- 6 green onions, chopped
- 2 carrots, julienned
- 5 cups green cabbage, thinly sliced
- 2 cups red cabbage, thinly sliced
- 2 cups Napa cabbage, shredded
- 1/2 cup boiled green peas
- 2 red bell peppers, thinly sliced
- 1/2 cup chopped fresh cilantro
For Coleslaw Dressing:
- 6 tbsp vinegar
- 6 tbsp vegetable oil
- 5 tbsp creamy peanut butter
- 3 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp minced fresh ginger root
- 1-1/2 tbsp minced garlic

In a medium bowl, mix together the vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic. Stir until well combined.
Place green cabbage, red cabbage, Napa cabbage, red bell peppers, carrots, green peas, green onions, cilantro in a large bowl. Stir in coleslaw dressing. Toss well. Asian Coleslaw is ready to serve. ENJOY!
