    Ingredients

    • 3 cups of Whole Wheat Flour
    • 2 cups grated White Radish
    • 1 medium Onion , finely chopped
    • 1/4 cup fresh coriander leaves, finely chopped
    • 1 tsp red chilli powder
    • 1 tsp carom seeds (Ajwain)
    • 1/2 tsp garam masala
    • salt to taste
    • 2 tbsp Butter
    • 1/2 cup Butter or Cooking Oil

    Directions:

    Step 1

    Mix together the flour, butter, and salt thoroughly in a bowl.

    Step 2

    Then add sufficient water to make a dough, knead for 5 minutes, cover and set aside for 15 minutes.
    Wash the radish well and grate it using a vegetable grater.

    Step 3

    Add a teaspoon of salt to the grated radish, mix well and set aside for 3-5 minutes.

    Step 4

    Now squeeze out the water.

    Step 5

    To the squeezed radish, add garam masala , red chilli powder, onions, coriander leaves, and carom seeds.

    Step 6

    And mix well.

    Step 7

    Divide this mixture into 1 inch sized balls. And set aside.

    Step 8

    Divide the dough into slightly larger than 1 inch size balls, flatten each ball into a circle.

    Step 9

    Place the grated radish balls at the center of the flattened dough.

    Step 10

    Then, gently stretch the dough to envelope the mixture completely, such that all the edges meet at the top of the dough ball.

    Step 11

    Using your fingers seal the dough well so that all the stretched up edges blend into one.

    Step 12

    Dust with some flour and roll out the dough into a circle.

    Step 13

    Heat a frying pan and when frying pan is very hot, place the rolled out dough on it.

    Step 14

    Leave dough for a minute and turn over.

    Step 15

    After a minute or so the paratha will slowly start to bubble up.

    Step 16

    Now drizzle one teaspoon of melted butter or cooking oil on top of the paratha and turn over.

    Step 17

    The paratha immediately starts to rise.

    Step 18

    Repeat the drizzling with melted butter or cooking oil on the other side as well.

    Step 19

    Turn over again and let it rise once more.

    Step 20

    When golden brown on both sides, remove from frying pan. Mooli Paratha is ready to serve.

    Aloo Paratha

    A flat, Potato ( aloo) stuffed bread that is served for breakfast or as a street food in India and Pakistan during all times of the day. Give ot a try!

    Aloo Paratha is extremely popular all over India and Pakistan that can be prepared for a breakfast or any time. Paratha dough stuffed with spiced mashed potatoes, and cooked with ghee. Goes great with your favourite chutney, dip and yogurt. It’s makes an excellent breakfast or brunch!

    For Dough:

    • 2 cups wheat flour
    • 1 cup plain flour
    • water to knead
    • salt

    For Filling:

    • 4 potatoes, boiled and mashed
    • 1 small onion, finely chopped
    • 1 tsp red chili powder
    • 1 tsp coriander seeds powder, roasted
    • 1 tsp cumin seeds, roasted
    • 1/2 tsp garam masala powder
    • 3-4 green chilies, finely chopped
    • 1/2 cup fresh coriander leaves,finely chopped
    • 2 tbsp fresh mint leaves, finely chopped
    • salt to taste

    For Frying:

    • oil for frying

     

    Directions:

    Step 1

    To Make Paratha Dough: Mix wheat flour, 1/4 tsp salt, Luke warm water,and make soft dough.

    Step 2

    Leave it for 30 minutes.

    Step 3

    To Make Potato (Aloo) Filling: In a medium bowl,combine all ingredients of filling. Mix well then set aside.

    Step 4

    To Make Paratha: Take a small ball of dough and roll a thick roti about 4″ diameter.

    Step 5

    Place a handful of filling at center.

    Step 6

    Bring the ends to the center from 4 or 5 points.

    Step 7

    Overlap ends so they do not leave an opening. Press gently, dust with dry flour, and proceed to roll.

    Step 8

    Heat a griddle and place paratha on it. Add 1 tsp oil around paratha and cook until it turns golden brown.

    Step 9

    Repeat the same with other side of paratha. Aloo Paratha is ready to serve. ENJOY!!

    Spinach Paratha

    Spinach paratha is another excellent variation of paratha where you can include some healthy greens in the paratha. This is a great “anytime” meal. Spinach Parathas are whole-wheat  flat bread stuffed with a spicy spinach filling.

    It doesn’t matter whether you are an expert or beginner, with this spinach paratha recipe you can prepare delicious and healthy spinach paratha in few minutes.  Its a perfect way to enjoy the goodness of spinach.

    Palak Paratha is a delicious and nutritious way of feeding spinach to the kids.

    INGREDIENTS

    For Dough:

    • 1 cup whole-wheat flour
    • 1/2 cup water
    • Pinch of salt

    For Spinach Filling:

    • 2 cups chopped spinach
    • Pinch of asafetida
    • 1/4 tsp salt
    • 1/2 tsp cumin seeds
    • 1/4 tsp red chilly flakes
    • 1/4 cup whole-wheat flour for rolling
    • Oil to cook

    Yield: 4 servings

    Directions:

    Step 1

    To Make Dough: Mix flour, salt and water together to make soft dough (if needed add more water).

    Step 2

    Knead the dough for a few minutes on a lightly greased surface to make soft, smooth and pliable dough.

    Step 3

    Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.

    Step 4

    To Make Paratha Filling: Heat the oil in a saucepan on medium-high heat. Oil is the right temperature when cumin cracks immediately after being put the oil.

    Step 5

    Add the asafetida and cumin seeds.

    Step 6

    After the cumin seeds crack, add the spinach.

    Step 7

    Stir-fry, making sure to press the spinach down so the water can evaporate.

    Step 8

    Cook the spinach until most of the water has evaporated. Spinach still should be moist and should be able to form a ball.

    Step 9

    Add the salt and pepper and mix well. Set aside until the spinach cools off.

    Step 10

    Divide the dough and spinach filling into 6 equal parts.

    Step 11

    Roll the dough into 3 inch circles.

    Step 12

    Put the filling in the center. Seal by pulling the edges together and make into a ball.

    Step 13

    Proceed to make all six balls. Each ball needs to settle for two minutes before you start rolling.

    Step 14

    Heat the griddle (Tawa) on medium high. Press the filled ball lightly on dry whole-wheat flour from both sides.

    Step 15

    Roll the ball light handed to make 6-inch circle.

    Step 16

    If the paratha sticks to the rolling pin or rolling surface, lightly dust the paratha with dry flour.

    Step 17

    Place the paratha over the griddle. After paratha start changing color and start puffing in different places flip the paratha over. You will notice some golden-brown spots.

    Step 18

    After few seconds, spread 1 tsp of oil on the paratha.

    Step 19

    Flip the paratha and lightly press the puffed areas of the paratha with a spatula.

    Step 20

    Flip again and press with the spatula making sure the paratha is golden-brown on both sides.

    Step 21

    Cool the parathas on a wire rack so they don’t get soggy. Spinach Paratha is ready to serve.

    Recipe Note’s

    1. These Parathas can be kept outside for up to 2 days wrapped in aluminum foil or in a closed container.
    2. For later use paratha can be refrigerated for 3-4 days.

    Serving Suggestions:

  • RECIPE: Cauliflower Paratha (Gobhi Paratha)

    Ingredients:
    For Dough:

    • 4 cups whole wheat flour
    • 3 cups cold water
    • 3/4 cup ghee or clarified butter

    For Filling:

    • 2 tbsp ghee or clarified butter
    • 1 tbsp ginger,finely chopped
    • 1 tsp garlic,finely chopped
    • 1/2 cup onions,finely chopped
    • 1/4 tsp turmeric powder
    • 1/8 tsp hot chili peppers
    • 1 medium cauliflower florets trimmed, and coarsely chopped
    • 1 tbsp hot green peppers, finely chopped
    • 1 tsp ground cumin
    • 1 tsp salt
    • 8 tbsp ghee or clarified butter

    How to make Cauliflower Paratha :

    For Dough:

    • In a small bowl, combine the whole-wheat flour and 1/4 cup of the ghee.
    • With your fingertips rub the flour and fat together until they look like flakes of coarse meal.
    • Pour 1 cup of water over the mixture all at once, knead together vigorously, and gather the dough into a compact ball.
    • If the dough crumbles, add up to 2 cups more water, 1/4 cup at a time, until the particles adhere.
    • On a lightly floured surface, knead the dough by folding it end to end, then pressing it down and pushing it forward several times with the heel of  your hand.
    • Repeat for 7 or 8 minutes, until the dough is smooth and elastic.
    • Again gather it into a ball.
    • Place the dough in a bowl, drape a kitchen towel over the top, and let it rest at room temperature for at least 30 minutes before rolling it.

    For Filling:

    • Meanwhile, in a heavy 10 to 12-inch skillet, heat 2 tbsp of ghee over high heat until a drop of water flicked into it splutters instantly.
    • Stir in the ginger and garlic, then the onions.
    • Lower the heat to moderate and, stirring constantly, fry the mixture for 7 or 8 minutes, until the onions are soft and golden brown.
    • Stir in the turmeric, red pepper, cauliflower, chili, cumin and salt.
    • Reduce the heat to low, cover tightly and cook for 10 minutes, or until the cauliflower is tender but still slightly resistant to the bite.

    To make the parathas:

    • Divide the cauliflower mixture into 9 equal portions.
    • Divide the dough also into 9 portions and drape a dampened kitchen towel over them to keep the dough moist.
    • One at a time, on a lightly floured surface, roll a ball of dough into a round about 5 inches in diameter.
    • Place a portion of the filling mixture in the
    • center of the round and fold the edges over it,
    • pressing them together to enclose the filling
    • securely.
    • Pat the filled paratha flat with your hands, then
    • gently roll it again to make a round about 5
    • inches in diameter.
    • As you shape and fill the parathas, set them
    • aside, covered with a dampened kitchen towel to
    • keep them from drying out.
    • Heat an ungreased 10 to 12-inch skillet with a non
    • stick finish or a well-seasoned cast-iron skillet
    • or griddle until it is hot enough for a drop of
    • water flicked into it to splutter instantly.
    • Place one of the parathas in the pan and, moving
    • it about constantly with your fingers or the edge
    • of a metal spatula, cook for a minute or so.
    • With a wide spatula, turn the paratha over and
    • brush about a tsp of the ghee on the top.
    • Cook for 2 minutes, then turn it over, spread with
    • another teaspoon of ghee and cook for 1 minute.
    • Turning frequently, continue to cook until the
    • paratha is brown on both sides.
    • Serve hot with mint chutney or fresh curd.

    For Dough:

    • 3 cups wheat flour
    • 1/2 tsp all spice powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp chilli powder
    • Oil
    • Water

    For stuffing:

    • 4 tbsp cottage cheese, grated or chopped
    • 1 cup carrots, cauliflower and peas, chopped finely and combined
    • 1 onion, finely chopped
    • 1 tbsp coriander, finely chopped
    • 2 small green chillies, finely chopped
    • 1/2 tsp all spice powder
    • 1/2 tsp chilli powder
    • 1/2 tsp oregano (ajwain)
    • Salt to taste

     

    Directions:

    Step 1

    Knead the flour with oil, salt, all spice powder, chilli powder and turmeric powder, using water to make dough. Mix all the ingredients for the stuffing.

    Step 2

    Make two small balls of the dough and roll them into the shape of puris.

    Step 3

    Place the stuffing on one puri, cover with another puri and press the edges together well.

    Step 4

    Roll out to the size of a paratha very gently so that the filling does not come out.

    Step 5

    If this is difficult, then roll out two thin rotis and spread the stuffing evenly and thinly over one roti and cover it with the other, pressing the edges together.

    Step 6

    Cook on a tawa, using as much oil as desired, on normal flame. Vegetable Cheese Paratha is ready to serve.7

  • Turnip Paratha Recipe

    Turnip Paratha (Shalgam Paratha):

    As you know me, I am always on a hunt to try different veggies. So this Sunday, at local sabzi shop, White Turnip caught my eye. This is a root vegetable called as Shaljam or Shalgam in Urdu. The best way to try out a new veggie is to make a stuffed paratha. It turned out great.
    Whole wheat is good for you, we all know that but if you would like to maximize that goodness? Thats exactly what this recipe is about. I used whole wheat flour, milk and oil to make this paratha.
    I’m so excited to share my Turnip Paratha recipe with you. This Turnip paratha recipe was given to me by a good friend (Nabeela).

    Yes, Turnip (Shalgam) Paratha, sounds strange but you´re gonna love this stuffed bread. Try out this delicious turnip paratha recipe and I am sure you are going to love it. You can have this paratha along with yogurt, raita or any kind of pickle.

    To Make Paratha Dough:

    Step 1

    Place wheat flour, salt, milk and oil in a mixing bowl.

    Step 2

    Knead a soft dough with water.

    Step 3

    Cover with a wet cloth and set aside for 30 minutes.

    To Make Paratha Stuffing:

    Step 1

    Peel off the turnips and grate them.

    Step 2

    Heat 1 tablespoon oil in a pan. Add cumin seeds.

    Step 3

    When it start crackle, add grated turnips.

    Step 4

    Saute till most moisture is gone.

    Step 5

    Now add coriander seeds, red chili, ginger, green chili, turmeric powder, garam masala and salt.

    Step 6

    Cook and stir for 4-5 minutes or until all the ingredients are mixed well and stuffing turns dry.

    Step 7

    Allow to cool completely.

    To Make Turnip Paratha:

    Step 1

    Make 6 round balls from the dough.

    Step 2

    Roll each ball in the shape of roti (about 5-inch diameter) to hold the stuffing.

    Step 3

    Put 2-3 tablespoon stuffing in the center of roti and gather the edges into a round ball.

    Step 4

    Roll each stuffed bread gently dusting flour as per desired thickness.

    Step 5

    Heat a tawa or griddle over medium heat.

    Step 6

    Put the stuffed paratha on the hot griddle (tawa). Cook for 2 minutes then flip the paratha and apply ghee or oil on the paratha.

    Step 7

    Cook 2-3 minutes longer or until the paratha color changes to light golden brown. Transfer into a serving platter. Delicious Turnip Paratha is ready to serve. ENJOY!!

    1. Half cook the parathas and put them in a zip lock bag.
    2. Keep it in the freezer and you can thaw and cook them when required.
    3. This saves a lot of time for especially for working women.

    Step 1

    When corn flour mixture cools down, stir in the grinded corn, potato, mint, corriander leaves, and chaat masala. Mix well.

    Take 2 balls for making paratha, and roll each of them only till cup size.

    Add the ball of above corn mixture between these two rotis and stick the sides by pressing well.

    Now roll this thick cup sized roti slowly to get the paratha. Cook the paratha on tawa, applying little oil. Corn Paratha is ready to serve.

    Step 1

    Mix all the ingredients of filling in a bowl, expect cumin seeds.

    Step 2

    Take another bowl and mix flour, salt, sugar and oil. Then add water and knead the dough for 6-8 minutes.

    Step 3

    When it get smooth stop and cover it with a damp cloth for 30 minutes.

    Step 4

    After that make small balls from the dough.

    Step 5

    Take a wheat dough ball, flatten it with your palm.

    Step 6

    Fill it with 3 tbsp filling and close it again. Now dust it with cumin seeds from both sides.

    Step 7

    Flatten it in a round disk of 5 inch.

    Heat up the griddle (tava) and gently place the rolled out paratha over it.

    Cook it from one side for 4-5 minutes over medium flame. Then add ghee over it and fry it from both sides until pink.

    So make all parathas with same procedure. Potato Cumin Paratha is ready to serve.

    Step 1

    Step 1

    To Make the dough: Combine the all purpose flours,wheat flour,salt and butter. Put enough milk and make soft dough.

    Knead the dough properly and keep aside for at least 15 minutes.

    To Make Stuffing: Heat the ghee, put the onion and cook till it becomes soft. Put the vegetables, potatoes, green chillies, chilli powder, garam masala, coriander and salt and cook for 1 or 2 minutes.

    Take out and keep it cool.

    Divide the dough into 12 equal portions.

    Apply a little flour and roll out into rounds.

    Put 2 tbsp of the stuffing in the center of each dough round and fold like an envelope from all the corners.

    Roll into rounds and cook on hot griddle (tawa) for 1-2 minutes, turn over on the other side and cook again till it becomes crispy.
