- 8 large lemons, chopped
- 2 onions,chopped
- 1 cup malt vinegar
- 500g sugar
- 125g raisins
- salt to taste
- 30g mustard seed
- 1 tsp ground ginger
- 1/2 tsp cayenne pepper

Mix the onions and lemons with the salt, then leave to stand 24 hours.
Next day, add the rest of the ingredients and cook till the skins are soft and the mixture is a chutney-like consistency.
Now Lemon Chutney is ready.
Pour into hot sterilized jars and seal.
