- 6 bread slices
- 2 potatoes, cubed
- 2 green onion, chopped
- 1-1/2 cup water
- 1 cup cheddar cheese
- 1 tbsp chopped ginger
- 1 tbsp oil
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp salt

Place potatoes, water, chili powder, turmeric powder and salt in a small saucepan.
Bring to a boil and cook for 10 minutes or until potatoes are tender.
Mash the potatoes properly.
Spread mashed potatoes on each bread slice.
Sprinkle with grated cheddar cheese.
Top with green onion.
Bake at 350 degree F, for 8-10 minutes or until cheese is melted and golden brown. Ginger Potato Toast are ready to serve.
