  • 1 cup fresh corn boiled
  • 1/4 cup green onions finely sliced
  • 1/4 cup fresh coriander leaves chopped
  • 2 green chilies finely chopped
  • 1 large egg
  • 1 cup ricotta cheese
  • 1 tsp salt
  • 1 tsp red pepper flakes
  • 1/2 tsp freshly cracked black pepper

For Serving:

  • Sour cream ketchup (don’t judge until you’ve tried it!)

  • Place ground lamb in a mixing bowl.
  • Add fresh corn, green onion, fresh coriander, green chilies, egg and ricotta cheese.
  • Season with salt, red pepper flakes and black pepper, mixing to a smooth batter. Set aside 15 minutes.
  • Heat a large non-stick pan over medium heat and add 2 tbsp extra light olive oil.
  • Place a heaping tablespoon of the mixture into your hand and form a round or oval patty about 1/3-inch thick.
  • Cook over medium heat uncovered for 5-7 minutes, then flip, cover and cook for another 5 minutes more or until cooked through.
  • Repeat with 2 or 3 more, but don’t crowd the skillet, adding more oil to pan if required.
