Looking for something more adventurous than your usual Kachumber salad? Try this tasty Crunchy Pickled Kachumber Salad, a squeaky pickle salad that would be amazing alongside with any desi food like Biryani, Tikka or Kebab.

Prepare all vegetables for the salad.

Dice all the pickled red onion and baby carrots into small pieces.

Do the same with the cucumber and discard the middle once you get to the seeds.

Now chop the green bell pepper, red radish and blue cabbage.

Mix vegetables together in a large dish, something that you can cover with a lid for marinating.

Now whisk pickle brine, mint, vinegar, lemon, honey, black pepper, salt and red pepper flakes in a large bowl.

Pour brine over the vegetables.

Let sit to allow vegetable to soften slightly(still crunchy), at least 5 minutes and up to 15 minutes.

Toss well and refrigerate.

Give the veggies another couple of turns when you think of it.

Transfer salad to a large shallow bowl or platter and drizzle with olive oil.

Note
- If you really love the pickled flavor, you can add up to 2 tbsp more vinegar to increase the tartness.
- Want to prep ahead? Make the dressing and chop your veggies ahead of time (just keep them separate so the veggies don't get soggy). When you're ready to eat, simply toss pickled and raw vegetables in the dressing, and enjoy!
