    Bean Salad with Olives and Herbs Recipe

    This salad came to my mind right as I was falling asleep.

    Does your brain ever do crazy stuff like that? My best ideas seem to come when I’m about to doze off and don’t have a notebook or pen to write things down, so I just make a pact with my brain to remember. And the next day we both do our best to recall what we were thinking.

    Thankfully, this one made it through the pipeline! Three cheers for my old lady brain still working!

    I’ve made many a Bean salad before, but this one is special. This is the answer to the question, “What’s super cozy, flavorful and perfect for any BBQ Party?” It’s a great addition to any summer get together!

    This Pakistani/Italian flavor pairing came to mind, and the recipe is adapted from my all-time favorite Bean Salad.   One super easy thing you can prep ahead is beans. I love beans because you can make them so many different ways and they’re packed with protein, slow-digesting carbohydrates and fiber. Their nutritional profile makes them ideal for prepping before a workout and recovering after a workout. If you’re trying to lose weight or maintain a healthy weight, they’re great for that too since they make you feel full longer.

    One of my favorite ways to enjoy beans during the warmer months is with my Bean Salad. It’s super easy to make and it tastes really yummy too! This recipe is simple, requiring just 10 minutes to prepare! You can eat it all on its own (what I normally do) or dress it up by adding some more chopped veggies to it. It’s also great added to some greens either in a wrap or in a salad.

    The dressing is SO easy (and dreamy).

    Italian herbs are blended with vinegar . Add olive oil water to thin and ‘voila!’ You have a super yummy, tangy Italian dressing ready to coat those gorgeous bean salad. Look at that salad goodness.

    This would make the perfect side dish for BBQ Party, or any get together, really. It yields four entrée-sized portions or 8 sides, so multiply as needed. Although it’s delicious on its own, it would pair extremely well with my Grilled Lamb Chops, and my Grilled Italian Chicken.

    Bean Salad with Olives and Herbs Recipe

    Looking for a yummy way to enjoy beans and olives as part of a healthy diet? This Bean Salad with Olives and Herbs recipe is delicious and so easy to make!

    For Salad

    • 2 cups boiled Red Kidney Beans
    • 1/2 cups green olives (sliced)
    • 1 medium red onion
    • 1 medium carrot
    • 1 green bell pepper
    • 1/2 red bell pepper
    • 1 cucumber
    • 1 to mato (de-seeded)

    For Salad Dressing

    • 2 teaspoon vinegar
    • 2 teaspoon olive oil (extra virgin)
    • 1/2 teaspoon oregano
    • 1/2 teaspoon Italian herb mix (optional)
    • 1/2 teaspoon basil
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon salt

    To Make Salad Dressing

    1. Place everything into a glass salad dressing container or mason jar and shake well.
    2. Allow the mixture to sit for at least 2 hours before serving.
    3. Make sure you shake to combine before use.

    To Prepare the Bean Salad

    1. Place red kidney beans into a strainer and rinse thoroughly until the beans are clean and no more foam remains.
    2. Transfer the kidney beans to a glass bowl.
    3. Cut all vegetables into small dice-shaped cubes and add into the kidney beans. Mix well.
    4. Pour the Italian salad dressing over them.
    5. Stir to combined.
    6. Refrigerate for several hours or at least 2 hours before serving.
    7. Your delicious Bean Salad with Olives and Herbs is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve as a side dish, post-workout snack or add them to your salad.

    It is the middle of March and spring is here and in full bloom, budding flowers, chirping birds, and plenty of new activities to do.
    With spring here in full bloom, I try to get out for daily walks, which is a joy. With the earth greening, trees budding, flowers blossoming and songbirds chirping, hope and renewal fill every living thing. (inshaAllah)

    The days are getting much warmer now and my family always looks forward for light and comforting food. Dinner is the only time when everybody gets to gather around and have meal as a family. So I always plan to cook something simple and most importantly light and healthy.

    Last week, I made the world’s most amazing Meatballs in a tomato sauce with garlic bread on the side – where’s my invitation to go on Masterchef??  💁🏻 lol 😛

     I like to cook meatballs in sauce! These Italian flavored  meatballs in tomato sauce are my new favorite! 😀 ☺

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    They would be great over pasta, mixed with tomato sauce as an appetizer or on their own, But I served these meatballs over some veggie noodles tossed in olive oil along with garlic bread. A recipe must try! The Best Meatballs You’ll Ever Have!

    The Best Meatballs You’ll Ever Have

    These meatballs are light, tender, and bursting with juicy flavor.You can just mix all the ingredients together, roll them and cook them and the best part of all, you can have these on your dinner table in less than 45 minutes.

    For the Meatballs

    • 1 pound high-quality lamb mince
    • 1 small onion (diced)
    • 1/2 cup seasoned breadcrumbs
    • 2 tablespoon cream
    • 2 garlic cloves (chopped)
    • 1 large egg
    • 3 tablespoons fresh parsley (chopped)
    • 3 tablespoon Parmesan cheese (grated)
    • 3 tablespoon Mozarella Cheese (grated)
    • 1 teaspoon freshly ground pepper
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon cayenne
    • salt to taste
    • 2 tablespoon butter or oil

    For the Sauce

    • 1 tablespoon extra virgin olive oil
    • 2 garlic cloves (minced)
    • 1/2 small onion (chopped)
    • 1/2 cup tomato thick puree
    • 1 red pepper (crushed)
    • 2 tablespoons fresh parsley (chopped)
    • 1/2 teaspoon red pepper
    • 1/4 teaspoon salt

    Method

    1. Preheat oven to 200 degree C.
    2. Prepare the meatballs: Put all ingredients into a food processor or chopper.
    3. Process until well combined.
    4. Note; Texture should be soft, but not sopping wet. If it’s not soft enough, add 1 tablespoon of milk.
    5. Now take it out in a mixing bowl.
    6. Shape into egg size balls by pushing them into the shape softly in your hands.
    7. Place meatballs on a baking tray and brush with melted butter or olive oil.
    8. Bake for 30 minutes or until they are just barely cooked through and no longer pink inside. (To keep them tender, do not overbake).
    9. Remove and reserve.

    To Make the Sauce

    1. Heat oil in a large saucepan over medium heat.
    2. Add the garlic and onion, and sprinkle the salt over them to bring out their flavor.
    3. Add red pepper. Cook and stir occasionally for 5 minutes or until the onion is translucent.
    4. Now add the tomato puree.
    5. Bring to a boil.
    6. Add parsley and reduce the heat to medium-low.
    7. Let it simmer for 5 minutes or until nicely blended.
    8. Now carefully add the baked meatballs to the pan.
    9. Simmer for 20 minutes or until they are soaked in sauce.
    10. ENJOY!!

    Serving Suggestions:
    Serve meatballs and sauce over spaghetti. Or healthy alternative serve them over veggie noodles.

    Roasted Lemon Potatoes

    Roasted lemon potatoes has a great indulging flavor because of potato skin, garlic and oregano. It’s a perfect appetizer and side dish. Goes great with barbecue and turkey roast.

    • 1/2 kg potatoes with skin
    • 1/2 cup lemon juice
    • 4 tbsp olive oil
    • 1 tbsp garlic paste
    • 2 tsp oregano
    • 1 tsp crushed red chili
    • salt to taste
    • parsley for garnishing

    Method

    1. Wash potatoes then cut into french fries.
    2. Now boil water in a pot.
    3. Put potatoes in it and cook for 2-3 minutes.
    4. Take it out from the water and drain.
    5. When dries completely, add lemon juice, garlic paste, oregano, red chili, olive oil and salt.
    6. Toss to coat evenly.
    7. Put the seasoned potatoes on a baking dish.
    8. Bake in the preheated oven for 15 minutes or until tender.
    9. Sprinkle parsley over it.
    10. Delicious Roasted Lemon Potatoes are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve it with horseradish sauce or tartar sauce and enjoy a great side dash, appetizer or snack.

    • 50 gm butter
    • 1 tbsp chopped garlic

    1. Heat butter in a pan over medium heat.
    2. Saute garlic in it.
    3. Now add mushrooms and fry well.
    4. Turn the heat off.
    5. Season with black pepper, salt and oregano.
    6. Stir well.

    Goodbye to restaurant style pizzas, I really mean it…I can’t tell you how often I get asked to make pizza at home.

    I made this pizza last night for a quick dinner. I had been roaming around with the recipe for making the perfect pizza for so long and the thought of topping the pizza crust with minced triggered me last night all of a sudden. I had no other choice but to execute my idea.
    When it came to top the pizza crust, I went a little overboard and made ground chicken sauce.Topped the crust with the ground chicken and then with veggies, olives generously sprinkled mozzarella cheese and herbs and baked it in the oven for 30 minutes. For the entire 30 minutes, I literally peeped into the oven window and enjoyed the amazing show of crust puffing up, ground chicken getting browned and the cheese getting melted, what a divine pleasure it was!!!
    Each step I did with so much passion and waited so eagerly to have a bite of this pizza. As the pizza came out perfectly baked with a soft crust and the mince topping on it along with the melted golden cheese on it, the mere sight of it made me go wild. I screamed out of joy and I burned my tongue out of greed!

    For this recipe I used pre-made pizza base, sauce and toppings.The fresh and juicy taste of fried mince, Italian pizza sauce, and vegetables are really an awesome treat for your tongue. Make a try and enjoy the original taste:-)

    Do try it. It’s a quick meal with most ingredients from the cupboard. My family really like it. It’s homemade pizza, so women are going to like it. It’s topped with ground chicken sauce, so men are going to love it. It has cheese on it, so kids are going to enjoy it of course in a messy way. After finishing up the pizza, everyone is going to go wild!!!

    Good with minced lamb, too.

    Quick and Easy Mince Pizza Recipe

    This Easy Mince Pizza Recipe is for all those who want to prepare pizza at home but have not tried yet because making dough is not a quick process.It will reward you with infallible pizzas every time.

    For Mince

    • 500 gm chicken mince
    • 6 mushrooms (thinly sliced)
    • 1 medium onion (chopped)
    • 1 teaspoon ginger garlic paste
    • 2 green chilies (minced)
    • 1 tablespoon cooking oil
    • 1 teaspoon crushed red chili
    • 1/2 teaspoon oregano
    • 1/2 teaspoon dried basil
    • 1/4 teaspoon rosemary (optional)
    • salt to taste

    For Pizza Filling & Topping

    • 1 large ball of premade pizza dough
    • 1-1/2 cup cooked chiken mince
    • 1 cup pizza sauce
    • 1/2 cup cheddar cheese
    • 1/2 cup Mozzarella cheese
    • 1 small onion (thinly sliced)
    • 1 small capsicum (thinly sliced)
    • 1 small tomato (deseeded & thinly sliced)
    • 4 olives (thinly sliced)
    • 1 teaspoon herb seasoning
    • 2 pinch oregano
    1. Start making the mince by heating some oil in a pan over medium heat.
    2. Then saute onion and cook for 3-4 minutes until translucent.
    3. Now add ginger-garlic paste and cook for a minute without browning, then add the minced meat and green chilies.
    4. Cook and stir well for few minutes or until lightly browned.
    5. Season with salt, pepper, basil and rosemary.
    6. Add mushrooms and cook for 5 minutes or until all water dries up and mince is cooked thoroughly.
    7. Roll out the dough in the circle or a desired shape (I use my deep dish pizza pan, 3×12″ ), Pushing gently until fairly thin and prick the dough all over with a fork.
    8. Spread on the sauce almost to the edges and sprinkle on the oregano.
    9. Top generously with the shredded cheddar cheese, chicken mince, arrange some onion and pepper, tomato slices, olives over it.
    10. Grate on Mozzarella to taste and sprinkle herb seasoning then place in the oven to bake for 30 minutes, or until the crust is puffy, crisp and slightly blistered.
    11. Take out of oven, let sit for a few minutes, then slice, sprinkle with red pepper flakes and serve warm.

    Serving Suggestions:
    So easy, and delicious with a glass of fresh lemonade.
