowl.
Add eggs, cheese, parsley, pepper, and salt.
Stir until well combined.
Place bread crumbs on a shallow dish or plate.
Dampen hands and roll rice mixture into 1 inch balls.
Then coat each ball with bread crumbs.
Heat oil in a deep pan pver medium heat.
Fry rice balls few at a time, for 2-3 minutes or until crispy and lightly browned.
Drain on paper towels. Italian Rice Balls are ready to serve. ENJOY!!
