    Let’s take a quick break from dessert and talk about pizza. Thick style homemade pizza crust topped with BBQ sauce, Barbecue flavored Chicken Chunks, onions, capsicum, jalapeno, and tons of cheese. Your soon-to-be favorite pizza!

    It’s Cheesy, doughy, crispy on the edges, soft in the middle, loaded, homemade pizza. All you need is 35 minutes and a few fresh ingredients for this Unbelievably Awesome BBQ Chicken Pizza recipe.

    What’s your favorite kind? For me, nothing beats my Italian Herb Crusted Cheese Pizza. But this BBQ chicken pizza is in close 2nd place! Sweet BBQ sauce, chicken chunks, red onions, a dash of jalapeno, and tons of cheese.

    When I make homemade pizza, I like to get the cheese extra melted and bubbly. I love the sides to get a little brown and the bottom to be extra crispy. To obtain all this goodness, I switch my oven to broil for a quick minute as the pizza is finishing up. I suggest you try it! What I don’t suggest you try is walking out of the kitchen to answer your phone, only to come back finding your pizza burnt to a black crisp with the oven still on broil.

    Whoops! Yeah, I make mistakes too.

    My love affair with barbecue chicken pizza began long, long ago. The flavors and textures in this pizza are incredible! You have the sweet tang from the BBQ sauce, the meaty chicken, the zesty red onion, fresh green pepper, smoky jalapeno, soft crust, crispy edges, and ultra cheesy mozzarella covering it all. Does anything sound better?

    Ditch the delivery guy, you’re eating homemade tonight! It’s easy, cheesy, and fun, especially on the weekends!  While you can never go wrong with traditional cheese and pepperoni, give BBQ chicken chunks a chance and you wont be disappointed!  You can cook your own chicken and shred it for this recipe, or use a rotisserie chicken, which gives great flavor and cuts the prep time in half!  This is the easiest recipe and tastes super delicious!

    Bismillah let’s get started.

    First, get your oven heated up to Gas Mark 180 degrees C.  Then, grab some pizza dough. You can use a ready made pizza base which would make dinner appear a lot faster. I used one batch of my Fresh Pizza Dough. 

    Place it onto a floured surface. And, roll and shape the dough into a 9-inch triangle. Roll out to fit your pizza tray. Next, You need barbecue sauce. Use shop bought or make it homemade which I did using this Homemade Barbecue Sauce recipe.  It’s really easy and uses ingredients that I bet you already have in the cupboard. Now, grab the rest of your ingredients. Top with chicken chunks and play with your favorite toppings.

    Finally, take some Grated Mozzarella. And, then the jalapeno slices.

    Place the pizza into the hot oven to bake .. for about 20 minutes or until golden brown and bubbling.

    Slice and serve immediately! Try not to burn yourself when eating!
    Btw, feel free to add anything else to the pizza that you like.

    UNBELIEVABLY AWESOME BBQ CHICKEN PIZZA RECIPE

    • 2 cups BBQ chicken chunks (cooked)
    • 1 teaspoon extra-virgin olive oil (plus more for brushing)
    • 1/2 pound prepared pizza dough (, at room temperature)
    • 1/2 cup dark barbecue sauce
    • 1/2 cup cheddar cheese (grated)
    • 1 cup mozzarella cheese (grated)
    • 1 small onion (thinly sliced or cubed)
    • 1 small green bell pepper (thinly sliced)
    • jalapeno (for topping (optional))
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    1. Cut the chicken chunks into small pieces.
    2. Heat the oil in a skillet over medium high heat.
    3. Add the chicken chunks and sauté until the edges begin to brown, about 10 minutes.
    4. Position racks in the upper third and middle of the oven.
    5. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 180 degrees C for at least 20 minutes.
    6. Meanwhile, layout a sheet of parchment paper and brush with olive oil.
    7. Divide dough into two equal parts and transfer it onto a dry surface.
    8. Roll and shape the dough into a 9-inch triangle, stretching it with our hands as needed.
    9. Lightly brush the dough with olive oil.
    10. Spread about the 1/4 cup of BBQ sauce over each pizza.
    11. Sprinkle the shredded cheddar cheese atop the sauce.
    12. Top with cooked chicken chunks.
    13. For a pleasantly crisp touch, spread the uncooked onions and green bell pepper over the chicken mixture. If you prefer onions that are completely cooked, sauté them all with the chicken.
    14. Sprinkle Mozzarella cheese oregano and dried basil over them.
    15. Top with jalapoens.
    16. Bake the pizzas for about 15-18 minutes, until the crust(s) are golden and cheese melts and the topping is bubbling.
    17. Remove from the oven, and cut into pieces.

    19. Garnish with snipped fresh basil, if desired.
    20. Serve warm or hot!

    Serve with some fresh salad and your favorite dipping sauce.

    May this month be full of blessings, happiness, and peace for you and your family. As much as we must be eating light, Ramadan is the month when we end up eating most of the greasy stuff. All kind of fried dishes are made in the name of iftar.

    The first word that comes into your mind when you think about an iftari is? Yes its pakora! Pakoras are one snack associated with Iftar here in Pakistan.  Truly, a Pakistani iftar is incomplete without the presence of a mighty pakora. The word pakora is derived from a Sanskrit word “pakvavata” which means small food lump (pakva means cooked and vata means small lump). Pakoras can be made out of anything, from a simple potato, daal mung, spinach, chicken or even cheese.

    Today, I came up with an amazing idea of making Pakora’s. It’s our family favorite snack. I love these Potato Pakora sandwiches so much. Sinking your teeth into crisp Pakora sandwiches is a sensual pleasure. It has all the textures and flavors one would need in a Pakistani snack.  

    Try this recipe and turn your favorite Pakora’s into bite sized sandwiches, stuffed with eggs (or your favorite stuffing).  It’s a perfect recipe for a quick and easy Iftar Snack. A great new way to make Pakoras!

    To prepare this delicious pakora first egg slice covered in between 2 thin potato slices then dipped in spicy chickpea (besan) batter then deep fried.

    Within every bite of this snack you will enjoy a variety of flavors and textures. Spicy Red pepper flakes and herbs give nice pops of heat and a soft slice of boiled egg in between potato sandwich, and a crispy coating of the chickpea flour. You just need a hot cup of tea or coffee to complement it and turn it into a heavenly delight!

    I think I have talked enough about this mouth-watering Iftar or Rainy Day Snack. I insist you to make it ASAP, If you haven’t tried Potato Pakora sandwiches yet. Once you taste these heavenly, crispy and delish bites, you will know what pleasure I am talking about.
    Try this recipe and give your ordinary Pakora a delicious makeover with this Potato Pakora sandwiches recipe!It’s a perfect snack for get-together’s. And surely will be loved by everyone. Don’t be surprised if it disappears in a flash!

    Let’s learn to make Potato Pakora Sandwiches !!

    Peel hard boiled eggs and cut into slices with egg cutter. Set aside. Now peel potatoes then cut them into thin round slices. Soak in cold water. Meanwhile, Take a large mixing bowl. Add chickpea flour(besan), red chili, cumin seeds, coriander seeds, black pepper and salt and mix well. Add enough water to make a smooth batter, and whisk well to avoid any lumps.

    Now prepare pakora sandwiches, first take an egg slice covered in between two thin slices. Repeat this method with rest of the potato and egg slices. Sprinkle seasoning, chili flakes, garlic powder and a pinch of salt over it. Keep aside.

    Heat the oil in a deep pan over medium heat. Dip one potato egg sandwich in the batter. Make sure to cover on all sides.

    Put sandwich in a hot oil and deep-fry on a medium heat till it turns crisp and golden brown in colour from both the sides.

    Remove from the oil and drain on kitchen paper. Transfer into a serving platter.  Sprinkle a pinch of red pepper flakes and fresh herbs.

    They pair well with coriander and mint sauce or ketchup and a strong cup of tea. Give your taste buds a treat with this crunchy Potato Pakora sandwiches. Perfect for when you’d like to serve something a little out of the ordinary. This evening tea time snack would rock at your place anytime.

    Potato Egg Pakora Bites Recipe

    It’s a perfect recipe for a quick and easy Iftar Snack. A great new way to make Pakoras!

    • 4 medium potatoes
    • 4 hard boiled eggs (sliced)
    • 1 teaspoon herb seasoning
    • 1/4 teaspoon garlic powder (optional)
    • 1/4 teaspoon red chili flakes
    • 1/4 teaspoon salt

    For Batter

    • 1 cup chickpea flour
    • 1/2 teaspoon red chili powder
    • 1/2 teaspoon cumin seeds (roasted & crushed)
    • 1/2 teaspoon whole coriander seeds (roasted & crushed)
    • 1/2 teaspoon black pepper (freshly ground)
    • salt to taste
    • oil for frying
    1. Peel and cut potatoes into thin round slices.
    2. Soak in cold water for 10 minutes.
    3. Meanwhile, whisk together all the ingredients for the batter with enough water to make a thick but fluid batter.(1/2 cup water per 1 cup gram flour), making sure there are no lumps. set aside.
    4. To prepare the pakora first take an egg slice covered in between 2 thin potato slices.
    5. Repeat this procedure with rest the potato and eggs.
    6. Sprinkle herb seasoning, chili flakes, garlic powder and a pinch of salt.
    7. Set aside.
    8. Heat oil in a deep pan over medium heat.
    9. Now dipped pakora sandwich in spicy chickpea (besan) batter then deep fried and cook for 5-8 minutes or until golden brown.
    10. Remove from the oil and drain on kitchen paper.
    11. Potato Pakora Sandwiches are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve hot with ketchup, mint chutney or apricot chutney.

    Crispy samosas with chocolate and walnut is a classic snack for everyone. Try once you will love it for sure

    • 200 gm dark chocolate (grated)
    • 2 tablespoon chopped walnuts
    • 2 tablespoon fresh cream
    • 12 Samosa wraps
    • 1 egg (lightly beaten)
    • oil for frying
    1. In a bowl, mix together the fresh cream, chocolate and walnuts. Now make samosas with chocolate filling and sealed with beaten egg.
    2. Heat sufficient oil in a pan and deep fry samosas on medium heat for 2 minutes or until they turn crispy ang golden.
    3. Drain onto an absorbent paper.
    4. Drizzle some melted chocolate over them.
    5. Chocolate Samosa is ready to serve. Enjoy!

    You can make these stuffed Mirch Pakoras as a Iftar time snacks in Ramadan, they hardly take around half an hour to prepare and serve .

    It is also goes great with hot cup of tea on rainy days. Serve hot with tamarind chutney and green chilli chutney or tomato chutney , or tomato sauces .

    Stuffed Mirch Pakora

    Today I am sharing Stuffed Mirch Pakora Recipe, all time favorites and very easy to make. Start off your meal with this crunchy starter.

    • 8 large size green chilies (slit vertically and deseeded.)

    For Stuffing

    • 2 tablespoon mint chutney
    • 2 tablespoon tamarind pulp
    • 2 tablespoon pomegranate seeds (Anardana, crushed)
    • 1/2 teaspoon red chili
    • 1/2 teaspoon cumin powder
    • salt to taste

    For The Batter

    • 1/2 cup chickpea flour (besan)
    • 1/2 cup rice flour
    • 1/2 teaspoon red pepper
    • 1/4 teaspoon carom seeds (ajwain, optional)
    • salt to taste

    Other Ingredients

    • oil for frying

    Directions

    To Make Stuffing

    1. In a bowl, mix together the mint chutney, tamaring pulp, pomegranate seeds, red chili, cumin powder and salt.
    2. Set aside.

    To Make Batter

    1. In another small bowl, combine the chickpea flour,rice flour, red pepper, carom seeds and salt.
    2. Add enough water to make a thick batter and set aside.

    To Proceed

    1. Divide stuffing into 8 equal portions.
    2. Stuff each chilli with a portion of the stuffing.
    3. Heat oil in a large pan over medium heat.
    4. Dip the stuffed chillies in the flour batter.
    5. Deep fry pakoras in hot oil for 4-5 minutes or until they turn golden brown in colour from all sides.
    6. Drain on absorbent paper. Stuffed Mirch Pakora is ready to serve.

    Serving Suggestions:
    I served them with mango Chutney to mild the taste.

    Chips Pakora Recipe

    • 500 gm potatoes (peeled)
    • 2 tablespoon lemon juice
    • 1 teaspoon red pepper
    • 1 teaspoon cumin powder (zeera powder)
    • 1 teaspoon coriander powder
    • 1 teaspoon chaat masala powder
    • salt to taste
    • 1/2 cup chickpea flour (besan)
    • oil for deep frying
    1. Cut thin slices of potatoes with a peeler.
    2. In a large bowl, mix together the chickpea flour, red pepper, chaat masala, cumin , coriander powder, salt and lemon juice.
    3. Now add potato slices and a litlle water.
    4. Toss to coat evenly.
    5. Heat oil in a deep pan over medium heat.
    6. Now fry chips for 10 minutes or until crispy and golden brown.
    7. Remove from the oil and drain on kitchen paper.Chips Pakora is ready to serve. ENJOY

    Serve with your favorite dipping sauce.

  • Crispy & Cheesy: The Easiest Cheese Pakora (Paneer Pakora) Recipe!

    Cheese Pakora (Paneer Pakora)

    Ah fried cheese, is there anything more indulgent? Paneer Pakora is made with cottage cheese and besan. It makes a great snack at any party or on a rainy day.

    Prep Time: 10 minutes

    Cook Time: 15 minutes

    Servings: 4

    Difficulty Level: Easy

    Ingredients:

    • 250 gm cottage cheese
    • 1 teaspoon red chili powder
    • 1/4 teaspoon mango powder
    • oil For deep frying

    For the batter:

    • 1 cup Gram flour (besan).
    • 1 teaspoon red chili powder
    • a pinch of baking soda
    • salt to taste
    • water as required

     

    Directions:

    Step 1

    Cut the cottage cheese into square, thick cubes.

    Step 2

    Sprinkle red chili powder and mango powder on each piece.

    Step 3

    Make the batter by mixing the gram flour with red chili powder, salt, soda and sufficient water to make a slightly thick batter.

    Step 4

    Dip each piece of cottage cheese into the batter and deep fry in heated oil till it turns golden brown. Paneer Pakora is ready to serve.

    Serving Suggestions:

    • Serve with green chutney.

    Missi Roti

    No meal is complete without bread or rotis .In Pakistan we have lots of variations and variety of making rotis ,paratha and puris.
    Missi roti is a delicious and healthy flatbread made with a mixture of gram flour and wheat flour and seasoned with spices. The aroma that hits one’s nostrils while making the rotis is so pleasant and appetizing.

    Prep Time:30 minutes

    Cook Time:20 minutes

    Servings:8

    Difficulty Level:Medium 

    Ingredients

    • 2 cups whole Wheat Flour (atta)
    • 3 cups Gram flour (besan)
    • 1 onion, finely chopped
    • 1/2 cup chopped mint leaves
    • 1/2 cup chopped coriander leaves
    • 6 green chilies, finely chopped
    • 1 teaspoon Cumin seeds
    • 1 teaspoon crushed red chili
    • 1 teaspoon red pepper
    • 1 teaspoon dry coriander, crushed
    • 1/4 teaspoon garam masala powder
    • 2 tablespoon dry fenugreek leaves (methi)
    • 2 tablespoon pomegranate seeds (anar dana)
    • Salt to taste
    • Water to knead
    • butter as required

    Directions:

    Step 1

    In a mixing bowl, sift both flours.

    Step 2

    Add all the dry ingredients and mix very well.

    Step 3

    Now add onion, chopped mint leaves,chopped coriander and green chilies.

    Step 4

    Mix well.

    Step 5

    Now knead the dough very hard with cold water.

    Step 6

    Knead it for 8-10 minutes and keep it aside.

    Step 7

    After ten minutes again knead the dough for 5 minutes.

    Step 8

    Put in the refrigerator for 1 hour.

    Step 9

    After one hour, make medium balls with the help of oil or flour.

    Step 10

    Roll it with rolling pin very lightly.

    Note: ( It will be sticky so be careful.Flour will help you to roll it).

    Step 11

    Preheat griddle or tawa and cook roti with or without oil.

    Step 12

    Remove from the griddle and spread butter over the hot roti.

    Step 13

    Missi Roti is ready to serve. ENJOY!!

    Recipe Note’s

     

    1. If you feel your dough is so sticky you can add little more flour only little dont put soo much.
    2. If you have pizza stone you can also make roti in oven.
    3. You can put desi ghee on roti when you serve it.

     

    Serving Suggestions:

    • Serve it with lassi and green chutney.
