- 3 cups grated carrots
- 1 cup chopped walnuts
- 4 eggs
- 2 cups all-purpose flour
- 2 cups white sugar
- 1-1/4 cups vegetable oil
- 2 tsp vanilla extract
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon powder
- 1/2 tsp salt
- 4 cups confectioners’ sugar
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts

Preheat oven to 175 degrees C.
Grease and flour a 9×13 inch baking pan. Set aside.
Beat eggs with oil, white sugar and vanilla essence in a large bowl.
In another bowl, combine together the flour, baking soda, baking powder, salt and cinnamon.
Stir in the carrots.
Fold in Walnuts.
Pour into the prepared pan.
Bake, in the preheated oven, for 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow to cool for 10 minutes then turn out onto a wire rack.
Let it cool completely.
To Make Frosting:
In a medium bowl, mix together the butter, cream cheese, confectioners’ sugar and vanilla essence.
Beat until the mixture is smooth and creamy.
Stir in chopped Walnuts.
Frost over the cooled cake. Delicious Carrot Cake is ready to serve. ENJOY!!
