    • 4 cups milk
    • 10-15 almonds
    • 1/6 cup pistachios
    • a few saffron strands
    • 1/4 tbsp cardamon powder
    • 1/4 cup sugar
    • water as required

    Step 1

    Boil the milk in a heavy bottomed pan. Continue heating even after the milk boils.

    Step 2

    Heat about a liter of water in another pan and add the almonds and the pistachios.

    Step 3

    Continue heating until the almonds expand.

    Step 4

    Drain off the water and wash the nuts with cold water. The skin of the almonds and the pistachios can be easily removed now.

    Step 5

    Now grind the almonds and pistachios into a smooth paste and add it to the milk and stir well.

    Step 6

    Add the saffron strands,sugar and cardamon powder and mix well.

    Step 7

    Continue heating the milk for a few more minutes.

    Step 8

    When the milk becomes a little thicker than before,cool it .

    Step 9

    Refrigerate it for 2-4 hours and serve it cold. Saffron Pista Milk is ready to serve. Enjoy!

    • 1-1/2 cup desi ghee or clarified butter
    • 1 tbsp rose water

    Step 1

    In a non-stick pan, roast the besan until dark orange yellow on medium low heat.

    Step 2

    Now add ghee and cardamom and roast until brown.

    Step 3

    Add sugar, and mix it well.

    Step 4

    Reduce heat now and let it cook for 2 minutes.

    Step 5

    Now add kishmish and half of cashews and almonds.

    Step 6

    Add saffron water along with soaked saffron and another 2 -1/2 cups of water.

    Step 7

    While adding the water stir continuously. Be careful that halwa does not stick and cook till ghee separates.

    Step 8

    When cooked, turn off the heat and transfer to a bowl.

    Step 9

    Drizzle with rose water.

    Step 10

    Garnish with almonds and cashews. Saffron Besan Halwa is ready to serve. Serve hot.

  • Saffron Roast Chicken Recipe

    Ingredients for Saffron Roast Chicken:

    • 1 chicken, about 1.6 kg

    For saffron butter

    • 50 gm unsalted butter, softened
    • 1/2 packet saffron threads, crumbled
    • 1/2 tsp salt

    For the onions

    • 1 tbsp olive oil; 25 gm butter
    • 450 gm onions, halved and thinly sliced
    • 2 tsp garam masala;
    • 2 tsp cumin seeds
    • 6 cardamom pods, lightly crushed
    • 2 tsp finely chopped fresh ginger
    • 50 gm sultanas

    How to make Saffron Roast Chicken:

    • Preheat oven to 200C/Gas Mark 6.
    • Loosen the skin from the chicken breast by easing your fingers under the neck flap, over the breast and down to the legs, without puncturing the skin.
    • Mix the ingredients for the saffron butter and spread evenly over the chicken breast under the skin.
    • Secure the neck flap under the bird with a cocktail stick.
    • Heat the oil and butter in a wide pan and deep fry the onions until softened.
    • Add all the spices and cook for 2-3 minutes.
    • Add the sultanas, then transfer to a roasting dish and place the chicken on top, breast side down.
    • Roast for 45 minutes.
    • Lower setting to 190C/ Gas 5 and turn the chicken breast side up.
    • Stir the onions, piling some of the lighter ones on top of the chicken to keep it moist.
    • Roast for a further 45 minutes or until the chicken is cooked through and the onions are crisp.
    • Saffron Roast Chicken is ready to serve.

    • Serve with Lemon Wedges.
