A combination of spinach (palak) and yogurt makes a delicious and nutritious raita. I often make raitas and salads as side accompaniments along with the main dish at home. - 250 gm plain yogurt (dahi)
- 100 gm spinach leaves
- 1 teaspoon oil
- 1/4 teaspoon cumin seeds, crushed
- 1/4 teaspoon mustard seeds, crushed
- a pinch – fenugreek powder
- 2 red chillies, broken
- grated ginger
- salt to taste

Wash spinach and cut it in small pieces.
Heat oil, add fenugreek, cumin, mustard. When it splutters, add red chillies and grated ginger.
Now add spinach and fry for 1-2 minutes. Switch off the stove.
When it cools down, mix with curd and salt.
Garnish with chopped tomato or carrot and coriander leaves. Palak Raita is ready to serve. Enjoy!
