    Spinach Pakora (Palak Pakora)

    Palak pakora is a delicious appetizer or a tea time snack. The taste of these deep fried palak pakora’s (spinach fritters) more enhanced when eaten with apricot chutney.

    As the monsoons have started, I am posting lot of tea time snack recipes for you all to enjoy this season. Must try this Palak Pakora recipe and enjoy the rainy weather with your friends and family!!

    Spinach Pakora (Palak Pakora) Recipe

    Ingredients

    • 1 cup spinach leaves palak, chopped
    • 1-1/2 cups gramflour besan
    • 1 small chopped onion
    • 2 green chilies chopped
    • 1 tsp Red chili crushed
    • 1/2 tsp Mango powder
    • 1/2 tsp cumin seeds crushed
    • 1/2 tsp coriander seeds crushed
    • Salt to taste
    • Oil for deep frying

    Instructions

    Method

    • Wash palak leaves properly and leave it for drying.
    • Chop the palak leaves. Add water to besan and make a batter of thick consistency.
    • Add chopped green chilies, cumin seeds, coriander seeds, red chili powder, and mango powder, salt and blend it well.
    • Fry small portions of mixture in oil for 5-8 minutes or until they turn golden brown.
    • Remove from oil and absorb on kitchen paper. Palak Pakora is ready to serve.

    Notes

    Serving Suggestions:
    Serve with Apricot Chutney.

    For Dough:

    • 1 cup all purpose flour
    • Water to Knead dough
    • 2tbsp oil
    • little salt
    • 1/4 tsp cumin seeds

    For Stuffing:

    • 3-4 boiled potatoes,peeled and mashed
    • 1/2 cup green peas,boiled
    • 1-2 green chilies,finely chopped
    • 1/2 tsp ginger,crushed
    • 1 tbsp fresh coriander,finely chopped
    • 4 tbsp cashew nuts
    • 4 tbsp raisins
    • 1/2 tsp garam masala
    • salt to taste
    • red chili powder to taste

    Step 1

    To Make dough: Mix all the ingredients except water. Add a little water at a time.

    Step 2

    Pat and knead well for several times into a soft pliable dough. Cover it with moist Muslin cloth and keep aside for 15 minutes.

    Step 3

    To Make Stuffing : In a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilies, ginger and Mix well.

    Step 4

    Add green peas, cashews and raisins and mix well. Add coriander leaves and keep aside.

    Step 5

    Make small rolls of dough and roll it into a 4″-5″ diameter circle. Cut it into two parts like semi-circle.

    Step 6

    Now take one semi circle and fold it like a cone. Use water while doing so.

    Step 7

    Place a spoon of filling in the cone and seal the third side using a drop of water.

    Step 8

    Heat oil in a pan and deep fry till golden brown (fry on a medium flame).

    Step 9

    Drain on paper towel. Vegetable samosa is ready to serve.

  • Recipe: Mince Samosa (Keema Ka Samosa)

    Samosa is prepared in different styles in Pakistani cuisine. They differ only in stuffing which may be of meat, chicken, vegetables or potato only. This one is keema ka samosa recipe which is a bit spicy in taste due to the addition of crushed chilies which enhances its flavor.Samosa is a stuffed pastry and a popular snack in Pakistan and India.     • 1 onion, finely chopped
    • 2 clove garlic,finely chopped
    • 2 green chilies, finely chopped
    • 1-inch piece of ginger, finely chopped
    • 1 tsp red Chilli Powder
    • 1 tsp curry powder
    • 1 tbsp oil
    • salt to taste

    For Pastry

    • 1 cup flour
    • 3 tbsp ghee or butter
    • A pinch of salt
    • oil for frying

    Step 1:

    To make Mince Stuffing:Wash and drain mince; set aside.

    Step 2

    Heat 1 tbsp oil or ghee over medium heat. Fry chopped onion for 2-3 minutes or until translucent.

    Step 3

    Add garlic and ginger in it. Cook for 2 more minutes then add minced meat, green chilies,red chili powder, curry powder and salt.

    Step 4

    Cook for few minutes then add 1/2 cup water.

    Step 5

    Reduce heat to low, Cover with a lid. Cook for 15-20 minutes or until meat is tender and dry.

    Step 6

    Leave the mince to cool completely.

    Step 7

    To make pastry: In a small bowl, add flour,ghee or butter and salt. Knead with water and make a soft dough.

    Step 8

    Make small balls from the prepared pastry.

    Step 9

    Roll them out with Pin roll, cut into halves.

    Step 10

    Make a small cone of it and put the cooked mince in it. Press the edges of samosa and set aside.

    Step 11

    Heat oil in a deep frying pan or skillet. Place samosa in hot oil and deep fry for 8-10 minutes or until golden brown.

    Step 12

    Remove from the oil and drain on kitchen paper. Crispy Mince Samosa is ready to serve.

    • 1/2 cup Nimkis
    • 1/2 cup Sev
    • 1/2 cup Gol gappas
    • 2 tbsp Lime or Lemon Juice

    Add the sev directly and mix well.

    Finally garnish with coriander leaves and lemon juice. Bhel Puri is ready to serve. Serve immediately.
