    Mint is a magic ingredient, which adds zing to any preparation, however simple. Here is a simple process of dry roasting and crushing the leaves boosts the aroma of mint extraordinarily, adding a flavourful punch to the whole wheat flour rotis.

    Pudina roti is such a healthy dish with a wonderful aroma. Its a healthy treat for your taste buds. This is my most favourite style of eating roti. Its a lighter version of roti and I just love it. Check it out the Pudina Roti Recipe here!!

    Ingredients:

    • 2-1/2 cups flour
    • 1 cup mint,finely chopped
    • 2 tbsp oil or butter
    • Oil for shallow frying
    • Salt to taste

    How to make Mint Roti:

    • Sift the flour and salt in a bowl.
    • Add 2 tbsp of oil and mint and knead a stiff but non-sticky dough..
    • Cover with a damp cloth and leave aside for 30 minutes.
    • Divide the dough into 15 parts.
    • Shape like balls and press flat with the palm of your hand.
    • Roll out the roti into a round disc about 5″ diameter.
    • Put roti on a preheated griddle, dry roast both sides first then spread oil on both sides and shallow fry until well browned.
    • Mint Roti is ready to serve.
    • Serve with any pickle or raita.

    Ingredients

    • 300 gm boneless chicken, cubed
    • 2 tbsp chilli sauceWho Needs Takeout? Make Restaurant-Style Chicken Fajita Pizza!
    • 1 tsp black pepper
    • 1/2 tsp salt
    • 1 tbsp vinegar
    • 1 tbsp soy sauce
    • 1 tsp garlic paste

    For Pizza Topping

    • 1 cup pizza sauce
    • 10 black olives
    • 1 cup mozzarella cheese
    • 1/2 tsp oregano
    • 1 cup mushrooms
    • 1 tomato, thinly sliced
    • 1 capsicum, thinly sliced

    For Pizza Dough:

    • 1-1/2 cup plain flour
    • 1 tsp yeast ( dissolve in luke warm water with 1 tbsp sugar)
    • 1/2 tsp salt
    • 1 egg
    • 2 tbsp oil

    Yield: 4 servings

    Directions:

    1. In a large bowl, add chicken, chilli sauce, black pepper, soy sauce, salt, vinegar, and garlic.
    2. Mix to coat evenly.
    3. Marinate for 25 minutes in the refrigerator.
    4. Now cook chicken in a pan over medium heat, until tender.
    5. Keep aside.
    6. In another large bowl, combine the flour, salt, egg and yeast mixture.
    7. Knead a soft dough with Luke warm water.
    8. Preheat oven to 180 degree C.
    9. Now place dough in the oven until rise and doubled.
    10. Roll dough and put in a baking tray.
    11. Spread little oil over it.
    12. Now pierce the dough  with a fork.
    13. Spread chilli sauce over the dough.
    14. Layer chicken cubes,mozzarella cheese, mushrooms, tomato, capsicum and olives on it.
    15. Sprinkle with oregano.
    16. Bake for 15-20 minutes or until crust is crispy and cheese is melted.
    17. Remove from oven and cut into slices.
    18. Chicken Fajita Pizza is ready to serve.

    Serving Suggestions;

    • Serve with Tomato Ketchup.

    Recipe: The BEST EVER Vegetarian Lasagna

    Vegetarian Lasagna

    For all those out there that say a Vegetarian Lasagna can’t be as good as one made from meat, you’re wrong. So wrong.
    Once you have a good lasagna recipe under your belt, you know you’re getting somewhere in the culinary world.

    I will agree that lasagna needs a certain type of ‘meaty’ flavour, after all it was originally a meat dish. But that’s easily possible thanks to spelt grains or freekeh (very easy to find), which take on an amazing, smoky, deep flavour when cooked in stock. The pleasingly-chewy texture feels like the consistency of meat too, and is more than a replacement – it’s even better.

    As much as I love Meaty lasagna, when I had a slice of this veggie version, I really didn’t miss the meat. And so I now have one thing to say – to the veggie haters, this is the best lasagna ever. Best. Lasagna. Ever.
    Don’t believe me? That’s fine, taste is subjective anyway. But make your decision after you’ve tried it.

    Just find ready made lasagna sheets and this great lunch or dinner dish bursting with carrot, zucchini, eggplant, mushrooms, pepper and herbs is all yours!

    This Vegetarian Lasagna doesn’t require too much time, either. While water boils and noodles cook, you can get through making most of the vegetable sauce. Then, all you do is finish the sauce, assemble and bake for 30 minutes or so.

    Bonus — I actually found this Vegetarian Lasagna is better the next day – score for make-ahead meals.

    Here’s how I made mine yesterday, but keep in mind you can use any lasagna recipe you love! Just roll the cheesy filling inside the noodles as shown below, place them in a pan (small or large, depending on your needs), and top them with whatever sauce you want.

    Vegetarian Lasagna Recipe

    Having a good lasagna recipe under your belt means you’re really getting somewhere in the culinary world. And this the Best Lasagna Ever. Go on, shine.

    • 1 pound box lasagna noodles
    • 6 cups marinara sauce (halal)
    • 24 ounces low-fat cottage cheese
    • 32 ounces shredded mozzarella cheese
    • 1/2 cup chopped herbs (basil, oregano, or thyme)
    • 2 eggplants (cut into circular slices)
    • 6 zucchini (cut lengthwise into slices)
    • 6 portobello mushrooms (thinly sliced)
    • 2 red onions (thinly sliced)
    • 4 tbsp olive oil
    • 4 cloves garlic (crushed)
    • 3/4 cup chopped onions
    • 2 cans diced tomatoes
    • 1/3 cup chopped basil
    • salt and pepper to taste
    1. Saute or oven-roast the vegetables until they are cooked through. Set aside.
    2. To make the marinara sauce, begin by heating the olive oil in a pan over medium heat.
    3. Add the chopped onions and stir until golden brown.
    4. Add the garlic and tomatoes and simmer for 25 minutes.
    5. Stir in the basil and add salt and pepper to taste, then simmer for 10 minutes.
    6. Preheat the oven to 350°.
    7. In the bottom of a 16″ x 12″ pan, place a layer of dry noodles.
    8. On top of that, add about 1/3 of the marinara sauce, about 1/2 of the cottage cheese, and about 1/3 of the mozzarella cheese.
    9. Sprinkle herbs over the top, and add a layer of vegetables. Repeat the process.
    10. Finish with a layer of noodles, then top with tomato sauce and a thick layer of mozzarella cheese.
    11. Cover the pan with plastic wrap, then wrap tightly with aluminum foil.
    12. Bake for 35 minutes, or until a knife pokes easily through the lasagna.
    13. Remove the plastic and foil and bake at 450° for 10 minutes, or until the top is browned.
    14. Remove lasagna from the oven and let set for 20 minutes.
    15. Garnish with fresh basil leaves or other fresh herbs. The most awesome Vegetarian lasagna ever is ready to serve.
    Serving Suggestions:
    Serve warm.

    Ingredients:

    For Espetada Chicken 

    • 500 gm boneless chicken, cut into cubes
    • 2 green bell pepper, cut into cubes
    • 2 tomatoes, seeded and cut into cubes
    • 2 tablespoon oil
    • 2 tablespoon peri peri sauce
    • 2 tablespoon lemon juice
    • 1 tablespoon soy sauce
    • 1 teaspoon garlic paste
    • 1 teaspoon meat tenderizer
    • 1 teaspoon salt
    • 1/2 teaspoon white pepper

    For Peri Peri Sauce

    • 1 onion
    • 4 whole red chilies
    • 1/2 cup cooking oil
    • 1/2 cup white vinegar
    • 3 tablespoon lemon juice
    • 2 tablespoon crushed red chilies
    • 1 tablespoon coriander seeds, crushed
    • 1 tablespoon fenugreek seeds, crushed
    • 1 teaspoon garlic paste
    • 1 teaspoon citric acid

     

    Directions:

    To Make Peri Peri Sauce:

    • Soak whole red chillies for 4-6 hours or overnight.
    • Now put all peri peri sauce ingredients in a blender or food processor.
    • Process until smooth.
    • Take it out in a small bowl and keep aside.

    To Make Espetada Chicken :

    1. Lightly flatten the chicken pieces.
    2. Place chicken in a large bowl.Add lemon juice, soy sauce,garlic paste,meat tenderizer,salt, white pepper, peri
    3. peri sauce and oil.
    4. Stir to coat evenly.
    5. Marinate for 30 minutes to blend flavors.
    6. Put mrinated chicken on skewers alternating with cubes of capsicum and tomato.
    7. Cook over a hot grill.
    8. Put with a burning coal and drop a little oil.
    9. Cover for 1 minute then remove from the grill.
    10. Espetada Chicken  is ready to serve.
    • Serve with rice.

    Ingredients

    • 500 gm mutton or beef mince (keema)
    • 1/2 cup chopped onion
    • 1/4 cup oil
    • 1 capsicum, finely chopped
    • 1 tomato, seeded & finely chopped
    • 4 green chilies, finely chopped
    • 8 cashew nuts, grinded into a paste
    • 1 bred slice, soaked in water and squeezed
    • 1 inch piece of ginger, finely chopped
    • 2 tablespoon lemon juice
    • 2 tablespoon coriander leaves, chopped
    • 2 tablespoon fresh cream
    • 1 tablespoon ginger garlic paste
    • 1 teaspoon salt
    • 1/2 teaspoon garam masala powder

    Directions:

    1. Place mince and all ingredients in a large bowl.
    2. Mix until well combined.
    3. Now shape into small kababs with wet hands.
    4. Keep in refrigerator for 1 hour or until set.
    5. Heat oil in a frying pan.
    6. Pan fry 4-5 kababs on low heat for 8-10 minutes or until golden brown.
    7. Remove from the oil.
    8. Drain on kitchen paper.
    9. Ghilafi Kababs are ready to serve.
    10. ENJOY!!

    Serving Suggestions:

    • Serve hot with naan and chutney.

    For Bean Salad:

    • 1 cup kidney beans, boiled
    • 1 cup corn kernels, boiled
    • 1 onion, chopped
    • 2 tomatoes, chopped
    • 2 green chilies, chopped
    • 3 tbsp fresh coriander leaves, chopped
    • 1/4 tsp black pepper
    • salt to taste

    For Salad Dressing:

    • 4 tbsp olive oil
    • 3 tbsp lemon juice
    • 1 tbsp hot sauce
    • 1 tsp white cumin, roasted & crushed
    • 1/4 tsp black pepper

     

    Directions:

    To Make Bean Salad:

    • Place kidney beans, corn kernels, onion, coriander leaves and green chilies in a large bowl.
    • Season with salt and pepper.

    To Make Salad Dressing:

    • In a bowl, add lemon juice, hot sauce, white cumin, black pepper.
    • Mix well.
    • Now slowly drizzle olive oil over it.

    To Procced:

    • Pour salad dressing over the bean salad.
    • Toss well.
    • Bean Salad is ready now.

    • Serve chilled.
