Hearty Egg Rolls
Everyone loves egg rolls! They’re the quintessential Chinese side dish. These Crispy Hearty Egg Rolls are stuffed with ground chicken,colourful veggies, and delicious seasoning’s. A personal creation of mine, that goes well with any Chinese dish. This Hearty egg rolls recipe makes the best egg rolls.

Prep Time:20 minutes
Cook Time:3-4 minutes per batch
- 1 package egg roll wrappers (about 14 ounce)
- 2 pound chicken mince
- 2 boiled potatoes, finely chopped
- 2 cups cabbage, finely chopped
- 1 cup carrot, finely chopped
- 1 cup spring onions, finely chopped
- 2 eggs, lightly beaten
- 1 tbsp soy sauce
- 1 tsp black pepper
- salt to taste
- oil for frying

Amount Per Serving: ( 1 serving – 2 egg rolls)

Heat 2 tbsp oil in a pan or deep skillet.
Place chicken mince in it and cook for 10 minutes or until no longer pink and all juices runs clear.
Now add potatoes, cabbage and carrot.
Stir fry 2-3 minutes then add soy sauce.
Add egg and stir well. Cook for 3-4 minutes until eggs are cooked and cabbage is tender.
Season with salt and pepper.
Transfer the mixture to a medium bowl.
Place 1 tbsp of chicken mixture in the center of each egg roll wrapper.
Roll wrappers around the mixture and fold edges inward to seal.
Repeat this procedure with all remaining ingredients and make egg rolls.
Heat oil in a heavy bottom skillet. Fry egg rolls in the hot oil for 3-4 minutes or until golden brown.
Remove from the oil and drain on paper towels.Hearty Egg Rolls are ready to serve.
- Serve hot with Tomato Sauce.
