    Gola kabab Recipe

    A soft Gola kabab that melts in your mouth. It is a barbecue favorite which is so simple, yet appetizing
    Prep Time 20 minutes

    Ingredients

    • 1 kg minced meat (preferably grinded 2-3 times at the butchery but without any fat)
    • 4 fried onion crushed
    • 1 egg
    • 4 green chilies
    • 2 teaspoon raw papaya paste
    • 2 tablespoon yogurt
    • 2 tablespoon mint leaves chopped
    • 2 tablespoon coriander leaves chopped
    • 2 tablespoon ginger garlic paste
    • 2 teaspoon chili powder
    • 1 teaspoon cumin seeds roasted and crushed
    • 1 teaspoon garam masala powder
    • 1/1 teaspoon black pepper powder
    • 1/2 teaspoon mac powder
    • 1/2 teaspoon nutmeg powder
    • 1/2 teaspoon cardamom powder
    • salt accordind to taste
    • 1/4 cup butter or desi ghee

    Instructions

    Method

    • Put minced meat, green chilies, ginger garlic paste, fried onion, and raw papaya in a chopper. Grind until well combined.
    • Now add yogurt, egg, mint leaves, coriander, chili powder, black pepper, mac powder, nutmeg, cardamom powder, cumin powder, garam masala powder and salt.
    • Mix well.
    • Leave to marinate for half an hour.
    • Now put on skewers and barbecue 12-15 minutes or until meat is no longer pink from inside, occasionally basting with butter or desi ghee.
    • Alternately, make flat and round (or elongated) kebabs and shallow fry both sides in oil or butter.
    • Transfer into a serving platter. Gola Kabab is ready to serve.

    Notes

    Serving Suggestions:
    Serve hot with spicy chutney, sliced lemon and tomatoes.

    Ingredients

    • 1/2 kg chicken mince
    • 1 medium onion
    • 1 tbsp chopped
    • 6 green chilies, chopped
    • 4 tbsp fresh coriander leaves, chopped
    • 2 tbsp lemon juice
    • 1 tsp black pepper powder
    • 1 tsp salt
    • 1/2 tsp mustard powder
    • oil for frying

     

    Directions:

    • In a large bowl, combine together all ingredients except oil.
    • Make in the shape of seekh kebabs.
    • Now heat oil in a shallow frying pan.
    • Fry kebabs on low flame for 12-15 minutes or until done.
    • Take it out into serving plate.
    • Garnish with Ring onions and lemon wedges.
    • Jhatpat Seekh Kebab is ready to serve.
    • ENJOY!!

    • 1 Onion minced
    • Oil for frying

    For Whole Masala:

    • 2 black cardamom pods
    • 2 Cinnamon sticks
    • 2 cloves
    • 1/2 tsp coriander powder
    • 1 tsp Cumin powder
    • 1 tsp red Chili powder

    Step 1

    Wash the minced meat and to it add the Bengal gram dal, whole masala, 1cup warm water, salt to taste and then cook till dry.

    Step 2

    Remove from heat and add ginger, garlic, pepper,chili powder, coriander powder and cumin powder.

    Step 3

    Grind to a fine paste and then form into dough.

    Step 4

    For the Stuffing mix minced onion with finely chopped mint leaves, lime juice and salt.

    Step 5

    Beat the egg lightly.

    Step 6

    Divide the dough into lemon- sized balls.

    Step 7

    Flatten each ball in the palm of your hand and stuff with a little of the onion mixture.

    Step 8

    Shape into a kabab and dip in the beaten egg.

    Step 9

    Shallow fry till it turns color. Shami Kabab is ready to serve.

    Seekh Kebab

    These make mouthwatering starters or are good for a party. They can also be served as part of a main course. Everyone always asks me for this Seekh Kebab Recipe when I make them.

    Ground lamb is seasoned with fresh mint and coriander, and ginger and green chili paste, and made into delicious Seekh Kebab. Serve with lime wedges, mint.

    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon coriander powder

    • Butter for busting

    Directions:

    Step 1

    Preheat the oven to 200 degree C.

    Step 2

    Mix together the lamb, ginger and garlic in a mixing bowl.

    Step 3

    Add in the onion, mint, green chilli, garam masala, cayenne pepper, cumin powder, coriander powder, salt and coriander leaves.

    Step 4

    Mix well.

    Step 5

    Form the mince mixture into long sausage-shaped kebabs or alternatively skewer onto four long skewers and place on a rack in a roasting tray.

    Step 6

    Bake the kebabs for 12 minutes.

    Step 7

    Turn the kebabs over and baste with a little of the melted butter and bake for a further 5 minutes.

    Step 8

    Preheat the grill and grill the kebabs for a further 2-3 minutes, basting with the remaining butter.

    Step 9

    Slice the kebabs and set aside.

    Step 10

    Heat the butter in a large, heavy-based frying pan.

    Step 11

    Add in the onion and fry, stirring, until translucent.

    Step 12

    Add in the sliced kebabs and fry for 1 minute. Season with chaat masala powder. Seekh Kebab is ready to serve. Enjoy!

  • Bannu Kebab Recipe

    Ingredients:

    • 900 gm Chicken, cut into boneless cubes, washed, dried
    • 2 tsp Salt
    • 1 tsp Dry fenugreek  powder
    • 2 tbsp Ginger-garlic paste
    • 2 tsp Green chilies, chopped
    • 1 tbsp Green coriander, chopped
    • 1 tsp Vinegar
    • 5 tbsp Vegetable oil
    • 5 tsp Gram flour , sieved
    • 2 ½ tbsp Breadcrumbs, fresh
    • 6 Egg yolks, whisked

    How to make Bannu Kebab:

    • Stir salt, dry fenugreek powder, ginger-garlic paste, green chilies, green coriander, and vinegar together; marinade and massage the chicken.
    • Keep into fridge for 15 minutes.
    • Heat pan with oil, saute the gram flour until a fragrant smell comes up.
    • Add chicken cubes and saute on low heat for 5 minutes until half done.
    • Add breadcrumbs, later remove and leave on a table to cool down.
    • Skewer the cubes 2” apart and roast in a tandoor till done.
    • Grasp the cubes close together in order to coat with egg yolks.
    • Roast until egg coating turns golden brown.
    • Bannu Kebab is ready to serve.
    • Garnish with onion rings.
    • Serve hot with mint chutney.
